Ecolution Artistry 14 Inch Colossus Pan with Glass Lid

Ecolution Artistry 14 Inch Colossus Pan with Glass LidLadies and Gentlemen, this is a really big pan. If that's not enough to blow your skirts/kilts up, then maybe the super-slick, no-stick, inside-and-out surface will. I put this baby through the paces all week, and I'm really impressed. I had read a few complaints that it had warped for other users. I followed the enclosed instructions, and noticed no problems with warping. Keep in mind, the surface area of this pan is huge and aluminum expands much more than steel or iron with heat it's just a law of physics, not a design flaw so take care when using your pan to not quickly overheat or shock the hot pan with cold liquids, etc. Use your iron and steel pans for that. If you have a smooth-top stove, even the tiniest amount of warping will be noticeable, no matter what pan you use. Getting that out of the way, this pan is fantastic for doubling or even tripling recipes in one pot. There's room for everything and it has a vented lid! I marvel.

Edited to include a re-review 5 months later: Been using this pan several times a week for 5 months and it's holding up great. I am still thrilled with it! I can also confidently claim that it saves energy on top of everything else! Since the surface area is so much bigger, batch cooking is no longer required, and food is browned much quicker when you can spread it in a single layer. This means a meal can be prepared much quicker and the kitchen doesn't heat up as much. I cannot say enough good things about this pan!

Will I ever shut up about this pan? Here's a third edit to profess my deep love for the Colossus. After two full years of nearly constant use, this pan has held up exceptionally well. The non-stick coating is still in great condition, showing no sign of wear. I don't know about the rest of you, but I can never get non-stick cookware to last more than a year, even with proper utensils and hand-washing. I'm so pleased with the Colossus that I purchased a second one just in case anything ever happens to the first.

Why did it take so long for the Ecolution's Colossus Pan to find me?!The Colossus pan has many functions, but I like it most for that two-in-one recipe.I am constantly annoyed when I have to use multiple pans for my recipes, thus making a mess in the kitchen complete with an overflowing sink and dishwasher. The Colossus pan is is deep enough to saute veggies for four people and then add protein pasta, rice or potatoes to complete all of my favorite recipes. In makes my normal life of multitasking life seem simple. One of my favorite new items for the kitchen!

Ecolution Artistry Eco-Friendly 14 Inch Colossus Pan with Glass Lid

I had high hopes for this pan.I had been looking for a pan this size for a long time. After I got the pan I read the instructions on how to use it because I hate pans that warp because I have a glass flat top burner stove, or when the teflon peels off and I wanted this pan to last as long as possible, I also threw out all my other old pans.I obeyed the instructions and use the pan on the lowest heat setting first and slowly increased so as to not mess it up but it still warped on me after about 10 dinners and now it's shot.It was kind of expensive at $25 for one pan but I thought it would be worth it if it worked well like it said it would. But it didn't it says you can return it with an $8 check if it is defective but they claim it is because over heating and I know it wasn't but how can I prove that? If it worked well I was going to buy the whole collection of them but not now I will never but one again.

It looks like a nice pan, but we couldn't test it out, because it came with scratches on the non-stick surface as if someone had used a metal utensil on it.I'm assuming it's a returned product that no one inspected before sending out to someone else?I wanted to have it replaced to see if we had better luck, since it is the perfect shape and size for cooking some of the larger things we like, but it was out of stock. Now I have to do more research and find a new pan.:(

Follow-up:

The pan came back in stock right after our gift certificate was credited. We reordered it, figuring we should give them another chance.Maybe it is how Amazon ships it, but the new one had issues too:

1) It wasn't wrapped like the first one, making me suspect it was previously opened by someone else.

2) It was dented and the lid would not fit on the pan snugly and close all the way.

The pan looks great otherwise, but I wish their quality control was much better.Getting two with scratches/dents in a row is kind of ridiculous.

Somehow, this pan was bigger than I expected it to be.

This is not a problem at all, aside from not fitting where I planned to store it.

I don't find this much of a problem as this is the sort of pan that I don't mind leaving

on top the stove for easy access, since I use it so often, for every meal in fact.

I love this pan. I bought it to replace a different brand of everyday pan

that I had purchased years ago. That was a great pan, smaller.. no lid.. I improvised.

This pan is great for cooking for two or ten. The handles stay cool.

It cleans very easily. It is nice looking, and the lid fits well.

The description says it is okay to put it in the dishwasher.. but I don't

know why anyone would want to. It cleans in seconds with soapy water and a

paper towel.

I have used it for chili, fried chicken and eggs. I plan to use it for many more things.

IF you have a family, small or large, I recommend this pan. Even if you do not have a family, but like to cook

enough for more than one meal, as I do, then I recommend this pan. The price is right, the pan is good, easy to clean. That is all that matters to me :)

Cuisinart CBO-1000 Oven Central Countertop Oven, Brushed Stainless

Cuisinart CBO-1000 Oven Central Countertop Oven, Brushed StainlessThe CBO-1000 is very handy. I'm no cook, but within a few days of ownership I've made hamburgers, jalapeno-cheese cornbead and shish kebab. It is easy to clean, heats up quickly and doesn't take up much space. I would wholeheartedly recommend it as a countertop cooking appliance that does a lot.

However, I have one complaint and it's significant. The knob on the right that turns the unit on and also serves as a timer seems to have melted so that it no longer engages the stem. I can do all the same functions by sticking a screwdriver into a slot in the stem and twisting, but I definitely have a product that failed on the third round of cooking.

I hope Cuisinart will consider this problem and provide purchasers with knobs that don't succumb to the heat. I am in no way recommending that consumers substitute a screwdriver for the knob. IT MIGHT BE DANGEROUS. Consumers shouldn't have to jury-rig a device that costs $129 and fails in three rounds of cooking.

I'd give this four or maybe five stars if the knob hadn't failed.

I purchased this through Amazon.

---

I called Cuisinart'ss telephone support line and the customer service representative abruptly hung up on me. The serial number on the product is very difficult to read. I was trying to give her the serial number when cut me off. I hope this is not a reflection on the company's products and customer care.

my wife prefers this oven above all of her other cooking devices.

it is easy to use and easy to clean.

Rachael Ray Porcelain Enamel Nonstick 8-Inch and 10-Inch Skillet Twin Pack, OrangeI've had these for 3 years, I use the 10 inch one at least once a week, and the non-stick is still in great condition.

Update 11/1/11 I've had them for over 4 years now, and this still holds.I love these pans!

11/29/12 still great.

This was a gift for my daughter-in-law, who loves it!She uses it almost every day, and after 3 months, neither shows any wear--the problem with earlier coated(shudder)Teflon cookware. If they begin to scratch and lose coating, I will change our review. So far, these are performing beautifully.

I was super excited to get these pans for my wedding. The joy was soon out lived by paint chipping off and looking terrible. The non stick is ok but i expected a higher quality coming from Rachael Ray. I loved that they were orange and wanted to have them hanging in my kitchen when not in use. Now im just embarassed to say that i have them.

Would not want anyone to buy this!!!!

I have the whole set of Rachel Ray pots and pans. They cook evenly and are very easy to clean. Only drawbacks are you can't put them in the dishwasher and the insulated handles still can get pretty warm on the bigger pots. For the price these pots and pans are a great bargain! I would definitley recommend them to anyone who would like a nice basic pots and pans set without spending a fortune.

REVERSIBLE PRE-SEASONED CAST IRON

REVERSIBLE PRE-SEASONED CAST IRONI love this griddle. I set it on my stovetop over 2 burners and have very even heat distribution. The grooved side is great for steaks, burgers, and chicken, and the flat side makes perfect pancakes, eggs, etc.

Cast iron is a great surface to cook on. For many people they are hesitant to use cast iron because they believe food sticks too much. If the griddle is seasoned properly, and not scrubbed clean with a scouring pad and soap, food rarely sticks. To season the pan simply lightly oil the pan surfaces and bake for half an hour. When I make pancakes I do a quick re-seasoning by making sure the griddle is hot before I put any oil or food on it. Then, prior to making my first pancake, I spread a light coat of batter on the cooking surface and let it brown up good. I then scrape it off with my thinnest steel spatula. Now I'm ready to cook perfect pancakes that turn easily, without sticking. If you still have a sticking problem, try making smaller cakes--they're easier to handle.

Anyway, I highly recommend this product. I also use mine on camping trips and do not hesitate to throw it on top of hot coals. The thing is indestructible, and the more you use it, the better it gets.

I decided to check Target before shelling out $55 plus shipping for this griddle. Glad I did, because ChefMate makes the *exact* same one (complete with same handles and round spot on both sides) for $20.Great griddle, but overpriced here.

Starfrit Light Cast Iron Fry Pans

Starfrit 11 inch Light Cast Iron Fry PanBased on the good reviews on Amazon, I picked up the 12 inch stir fry pan and I just gave it its first test run making curry.

In general this is an excellent pan, it's a good weight, meats brown and vegetables saute quickly, it cleans easily, and it is very responsive (i.e. it heats and cools quickly as you adjust the burner). So it makes a very good alternative to a stainless steel or anodized aluminum skillet or saute pan for everyday cooking.

That being said, it does not completely replace a standard cast iron skillet because it is so responsive...if anything, this pan heats and cools a wee bit too fast. Traditional cast iron heats and cools slowly because of its mass, making it very good for certain types of cooking that need the temperature to hold steady like deep searing meat, stir frying vegetables, shallow and deep frying, and braising.

I also wonder if the ceramic surface will hold up.As anyone who cooks on terra cotta or stoneware knows, ceramic in general makes a tough and easy to clean cooking surface, but Cook's Illustrated recently reviewed Starfrit's ecological cookware and said the ceramic surface began to quickly degrade. However, the base of that cookware is aluminum which has very different thermal properties than cast iron.Since ceramic and cast iron are more similar, I hope this pan does better.Only time will tell.

P.S. If anyone from Starfrit is reading this, I would love it if you made this pan in a 13 or 14 inch, 6ish quart size. The wider base and extra volume would make this more useful, especially when cooking for four or more.Even though I appreciate the lighter weight, a bit heavier of a gauge of iron would be good too and resolve the sometimes too rapid heating and cooling issue. A lid would be nice too.

UPDATE: After a few weeks of use, It's my pleasure to say these pans (I eventually bought the 11 inch skillet too) are more versatile than I originally thought. The 12 inch stays hot enough to do a very decent job at stir-frying. Sure, my Staub wok does a better job, but it must be three times the weight. The skillet sears steak like no one's business. My only issue is I wish both were a tad larger...a standard 12 inch for the skillet and 13 inch for the stir fry.

The pan itself works great the non-stickiness quite good (although you do have to use some oil with it).

For the first time in ages I don't have to soak and scrub the eggs off the pan, which after years of hassle with LeCreuset pans feel borderline miraculous.

HOWEVER, my biggest problem with this product is that the picture shows a different pan altogether the stirfry pan, and not the regular fry pan, which is more shallow and does not have the wok-like shape that the picture suggests. For me it was a huge disappointment (especially since apparently amazon does not carry the stirfy model at all, at least at the time of my writing it).

Plus, the main reason for my buying this pan was it's supposed non-toxicity. Call me crazy, but when something sounds too good to be true, it usually is.

I truly do hope that the non-stick coating is 100% safe as they claim, but still, I have my doubts.

That being said, the pan does work great. I'd give it 5 stars, but the picture deception really got on my nerves.

UPDATE:

Part of the non-stick covering on the pan simply wore off! As a result it sticks like crazy. I've heard of other safe-pans retaining their non-stickiness for only a couple of months, but I was hoping this one would be different. No such luck. What a bummer. Wasted money aside, I'm concerned that whatever the protective covering of the pan was, it obviously ended up in my food.

Also in the non-sticky frenzy of my first review I forgot to mention that the bottom of the pan was not perfectly leveled the middle part of it was slightly raised, which was a bit of a pain, as the oil would glide over to the edges of the pan.

Buy Starfrit Light Cast Iron Fry Pans Now

I picked up the 11-inch version of this pan because the old cast iron pan (one of the really heavy ones) I had used was reclaimed recently by my mother after a long term loan. I think having a cast iron pan around is essential, but I have to admit, that super heavy model was somewhat of a pain to us. Which is why I wanted a more versatile one, and one that wasn't as tough on the wrists. This pan fit that bill perfectly. It has the heft and strength of character you'd want in cast iron, but more maneuverability. The stay cool handle is nice, too, when you're cooking on the stove. Last night though I was making a savory bread pudding in here, and started it on the stove, and then moved it into the oven. Luckily, I remembered at the last second before pulling it out of the oven that stay-cool or not, the handle was going to be hot after being in the oven. So, be careful in that situation, which will come up because of the pan's ability to go from stovetop to oven easily. That, plus the lightness, will really let you expand how you utilize cast iron.

I have the 9.5-inch Starfrit Light cast iron fry pan, and it's become an indispensable part of my cookware collection. I've always been wary of cast iron because it's heavy and requires a lot of care. Not so with this pan! It's pretty light and easy to carry in one hand (especially with the neat stay-cool handle). The pan itself come pre-conditioned so you don't have to mess around with cooking oils before you use it. The pan heated up really quickly, and retained heat/kept food warm once I took it off the burner. The pan is the perfect depth for wok-style frying of veggies, but shallow enough to use for eggs and pancakes too! Cooking was relatively non-stick (I almost always add a dollop of olive oil), so despite frying tons of sticky veggies in it, the pan cleaned up quickly and easily.

I am very happy with the weight and the non-stick ability of this pan.But the bottom of the pan is only about 4 1/2 5" diameter.OK for 1 or 2 eggs. The top rim is 8".I would have given this 5 stars if it was an actual 8" pan. This to me is a little deceptive. You cook on the bottom of the pan, not at the rim!

Kitchen World Nonstick Marble Coated Pans (Set of 4)

Kitchen World Nonstick Marble Coated PansWe've thrown out all the teflon because these pans are awesome! They truly are non-stick, and if for some reason there is something leftover in the pan, it literally washes out with just water...you don't even need to use a sponge!Warning, these pans get hot and hold the heat, so cook on lower heat than you normally would. If you are one of those people who cooks everything on high, you will be very disappointed, as your food will be very well done in no time at all.Yes, I am re-learning to cook everything on medium heat. Also, because the pans hold their heat, they continue to cook even after you turn off the stove, so be careful if you are cooking something delicate like eggs to remove them from the pan as soon as they are done or they will be rubbery.I use a few drops of oil for moisture in my food, but it is not necessary.Once you use these pans, there is no going back.LOVE, LOVE, LOVE these pans. They are also nice to look at on my pot rack...no more ugly stains on the inside or out, like my stainless steel and other coated pans.

The quality of these pans is excellent, far surpassed my expectations.Thick-walled, comfortable handles...

and best of all, really, honestly non-stick.When they arrived, I decided to give them the true test-rinsed one of the pans, dried it, put it on the gas stove and fried an egg in it-NO oil at all-and the egg slid

out when it was done.Have used them every day since I got them, my old pans went straight to a charity drop box.Cleanup is a snap.Couldn't be happier with this purchase, hoping they hold up as well as I think they will.

Cuisinart Chef's Classic Enameled Cast Iron 9-1/4-Inch Square Grill Pan

Cuisinart CI30-23BG Chef's Classic Enameled Cast Iron 9-1/4-Inch Square Grill Pan, Provencal BlueI've been looking for a griddle/grill pan, but I have a ceramic top stove, so regular cast iron is a no-no. But after lots of searching, I found that enamel coated cast iron is okay to use, and had high remarks. I honed down my search, and found this Cuisenart grill pan to have all the attributes of the higher priced ones, and Amazon had the best price.....so I ordered it.

I got it 2 weeks ago, and it's quickly become my favorite pan. It grills burgers, fish & chicken beautifully. Even has a pour spout for excess grease (which drains away from the food, a big plus in the health department!).

With all the rain we've had, I haven't missed the outside grill at all. And it makes the best panini's, so you won't need another expensive thingy in your kitchen. Get your sandwich loaded up, put it onto this pan, and weigh it down with something (I use a bacon press, but you could use another heavy bottomed pan instead). Flip it once, and you'll end up with a wonderful crusty sandwich....evenly melted & amazing!

Tip: Preheat before using, but don't use this pan "dry". I pre-spray with Pam before heating, and spread butter or oil on the food I'm cooking.

This pan can go from oven top to broiler to oven.Great to sear meat. Smaller size for those who cook for 1-2 people. Easy to clean and good looking.

Paint and construction are of excellent quality. Because of the low sides and being thinner, it is light for a cast iron pan. But still rugged. I paired it with an Emerilware 8" square panini iron and the two fit perfect together.

I say 3 stars now.

Before using the grill I called Cuisinart to get their input on the best way to clean it. When I got through to Customer Service I was advised that they had no record of ever selling an enameled cast iron grill with the model number I provided?

I pointed out to them that I was looking at the Cuisinart website as we spoke, and the grill was listed on their website with a photo, model number, and price. I was advised they still could not find it either on their website, or in their computer. They provided me with another number to call that would be better able to address my questions.

When I called the number provided I was informed that they had referred me to a privately owned retail outlet, but that they would try to help me. I was finally advised that according to their records Cuisinart had never offer an enameled cast iron grill for sale?

As a last resort I sent an email to the Cuisinart Marketing Department that included the above info.

I was contacted the next day by two different people from Cuisinart who apoligized for the mix-up, and offered the following info concerning the care and cleaning of the grill:

"The interior isPorcelain enameled and it is dishwasher safe; as far as cleaning, it should be cleaned after every use and there is no need to oil it or season it.Food should clean easily because of the enameled surface unless it is so burned into the surface that it may take a lot of soaking to remove the residue".

So far I have used the grill four times, and it grills steaks and lamb chops just great. After each use I moved the grill off of the burner and added a little hot water to let it cool down and soak (I have a ceramic glass top electric range).

After the first soak I scrubbed the grill with a nylon kitchen brush with hot soapy water, then let it soak some more in hot water and dishwash soap.

After the next scrub the grill was pretty well cleaned. Then I ran it through my dishwashing machine and it came out very clean. It took a little extra effort to get it clean, but it was still a lot easier than cleaning my tabletop electric grill that has three large pieces to clean, and is a lot larger to work with in the sink.

I am very happy with the grill, and would buy it again if the one I have ever needed to be replaced (which I doubt will ever happen in my life time).

UPDATE:

OK, I have used this grill several times now, and am now having some issues with it. I set my ceramic glass top range at medium (5), and let it heat up for a few minutes before I start grilling. It seems that the more I use it, the harder it is to clean...even after overnight soaking in soapy water. Today I found that there is some blackened areas that just won't come clean. I tried Stove-top Easy Off, and that helped a little. The dish washing machine no longer gets it fully clean either. Also, today I noticed a small rust spot on the inside front side of the grill where it looks like some of the gray enameled chipped off? I only use a nylon brush to clean the grill, and tongs to put the meat in and take it out. So have no idea where that came from?

Lodge Logic L10SK3BS Boy Scouts of America Pre-Seasoned Skillet, 12-inch

Lodge Logic L10SK3BS Boy Scouts of America Pre-Seasoned Skillet, 12-inchThis skillet is made with the typical Lodge quality and attention to detail. While I'm sure that it is functionaly identical to the regular 12-in skillet, the Boy Scout emblem on the bottom makes it stand out.Perfect for the campsite, back yard BBQ, or the kitchen.

It arrived with a broken handle. As you can see in the picture, the handle is a little samll for a heavy skillet like this one.But no problem, I packed it up, returned it, and a replacement was received considabily fast!(for super saver free shipping, Amazon probably lost money on this purchase for sending the heavy skillet 3 times (original, return, and replacement).Great service Amazon!

I had no experience using cast-iron cookware prior to this one but I consider myself and pretty good cook.I did a lot of reading and research on cast iron, and gave this a try.It works great! The pre-season coating worked as promised.I use it to prepare steak mostly and the result was nice.I am still experimenting and adjusting cook time as this piece works differently than any other cookware I had before, but I like what it can do so far.I have seen the same skillet (except for the boy scouts logo) selling cheaper at Walmart. But for something that heavy, I can understand the extra cost even just for shipping.I have not seen one with the boy scout logo anywhere and I think it looks a lot more handsome that the regular one.Combining the 2 factors, I think the extra few dollars was well worthed.

Ever since I have the skillet, I am constantly watching for good steak on sale from the local georcery so I can do more (rewarding) experiments.

This is a second one of my cast iron Lodge pans. I am very happy with it, as it proved invaluable in my kitchen. Thick cast iron provides even heat throughout the pan, without cold spots or hot spots. I don't have to use high heat to get amazing results. True, I do have to use both hands, but this is a minor inconvenience (and I get a workout). I suppose gradually I will replace all of my fancy non-stick aluminum pots and pans with those made in the USA by Lodge. Woll Diamond Plus Breakfast/Crepe Pan, 9-1/2-Inch

Woll Diamond Plus Breakfast/Crepe Pan, 9-1/2-InchDesign of the pan does limit it to crepes or pancakes.

If you are looking for a specialty pan to last a lifetime, this

pan is a good option.

Bough this pan after using the Best Diamond one for more than 5 years.

It's still almost as good as the new, but got darker (without losing non-stick properties).

Felt one pan was not enough for my wife, when we expect guests :)

It's great long lasting pan, no regrets so far.

And the price this time was 30% lower!

I have been using this product for a month now. The pan has a good size for crepes. I think the price is fair for this quality. The handle does not become hot while cooking.

Chef's Design 20-Inch Grill

Chef's Design 20-Inch GrillI bought this grill for my glass top stove and I am not happy with the nonstick coating as it isn't non-stick AND it comes off when you clean it.This grill pan is a bear to clean I have tried everything! I really don't want non-stick cookware to begin with but it is hard to find a cast iron grill pan with a flat bottom so when I bought this it was the only game in town.I will not buy another one!

Lodge Pre-Seasoned Carbon Steel Skillet

Lodge CRS12 Pre-Seasoned Carbon Steel Skillet, 12-inchBought this through another store because I couldnt wait for Amazon to get them. I will be buying other sizes from Amazon as soon as available though. This pan carries on Lodges tradition of quality American made cookware. The pan is made of nice thick steel(12ga I was told). Heavy but not as heavy as the 12" cast iron. It is 12" from side to side, aprox. 9.25" cooking area and has a 9" handle. The sides on this pan are not as steep as their cast iron. The factory seasoning finish is excellent with a few very tiny specks of oil build up. The pan heated up quickly and held heat for longer than I expected, but naturally, less than cast iron. I fried eggs and browned ham in it as soon as I received it today. Turned out very well with minor sticking, but cleans up very well. Sure to get better with time! Glad I added this pan to my Lodge collection!

After using this pan for awhile I can honestly say it is a very good one. Being made in the USA is a plus too. Lodge knows a thing or two about metal cookware.

The handle is long so it can be used over an open flame fire. The build quality is sturdy and it will last a lifetime.

There is a learning curve that took me about a month to figure out.Cooking temperature and proper seasoning are a must.

The factory seasoning is OK but it states eggs will stick. I re-seasoned it and it is now virtually non stick.

The more you use it the better it gets. Searing meat at high temps is great.

I enjoy stir frys and just about anything you want to cook you can do it in this pan.

It seemed expensive at the time but this pan is built to last and I won't ever need another in my kitchen. About half the weight of cast iron and that makes a big difference in handling. Heats up quick and cooks evenly. By the time I wrote this review my chicken breasts are done. Fits three boneless in the pan.

I recommend it!

I had the pleasure of purchasing one of these pans at the Lodge Factory Outlet in South Pittsburg, TN a few weeks ago (more cast iron than you can shake a stick at!).

I purchased the 12-inch Seasoned Steel skillet for two reasons:

1.I've been using DeBuyer's 10-inch Mineral-B and find carbon steel pans to be my go-to pans, preferred over my All Clad, T-Fal non-stick, and even cast iron skillets.

2.My mother-in-law recently discarded her 12-inch cast iron pan because it was just getting to be too heavy, so I was interested in finding a substitute with few compromises.

First of all, I like this pan.Like other carbon steel pans, it's dead simple. It seasons easily and is very durable.

But this pan brings some negatives as well.

Pros:

1.Light weight.12-gauge steel is significantly lighter than the 3 mm of the De Buyers in the same size.

2.Simple and durable. There's nothing to break, and no non-stick coating to scratch or flake off.

3.Allows for high-heat searing, and goes from stove top to oven very naturally.

4.The Lodge 12-inch glass lid fits perfectly.

5.It's made in the USA.

Cons:

1.The lighter weight relative to DeBuyer or even other Lodge cast iron means less thermal mass.Thermal mass is what makes those heavy pans perform so well. This pan is thin enough that the heat dissipates fairly quickly. If, for example, I prepare my skillet potatoes in a cast iron pan, the pan comes out of the oven at 375 degrees and stays too hot to touch for a good 15 minutes. With this pan, the cooling is much quicker, being "touchable" after only about 7 minutes (give or take). In short, it doesn't have the thermal mass to perform like cast iron or DeBuyer.

2.The lighter weight seems to allow for warping.I inadvertantly heated my skillet to over 600 degrees for 10 minutes or so.I immediately lowered the heat and let it cool naturally, but the pan no longer sat flat on a glass cooktop.I understand that it wasn't intended to tolerate that kind of abuse, but I would like for it to be more stable.(Lodge was great about exchanging it as defective even knowing that I'd abused the pan.)

3.The seasoning and pan finish are rough--more like cast iron than like the other carbon steel pans I've used.It seemed to function reasonably well on my first pan (the one I overheated), but it remained a rough surface. On my second one, I sanded it smooth on the inside surface and reseasoned it using the Canter method (google it).Much better, and improving with every use.I believe the factory seasoning would be adequate, and would also improve with use, but I was impatient.

Conclusions:

It is what it is.I wanted a lighter-weight pan, and this qualifies, but requires compromise on the other traits I was seeking.I think the quality is great, the price is right, and it provides a good entree into the world of carbon steel cooking.Just be aware of the limitations and trade-offs, and that thicker carbon steel is just that much better.

Twelve inches is the diameter from rim to rim. When I received this pan, I had to look twice to make sure I didn't order the wrong size; Indeed it was the 12 inch, but the actual cooking surface is only 9 inches.

This pan is still useful, but if you're used to cooking in the Lodge 12 inch cast iron skillet, then go for the 15 inch carbon steel pan.

My cheap non-stick pans are wearing out, and I read an unthusiastic review of some of the new "green" non-sticks in Cooks Illustrated.Wandering through a retail store about six months ago, I saw these pans on half-price closeout and bought the 10" model. After a wipe-out and light oiling, I started cooking. That's it.I haven't really had to do more than wipe it out since.Food literally slides out of the pan, just like the non-stick informercial pans.I heat it up, then lower the heat a bit and make eggs, grilled cheese sandwiches, small stirfry dishes.Other reviewers are correct that the pans are small (the cooking surface of the 10" pan is 7.25").

KitchenAid Gourmet Non-Stick Stainless Steel Fry Pan, 10"

KitchenAid Gourmet Non-Stick Stainless Steel Fry Pan, 10'I recently purchased a smaller version of this pan and made my choice because this one is manufactured in Thailand and the others were all from China.Anyway, this is a great saute pan.The bottom is heavy and heats evenly, and the nonstick surface seems very durable.I am now ordering the larger one.

This is an outstanding pan in quality, function and appearance. It is an excellent value and about half the price of other big name utensils. It is a heavy pan that heats evenly. The non-stick surface works very well with a handle that has an easy grip design and it keeps cool too.

I wanted this skillet to go with my set of stainless steel pots. When I read that it was nonstick, I knew this was the one I wanted. I am very pleased with it. It also has a nice heavy handle. I use it all the time.
