Broil King PCG-10 Professional Portable Nonstick GriddleI love mine. It's big, so be aware if you have little counter space. I've got five in my family, and this grill is big enough for bacon on one side, pancakes on the other. It's easy to clean. I've had mine over a year, and have had no problems with the finish. Yes, it does have a hot spot on the left side, but I use it to my advantage. I've had some restaurant experience, and our flat tops were almost always at different temps. Something cooking too fast? Move it over! Put those sausages on the right, as it's a little cooler, and they take longer to cook.

I have had one problem: my probe thermostat went. I called the company, they took the date code off the unit (it was a gift from my Amazon wish list!), and sent a new probe out. The warranty was 30 months! Nice.

I say, if you're a heavy duty griddle user like I am, this is the TANK of the griddle world!

Wow.What a great cooking tool.This griddle is tough, heavy, big, and it works great.The flip down leg things work great to help drippings to drain.no wobble with the leg extensions up or down.It's thick so it takes a few minutes to warm up.I turn it on while prepping prior to cooking, so by the time I'm ready to cook it's up to temp.If you turn it on and expect it to be hot in 30 seconds, it won't be.If you're looking for a nice, polished, formal, "display piece" to impress the in-laws or the neighbors, this is not the appliance to purchase.The cast aluminum base has some burr's on the underside from the casting process.To grind them off and smooth it out would add cost,and the burrs don't decrease it's functionality (they're on the bottom!).The "Flimsy" splatter guard works great.it doesn't have to be sturdy, it only has to stop the splatter drops (which it does) thereby keeping my counter clean.the large cooking surface has a FEW minor marks, but nothing sticks to it.I coat it with veg. oil after each use and wipe it off prior to using.No problems yet.no issues with the coating coming off either.My pancakes are always evenly cooked (on a pre-heated griddle) and the long bacon pieces cook evenly too.

It's somewhat heavy.It's big and hard to store.these small issues are totally acceptable given the fact that this griddle cooks great and should last FOREVER.Treat it right, and it will treat you right.If you're looking to cook a big meal on a working, long lasting piece of equipment, this is the grill to get.my family thinks I am now the best breakfast cook.I should have purchased this a long time ago.

My 32 year old Miracle Maid griddle finally gave up the ghost.I tried my daughter-in-law's griddle but it was a mess.The pancakes stuck and it was a bear to clean.I went to the Cook's Illustrated site and found this one rated highest among the ones they tested.Well, I am so pleased with it.It cooks at an even temperature, it is easy to wash and it is large enough to cook eggs, bacon and pancakes all at once.It is a little pricy but so worth the cost.I recommend this product.

I purchased this griddle a few weeks ago so that I could finally sit down with my family to for Sunday pancake breakfast, and it delivered I can easily cook eight pancakes at once with flipping room to spare. But the size is only part of the story. The non-stick performance had me a little worried out of the box, as there were some "lines" on the surface that might have been manufacturing issues, but they seemed to just be cosmetic after some cooking they've faded, and the non-stick performance (new) is simply outstanding easily matches my good All Clad cookware for pure non-stick goodness and simple cleanup.

Another thing I really appreciate is how even the cooking temperature is. There are simply no hot spots on this thing, and if I really, really want to be picky, the temperature might fall off a bit at the very edge, but cooking eight pancakes gives me a great visual indicator from edge-to-edge, front-to-back, and there were simply no pancakes that had appreciably different cooking from each other. I both amazed and pleased.

The size makes this something that can be tricky to store we have an entire double-width cabinet dedicated to just this and my big electric skillet, and we have to tilt the griddle a bit to make it all fit. It's too deep to fit if you turn it perpendicular the cabinet door won't close all the way. So, be prepared to work a bit to find a place to store it.

But as a workhorse for a serious breakfast cook, I think this guy's a winner.

UPDATE UPDATE UPDATE January 2011

After living with this griddle for quite some time, I wanted to mention something I've run into. I still think this is a great griddle the even heating across the board is amazing, the temperature control is great. But and this is because I add a very thin coat of oil for browning my pancakes the non-stick surface gets a sticky residue that is T-O-U-G-H to clean off. I've tried just about everything, and so far, a paste of baking soda and water and plenty of elbow grease gets off most of it, but not all. I'd still recommend this griddle strongly, and the non-stick surface is holding up wonderfully even after many uses, but it's something to be aware of. I am sticking with the 5-star rating, however, as this griddle is still a winner.

UPDATE UPDATE UPDATE January 2012

Wow another year! This grill is STILL going strong, and making 8 big pancakes at a time many weekends. I've also used it for mass cooking grilled cheese sandwiches, yum. I have NOT used it for, say, grilling burgers, but as a pancake maker it continues strong going into its third year. I've just learned to live with the weird residue, and I guess the good news is: it's not building up and building up, but rather just got established early on and seems to stay about the same.

Yes! Today is our annual family New Year's Pancake breakfast, and so of course I thought I would update my review: YES it's still our favorite breakfast making monster machine. I use it pretty much exclusively to make pancakes and toast sandwiches, and it continues to excel. I have never quite learned the secret to remove the "build-up" of oil on the non-stick surface, but it doesn't seem to affect the cooking ability, and clearly it's held up after three full years of use, and we are now starting year 4. It's still a 5-star griddle in my book. The ONLY wear I've noticed is that the plug socket has darkened over time from the heat. The non-stick continue to work perfectly. Recommended.

The packaging is kind of what I had hoped for a thick plain brown corrugated heavy-duty box, clearly indicative of a more "industrial" grade product.I am so tired of buying China-made products in glitzy glossy boxes that simply fail to perform.Unfortunately, this American-made product disappointed right out of the box.The casting on the bottom side was rough.Bits of metal flaked off, and some sharp shards landed on my countertop.There are still sharp unfinished areas on the bottom that could have easily been buffed or ground out at the factory. Where the handle is attached to the underside of the cooking surface, the welds show through on the coated cooking surface and the non-stick surface is missing over top of these weld points.The splatter guard, which is an excellent idea and another reason I chose to spend the extra bucks for this unit, is so flimsy and poorly made that it is an embarrassment.Clearly an afterthought, the splatter guard "attachment" methodology is ill-conceived as it requires that you slide the sharp-edged metal across the coated cooking surface --funny, since the instructions carry the usual warnings not to use metal cooking utensils.Inserting the temperature controller was also a bit of a challenge, as the fit was way too tight.Ultimately I was able to insert the unit far enough to obtain electrical connection, but with great effort. At this point, I snapped a few photos and gave very serious consideration to returning the unit.Still, I am an American through and through, and wanted this unit to be great.So I seasoned the surface with a little oil, warmed the cooktop, then let it cool.A few hours later I turned the unit back on, re-oiled it again, and mixed up a batch of pancakes.Finally, some good news.The heating is uniform, relatively quick, and the temperature will go higher than many non-commercial department-store variety griddles.The surface is reasonably flat, and the non-stick coating worked pretty well.I cracked a couple of eggs directly onto the cooking surface, and they didn't run or puddle.Bottom line, if you want a griddle that gets really hot, that heats pretty uniformly, and that is made in the U.S.A., go for it... just be prepared for some possible trade-offs.The "fit and finish" is sub-par.The casting is rough and uneven.It would appear that removing and reattaching the splatter guard will soon scratch the non-stick surface. You may well be disappointed at the overall "gestalt" of the thing.Maybe the one I got was made on a Monday???

We've always loved scanpans. All their products have very durable non stick surface unlike normal teflon coated pots and pans. We purchased the professional set 8 months ago as we like the steel finish to the handles and lids. whilst we have no complains about the actual cooking surface, the biggest downside is that the metal handles on the pots and lids do heat up considerably. the set came with cloth holders etc, but it's inconvenient to have to put them on each time. One of the holder actually caught fire on our stove from an adjacent burner. My mother also burned her hand once when she picked up a pan handle which was close to an adjacent burner which had been on. The lids will be too hot to touch if you've been cooking with it on, but the end of the pan handles are cool enough to touch regardless of how long you've been cooking for. Bottom line is if you have metal handles/lids, it will conduct heat.

I learned from TV news that the traditional non-stick Teflon coating cookware can break down under heat or scratch off and cause cancer. Therefore, I have not been using them at all. I had changed to all stainless steel cookware last year. However, the food stick and can got darken easily (also cancer causing) and I have to use a lot of oil for cooking. I bought a few of this Scanpan fry pan about 3 months ago and I am happy with them. Last month, I bought the Healthy Legend Ceramic Coating fry pan and soup pot and tried it for 2 weeks. The Healthy Legend cookware seems to be even better made and the ceramic coating is even better. The Healthy Legend had a German made ceramic coating call Weilburger Greblon. Compare to the Scanpan's ceramic titanium coating, they are about the same for cooking, cleaning, durability. The Healthy Legend's coating is gray color. It is no problem to me but it is not traditional black color. The color didn't change during my use. I think you can do no wrong using either brand. However, I am not sure if titanium have small health issue. However, if I don't try to scratch the coating off, it should be pretty good. The coating for both are much more resistance to scratch off than Teflon. I found on the Internet the following information (Effects of overexposure to titanium powder: Dust inhalation may cause tightness and pain in chest, coughing, and difficulty in breathing. Contact with skin or eyes may cause irritation. Routes of entry: Inhalation, skin contact, eye contact.

Carcinogenicity: The International Agency for Research on Cancer (IARC) has listed titanium dioxide within Group 3 (The agent is not classifiable as to its carcinogenicity to humans.)

For now, I have total 3 Scanpans and 3 Healthy Legend ceramic coating cookwares. The Healthy Legend seems to be slightly better and cheaper. I will give you updates after a few more months.

Full disclosure; I'm a burner. About one out of three times I cook oatmeal I wander off, only to return to smoking blackened cereal. Normally that leads to soaking and scrubbing, but with the Scan Pan, I simply tipped the charcoal disk into my compost. The pan was clean. A miracle.

I purchased these pans last fall because of a recomendation from Cooks Illustrated magazine. I was not dissapointed! These area heavier weight and they do not warp. Wash by hand, as dishwasher detergent disscolors the pans. Order more than two, you can use them in so many ways! I could not find these in stores.

Count me as another person who bought this on the basis of a CI review. It's the best pan of its type I've ever owned. I regret buying only one. The CIA Masters 12x17 wire rack fits perfectly in it so that you can use it for roasting chicken pieces or chops with no trouble. (Make sure to use nonstick spray on the rack, and put some foil down on the sheet for easy clean-up).

It can be used as a cookie sheet, roasting pan, or jelly roll pan. Mine looks new and I've been using it for months. It's heavy and obviously excellent quality. You won't regret buying it.

Heavy Large Cast Iron Reversible Stovetop GriddleThis griddle is much more generous in size than any other griddle I have found. The placement of the handles provides a good compromise of cooking surface to handle.

Since it lacks that grease channel that most other griddles have, you gain that in usable cooking surface. You don't need a lot of grease to keep foods from sticking to cast iron, particularly the griddle side. Also, other griddles have a slight slope to them for that grease to drain toward the grease well . . . which means, lopsided pancakes.

The grill side is also more evenly spaced than other griddles and makes for great panini sandwiches.

The preseasoning was acceptable, but all cast iron gets better with age and more seasoning.All in all, a great griddle/grill and great price. I use it almost daily.Only regrets are that it's not a little bigger to fit better over electric burners and that it's not an American made product.



Quality of product is very poor.Hoping that after seasoning and using over time I will have a decent griddle.This is the only griddle that actually fits on my gas stove.The size is perfect.

I'm a very visual person and 1st impressions do last for me. A bit of pre-history: I looked for 2 10" quality pans for quite some time and found Circulon® Elite 8" & 10" Open Deep Skillet Set Reg. $80.00 Sale $39.99 on macys.com Thanks to my insightful husband who asked me to look the set up on amazon, I found out from the amazon reviews that the pans' weight was not centered and shifted toward the handle, which made them very unstable. Macys.com had glowing reviews for the set and noone mentioned such a major drawback. I really wanted to buy circulon pans, because according to reviews the quality was exceptional and they were on sale. I finally came across this set (Circulon Contempo Hard Anodized Nonstick 8-Inch and 10-Inch Skillets Twin Pack) and made up my mind to get 2 sets since I needed 2 10" pans and didn't mind to get extra 2 8" ones. The deal was really sweet: 4 pans for $60, no tax, prime free shipping and in 2 days I'm opening the box. The design is very sleek, the pans look sturdy and well-made, they are not light, but aren't heavy either quality stuff. I do not believe the pictures do them justice. I have not tested the pans in action yet, so there will be an update, but they look solid and stand flat on my crooked electric stove. When I placed the order, I felt like I was gambling, because you can't really see the quality from the images provided. Because of that, I decided to give circulon some free advertising for the sweet deal and attached several photos to make the decision easier for you.

4.5 months later.....

These pans are very different from the ones I used in the past.

(1) The major thing that needed some getting accustomed to was the fact that you'd hardly hear any "cooking" sounds unless your stove is on fire. I mean, on temps under med-high (electric stove)...almost nothing. Then you flip your food over and it's burnt.

(2) I learned fast that these pans heat up way more than regular ones, so if I used to cook something on 4, I'll go down to 2.5-3 for the same results here.

(3) It's not unquestionably non-stick. I fried an egg without adding any oil and it didn't really slide around. I cook eggs over easy and the egg york tore while being flipped over. No bueno! BUT a single drop of oil makes it truly non-stick. Besides, food does taste better this way!

(4) Absolutely true that cleaning is a breeze. I kind of even like doing it :-)

(5) A few times accidentally touched the metal part of the handle, where it attaches to the pan. It was H.O.T.!! My older pans have non-metallic handles all the way, so I don't know what's up with this design glitch.

Overall, after a week or so of adjusting my cooking techniques to this new purchase, I'm truly happy. The food cooks faster and crisper due to grill-like wavy surface of the pan. I would buy the pans again and highly recommend them, especially when they are on sale you won't find such great price/quality ratio. Subtracting one star, though, because there's room for improvement.

I want to warn the customers who are looking for non-teflon cookware that the non-stick feature of this Circulon Hard Anodized Skillet is actually from a coating using DuPont's technique, which is the same as Teflon pans, and not from the anodized aluminum.

I was trying to get rid of all the teflon cookware in my kitchen and looking for replacements. I read some online articles saying hard anodized alluminum cookware is safe and strong to withstand scratches and therefore long-lasting. That led me to this product. On the Amazon webpage, there was NO any description of COATING on the skillet, so I thought the anodized construction could yield non-stick feature for the pan. Plus almost all the reviews are very positive so I purchased this twin pack. However, after I received the product, I read through the product description on the package very carefully. It clearly says that the surface of the skillets were treated using DuPont autogragh technique. Because I know the teflon coating was first developed by DuPont, I immediately realized that there is a teflon coating on the pan that makes it non-stick. I also called and asked the company about this and got confirmed.Of course I was very upset with this and decided to return this item right away. The good thing was I could print return label online and drop off in UPS store without any charge of shipping fee for return. I am still waiting for the product to arrive to Amazon and getting my refund back. Hope this review will help someones like me who don't want teflon coating cookware.

I have used these pans for a few weeks now I have to fight for them from my husband who thinks they belong just to him. Nothing sticks to these pansthe pans are great. Just a little problem of balance on sm pan does not lay too flat on cook stove but this could be my stove creating this; no big deal for this price this good cook wear. Thanks Amazon

Starfrit Heritage Renaissance Cast Aluminum Non-Stick 9.5 Inch Fry PanWe went out on a limb when we bought this skillet since there were no reviews here, and it wasn't top of the list at Consumer Reports. After a year of frequent use, we can say we have no regrets and have been well pleased with it's performance. The pan weighs about three and one half pounds. Much lighter than cast iron, but heavier than the Martha Stewart skillet we also have, which warps under the heat. We use the Starfrit on a smooth top stove, and it sits flat and browns amazingly evenly. The non-stick surface is working great and shows no signs of wear or peeling. Minor nitpicks are that it's a little hard to clean because of the dimpled surface, and the handle is a bit short to keep large hands off the hot metal. We assume the golf ball cooking surface is part of it's function, and it cleans easier if you use a nylon brush. Other than that, the only deduction would be the price. We won't know if that's justified until I have it for a couple more years. Loving it for now, though.

Old Mountain Pre Seasoned 10119 Two Burner Reversible Grill / Griddle, 20 InchI didn't dislike this unit. It's advertised as being 20" in length. However, the cooking surface is only about 16" X 7", which is much smaller than I wanted. I returned the item and got a Lodge Logic double-burner griddle/grill. It wasn't because I disliked this unit though. It was simply because I wanted a larger piece of cookware. I would still recommend the product for people who aren't looking to cook huge quantities at once. If you want to make pancakes, which I love to make, you can easily make two at a time. You can also cook about 3 medium-sized hamburger patties or 2 smal steaks at once.



I bought one of these as a gift for my mom. She loves it. She was overjoyed that it came pre-seasoned. (She's old school and all of her past cast iron she had to season) Her one complaint is that the grease trap lip is alittle too shallow. Not a problem, can just be messy. All-in-all a great product.

Great grill and the quality of the manufacturing is good versus most of the other in the market. Pre Seasoned bit is a questionable since it had a little rust when I got it, but once I conditioned and cleaned thoroughly it has been great.

I received my reversible grill/griddle for Christmas and have used it atleast a dozen times.I have had no problems with this.I have a gas stove and cooked chicken, steak and even grilled vegtables.It beats going outside during the snowy months is Maine.

If you like kitchen products designed by someone who obviously has never cooked, then, this griddle is for you. Do you want to make french toast? You can only make 4 at a time using standard-sized bread. If the grease trap was part of the usable cooking surface, you could make 8 at a time. Do you want to oil or butter the surface for cooking? Too bad. If the griddle isn't perfectly level, your butter will be lost in the trough on the edge. Granted, it cooks very well, but, all cast iron should do likewise. It's simply too narrow if you're cooking for more than one person, and very wasteful to see your butter/oil become hopelessly lost to the non-cooking surface. The trough makes this a waste of time and money.

We love our bacon nice and crisp, and this little press does the job great and seems to speed up cooking time (perhaps because the cast iron "holds in the heat" while the bacon fries?).

Bacon was crisp and delicious; the press prevents bacon curling and relieves you of the neverending task of flipping bacon over and over and over again when cooked conventionally.

This press is a great addition to my kitchen; only gave it 4 stars, simply because it isn't quite as heavy as I would like, although it still performs well.

Just make sure you season it before first use (directions in the box---just oil the press, oil a frying pan, then heat both together on VERY low heat for 20 minutes.

Allow to cool and wipe excess oil off press).But don't use it with nonstick pans!

I bought this bacon press from Williams Sonoma and be warned--the screw holding the wooden handle on rusted out.The handle will not stay attached to the screw which makes the press pretty much useless. We followed the exact cleaning instructions to keep it from rusting, but it happened anyway.While this is a great looking product and worked well for a little while, it is now trash.

This item really helps create crispy bacon that's super flat, which I love. I'm not sure for certain, but I could swear it's also cut down the cooking time, which is also a plus. The only downside is that it's a little difficult to store after usage. Since it's cast iron, it can't be, or shouldn't, be cleaned, but only wiped down. This leaves the item greasy, which is fine if you have a place to keep it that doesn't get other things greasy at the same time. I've taken to putting in a Tupperware, which I don't really like, but it works. Overall, I would definitely recommend this product! Oh, and it's a totally cute pig!

Amazon, themselves, were wonderful. They provided shipping back to their facility and send out another identical product in it's place at no additional charge to myself.

The second arrived unscathed. On the second run of making quesadillas; we hear a loud shatter type sound. The unit must of had a weak spot and caused a 4 inch long crack from edge inward toward center of unit rendering it useless.

In the end; the unit is not to par and I recommendLodge Pro Logic Pizza Pan which serves same as griddle (no grill side(obviously)). Worth it

This is a nice griddle. All surfaces are smooth and it cooks nicely. I had one disappointment and it has to do with packaging for shipment. The griddle arrived in a fairly lightweight, very skimpy box and as a result a 2 inch piece of the rim was broken off in shipment.

It is heavy and it takes 10 minutes to heat up, but it produces very nice grill marks and that mass provides even heat.I preheat the grill on high on the stovetop for steaks, and preheat the oven at the same time to about 300.Brown the steaks quickly once the griddle is hot, then place in oven to finish unless you prefer rare.Nice grill marks, and the griddle is easy to pick up (but hot and heavy and you need good mitts) when the grill side is up.However, when the grill side is down (the smooth side is up) this griddle is darn hard to lift off the stove top because the handles are flush with the stove top if you have a glass top stove.I have to slide a thin spatula under the edge to pry it up enough to lift it off the stove top.This is a tricky task especially if the griddle is hot.

I can understand the previous not-so-favorable reviews, however I did not have a hard time conditioning the pan or keeping it up. The only time it got funky was after I left it outside, my own fault completely. I can say though that regardless of the time it spent outside it was fine after a little TLC.

To get to the point... this pan rocks. Im a 36yo guy living in downtown Chicago that takes advantage of the best steak restaurants in the city. Id like to think I have a fairly sound opinion on the bone in ribeye. This little grill pan when used the right way works flawlessly. The trick on steaks is the initial sear, youve got to slap them down on something well treated, and ridiculously hot. Resting this pan above a charcoal (gotta be briquettes) filled smoker base will get this thing glowing pink. Depending on the thickness of the steak (4-5min for 1.5" thick) is the time it needs to stay on to reach a perfect sear. Pull em off, let sit for the amount of time it takes to knock back a High Life and youre good to go.

Happy I got this one. Its a nice size too. It did take a while to get it seasoned but worth the wait. As for shipping mine came just fine.

I like the fact you can grill on one side like steaks and use the other side for pancakes ect...NICE for home or camping.

Earthchef Montane Frying Pan

BergHOFF Earthchef Montane Frying Pan, 10.25'The Berghoff seems well constructed. I have not tested it on a high technology stove, but it looks like it was built to work with one. In use it comes pretty close to Teflon in performance at Teflon's recommended operating temperatures, although just a little bit less non-stick than Teflon. So far it washes as easily as Teflon. The Berghoff can be used at temperatures that exceed Teflon's limits, although high heat may not be the best way to cook. There is no dedicated lid, although a Nordic Ware Restaurant 10 inch Brushed Stainless-Steel Lid fits pretty well. The bottom plate picks up some residue at high temp on my stove, but the exterior's durability seems confidence inspiring so far. Long term durability and functionality of the interior remains untested.

2/1/12

Berghoff and Orgreenic treated with high-temp safflower oil, 25 minutes medium to medium-high heat.

2/2/12

Eggs, low-medium to medium heat.Light application of olive oil.

Cooking:All required a spatula to flip.

Farberware & Orgreenic tied.

Berghoff slightly more sticky with thin bits on egg clinging to pan.

Cleanup: Interiors of all easily cleaned up with soapy water and soft sponge, more easily than the nylon Good Cook spatula.

Exteriors: The ceramic pans show some persistent residue from the previous seasoning.The metal exterior bottom of the Berghoff looks a little better than the gray exterior bottom of the Orgreenic, which is showing a lot of little chips.

The metal bottom of the Farberware pan looks cleaner, probably because as a Teflon pan settings higher than medium are always avoided.

2/4/12

Eggs, cheddar cheese, sliced garlic, cayenne pepper. Between medium and medium-high heat. Light application of olive oil.

Pans rotated between burners to try to equalize cooking temperature.

Both required a spatula, but non-stick performance was about equally good for the Berghoff and Orgreenic. The Orgreenic seems to cook a little faster.The Farberware pan did not participate, because it is assumed it would probably be non-stick enough up to medium heat, but it should not be used above that setting.

Cleanup: Interiors of both easily cleaned up with soapy water and soft sponge.The gray exterior bottom of the Orgreenic is showing more wear.

I gave both pans another treatment with safflower oil, this time at high heat. My burners smoke, but the oil does not.

Light application of olive oil. Medium high setting. Farberware Teflon pan is excused from participating. Thin steak, no lids, add onions near end, add Salsa Brava. Orgreenic seems to cook a little faster again. Berghoff shows more stuck, cooked, meat juice residue.

Cleanup: Although the Berghoff looks a little uglier going into the sink, interiors of both equally easily cleaned up with soapy water and soft sponge.

Olive oil, potato slices (about ¼'thick), medium-high heat.Orgreenic seems to brown them faster than the Berghoff. Very non-stick with both pans.

2/9/12

Light application of olive oil. Medium high setting. Farberware Teflon pan is excused from participating. Thin pork loin, no lids.After meat removed, followed immediately by sliced potato. The Orgreenic seems to cook a little faster again, but it is producing more blackened residue, and it looks a little uglier than the Berghoff going into the sink. The Berghoff washes easily with soapy water and soft sponge.The Orgreenic mostly cleans well, but some traces of blackened residue are resistant.The rougher side of the sponge seems to clean it off okay.

I reseasoned both pans at medium high with canola oil. Unlike the other oils, this one does smoke, more so with the Orgreenic pan, and canola has a rather foul, fishy odor at that temperature.It also seems to cook up a little patch of previously unseen brownish residue on the Orgreenic pan.After cooling, an application of the rough side of the sponge and hot water seems to remove it.

Sitram Profiserie 9½-Inch Stainless Steel Lid has arrived from Amazon.

Gave both ceramic pans another treatment with safflower oil to help flush out any remaining canola oil.

Light application of olive oil. Medium setting. Frying pan lids. Sunnyside up eggs, one each, all three pans.

Both the Berghoff and the Orgreenic need a little bit of assistance from the spatula, but then slide easily. The Berghoffhas a little bit more residue. The egg is able to slide on the Teflon Farberware pan without the spatula.

Cleanup: Equally easy from this experiment. The Orgreenic is showing a tiny bit of persistent dark residue on the interior edge near the handle, probably from the previous experiment.

Exteriors, bottom: The Farberware shows hardly any wear or residue. Both ceramic pans show some persistent residue, possibly caused by higher temperature experiments. The Orgreenic's plain bottom with the same finish as the sides is showing a lot of little scrapes.

Measurements:

Farberware Nonstick Aluminum Egg Poacher (with poacher and lid removed) has outside diameter of the lid lip of about 7 7/8 inches, nearly vertical sides 391g

Telebrands (5827-6) 10" Orgreenic Frying Pan has outside diameter of about 10 inches, curved and sloped sides.665g

BergHOFF Earthchef 10.25" Montane Frying Pan has outside diameter of about 10 7/8 inches, curved and sloped sides. 973g

Lids: The Farberware has a dedicated glass lid.

The RSVP Stainless Steel Universal Lid-7 to 12 Inch sits flat enough on either ceramic pan, but on each the angled handle forces it to be off-center.

The Nordic Ware Restaurant 10 inch Brushed Stainless-Steel Lid fits well on the Berghoff, but the inner portion is too wide to sit well on the Orgreenic.

Sitram Profiserie 9.5-Inch Stainless Steel Lid fits the Orgreenic pan. Not perfectly, a little bit wobbly, but best so far for this pan. If they made a 9 inch lid, it would probably be just right.

I was quite happily making fried eggs with almost no oil just minutes after getting this pan. Nothing stuck, and the pan was quite easy to clean with just a wet sponge once it cooled down. Just as easy as any PTFE-based pan I've used in the past. The pan itself is well-designed, and it works perfectly on my induction cooktop. (The first non-PTFE non-stick pan I've found that DOES do this successfully!)

I've noticed that most of these non-PTFE pans get very good reviews at first, but often start breaking down within a few months. I'll be sure to edit my review after a while either way, to note whether the pan is failing or not, and adjust the rating if needed...

Apr 30, 2012 edit: I've had the pan for about 6 months now. The non-stick coating is holding up quite well, in my opinion, though it does seem to have degraded slightly since it was new. I've noticed that small bits of food will occasionally stick...but these just wipe off with a sponge.

My only complaint (as noted in the comments) is that the bottom does bulge a bit towards the center, so liquids pool around the edges somewhat...making it easier to burn things in the center if you're not attentive. I'm otherwise extremely happy with this pan, though!

Scan Pan used to be my go to pan but not any more. The Earth Chef pan is now my go to pan. It's non stick coating is far better than any of the others I've had including Calphalon, Cuisinart and All Clad. I use scrambled eggs as my test for non stick success. This pan does it all from searing to sauteing and it's reasonably priced compared to the big names. I highly recommend it.

I bought this pan because Swiss Diamond cookware was top rated by Consumer Reports in their latest cookware test. So far, no matter what I cook in it, it just wipes clean. This size is great for scrambling 1-5 eggs and is also great for making a single grilled cheese sandwich. It has the slipperiest surface of any pan I've ever used. Metal utensils can be used with it too, though I haven't done so. The mfg mentions that it is dishwasher safe, but then says if you routinely run it through your dishwasher, the finish of the pan will degrade over time. In any case, since it just wipes clean, there's no need to put it in the dishwasher.

Calphalon 12-in. Commercial Hard-Anodized Stir Fry Pan

Calphalon 12-in. Commercial Hard-Anodized Stir Fry PanI purchased this wok because Calphalon is a decent brand. It turned out that the non stick property is fair. It's non-stick to vegetables but not to meat. However there is no chemical layer that can easily fall off with this product. So this is trade off. I searched all the woks, and asked friends around. It seems that there is no perfect wok. I returned it because it does not meet my expectation atthis price,and they charged me $15 for returning. But later I found that the other woks have problems in other aspects as well. The size of the wok is good, it's very heavy. Just don't have very high expectation on it, you can use it.
