Then I had what may be the best dinner of my life, at Mario Batali's new Vegas steakhouse, Carnevino.It was early fall; they had an item on the menu, "Market Peppers."Vine-fresh, long skinny red sweet peppers were seeded, cored, brushed lightly with olive oil, sprinkled with sea salt, and oven-roasted and then brought to table in this little pan, or one very much like it.The pan was so hot that it kept sizzling them right at the table; you served yourself and the sweetness, the good roasted flavor where the hot iron had seared the pepper skin, was just unbelievable.

You can make this, and other similar vegetable and mushroom dishes, at home in this wonderful little pre-seasoned pan.Because it's cast iron, which retains and delivers heat wonderfully, you need very little oil; foods sear nicely without scorching, and cook through without needing to sit in a puddle of oil to do it.

I pretty much want this on the table every day, filled with delicious roast things.You can also use it for breakfast scrambles, one-person casseroles or pot pie, or pretty much anything else you like it's cast iron, it's indestructible.Just don't put it in the dishwasher no soap please, just clean by rinsing under hot water with a stiff brush, then coat with oil lightly and put it away.



I have fallen in love with Lodge's small cast iron skillets and have several sets of them which I use to serve rustic dishes to my guests.I like the way they look and I like how they keep hot dishes hot.However, there are times that I wanted something that had the same properties as the skillets but had a more conventional shape.I now have a set of both these oval mini servers and the rectangular ones and I love them.

These are great for appetizers, such as wild field mushrooms with grilled baked polenta, fired roasted tomatoes and goat cheese.The cast iron keeps the mushrooms (which would normally get cold fairly quickly) warm for a least a half an hour if needed.I also use these for au gratin potatoes, broccoli and other vegetable casseroles, as well as other warm sides dishes.I usually place the servers on a cast iron trivet in order to keep the table for getting burned.

If you are into rustic and bistro cuisines you will probably enjoy these cast iron servers as much as I have.With proper care these should last for many, many years.

YoshiBlade Knife, Ceramic

YoshiBlade Knife, CeramicI'll admit I was expecting miracles based on TV ads, the packaging, and reviews I saw online. All I can say is, you get what you pay for, and this is only a $19 knife.

My first clue that this wasn't the end-all came from the package insert. The list of what NOT to do with this knife is twice as long as what you can do. You can't cut with it against just any surface, so my glass cutting board was out. You can't twist or rock the blade for fancy chopping, and you can't press on the side of it (like when you smash/peel garlic) My Yoshi did not quite slice a tomato like butter, the way the TV ads show. The short blade also makes it impractical for larger potatoes, onions, etc.

That all said, once I got over the limitations I find I reach for it often to cut up smaller things like green onions, chili peppers, carrots, etc. It works just fine and is definitely not a bad little knife for the price. You just have to be careful with it, because the ceramic blade is fragile if mishandled.



I received the Yoshi Blade knife in June of this year, used it normally for vegetables and fruits, and then yesterday, September 23rd, 2010 it breaks inside the handle. I call customer service to explain that I have only had it for 2 1/2 months, and all I get for a response is "the knife is out of warranty." Is there anything else I can help you with today?

Are you for real? Defective product! Even more defective customer services (if you can call it that!)

My wife made the unfortunate mistake of buying another Yoshi Blade and the blade chipped in less than 2 weeks!!!!!

If there was a rating one could give allowing for MINUS STARS, I WOULD RATE THIS PIECE OF TRASH THAT WAY!

DON'T BUY THIS! YOU'RE WASTING YOUR MONEY!

For anyone reading this post who thinks it is somehow contrived, I can assure you it is NOT! Read the part about POOR customer service from Yoshi Blade, and you will know why I wrote the article to begin with. It's never just about a product that breaks. It IS about how the company handles it!

Maybe I was lucky but we love our Yoshi Blade. Honestly for $19 how could you go wrong. If you look at all of pro ceramic blades you see that they are significantly more than the Yoshi Blade. Think of this knife set as an intro to ceramic blades. I have never seen the infomercial nor the ad on TV. So when I got it it was mostly a curious tool to use in the kitchen. All I can say is that this blade is amazingly sharp. It slices tomatoes, citrus, bread, cucumbers and other veggies amazing.

I am a vegetarian so I have no experience with this cutting meat. It does slice through tofu very easy. The minus 1 star is sometimes it is very difficult to get the knife to start a cut. I believe it is mostly due to the design of the tip. If you have any skill in the kitchen with cutting foods you will easily figure out how to properly use this blade. Also, the peeler is more of a novelty and I have only used it with moderate success on carrots.

Always use a wooden or plastic cutting surface. Almost 100% of dulling of blades come from cutting on inappropriate surfaces such as granite, steel, mica; this is true for ALL blades not just ceramic. Check the web for videos showing this. Hand wash this blade, dishwashers will destroy it.

Pros:

+ VERY sharp when cutting mealy foods

+ Lightweight feels plastic but this is how a ceramic blade feels.

+ cleans easily (does not retain any smell from foods (even garlic))

+ price are you kidding me? A ceramic blade for under twenty bucks?

+ slicing and dicing is fantastic its like a razor

Cons:

Cheap cover ( you should use it to protect the blade in the drawer)

not too enthused with the peeler.

Tip needs redesigning

Not sure how you could sharpen it (although if you take care of the blade it should stay sharp a very long time)

Summary:

If you do not own a ceramic blade you should look at this as a fine intro to the class of kitchen utensils. I love mine so much I am buying a full set of pro models for our family for the holidays.

I purchased the Yoshi Blade today at a local store and after opening package I went to cut into a lemon and it was like I was using the wrong side of the blade.I then had a few days old green bell pepper and again there was ZERO cutting.I actually thought I had the knife blade inverted but that was not the case.

I then took some $5 paring knives I got from Sams's and had sharpened with the Chef Choice XV and they sliced right through this older lemon and pepper.I tried other knives including a Henkels bread knife, WP Santoku, Chef's Knife and even an old "miracle blade"and they all were able to slice through the lemon and pepper easily.

I have not even tried the peeler as I have a Titan Peeler set that I am well pleased with.

Needless to say, my Yoshi is packed up ready to be returned to the store.I do not plan on exhanging it for another one.

This is one of the biggest rip-off's of the year.I have returned it because it arrived chipped and then using it once, it chipped while cutting a tomato!Yes, a nice soft tomato!!!!I asked for a refund not a replacement.Should know better than to order something that is touted on TV.

The size of the pan makes it a great mini-wok; it's 3" deep, 7" across the bottom, and 9 3/4" across the top. The bottom is flat, which I think is perfect if you want to saute onions, green peppers, etc. It has a clear glass lid with a good size handle. After years of cooking on a gas range, I now find myself cooking on one of those awful ceramic cooktops where you never know what the temp. is and things tend to boil over. Now when I cook rice--normally done in a 2 qt. pan, I use this pan because the 3 qt. size is more forgiving of boil overs. I hate ceramic/electic cooktops, but this pan makes them easier to live with. Anything you'd normally cook in a 2 qt saucepan you can cook in this pan and have a little margin for error. The 7" bottom is exactly the same size as the large burner on my ceramic cooktop. At just $30 this pan is a bargain, and I use it frequently. Get one. You'll like it.

It's great for so many cooking chores that require something larger than the 2 qt saucepan, but don't warrant dragging out the huge pans.

It's lightweight enough to get used often, yet heavy enough to stand up to the use.

It was perfect for making 1-2 pounds of a meat dish. I use it for frying too because it is deep enough. The nonstick interior was easy to clean up and the pan felt just right. I wouldn't mind buying this again or give as a gift.

Too expensive.But, be very careful when placing on stove, especially gas which has an open grill.The handle is as heavy as the pot and mine has tipped over a couple of times.Make sure you have enough ingredients in pan to prevent this.

I love this pan so much that I have just bought a second one (while the 1st one is still perfect!). I love the depth of it most of all. I fell in love with LeCreuset cast iron pots, so when I wanted to replace my stainless set, I looked into LeCreuset tri-ply. I cook every day, and I have been very very pleased with my tri-ply set. Comfortable handles, easy-pour edges, and of course, even heating from heavy-duty high-quality pots and pans. At the time we bought the new set, we also ordered a non-stick pan because we go through omelet pans every couple years. Most recently, we bought Calphalon non-stick. BUT, the new LeCreuset are far superior to any we've ever had, plus, a 10-year warranty on the non-stick coating is very generous. This surface is the smoothest I've every used. It feels oiled, even when spotlessly clean. After loving our small omelet pan, we bought this larger one for scrambled eggs, sauteed veggies, and grilled sandwiches. We use it almost daily. Although the material says dishwasher safe, I prefer tohand-wash it, and it cleans up with just a wipe with a sponge. We use one or both of our LeCreuset non-stick pans almost every day, and they are terrific pans. I recommend them without reservation.

I don't have this exact one. Mines much older. It has close to a 100,000 miles on it, used almost daily, put in in the dishwasher regularly, and not a chip on it. No nasty Teflon either.

I'm always a little hesitant about products like this. Low price, not many reviews (at the time), a not so clear picture (to me anyway), and a brand I've never heard of. I'm glad I made the jump and bought this pan. It's high quality and looks good. The bottom of the pan rounds off to the sides in such a way that Amazon's picture made it hard for me to tell how deep the pan was. I didn't measure but I'm happy to say the pan is deeper than I expected (maybe 1-1/2" to 2"). I would definitely recommend this pan.

EDIT 12/12/12:

We've now had this pan for over two and a half years and use it almost daily. The handle hasn't loosened at all and the pan still cleans up great. I love being able to take something more abrasive to the pan than I could on a non-stick surface. Just a basic, great, pan doing its job day in and day out.

I think it's a nice pan.

It's not my first stainless steel pan. I seasoned it every time I use it. This pan do the job well, however...

1. outside rim always have some weird spots that seems always stick with something. I always carefully clean it with non-scratch pads and well seasoned the area. Sometimes, after cooking, I can find the same spots has something stuck on it and very hard to remove... So, -1 star. The rest of area is very good. nothing stick after you soak inside water during cleaning.

2. it's not really this item's fault, it's the problem of the stainless steel: It never burn my steak like my Enamaled Cast Iron or Teflon pans. no point is taken from this tho...

While searching I found quite a few stainless steel pans had a machined cooking surface, for reasons I can't fathom.This one is polished.I was searching for a 10" covered stainless steel fry pan but decided I didn't want to pay that much, so I gave this a try.All I have to do is to spray this with Pam or another non-stick spray, and it works flawlessly.None of the food I've cooked sticks to this pan.

I do have to scrub the pan with a scrubber sponge after cooking meat on it; my dishwasher doesn't get it completely clean, though it is about 30 years old.Yours may do better.But it's not hard to clean.I'm satisfied with this pan, but eventually I'll probably get one with a cover.

It easily cooks breakfast foods but will bake those canned biscuits perfectly, just lay some foil to keep from over doing the bottoms. I use it all for camping with excellent results. There's a fairly quick learning curve to figure out the best settings etc. When I get home I place the dirty griddle face down on my regular grill, close the top and crank it up and burn it off. I gently wash the residue off later. There's lots of different types of cooking you can do with the the griddle, top open or closed, generally anything that you don't want to fall thru the grill grate or be exposed to the direct flame. Don't go camping without it.

Cooked up 2 pounds of bacon on this, worked good. There are little pouring lips on the corners so you can grab the whole griddle with the provided handles, scoot the bacon to one side and tilt (very much under control)pour the grease off to save for cooking other things.Quite heavy, probably about 10 lbs.We store it in the box it came in.

I was shown this product by another camper who was watching me assemble my new grill at the campground.Seems to be something of a cult following with the RV crowd with these weber Q grills.

Once he showed me the griddle, and the beer butt chicken cooker, I imedelatly had to have one.

First thing I did was get on amazon, find the best deal and ordered both.Typical Weber high quality product with the particlar design aspect that allows you to grill and griddle at the same time.Awesome for making sausage and eggs for breakfast when camping.

I started using Circulon for simple everyday recipes as pancakes, sunny-side-ups, French toasts and vegetable stir-frying.These pans are very easy to clean and non-stick when cooking, even without adding oil.They are best cleaned without abrasive products.Using only water to clean and low heat to fry will make these non-stick pans last longer.However, the coating do come off with extensive use, so they needed to be replaced occasionally.

Ive had these a few weeks now and they are really good pans for the prices.

I've cooked eggs with nothing added to the pan and they did not stick, this was my primary reason for purchasing this set and they work perfect for this.
