KitchenAid Gourmet Reserved Hard Base Round Grill Pans

KitchenAid Gourmet Reserved Hard Base 11-Inch Deep Round Grill Pan, RedI've been wanting a grill pan for quite some time and since putting my outdoor grill 'to rest' for the winter decided it was a perfect time to purchase one.An excellent decision as this deep sided grill pan exceeded my expectations! The secret to using the grill pan is to only use medium to low heat and always use a splatter guard.Steak, pork and chicken, turn out perfectly cooked and juicy.Beats using the oven broiler as there is less clean-up and no smoke. This was an excellent purchase with a great price.

At first I thought this pan was too light, but after using it have found it to cook quickly and evenly. The coating has held up well too and I use this pan a lot. Comes in very handy when the weather outside isn't cooperating with grilling outdoors. Kitchenaid comes through again with this pan.

Calphalon 3-pc. Unison Nonstick Sear and Slide Essentials Set with Lid

Calphalon 3-pc. Unison Nonstick Sear and Slide Essentials Set with LidThese pans are not light weight, thin sided aluminum. They are as thick, but not quite as heavy as my cast iron. So far I've not had to heat these above medium heat, and I still got a nice crusty sear on scallops and salmon on the sear surface pan. The slide pan works just as well on medium as any other I've used on high. These pans are a little on the pricey side for me, and the price seems to be locked in, same here as BB&B, the outlets etc. They don't appear to be prone to warping. I'll try to remember to edit this review in a few months to comment on the nonstick surface longevity.

UPDATE:

Well it is three months later. The pans still look fine, not scratched, scorched or warped. No metal utensils were used in them, never heated over medium. Only difference is, they're not non-stick anymore. I still use them, they are fine pans, just not non-stick anymore. I'll contact customer service at Calphalon to see if I can get them replaced as they are not abused. I will post my experience here as it may be instructive.

Great replacements for two of my favorite Calphalon Professional Nonstick pans losing their nonstick coating, after 10 or so years of use. Will send them back to Calphalon for replacements, but I have no idea what they will send back, if anything, under lifetime warranty.Meanwhile, these are great. Not so heavy, longer handles and helper handle on saute, which is useful.Liking the tempered glass lid, too fits both pans.$99 for two premium pans, plus the lid, is a pretty good deal.

I have not really discovered the "sear" quality of the one pan yet. But 2 nice, heavy, 10" pans with a quality lid that fits both is a deal. I can see them lasting a good while.

Great cookware. I have used it for several weeks. Perfect size for me. The nonstick works perfectly, I use nylon utensils and there is not a mark or scratch on the nonstick coating. Super easy cleanup.

Set Of Three Frying Pans Black Carbon Steel Non Stick

Set Of Three Frying Pans Black Carbon Steel Non StickGoods the price per piece is fabulous and they appear to be holding up quite well now as I've used them frequently. They are a bit shallow, but that can be a balance of good and bad.Downsides:They are not supposed to go in the dishwasher (tells me it will kill the non-stick coating which I've seen on other pans so I am not going to risk it). Also the biggest pan tended to warp when it got hot; it will bend concave and lift of a flat burner when it's hot (clearly not ideal as it won't absorb as much heat!) but still I prefer steel construction over aluminum anyway for the health reasons.

Reveived this product and was very disapointed in the quality, sent it back, and as 02/04/2006 have not received a credit from Amazon. I have a RO from your contractor.

These pans are really too light and the non-stick coating is too thin. They wore out within the first few weeks of regular use.I was going to put them in with my camping gear, but don't want to be stuck out in the woods with something this flimsy. The price was certainly right, but you get what you pay for, as the saying goes.

I wish I could rate this frying pan with 10 stars!!! I cannot say enough good things about this frying pan! I bought this Mirro frying pan October 4, 2011. I would definitely buy another later on! I can fry bacon on low on my GE stove! One must be sure not to use too high a heat when using this frying pan. I go no higher than Medium-High, but mostly use it on Medium heat. I use this frying pan nearly every day. Cleaning it is so easy, and the interior has not become discolored. You must be careful to use NO metal utensils, too! They will definitely ruin and mar the cooking surface. I highly recommend this frying pan to everyone! You won't be disappointed. One reviewer said their pan warped; it may be because they used too high a heat.

Cuisinart 66-10 Chef's Classic Nonstick Hard-Anodized 10-Piece Cookware Set

Cuisinart 66-10 Chef's Classic Nonstick Hard-Anodized 10-Piece Cookware SetI bought the 10 piece Cuisinart set about a month ago and ever since I've been expecting it to fall to pieces, burst, turn to dust, explode, vanish in thin air, etc. etc... anything that would give me a reason for the low price of 140$ which is 400$ in stores. The truth is, it's too good to be true. But it is! This is the best cookware set I have ever seen by far. Nothing will ever be able to stick to these lovely pots and pans, no matter what you do, so be ready to say goodbye to all the non-stick sprays, oil, butter and soaking and scratching. They don't even need harsh soaps for a moderate cleaning up. It is true that they can burn food, but the instructions say that these are not meant to be used at high stove-top heats anyway, use a low to mid heat and everything will turn up wonderful. They are really good for slow cooking and can also go in the oven up to 500 degrees, which is required for some food I like to make. The glass lids are useful when making rice or seeing the color of vegetables but they can spill if nor handled properly due to the design, which could certainly improve since they are, unlike the pots, not very easy to clean. My handles have never got too hot unlike my previous Faberware set. I adore the small skillet which is just the right size for a 2 egg french omlete, in general, the sizes are logical and all come in handy. It does say they are metal utensil safe, which is not exactly true since it's OK with a fork or spoon, but any hand held electronic gadget can scratch the interior a little. Also, although the dark gray outer finish is beautiful, it seems that the colour will be wearing of in time.

To sum it up, if you're willing to give some extra attention to this good-looking set (drying after hand washing, preferably hanging and keeping the lids clean) this is a deal you must not miss. BTW, It arrived very quickly and was packed great by Amazon. You won't be able to use any piece in this set at high stove top heats, so get a cheap large skillet for that kind of job, give away your old set and buy this one like I did. I doubt anyone will ever regret it. I would give 4 1/2 stars if I could due to the not-so-good lid design facor. Still, I love my cookware set, will probably be using it for at least 10 years to come and recommend it fully to anybody.

EDIT AFTER 6 YEARS

I've just gave away this set after 6 years of daily use. So, they didn't last for 10 years as I was predicting in my initially overly psyched review, but I still think it was a great deal for the price. Now that I have more money to spend and need a more professional level cookware set, I've replaced them with stainless steel Fissler pots and pans, which in my opinion, are the best you can get for any price, anywhere.

I have had the similar 7 piece set for about a month and have had a chance to use them enough to have an opinion. They are well balanced and perform well, especially the sauce pans and stock pot. The 8 quart stock pot is large enough for a family of 4-6. Cuisinart advertises you can use metal utensils, but when you read their recommended use card, it says metal utensil will scratch the surface. That is a misleading marketing gimmick in my opinion.

My main complaint with the Cuisinart cookware is they heat up very quickly due to the thin 3 mm thickness. The fry pans are the weakest items of the set. After side-by-side comparisons against Emeril's All-Clad Hard Anodized, I much prefer the Emeril brand. The Emeril pans are 5 mm thick and seem to cook more evenly and are not near as temper-mental as the Cuisinarts. They also have a feel of quality, unlike the Cuisinart pans.

For not much more money, I would look at the higher quality Emeril Hard Anodized 10 piece set (retails for $200); and sorry Amazon, the best deals for Emerilware are currently using one of those 20% off coupons at Bed Bath and Beyond or Linens N Things.

After 9 months of owning this set and cooking with most of them almost every day, I can give an honest opinion of how they worked out for me.

Pros:

Excellent heat conduction. Stays hot, cooks evenly, and transfer from oven to stovetop and back is very convenient. Good, tough pots and pans at a great value. I like the large skillet and pots, especially.

Cons:

The nonstick coating is not really there anymore for the two frying pans. Though these have never been in the dishwasher or been scrubbed with anything heavier than a sponge, the nonstick coating has slowly burned off in patches, and now, though it hasn't peeled or flaked, there are spots where the food will stick and nonstick spray or oil must be used. Unless I use some kind of spray, pancakes, for instance, must be made in the large 2-handled skillet.

This is a pity because I was very careful not to overheat the pans--they have really been babied. I will probably buy Cuisinart again, but these two pans will need to be replaced within a few months. They are not really useful anymore for anything except veggie burger patties.

The interior of the pans is NOT anodized aluminum, but "Quantanium". It's an excellent non-stick surface, and so far my set works fine. However, if you're concerned about overheated Teflon and the chemicals being released into your food, you'll have to pay more to get a real anodized aluminum set.

Quantanium is not safe over 500 degrees F. It does contain PTFE, the same chemical in Teflon, which is potentially carcinogenic. Fumes from cooking are harmful to animals. And lastly, the non-stick layer is very thin, and will eventually come of. I bought my set thinking I was getting hard-anodized aluminum for a steal, but it seems you DO have to ante up for Calphalon or a more expensive brand to get the real stuff.

I bought a set of Cuisinart teflon non-stick pans due to the fact that there was supposed to be a lifetime warranty. Well when the teflon coating started peeling, I contacted customer service 1-800-726-0190 and was assured that if I sent them back they would warranty the pans. I stressed that they were several years old and the girl said that was ok. I spent $30 to FedEx the pans (sent back all pans in the set) and was also required to enclose a check for $10 to cover return shipping.

After about a month, I had not heard anything, so I called and they had no record of receiving. I related the fedex confirmation and they said to give it another week to update my file. I called back in a week and the girl said that there was a note in the file saying "costomer abuse". I asked what that meant and she said she didn't know. I asked to speak to a supervisor and was referred to "Daniel". Daniel said that he would look into it and it was up to "corporate" and he had no input. He said he would call me back in 24 hours. Daniel did not call back in 24 hours, so in 48 hours I called and asked for him. He still said that it was up to corporate I said that was not good enough; I have $40 more dollars invested in the pans. I told him that I have never seen a pan that eventually did have some peeling and wearing off of the teflon and a "lifetime warranty" should be honored. I also asked for a supervisor higher up.

A day later I got a call from "Dena". Dena (clanging pans sound) said the the customer abuse was using too high of heat which caused the teflon to fail she also said that it was evident that metal utensils were used. Neither of which are true, the pans were just old and wearing out, but we bought them initially because of the lifetime warranty. Dena stated that if they just replaced pans for everybody that they would go broke replacing pans and they were NOT going to warranty my pans. Due to my constant whining, she did agree to ship back the pans (received but damaged with dings on the edges), refund my $30 shipping and the $10 check (have not received yet). My response was since she was going to ship my pans back at a cost of $20 (probably their cost to ship) and write a check for $40, wouldn't it be wiser to invest that $60 and send us a new set of pans that have a (Cousinart cost) of $60. She said "Look, we generally don't refund the original shipping, so NO". I also told Dena that I would post a positive Amazon review as well as a negative Amazon review whichever was needed. She said that was my right. So here I am with the negative I will never buy Cuisinart again and ther warranty is not worth the paper it is printed on...

***Update10/08

Still one of the best skillets I've owned. It's proven itself over and over.Cooks evenly, cleans up easily, and after being used 3-4 times every week, not a hint of wear and tear so far.Great purchase.

I was a bit skeptical about buying cookware that I can not hold and inspect first. But the price was good and I decided to go out on a limb and try it.I have a family of 6 and am always using countless pots and pans to cook a meal large enough to feed the whole family.Well let me tell you this, this thing is big, and I mean big.The cooking area on this is amazing. You read about the size, but don't realize how big this is until you have in your hand.I can finally cook a meal all in one piece of cookware...I love it.I cook over gas and it cooks and heats evenly throught the whole pan, no hot or cold spots.I was able to brown and cook 6 breasts of chicken at one time, with room to spare.Yes the item is made in China, yes there is no Thermospot (however if you know how to cook not a big deal), but the construction seems good and the pan does have some good weight to it.This is definately a piece of cookware to have in you household if you need to cook large portion meals for a big family.

My T-Fal set of pots & pans didn't include this jumbo cooker, but right away I saw we needed this. It's great for big batch cooking like chili or stovetop meals.I like to cook up enough in one batch to save cooking later in the week.

This has most of the features I wanted: extra handle so you can use two hands to lift it when full, non-stick interior, even heat base, glass lid so I can see the progress of the cooking.I do wish it had the red dot in the center to tell me when the pan is properly preheated. You need to use plastic or wooden spoons or stirers with this surface.

This is a great pan for those of us who are not cookware snobs. If you go in with high expectations you might be disappointed; this is not a $100 pan and it shouldn't be compared to one. Yes, it is a little thinner and lighter than a top-of-the line cookware product, but so what. It works great and is perfect for everyday use. It is very versatile from frying eggs to cooking several pieces of chicken at the same time. It is very roomy in diameter and depth. The lighter weight of the pan makes it not too heavy to lift when food is in it. It cooks surprisingly evenly and because it is lighter weight, you can cook at a lower temperature = less electricity or gas = saving $$. The lid is a great addition to keep things warm and having two handles makes lifting very easy. There have been absolutely no problems with this nothing broken, nothing coming loose. The handles are riveted so there is nothing to come unscrewed. My only recommendation is to follow the instructions that come with it. Don't use metal or hard plastic utensils that will scratch, don't use scouring pads, and don't soak it with dishwasher detergent, which eats at the coating. I ordered this off Amazon because I had a gift card and got free shipping, but this pan is available in stores too. If you live in the Midwest, Meijer sells it for $25 and a couple weeks ago I noticed it on sale for $20. 4/30/2011

Pan is very thin walled and light feeling. After washing the pan the first time, I seasoned it as instructed. Used it four times on our glass flat top electric stove. Never high heat. Always hand washed. Never put it in dishwasher or used it in the oven, even though you can. By the fourth time using it, it had warped badly enough that it no longer sat flat on the stove and rocked quite a bit when stirring or even touching the handle. No other pan I've ever owned has done that. Returned it. Bought a T-Fal Signature Hard Anodized 10-Inch Skillet with Glass Lid here on Amazon to replace it. The new one has quite a bit heavier construction and heft. Expecting this one to hold up.

Tamago Pan #HM13

Tamago Pan #HM13Bought one of these to make the cutesy little rolled omelets (tamagoyaki) as seen in anime, and after much practice, they come out perfect. The pan is great, does exactly what it's supposed to do, just make sure to use adequate oil.

At first glance, this tamago pan looks great. It sucks! The wooden handle is loose, and will fall off after a few uses. Also, it looks like the surface is nonstick . . . it's not! The eggs I used stuck to this pan worse than a unseasoned cast iron skillet. I strongly advise not to purchase this product, as it is horribly put together. Even experienced tamago pan users will find difficulty with the wiggling handle and sticky cooking surface. It is everything it should not be. Don't buy!

I hate to be the bearer of bad news.. or rather, one of them.. but after I decided to give this pan a try (seeing how divided the reviews are) I am back to tell you how I just finished throwing it in the trash.

If you want to get this pan clean after cooking something on the messier side, you can expect to spend longer washing it than the amount of time you spent cooking whatever it took to cake the thing, heheh.

I'm definitely not a pro at cooking, so if you think you may have the perfect way to coat the pan for non-stick, perhaps it's not such a bad purchase. It's a very unique article for the kitchen and the design is visually appealing too. That's about all that I can say in the pros department.

As for the cons.. well, despite the small size, it was still too big to use a small burner. This wasn't really a con, because I knew the pan was long though small. The real issue is that even after using an adequate or even exceeding amount of cooking oil to prepare the pan, the result was always the same-my eggs and other ingredients remained caked on in a thin layer that is not removable during cooking.

My ingredients were eggs, bonito stock, salt, sugar, mirin and sake in the amounts appropriate for making a small enough omelette to fit in the pan. You can expect to cook about 3 large eggs comfortably but 4 will fit, though that's pushing it.

My once well-practiced Japanese-style omelettes (dashi maki tamago) became scrambled eggs.. They tasted great, but I did not buy this pan for scrambled eggs.. LOL?

I tried this pan 6 different times before deciding to toss it.

Because I live in the United States, a decently priced tamagoyaki pan is hard to come by, so I always have to borrow my friend's. Trying to get my own.. I feel that this was a very wasted investment. I hope to find another soon.

Choose wisely. You may just be able to salvage this one. I didn't bother to try it for other foods, honestly, but if you're going to cook something non-specific you probably don't need this unique pan to do so.

Good luck.

Well, this pan is NOT as nonstick as I desired. It's smallish, and I had eggs that stuck when I scrambled some in it the first time.I groaned.

That said, now I love it.I bought it for omelets but I'm USING it for hashbrowns and burgers and chopped sirloin steaks. It fits 2 burger patties in perfectly, which is something I need occasionally. It makes hashbrowns LIKE A DREAM Nice little square patties that are on par with Waffle House's and cute burgers that look and are sized like Wendy's.When you cook anything with more oil, like the hashbrowns or burgers, clean up is easy.

So, I'm giving it a 4, because I am so happy with it and I'm finding it quite useful, even if I still feel like I need a good Japanese omelet pan.

If you've bought one and aren't happy with it, try it with hashbrowns and you might feel better.

Vollrath 67907 8-Gauge Aluminum Wear-Ever Fry Pan with TriVent Silicone Handle, Natural Finish, 7-I

Vollrath 67907 8-Gauge Aluminum Wear-Ever Fry Pan with TriVent Silicone Handle, Natural Finish, 7-InchI bought this little skillet to use while solo hiking. Those ultra lightweight backpacking pans are not good for much other than heating water. This Vollrath 7 inch skillet is ruggedly built yet weighs only 15 ounces. I don't force-march 40 miles a day so the extra weight is acceptable to me. I like being able to cook in a pan similar to something you would have at home only a little smaller. The skillet is thick aluminum so it heats evenly. The sloping sides make it easy to use a small lightweight spatula for turning food, be it a large burger or a small pancake.

I would have given this pan 5 stars but the silicone grip on the handle was split on both sides. I was able to repair it with some black silicone gasket maker I happened to have at home.

TAIYAKI Japanese fish-shaped cake maker

TAIYAKI Japanese fish-shaped cake makerThese pans are exceptional except for a couple small things. The first is that they are very difficult to clean. While you will get the pieces of batter and such out of the fish molds, there will forever more be a brown tinge to the apparatus itself, and burn marks on the outsides. The other problem is that the handles melted a tiny bit, not enough to stop working, but I did notice some red residue on the metal portion of the handles. Apart from that, i love making taiyaki every weekend with these pans!

Got one from my father in law.Very nice, easy to use and comes apart for cleaning.

Buy TAIYAKI Japanese fish-shaped cake maker Now

One of the best investments I've ever made. It's ADORABLE, and they ended up tasting just like the taiyaki I had in Japan.

For all those complaining about the instructions being in Korean, there's now on a sticker in English on the back of the box, complete with cooking ingredients and instructions.

The loose hinges are normal since the batter needs room to rise during cooking.

I even went ahead and used egg substitute instead of eggs, and agave nectar instead of the sugar and honey.Kills the cholesterol and tastes exactly the same ^^ Highly recommend it for those health-conscious folk, or vegans.

The ONLY thing it doesn't tell you is how much water to add, even though it's in the cooking instructions.

Use your best judgement.Mine worked perfectly having the consistency of regular pancake batter (I have no idea how many cups of water that was). But just keep adding it at 1/2 cup increments until it achieves the desired consistency.

And for those complaining it's hard to clean, make sure you use a cooking spray (spray the oil before it comes in contact with a range stove so you don't blow up xD. If you're using a flat top or coil stove, just spray carefully). After the pan cools off, it should clean very easily.

It's also very important that you use a medium heat, and a smaller burner to avoid the plastic handle from getting to hot.

Other than that, just follow the instructions, check every couple of minutes to make sure it's getting that nice brown, crispy texture, and tip the cakes out once they're done onto a plate :) Ganbatte ne!

Weber Style 32903 Professional Grade Grill Pan

Weber Style 32903 Professional Grade Grill PanWe love to grill vegetables.Had an old non-stick type pan, but it got rusted thru and was unsafe to use.I finally settled on this Grill Pan.Frankly it is the best twenty bucks I spent.

The stainless steel will discolor if heated too much, but cleaning is not too bad.The first time I used it without oiling the pan, cleaning needed quite a bit of scrubbing.I ended up using oven cleaner (Easy Off) and it worked pretty well got all the crud off.I now oil the pan before putting it on the grill and clean up is not bad.The advantage of stainless steel is that with a bit of care it will give good service and there is nothing to flake off.

I also bought the veggie basket and use both interchangeably. The lips all around are great, I just use a spatula to lift the veggies to a serving dish.

LOVE: Quality of construction; Cost; Raised lips all around; Material

HATE: Cleanup is tough, but it is no tougher than with so called non-stick pans had one.

Would I recommend it definitely; I plan to replace mine with a similar one when this one goes (or I get tired of it)

I got this to grill veggies and other smaller stuff that might fell through the grates on my gas grill.

After the first couple of uses (and subsequently leaving the pan on the grill for a few days without cleaning it), I noticed some brown discoloration that looked like rust on the surface.

I'm still not sure if it was rust or not, but I got the pan hot and sprayed it with olive oil and wiped it down with some paper towels. That got rid of the rust color and it hasn't come back.

Now the pan is a nice dark brown color, and I just spray with oil and clean it with the brush before use.It stays on the grill or under the grill when not in use.

Other than that, it works as a pan should.Stuff cooks when you put it on there, and it doesn't stick as long as you oil it at a higher temperature than you cook at.

Gets a 4 star since it is hard to clean grilled on residue. The openings mean that food like fish do not slip between the grates of the grill.Heats evenly in accordance with your grill.Only downside is we have to let it soak to get residue off.Non-stick would be better.

This is truly grilling made easy you can throw anything on this pan and you're good to go: veggies, baked potatoes, flakey fish.

I agree with the other reviewer about cleanup being a little tough, but truly it is no tougher than all the other stainless steel cookware we use it's all a PITA but worth it in the long run.

Cuisinart 66-7 Chef's Classic Nonstick Hard-Anodized 7-Piece Cookware Set

Cuisinart 66-7 Chef's Classic Nonstick Hard-Anodized 7-Piece Cookware SetI have had this set for about a month and have had a chance to use them enough to have an opinion. They are well balanced and perform well, especially the sauce pans and stock pot.The 8 quart stock pot is large enough for a family of 4-6.Cuisinart advertises you can use metal utensils, but when you read their recommended use card, it says metal utensil will scratch the surface.

For not much more money, I would look at the higher quality Emeril Hard Anodized set; and sorry Amazon, the best deals for Emerilware are using one of those 20% off coupons at Bed Bath and Beyond or Linens N Things.

As always, you will never find a perfect cookware. This Cuisinart 7 piece is no exception. It is great but not perfect. Its light weight is very impresive and handle isn't that hot after long period of cooking time.Easy to clean. The non-stick surface is better than other brand. It takes very short time to heat up stuff too. However, couple weaknesses, the lit does not have a small hole to release pressure which we have to watch out for overheat spill.Plus the lit is not the same design as the pot itself, it heats up really quick. So be careful. It is not a good idea to buy plastic handle with the lit, it will deform and loose after a while.Over all, it is better than what I expected even though I have owned this set of cookware for 4 weeks.

The coating of these pans started to come off after two years. The cuisinart customer service was good and replaced 3 of these pans already. However, the coating in one of the new ones is starting to come off again. They would be great if this didn't happened.

I've only had these for a short time but I have tried them all and I'm super impressed! Especially for the price!! Fabulous! I made a cheese sauce in the small pan and when I stirred it it pulled away from the pan like dough does! Then I put the sauce in the larger pan with noodles and put the whole thing in the oven to bake mac-n-cheese. Came out perfect and the mac fell right out! I just wiped the pans clean no problem! I'm a huge fan of cooking on the stove then popping the pan straight into the oven and soo many pans can't do that! The only thing I can think of I'd improve is I'd put a vent hole in the lids. These don't have that, but no worries cause they are wonderful in all other ways! I also scrambled an egg in the fry pan with NO oil or butter... didn't stick! Can you believe it!?! Nice. They held up to refried beans too...crusty beans wiped right away!!

Zwilling TruClad Stainless Steel 10 inch Nonstick Fry Pan

Zwilling TruClad Stainless Steel 10 inch Nonstick Fry PanPleasantly surprised with how heavy duty these are.Actually prefer these to the far more expensive All-clad pans we are gradually replacing.

It takes a bit longer to heat up the pan comparing with Scanpan CTX ceramic-titanium.It is not non-stick as I asssumed. It is just easy clean.

Joyce Chen 22-0050, Pro Chef 12 Inch Peking Pan Uncoated Carbon Steel

Joyce Chen 22-0050, Pro Chef 12 Inch Peking Pan Uncoated Carbon SteelWhat I like about this pan:

1) Its not too big and its not too small. It is heavy but not as heavy as cast iron. I love the size and weight.

2)It has a larger flat bottom area than a typical flat bottom14-inch wok.

3) When a Chinese recipe calls for it,Peking Pan can be heated up empty over a high flame until screaming hot without damaging it, and there is no teflon to worry about.

4) The pan seasoned up quickly and turned black right away.

5) I think this is pretty much the same pan I bought back circa 1970s-1980s from Joyce Chen that was called Peking Pan, but which had a coating of some sort which eventually wore off and made the pan unappealing for me to use (I eventually threw it out). But while it was new and in good shape, I lovedthe way it cooked. This new uncoated version is the same size and shape and looks like it will never wear out. Best of all, it cooks just like the old pan did.

6) Its shape/design/weight make it great for lifting the pan off the burner and "tossing" the food like the pros do. If you have had trouble with this technique, this pan is well suited to learning and executing the pan toss technique.

7) This pan cleans up easily with an Asian style stiff bristle wok brush, and usually just a rinse in hot water takes care of it, but once a a while I will add one drop of detergent to the hot water for more thorough cleaning, yet not so thorough as to disturb the seasoned nonstick patina that develops with continued use of the pan. But either way, its quick and easy to clean.

NOTE: The one thing missing is a lid, but if you have other pots & pans, you can probably press another lid into service that will fit this pan perfectly anytime you need to cover the pan during the prep of a recipe that requires it. The other thing to be aware of if it isn't already obvious is that you shouldn't use it to cook quantities of acidic foods (such as a tomato spaghetti sauce) because they can potentially interact with the carbon steel and may impart an off flavor, and it can also break down the seasoned coating during prolonged contact with such foods. Other than that, I reach for this pan CONSTANTLY. Love it.

Had an expensive non-stick pan and it started to stick after a year so looked for alternative and found carbon steel seemed viable so gave it a try. The pan is very good quality with medium weight steel and good, balanced handle. It has a flat bottom so it works well on my gas stove.

The seasoning process took about an hour, but one thing that I did not expect was how much it smelled and the amount of smoke it generated. My kitchen and whole house smelled for 3 days afterwards. I probably used a bit too much oil.

After it was seasoned, I tried stir frying some chicken with vegy and wow it made a huge difference. It used to take about 12 minutes to cook over medium heat using the non-stick pan (because high heat destroys the non-stick surface). With this carbon steel pan I was able to cook on high heat and it only took about 6 minutes and it was much more flavorful! It's deeper so fits more ingredients and very easy to flip. A 3 course dinner took about 15 minutes to cook.

Is it non-stick? Absolutely! After cooking I rinsed it in hot water and scrubbed with brush then put it back on the stove and heat for a few minutes to dry it up then coat the inside with a few drops of oil.

For seasoning the pan, I would suggest using just enough oil to "coat" the pan and not so much that oil sits at the bottom otherwise it would turn into black tar. Just lightly coat it and burn for like 7-8 minutes until it starts to turn brown, not black. I have seen reviews where others do the seasoning on an outdoor bbq.

Overall, very good quality pan and truly non-stick when properly seasoned and a healthy alternative to non-stick. From what I have read, it's supposed to last a life time :)

It's a good size wok, however almost impossible to season the wok.Cook a couple of times, and finally throw it away.

I too saw the good reviews and bought one. I followed the seasoning instructions that came with the wok to the letter, boiling the water in the pan, scrubbing the whole pan, and seasoning...etc. But I notice the bottom of the pan starts to get uneven, it does not lay flat on my ceramic stove top, so it won't transfer heat evenly. I then tried scramble eggs with my seasoned pan, and because it's my first use, I really just put quite a bit of oil in it, but the scramble eggs still sticks badly, and as I tried to clean off the sticking food on the pan, the previously seasoned layer flakes off from the bottom of the pan. This pan gets uneven bottom after proper seasoning, even with oil, still sticks badly. I have to return this pan, because this is just not a quality pan I have expected with this purchased. What else I can do with the pan?!
