This is the only pan I use now. I'm working on the theory that if I need a 10", that's too much food for me. It cooks 2X 3oz.-5oz. just fine. I've discovered that when I heat sandwiches, I can pretty much turn the heat off after flipping the sandwich one time. There is so much residual heat that it keeps right on cooking! This past summer, in order to keep kitchen heat down, I would run the pan under cool water for a couple of seconds after using. I've done this many times now and I don't think I'm shocking the pan all appears to be working at the 110% quality mark. Even the handle is super comfortable... After some serious research I purchased one of these hard-anodized non-stick French pans for my restaurant to test it out. 2 weeks later, I purchased more for a total of 6 pans. They are incredible! Even heating, very sturdy and cleans up with a wipe, even on the outside of the pan. I never submit reviews...but this pan was so exceptional for its quality/price/value ratio, I felt I needed to step up and tell others. I use my pans constantly. thought I would give tis a try because of the reviews I read about this product. The 8 inch Excel Steel pan is light weight but doesn't work so good.Maybe it isn't seasoned well.Food sticks unless I use lots of oil. Yuk!I thought I was buying a Starfrit cast iron light weight pan to match my 11 inch Starfrit cast iron pan.I can really tell the difference when cooking with them.The Starfrit is much better.Nothing sticks. I received the Bee Wax coated model. I boiled a few batches of water to totally immerse it and remove the wax (and wiped it with paper towel) before seasoning.
The bottom is about 8" which matches perfectly my professional (second-hand) induction cooker.
I can fry raw potato slices much quicker than with any other pans.

I bought my Scanpan set 10 years ago.I love it when it's new.It cooks evenly and it's truly non-stick.My issue is that after about three years of normal cooking, the ceramic coating starts to bubble and flake off.I now have to send this back to them on my dime for replacement.To me, a lifetime guarantee means I shouldn't have to keep doing this.I have recently replaced my entire set of cookware with another non-stick set.I bought a few pieces of the other non-stick three years ago at the same time I sent several Scanpan pieces in for warranty replacement (again).The other/new set of cookware is going strong and is not in need of replacement.My scanpan is now a very expensive, though nice, set of camping cookware.
For the record, I hand wash my cookware, I don't use non-stick sprays, I only use nylon/plastic or bamboo utensils, and I never use high heat.The long-term performance of this cookware is unacceptable.

I learned from TV news that the traditional non-stick Teflon coating cookware can break down under heat or scratch off and cause cancer. Therefore, I have not been using them at all. I had changed to all stainless steel cookware last year. However, the food stick and can got darken easily (also cancer causing) and I have to use a lot of oil for cooking. I bought a few of this Scanpan fry pan about 3 months ago and I am happy with them. Last month, I bought the Healthy Legend Ceramic Coating fry pan and soup pot and tried it for 2 weeks. The Healthy Legend cookware seems to be even better made and the ceramic coating is even better. The Healthy Legend had a German made ceramic coating call Weilburger Greblon. Compare to the Scanpan's ceramic titanium coating, they are about the same for cooking, cleaning, durability. The Healthy Legend's coating is gray color. It is no problem to me but it is not traditional black color. The color didn't change during my use. I think you can do no wrong using either brand. However, I am not sure if titanium have small health issue. However, if I don't try to scratch the coating off, it should be pretty good. The coating for both are much more resistance to scratch off than Teflon. I found on the Internet the following information (Effects of overexposure to titanium powder: Dust inhalation may cause tightness and pain in chest, coughing, and difficulty in breathing. Contact with skin or eyes may cause irritation. Routes of entry: Inhalation, skin contact, eye contact.Carcinogenicity: The International Agency for Research on Cancer (IARC) has listed titanium dioxide within Group 3 (The agent is not classifiable as to its carcinogenicity to humans.)

For now, I have total 3 Scanpans and 3 Healthy Legend ceramic coating cookwares. The Healthy Legend seems to be slightly better and cheaper. I will give you updates after a few more months.

As has been mentioned in a previous review, the non-stick coating flakes off after a few uses. I was able to get replacements from the manufacturer, but the same thing happened with the replacements. After a few uses, the poor quality of the non-stick coating fails and makes this appliace a total waste of money and time.

My husband has wanted a sandwich maker for several years, and I have always said no because I hated how the food would slip into the cracks and you could never clean it thoroughly.I am so excited about this appliance because the plates are removable and you can get to any crack and crevice you want...for those insane cleaners like me!!And the perks are that we get 4 different plates!We've used 3 so far and they are all great!Thanks!This product fails to heat in the promised time.Pancakes and waffles don't brown.When I tried to make a grilled cheese sandwich, the cheese melted before the bread browned.The sandwiches were soggy and I'm still trying to get the cheese off the appliance.Moreover, the instructions are inadequate. The pan seemed well-made.It comes with elaborate instructions, e.g., "don't cook on higher than medium" and "don't use non-stick sprays," which we arefollowing (to the extent we can remember them all), but still certain foods stick, like scrambled eggs -the main thing most people buy a pan like this to cook, I'm guessing.We're still working on how to use this best, but do like that it is supposedly better for our family.The stuck on eggs come off ok if you are gentle about it.But people expecting a perfect non-stick experience may be disappointed.Updating this, this pan should only be purchased by people who don't cook eggs for breakfast, and who like to spend a lot of time cleaning and trying to safely scrape pans with soft implements. I was given a circulon pan by a sympathetic family member who didn't want to see me hit somebody with this pan in a fit of rage.The circulon pan, also with care instructions, works beautifully.
Emeril Stainless Steel 4 Quart Chef's Pan
While I was there I looked at the Emerilware, and really liked the handles. I found this pan here on Amazon one of only two 4 qt Chef's pans that I was able to find (the other one was a Calphalon Contemporary that was $159.99 WAY too expensive for me) and based on the good reviews, decided to buy it.
I used it tonight to cook brown rice, and there are some things that I really like about it. While I was skeptical about the disk on the bottom being so much smaller than the diameter of the pot, I found that I could use the small burner on my electric coil stove on high to bring the water to a boil, and then turn the heat down to low for the rice to cook. It cooked evenly and the rice was done much sooner than it is in my older pans. But then, it could also be because I could see through the glass lid (I like glass lids) and was able to tell when it was done, without depending solely on the timer.
Also, I have rheumatoid arthritis and not a lot of strength in my hands, so I really liked the helper handle. Though the handle on the pan lid got hot, the handles on the pan itself remained cool.
So then, why the three stars? After the rice was cooked, I took the lid off the pan and used a metal cooking fork to fluff it up. I always do this, and it was NOT done in an abusive manner. After I washed the pan, I noticed two pits amongst some scratches on the bottom. I could also feel a spot that had what felt like a "burr" on it. Now, I understand that scratches happen on stainless cookware, and I really don't have a problem with that.
However, the pits, IMO, should never have happened. I took the fork and one of my older pans (an Amway Queen multi-ply 18/8 stainless saucepan), and whacked the bottom of it quite vigorously with the pointy end of the fork tines, several times. It left no marks at all.
When I tried the "fork treatment" on the bottom of the Emerilware (ONLY once, and nowhere near as hard as I did it on my old pan I wanted to see if the fork was the culprit), I ended up with a nice row of three tine marks! It just makes me sick...I know it's not the *best* quality cookware, and I didn't expect top-of-the-line All-Clad quality at this price point, but this is stainless steel and you should be able to use metal utensils in it without causing this kind of damage to the surface. At this rate, it will look like it's been through WW III before the month is out.
I'm going to call the company tomorrow and see what they have to say about it, but if they're not helpful, I'm packing it up and sending it back to Amazon.
Too bad. Like I said, I really wanted to love this pan...

Well, after reading some other reviews of Emerilware Stainless, talking to my husband, and sleeping on it, I've decided to keep it. While this line used to be decent, it seems that in the last year the company has "cheapened it up" (because, you know, we need more cheap Chinese crap), and when I checked the Amazon return policy, I would have to forfeit half my money. Hubby's laid off, and I'm not willing to do that. Plus, I haven't found any affordable alternatives.
There are still plenty of things I like about the pan, so I'll just think of it and treat it like an inexpensive non-stick pan no metal utensils, and if it gets too bad, I'll replace it.I previously purchased the three quart Emerilware Stainless Steel Saute Pan with glass lid, manufactured by All-Clad, several months ago and was very pleased with the quality, heft, feel, and the cooking and cleanup aspects of that pan.
I ordered this Emerilware Stainless Steel 4 Quart Chef's Pan two weeks ago and am very happy to report that it is the same great quality as the first one, and cleans and cooks as just as well.
I've ordered many pots and pans over the last eight years and can honestly say that I would have saved myself hundreds of dollars if I had known about the Emerilware Stainless Steel line.
As someone else on this forum stated, it is All Clad quality at 1/4 the price.

Anything smaller is a waste of time. This saucier/chef's pan is a generous size which allows for proper evaporation of liquids while reducing. It is also a great all-purpose pan that can be used for all manner of cooking. The rounded bottom is perfect for stirring, and it provides a nice lip for attaching a thermometer a plus if you're making a syrup or candy and need to keep a close eye on the temperature. This is, however not a deep fry pan, so be careful with heat. Also, be sure to allow water to boil before adding salt to prevent ugly pits in the bottom of your pan..

This little skillet is the best investment I have made in years. It is just large enough for two people. Since my husband and I are retired it is the perfect skillet for corn bread for two or for a large "biscuit" that would be equal to about four regular sized biscuits. I have used cast iron skillets all my life and have many sizes but this one gets used more than any skillet in my kitchen. I would highly recommend this product.

This is my 2nd lodge logic product (first being a 12" skillet) and I love it. It just the right size for bread and eggs and forpan frying small quantities. There are also definitely areas where it doesn't heat even, the surface that sits over the burner cooks great but the area in between takes a lot longer to cook. Make sure to take your time to heat it up, because it does take a little while but once it's hot you're in business. Please note that it takes a while to cool down as well, and when it's hot be careful!
A plus is that I can use metal utensils, which I highly prefer over plastic. It's a good size, and fits on my stove well.

This is a product that really begs the reviewer to mention pros and cons, so I will mention the most notable of them, starting with the negatives so I can finish with the good points:
CONS:
* This pan is heavy! Six pounds.
* Comes without a whisper of information on care or use of the product (this is not acceptable).
* The stainless steel handle stays cool and is easy to hold, but it seems to be just a bit loose from the get-go. Anyone have a foot-long screwdriver I can borrow?
* Speaking of the handle, does it have to be QUITE so long? I have room to store it, but do you?
* Takes some soaking and scrubbing to clean.
* The sides are low and there is some spatter, though less than I expected.
* Arrives from Amazon in a carton that's almost as big as a kayak.
PROS:
* It's sturdy; not going to warp or dent or deteriorate. Investment kitchenware.
* It's preseasoned and cooks beautifully with minimal oil.
* Works on any kind of burner (mine is electric).
* I love my black one but it does come in several bright enameled colors too.
* According to the Bodum site, you can put it in your dishwasher (if the handle fits).
* Though the price is steep, it compares favorably to other top-quality brands of cast-iron cookware.
So if you have the muscle, and the space in your kitchen for a specialized item like the Bodum Chambord grill pan, go for it because this is an excellent piece of equipment that you're sure to enjoy using for years and years.

()I love this because most of the grease that used to be on my steaks is now at the bottom of the pan. The only thing that would improve this is if they made a lid for it, because I feel like the grease is floating aroundthe kitchen everytime I cook meat without a lid. It is really well made though and should last a lifetime. Don't drop on your toes or you might break them since this is really heavy! If it wasn't this heavy though, it wouldn't last long. It's really easy to clean too.

()I've never been a big fan of grill pans I've always found that they don't sear well and are generally disappointing when compared to grilling on a real grill. The Bodum Chambord is the first grill pan I've used that works as advertised. The substantial cast-iron build means that once the pan gets hot it retains it's heat so it cooks the food faster, the small size means that it is easy to store in the kitchen and the grilling surface cleans up very easily. I've grilled everything from veggies, to burgers and dogs to sandwiches and they all came out great.
If you've never used a cast iron pan before they take longer to heat up so you have to be patient before you put your food on. The upside to this wait is that the pan also takes longer to cool down. While this pan isn't stuitable as a total relacement for a grill it's a nice option if you just want to grill indoors. I couldn't be happier with this pan.
()I am a vegetarian so I am not cooking steaks or chops on this pan, but I do cook things like veggie burgers and grilled cheeses, etc. I like the pan, although there are two things about it that are somewhat bothersome: you have to be extremely careful to cook your food evenly on it, otherwise the food easily burns and this makes for a difficult clean up. And, speaking of cleanup, the pan is difficult to clean in general, especially when food gets between the grooves; the other night I cooked some sauerkraut next to my veggie burger, and it was a minor nightmare cleaning the sauerkraut remnants later. So as long as you're careful not to let items burn and as long as you're choosy about only cooking items that won't be terribly difficult to clean up after, this is a good pan. I use it often and like it, even though I feel like I have to be especially careful when using it, in a way I wouldn't with another pan.

HERE ARE THE PROS:
1) If you're cooking meat, it keeps it above the oil. And it cooks it evenly, too.
2) The secondary handle makes it easy to lift and drain oil out of the pan.
3) Grilling vegetables is very simple -and they come out looking like I went to the trouble of borrowing my neighbor's barbeque.
4) Clean up is quick, *if* you wash the pan while it's still warm. (Don't allow it to sit with grease on it. No. Do not. It's NOT fun cleaning it cold. I speak from experience.)

Cuisinart Chef's Classic Sauce Pans
It heats evenly, and stays very warm even after sitting away from the burner for a while.
The quality of the stainless steel is great and the pot is easy to clean in that it is stainless steel.
But, it does have its flaws.The negatives have to do with the rivets, especially on the lid, which are large to the point of absurdity, especially for a pan of this size.I was raised with riveted pots and pans, and the rivets were never an intrusion back then.
The lid's rivets make it more difficult to clean.The way they're attached on the outside is sloppy, and unnecessarily bulky.They stick up, and catch on sponges and cloths.This irritates me no end.
This is not a cruel and unusual complaint, but a statement of fact.I am surprised that a company like Cuisinart would be so careless in design.I own another item from a different line of theirs, the Everyday line, and it's the best pot I've ever owned, and that includes my Le Creuset ware.
If it were the only pot available in this size and quality of material, I would buy it again...just because it's hard to find a one and a half-quart saucepan with a lid, for some unknown reason.There are myriad one-quart pans available all over the place.
The price is fabulous!Really fabulous!
Postscript to this comment: I use this saucepan nearly daily.I actually have come to like it very much.If I could rate it again, it would get a four.If it weren't for the annoying rivets, it would be a five star item.The overall quality is unquestionably excellent.Cuisinart Classic Stainless is the next best thing to All-Clad that you can get according to Cook's Illustrated (makers of the PBS show America's Test Kitchen). They're very beautiful, shiny, heavy, and best of all---they perform wonderfully. They hold a simmer very well, and my food doesn't burn.
Most of the Cuisinart Classic Stainless pots and pans go for WELL OVER $100 EACH at stores like Bed, Bath, and Beyond as well as Linens 'n Things. Buy these at Amazon! I was delighted to see most prices from Amazon were between $20-40 instead of $120-150 at the other stores. Then consider no tax, no shipping costs.... what a bargain!

I have just about every piece in this line and I love it..the pans all cook evenly and with less heat than any other cookware I've used. Keeping it shiny and beautiful is easy..just follow the instructions that come with it. A little bit of white vinegar after washing keeps it sparkling. I don't have a dishwasher and it's easy to clean. The ONLY drawback is that you have to use a towel of pot holder to lift the lid when they're on the stovetop because they get hot. I've recommended it to friends and they love it, too. You can go from stove to oventop. It's very versatile. Buy it! You can't beat this price.

I'm really glad to have replaced my non-stick with the Cuisinart pans. I have been increasingly concerned about the safety of non-stick. I was really scared that they would stick and I would have to scrub them, but they've been really good so far. I'm not crazy about the hazy look that the bottoms get inside, but I know it's because I cook on med-high heat and I need to get some Barkeeper's friend. Like the Chef's Classic set I'd bought from Cuisinart through amazon.com, this is a BEAUTIFULLY made piece of cookware with a snug-fitting lid. The bottom is thicker than the walls. It's so beautiful out of the box you hate to use it! But when you get around to breaking it in, you'll find that the heat transfer is fast and EVEN. The snug-fitting lid is a genuine delight, after a lifetime of using crappy cookware I realize what I've been missing. If you love to cook, this saucepan will put a BIG smile on your face! Some of the best money I've ever spent.
