As another reviewer has pointed out here, this All Clad Emeril is very much lighter in construction than regular All Clad or even All Clad Emerilware of yore.Some years ago I ordered an Emeril All Clad cook set, all items have heft and each has a good heavy base.I suppose costs have skyrocketed in stainless manufacture, but the lightness of this pot came as a surprise to me even after reading the other reviewer's comment about it.Nonetheless, this is a big stockpot, a lot of metal, and it does just what I want it to do.In this pot, finally, when 19" spaghetti is introduced to the boil it stands on end without my assistance. I bought this for making pasta etc and it does the job.It is MUCH lighter, however than the rest of my All Clad pieces.It does the job though!

Anolon Nouvelle Copper Hard Anodized Nonstick 10-Piece Cookware Set ()I can honestly say that my wife and I have never used cookware that is of higher quality than this Anolon Nouvelle 10-Piece Cookware Set. We received a set of Emeril Hard Anodized Nonstick Fry Pans(8" and 12") as a gift recently and though decent, the difference in quality is readily apparent. The handles are thin and heat up, and the pans are thinner and cook less evenly. Comparatively the Anolon Nouvelle cookware is thicker with layered bases for even heating and have the best handles I've ever had the pleasure to take a hold of. They are thick and easy to grip, and the ends stay cool even if the pan or skillet has been sitting on the heat for a while, eliminating the need to use pot-holders. Even the smaller stockpot handles remain cool enough to pick up the pot when cooking (i.e. spaghetti). The bases where the handles meet the pots do warm up a little though.

I've had this set for just under two months, but we do not eat out and everything is home made so this cookware set has undergone a trial by fire, as it were. We've made a variety of dishes on our glass top stove and everything has been cooked to perfection. Water boils rapidly in this cookware, perhaps due to the double full cap bases. Cooking is even too in the pancake test, all of the pancakes were evenly browned the same hue. Rice, stir-frys, spaghetti, soups, sauces, veggies, fried foods -they all are easy to prepare properly with the Anolon Nouvelle set. That isn't to say that they'll keep overcooking from spoiling a meal but it seems hard to do wrong with them. Directions do not recommend cooking with anything higher than medium heat, but we haven't had any issues occasionally going higher. The tight fitting lids help keep dishes from boiling over and lock in the steam to help keep them from drying out. Lids on or off, these are very attractive looking pots and pans. We have a pot-rack, and hanging the Anolons from it gives the kitchen a more elegant look.

I intentionally left some sauce in a pot on medium heat even after we were done making a meal. It dried up and stuck to the bottom and sides and looked like it would be a hassle to clean up. I poured some water and detergent into the pot and let it sit for a while. When I came back to clean it, it wiped off easily. I'm really impressed with the nonstick coating on this set, it just works. The DuPont's Autograph 2 Teflon coating is supposedly the best currently used by Anolon. The flush nonstick rivets are another nice touch. Note: this set is not dishwasher safe. I've re-heated food in the oven a couple of times with no problems, though I doubt I'll ever test the 500 degree limit.

A star comes off for few reasons. The steep price tag may dissuade a casual buyer, though you are paying for a quality product that should last at least five years. You have to decide if a set in this range is what you need. Casual cooks may not need cookware so sturdy.With the amount my family cooks, these will be a good value. Chefs who prefer glass lids will need to look elsewhere. I also wish a 12" skillet was included in the set, but the 10" can handle most of what we'd need the other for. With 6 pans (and 4 lids) in the most common sizes, this set should be able to handle everything except some specialty dishes. The pots are slightly heavier than others I have used, but their sturdy handles make them easy to maneuver and lift.

I am very pleased with how the Anolon Nouvelle set has performed so far and look forward to creating many more mouth watering dishes in them well into the future. If any durability issues arise, I will be sure to append this review to make note of them.

()Summary:Overall, a solid set of pans.However, there are some trade-offs.I would recommend this set to someone who likes the appearance or the handle design.However, considering the price, I personally would choose to either save money on a set that is very close in quality, or spend a little more money to get an even nicer set.In balancing all the features (some two stars, some five) into one overall rating, I came up with three stars, "It's OK".The smaller cooking surface and the cost were the primary reasons why three stars instead of four or five.

Assumptions:When shopping for a set of pans, I would first make sure I need every pan in the set.Choosing individual pans (instead of a set) can save money and ensure you only buy the pans you truly need.For example, there is not a 12" skillet or 12" sauté pan in this set (which would add cost if you buy separately), and you may not use the included 10" skillet very often (which you still pay for as part of the set).For this review, I assume every pan size and type in this set is needed.I am comparing features relative to all price points (Mauviel, All-Clad, Demeyere, Calphalon, George Foreman, and pans that were "free" with groceries) and rating the overall value based on what else is available relative to the cost of this particular set.

Appearance:One benefit of this set is that there is an exterior glaze which reduces stains that can otherwise permeate untreated anodized aluminum.The exterior is more of a glossy light gray pearl color.It is not the flat charcoal gray of a typical anodized aluminum.I found this difficult to determine from the photo.However, the appearance is solely a matter of personal preference.

Function:The non-stick is not any better or any worse than other pans anywhere near this price range, including the free pans.The flush rivets are coated in non-stick, which is a great feature to avoid accidentally scrubbing delicate non-stick while trying to get sticky rivets clean.The working area in the center of the skillets and the sauté pan are a little smaller than competing pans of the same size.The stock pot is perfectly proportioned between its diameter and height, allowing a little better access than my same-size Calphalon that is taller and thinner.

The solid base helps with even heat distribution at the bottom of the pans, but the thinner anodized aluminum sides do not share this benefit.This is not a clad set of pans, to it's understandable that the sides will not distribute heat evenly.However, the solid exterior base is smaller than the cooking surface of each pan, so heat will be a little different at the center of the pan than it is at the far edges.This may not seem like a big deal, but the copper base is the big selling point and it's partially negated with uneven heat.(Note:The copper will patina unless polished, and this is unavoidable with all copper cookware.)A slight flare at the rim of the stock and sauce pots help pour more easily than all other straight-edge pans where liquid dripples down the side instead of pouring cleanly off the edge.

Hands down, these are the best handles of any cookware I've used.They are thick and very easy to maneuver.By comparison, All-Clad handles are thinner awkward when pouring.The lids look nice, with welded handles (avoiding a rivet).The handle loops look taller, and provide as much or more clearance (for a hot pad, etc.) as other manufacturers.

Analon recommends using no more than medium heat to avoid warping, which isn't uncommon (and to avoid unsafe fumes and melting the non-stick coating into your food), but is a drawback.Being oven safe to 500 degrees is a great advantage.It is not safe for the broiler, but few if any non-stick pans can be used in the broiler.It is also not dishwasher safe, though most nonstick pans get pretty beat up in the dishwasher, even if they claim to be dishwasher safe.

I hope these considerations are helpful.You will not be disappointed if you ultimately purchase this set after considering the pros and cons.

It would have been a full 5 stars if you could only use them in the broiler for finishing and use them in the dishwasher, but I live in a dream world!

The very first thing I'm going to say is to read the instructions that come with your cookware set very carefully since the manufacture is taking the easiest way out and has printed the directions that are for more than just the Anolon Nouvell Copper Anodized set. It can be quite confusing if you don't have the directions/instructions right in front of you. The manufacturer notes that the copper-bottomed set needs special care before using the first time. Also, this particular set cannot go in the dishwasher.

The second thing I'm going to say is to take their reprimand about dry boiling quite seriously. I haven't done so in the past, but after reading the warning I'm a bit petrified that I may somehow do so in the future and that would be very ugly!

What I did love hearing is that we can use this cookware in the oven up to 350° degrees Fahrenheit. These are NOT broiler safe. No non-stick is broiler safe.

In my first test of this product I did a simple one which was to simply boil water and to see if having copper clad bottoms made a difference...it did come to a boil somewhat faster but not at warp speed or anything.

I was also a bit worried to find that these pots and pans were a lot heavier, and sturdier than my old stuff as I am getting older now and my grip isn't what it used to be. But the handles are well balanced, and even with a full load in the larger sauce pan, I had no problems getting it to the stove. A real worry since I have a glass top stove and I really don't want to drop anything on it and break it.

Next up was seeing if it heated evenly. And using my hand to test the bottom of the large frying pan I could tell that every part of the bottom was heating at the same time. I know it's not a scientific test, but heck I'm not running a professional test kitchen! I am just your everyday average home cook. I do not cook uber fancy.

I cooked simple food that can leave a mess. Rice for instance. The rice came out lovely and since the saucepan is made so sturdily, and the lids on ALL the pieces fit so snugly, the water never boiled off and was perfectly absorbed by the rice. (Perfect rice)

Hamburger patties---not my favorite on the stove top, but a good test nonetheless. The large pan holds 3 very large burgers and fried them up perfectly.(Perfect patties)I used the frying pan next to cook some fried then simmered pork chops, (Perfect)

Lastly I used this to make a typical Hungarian dish--Chicken Paprikas and Hungarian Dumplings which can be difficult and time consuming to prepare and cook. But, I am happy to report that this cookware has the ability to cook perfectly sautéed onions and stew the chicken. And the stockpot held enough dumplings that it made even them almost fun to do. Again, clean up was a breeze . (Perfect Chicken Paprikas with dumplings)

The non-stick coating is sufficient in that I had no scrubbing to do even when I had a little problem with an over-cooked, (oh okay, I'll admit it I burned something I wasn't watching) spot. Not scrubby needed just a nice short soak in hot water and a sponge. These are not dishwasher safe.

Edited to add---it has been almost a year that I've had these and they remain as perfect as the day I got them.I will even admit to throwing them in the dishwasher now and again with no adversereactions.

The ex-wife took most of the cookware in the divorce time to replace. Reviews of Anolon's products convinced me to give them a try. The holiday deals for their 'Copper' set with bonus pieces was also appealing. Ordered the 10 piece set. The construction, weight, appearance and overall quality were very-very-good BUT you don't buy cookware to look at it. So, fire it up! Went for the basics eggs of various kinds, grilled cheese, browned hamburger, pasta and sauce,... It was so easy to use these pans & pots they heat quickly, cook evenly, and are even easier to clean nothing seems to stick to them! I was so impressed that I purchased a handful of the other pieces not included in the starter set. I am very happy with their products and am sure they will have a long and useful life. A note though: the square griddle they sell as a companion piece is NOT induction compatible to their credit, it DOES say that in their description but it means you might need to look elsewhere for something that is (I'm installing an induction cooktop in the next month so it matters to me).

Round Skinny GrillLe Creuset manufactures porcelain enameled cast iron cooking vessels as well as other products. Le Creuset casts these cooking vessels from molten iron poured in sand moulds that are used only once. For this reason, one grill may look like another, but each is unique in its own way.

Cast iron is a highly efficient material which absorbs and distributes heat efficiently. It is recommended that cooking with cast iron be done on low to medium heat.Using this grill on high heat can cause poor results for your food as well as making cleaning more difficult.Removing cast iron from the heat does not cool it off quickly. This helps your food stay warm while serving. Beware; iron tends to be heavy so these cooking vessels tend to be heavy as well.

Cleaning the grills are not quite as easy as its enamel coated cooking surface cousins, but is not that difficult either with a good stiff nylon brush and proper heating technique.When cleaning; be sure to cool the grill just enough so that the brush doesn't melt.It's advisable to have some warmth as a completely cooled grill will make residues stick more firmly to the surface.If needed soak the grill in soapy water for 10 to 15 minutes.

Since Le Creuset grills are not enameled on the cooking surface, you will need to break in the grill.This is a simple process of oiling the grill lightly before cooking on it.I use Pam, but vegetable oil could be used as well.Olive oil is not recommended as it tends to have a low smoking point.If you do choose to use olive oil, I would recommend having proper ventilation.Over time and use, the grill will take on a brownish-black color and require less oil.Since the brownish-black color is beneficial, do not attempt to scrub this off.Dishwashing the grill may also prevent or slow down the breaking in process too.

The benefits of cooking with Le Creuset cast iron are many, but lets get down to the grill specifically.This grill has a 9 1/2 inch round cooking surface with ridges and wells.The wells capture the drippings and fat while cooking for a healthy meal.Unlike products such as the George Foreman grill there is no top to press out all the juices which causes a drier meal.

To determine if the grill is hot, scatter a few drops of cold water over the surface, if they "Spit" and evaporate almost immediately, the surface is ready to cook on.All items should be "dry" before cooking, remove excess moisture by patting on a paper towel.Once on the grill, do not move constantly or distinctive lines will not be produced.I like to move three times after placing the food on the grill to produce diamond markings on each side.

One feature that people tend to complain about is the cost. The cost does seem steep compared to other pans made from other materials. Heck, cast iron doesn't seem like it should be expensive when comparing to that old cast iron pan past generations have used for cornbread and camping. However the manufacturing process requires making a mould for each and every pan produced. They then go through the enameling process before shipping these heavy pans. If you take what goes into making and distributing these high quality cast iron products, the cost tends to make sense. Then consider that this pan will easily last a lifetime when taken care of.

PROS:

Its heavy, as cast iron tends to be weighing in at about 4 pounds

I have owned lots of "nonstick" pans & stainless steel, BBQ grills, etc. None has been as easy to use as this (or so worth using!) & I use it almost every day. It isn't that hard to clean really. I use an oil sprayer to pre-oil it (I use macadamia nut oil because of the high smoke point/health reasons but Pam should be fine), then I preheat in on medium heat (I have a ceramic top stove, which doesn't heat as well as gas, but I NEVER have to go higher than low-med to med). Once it's hot (a water drop "pops" on the surface), I put my meat, chicken, or fish & DON'T touch it for at least 5 minutes. Once the food releases easily, THEN you can turn it. But DON'T TOUCH before then! Our oven was broken for 2 wks recently & we didn't miss it. The only thing you might miss an outdoor grill for is that "smoky" taste. Otherwise, this makes beef, pork, chicken, & fish better (juicy with a wonderfully seared, carmelized surface) than most restaurants & with less effort than driving there! All I usually season with is sea salt & cracked pepper.

Cleaning is no big deal if you don't make a big deal. Trust me, I HATE things that take a lot of effort. Just take it off the heat, put some warm water in it to cover the cooked on bits & leave it alone for a couple hours (I've even left it overnight--no rust). It's an enameled surface INSIDE the pan, not just the outside, so you don't have to worry the way you worry about rust or leaving water standing in a regular cast iron pan (been there, done that). When you're ready to scrub, DO NOT use a scrubby sponge, which is a messy hassle & really does make the job harder (been there, done that). A PLAIN NYLON DISH BRUSH with good STIFF bristles is perfect & gets all the bits out of the grooves in no time (even at the sides). It doesn't remove all the seasoning either. Then dry it thoroughly & put it away for dinner tomorrow. I sooo love this pan, & I am sooo about quality and ease of use. I also love the Le Creuset 2 1/2 qt buffet casserole. I've had these for about a year & can't live without them. :-)

I will say that the outside of these pans will accumulate cooked on stains & I don't know how to get those off, but I don't have my pans out in view. I've tried Weiman Glass Cooktop Cleaner & a lot of elbow grease, which works. Be nice to know if anything does make that easier.

Despite this, I still have to give this pan a 5, just for the quality of food prep.

This is by far my favorite and most used thing in my kitchen.... I am a pro chef as well as a mom.

I had noticed a review about it taking a while to season or keep from sticking --all that I did to get it to a great cooking level was... make sure the heat is always high to medium high.... then used a small amount of oil to coat food-best way to do that is to throw whatever you want to grill in a ziplock with a little olive oil and your seasonings.. when the grill is piping hot .. throw the food on and don't touch it until you are ready to flip. I bought a cow, pig and lamb at the auction .. so we grill a lot of meat... best things on here are thick cuts... rib eye... thick cut pork chops.. but asparagus turns out great too. And my kids love the precut chicken breast tender parts... like 2-3 minutes on each side. but make sure not to use soap when washing... only hot water to rinse it and then set it back on the stove to dry... the build-up is what makes the taste so great.

i bought the LE CRUESET skinny round grill cuz i hate to use my long reversible griddle/grill for only a couple steak.it is my first Le Crueset purchase and was chosen for it's beauty as well as practicality;the "range-to-table" appellation clearly applies here with the glittering lava black pan surface and graceful iron handles, fired a brilliant contrasting enamel, in my case, Flame.the soft oval shape lets it double as a fajita pan.if you don't like the anvil-like weight of cast iron--and this is about as light as you can get in this series, not counting lids--you can easily hang the grill up as a work of art (make sure you use a stud finder though or you might have one less child or dog!).in the cooking arena, the pan lives up to all it's promises.it really does retain the heat and cooks wonderfully on medium, so you don't have to worry about damaging the lovely paint, which also covers the bottom.the upturned sides, just low enough to avoid a steamed effect, undesirable in grilled foods, insures no grease spills over.the only thing that bothered me is it's difficulty in cleaning, but that puts it in league with most of its competitors.

Le Creuset cookware is my favorite, but this grill is an exception.It is an absolute nightmare to clean.I worked on it off and on for 3 days.My advice is to skip this item, and use the other, enamel-coated cast iron that makes Le Creuset so great.

Cuisinart 66-10 Chef's Classic Nonstick Hard-Anodized 10-Piece Cookware Set

Cuisinart 66-10 Chef's Classic Nonstick Hard-Anodized 10-Piece Cookware SetI bought the 10 piece Cuisinart set about a month ago and ever since I've been expecting it to fall to pieces, burst, turn to dust, explode, vanish in thin air, etc. etc... anything that would give me a reason for the low price of 140$ which is 400$ in stores. The truth is, it's too good to be true. But it is! This is the best cookware set I have ever seen by far. Nothing will ever be able to stick to these lovely pots and pans, no matter what you do, so be ready to say goodbye to all the non-stick sprays, oil, butter and soaking and scratching. They don't even need harsh soaps for a moderate cleaning up. It is true that they can burn food, but the instructions say that these are not meant to be used at high stove-top heats anyway, use a low to mid heat and everything will turn up wonderful. They are really good for slow cooking and can also go in the oven up to 500 degrees, which is required for some food I like to make. The glass lids are useful when making rice or seeing the color of vegetables but they can spill if nor handled properly due to the design, which could certainly improve since they are, unlike the pots, not very easy to clean. My handles have never got too hot unlike my previous Faberware set. I adore the small skillet which is just the right size for a 2 egg french omlete, in general, the sizes are logical and all come in handy. It does say they are metal utensil safe, which is not exactly true since it's OK with a fork or spoon, but any hand held electronic gadget can scratch the interior a little. Also, although the dark gray outer finish is beautiful, it seems that the colour will be wearing of in time.

To sum it up, if you're willing to give some extra attention to this good-looking set (drying after hand washing, preferably hanging and keeping the lids clean) this is a deal you must not miss. BTW, It arrived very quickly and was packed great by Amazon. You won't be able to use any piece in this set at high stove top heats, so get a cheap large skillet for that kind of job, give away your old set and buy this one like I did. I doubt anyone will ever regret it. I would give 4 1/2 stars if I could due to the not-so-good lid design facor. Still, I love my cookware set, will probably be using it for at least 10 years to come and recommend it fully to anybody.

EDIT AFTER 6 YEARS

I've just gave away this set after 6 years of daily use. So, they didn't last for 10 years as I was predicting in my initially overly psyched review, but I still think it was a great deal for the price. Now that I have more money to spend and need a more professional level cookware set, I've replaced them with stainless steel Fissler pots and pans, which in my opinion, are the best you can get for any price, anywhere.



I have had the similar 7 piece set for about a month and have had a chance to use them enough to have an opinion. They are well balanced and perform well, especially the sauce pans and stock pot. The 8 quart stock pot is large enough for a family of 4-6. Cuisinart advertises you can use metal utensils, but when you read their recommended use card, it says metal utensil will scratch the surface. That is a misleading marketing gimmick in my opinion.

My main complaint with the Cuisinart cookware is they heat up very quickly due to the thin 3 mm thickness. The fry pans are the weakest items of the set. After side-by-side comparisons against Emeril's All-Clad Hard Anodized, I much prefer the Emeril brand. The Emeril pans are 5 mm thick and seem to cook more evenly and are not near as temper-mental as the Cuisinarts. They also have a feel of quality, unlike the Cuisinart pans.

For not much more money, I would look at the higher quality Emeril Hard Anodized 10 piece set (retails for $200); and sorry Amazon, the best deals for Emerilware are currently using one of those 20% off coupons at Bed Bath and Beyond or Linens N Things.

After 9 months of owning this set and cooking with most of them almost every day, I can give an honest opinion of how they worked out for me.

Pros:

Excellent heat conduction. Stays hot, cooks evenly, and transfer from oven to stovetop and back is very convenient. Good, tough pots and pans at a great value. I like the large skillet and pots, especially.

Cons:

The nonstick coating is not really there anymore for the two frying pans. Though these have never been in the dishwasher or been scrubbed with anything heavier than a sponge, the nonstick coating has slowly burned off in patches, and now, though it hasn't peeled or flaked, there are spots where the food will stick and nonstick spray or oil must be used. Unless I use some kind of spray, pancakes, for instance, must be made in the large 2-handled skillet.

This is a pity because I was very careful not to overheat the pans--they have really been babied. I will probably buy Cuisinart again, but these two pans will need to be replaced within a few months. They are not really useful anymore for anything except veggie burger patties.

The interior of the pans is NOT anodized aluminum, but "Quantanium". It's an excellent non-stick surface, and so far my set works fine. However, if you're concerned about overheated Teflon and the chemicals being released into your food, you'll have to pay more to get a real anodized aluminum set.

Quantanium is not safe over 500 degrees F. It does contain PTFE, the same chemical in Teflon, which is potentially carcinogenic. Fumes from cooking are harmful to animals. And lastly, the non-stick layer is very thin, and will eventually come of. I bought my set thinking I was getting hard-anodized aluminum for a steal, but it seems you DO have to ante up for Calphalon or a more expensive brand to get the real stuff.

I bought a set of Cuisinart teflon non-stick pans due to the fact that there was supposed to be a lifetime warranty. Well when the teflon coating started peeling, I contacted customer service 1-800-726-0190 and was assured that if I sent them back they would warranty the pans. I stressed that they were several years old and the girl said that was ok. I spent $30 to FedEx the pans (sent back all pans in the set) and was also required to enclose a check for $10 to cover return shipping.

After about a month, I had not heard anything, so I called and they had no record of receiving. I related the fedex confirmation and they said to give it another week to update my file. I called back in a week and the girl said that there was a note in the file saying "costomer abuse". I asked what that meant and she said she didn't know. I asked to speak to a supervisor and was referred to "Daniel". Daniel said that he would look into it and it was up to "corporate" and he had no input. He said he would call me back in 24 hours. Daniel did not call back in 24 hours, so in 48 hours I called and asked for him. He still said that it was up to corporate I said that was not good enough; I have $40 more dollars invested in the pans. I told him that I have never seen a pan that eventually did have some peeling and wearing off of the teflon and a "lifetime warranty" should be honored. I also asked for a supervisor higher up.

A day later I got a call from "Dena". Dena (clanging pans sound) said the the customer abuse was using too high of heat which caused the teflon to fail she also said that it was evident that metal utensils were used. Neither of which are true, the pans were just old and wearing out, but we bought them initially because of the lifetime warranty. Dena stated that if they just replaced pans for everybody that they would go broke replacing pans and they were NOT going to warranty my pans. Due to my constant whining, she did agree to ship back the pans (received but damaged with dings on the edges), refund my $30 shipping and the $10 check (have not received yet). My response was since she was going to ship my pans back at a cost of $20 (probably their cost to ship) and write a check for $40, wouldn't it be wiser to invest that $60 and send us a new set of pans that have a (Cousinart cost) of $60. She said "Look, we generally don't refund the original shipping, so NO". I also told Dena that I would post a positive Amazon review as well as a negative Amazon review whichever was needed. She said that was my right. So here I am with the negative I will never buy Cuisinart again and ther warranty is not worth the paper it is printed on...

I have three of these pans (different sizes) and I do not have a single complaint. Heat is consistent, clean-up is easy and it does the work in a superior fashion. There is ABSOLUTELY no reason to spend ridiculous $$$$ on 'Big Name' pans when this is all any chef would need. I entertain 6-8 times per month, year round and I have used many brands of cooking utensils. I highly recommend this one.

Calphalon Simply Cast Enamel 10' Fry Pan - BlueI'm happy with this pan. We bought a new glass top stove, and our old cast iron skillet was too rough on the bottom. We needed something smooth so we wouldn't scratch the stove top. The enamel coating on the bottom is very smooth. This measures about 9 1/4 inches wide on the inside at the bottom. Not huge, but plenty big for our needs. And this thing is heavy. Heavier than our old, and bigger cast iron skillet. I guess that enamel coating is what adds the extra weight. But the handle is substantial enough to keep a good grip on it.

On the other hand, I did not want a huge pan that would take up the entire kitchen cabinet. I was looking at cast iron pans when I came across this particular pan. I loved the color of it immediately since it would go with my apartment. I also loved that it came with a lid and would not weight as much as normal cast iron pans would. The day I received the pan from Amazon I immediately opened the box, hand washed it, and I read the included materials. That night I made a quick stir fry and immediately realized this pan was not what I was hoping for. Not only did the dinner stick horribly to the pan but after cleaning the pan the white inside was brown and nasty looking. I was never able to get rid of the discoloring, and food sticks badly to the pan. I kept the pan hoping that it was my fault from not using enough oil or cooking spray, but no matter what I do the food sticks and does not cook evenly. I will be looking for a new pan soon to replace this one.

I purchased this from an Amazon sister site, myhabit.com.It is the second Fagor pan that i haved purchased that bows in the center; all liquids run to the perimeter of the pan.Both were like this upon receipt.Other than that, it's a decent pan, the enamel coating is good, but it definitely does not seem to provide the same benefit as a full cast iron pan.I don't know what "new technology" was used, but it seems like they just reduced the mass.In retrospect, i should have known better that to purchase celebrity cookware.Not recommended.

I got this pan about 6 months ago thinking lighter cast iron would be a good thing because I find my regular cast iron enamel pieces to be very heavy. It was an attractive pan when I got it, but after a few uses I noticed the exterior enamel appeared to be coming off. As in, when I wipe it with a damp white towel, red comes off on the towel. I don't know what it's made of, but none of my other enamel pieces do that. A few more uses, and the exterior enamel looked awful. Being lighter cast iron is not really a good thing, either. It seems to heat up too quickly and have hot spots, so things want to stick and burn. I think this is a very poorly made product.

Demeyere Proline 5 Star 9.4 Inch Fry Pani hesitated for months to buy this pan because it is so expensive. I have another, larger Demeyere proline pan, and it is my favorite of all (better than Mauviel, which is heavy; Le Creuset is great but they are casseroles or dutch ovens) . i like that it heats across the pan, it heats up quickly on our induction stove and it is nonstick without the poisonous coatings such as teflon. so i bought the smaller pan for omelettes or one-person dishes. it is just the right size, perfect.

This pan is amazing!Its not for eggs but it does meat and poultry like nothing else.Totally worth buying.

This frying pan heats evenly, even when a cheap electric range. Remember, electric ranges are always at full power or off -lower settings just switch between the two.

While the surface is not non-stick, it is surprisingly more non-stick than any other stainless steel pan I've ever seen. I can pull meats off without chunks peeling off. Even Salmon remains intact with a quick scrape from a spatula.

The one disadvantage is that the pan, with a thick core of aluminum, is fairly heavy -though not as heavy as a cast iron pan of the same diameter.

I had been using an All Clad pan that I was very happy with when I purchased this Demeyere pan.This is the best pan I have used: it heats evenly, quickly and cleans beautifully.It is heavy, but I have gotten used to that.It makes cooking even more of a pleasure.

Yea, its expensive. As the other reviewer said, not for eggs... I have cooked eggs (with a lot of oil), but then a long soak is needed.

Other than that, it is critical for induction to have a great pan with a heavy base.

And the quality is astonishing, your spouse will be angry when you start sleeping with your pan clutched to your bosom. It is that nice, and worth the money (it will be the last pan you will buy).

My wife got a DeBuyer Mineral B frying pan for her birthday. I was very sceptical about an iron pan without non-stick coating: I was sure stuff would stick and it would be a pain to clean. But I was wrong, very wrong. Preparing the pan for first use was very simple: just followed the instructions, it took 10 minutes. And NOTHING will stick to these pans, I've never seen a non-stick pan perform this well. The DeBuyer frying pan is by far, hands down, the best frying pan I've used. This is why we ordered this crepe pan too, which turns out to be just as good.

The crepe pan has a low rim which makes it easy to flip the crepes. The pan is light and therefor easy to handle. It is sturdy and the bottom of the pan is extremely flat. I don't see this pan warp unless abused. The handle is coated to prevent rust, but it will get warm/hot. Nothing sticks to the pan, it's really impressive.

We got rid of our coated non-stick cookware many years ago, and switched to using only stainless steel.We've had good luck with the Emeril stainless cookware, which has been durable and useful.For example, when using butter in the stainless Emeril pan, I can cook an omelette and have it release by just jostling the pan.Not really non-stick (stainless never is), but it worked well enough.

Until now, that is.We're cutting back on our use of butter, and have taken to using a light mist of oil (like grapeseed) in our cooking.However, using oil on stainless simply does not impart the same slippery effect as butter (or lard), so eggs and other foods stick instead of releasing.

After some investigation, I found these DeBuyer iron pans, which are thinner and lighter than cast iron, but which claim to have exceptional non-stick capabilities without any added polymer coatings.And they work GREAT.These are less heavy than cast iron, but are still quite substantial, made from very thick and durable iron.

They come with a coating of bees wax, which prevents rusting during storage and shipment.Removing the bees wax is a bit of a pain, and I resorted to filling a sink with boiling water and submerging them to melt off the wax, then wiping away any residual coating.Even though this initial cleaning is pain, it's a one time thing and it's a natural coating, so still preferable to polymer-based non-stick cookware.

The next step is to season the pan, which involves putting a shallow layer of oil in the pan, heating it until the oil begins to smoke, then pouring it out.This step was relatively easy, and again is a one-time thing.

After that, the pan is ready to use.The first thing I made was a thin, five egg omelette, cooked with only a thin misted layer of grapeseed oil in the pan.The eggs released easily, cooked evenly, and the omelette came out perfect.

The manufacturer recommends cleaning with hot water and a sponge (no soap, no abrasives, etc), and they clean up well that way.Then, similar to cast iron, you wipe a little oil on them and put them away until the next use.The oil prevents rusting if you don't use them for a while.These pans are similar to cast iron in that they season as you use them, and the non-stick properties get better the more you use them.

Are they as non-stick as teflon?Not quite, but close enough to work for almost any typical cooking need.Are they more trouble to clean and store?Yes, they do require a little care and feeding.Can you put them in the dishwasher?Well, you can, but it will strip the seasoning and encourage rusting, so you don't want to do that.

However, they are made of iron, and that's it.No polymer coating to flake off and ingest.No poisonous fumes to emit and cause harm (check the warnings for using non-stick cookware around birds, for example).And we're able to cook everything with a thin layer of misted oil, and so far nothing has stuck even slightly.We highly recommend this cookware, particularly if you're looking to get rid of polymer-coated pans due to potential health issues.
