All-Clad LTD 12-Inch Round Nonstick Grille PanI am not a big fan of the All Clad LTD line but I do love this pan.I much prefer the All Clad polished stainless steel line (I have almost every piece and love it). This grill is a perfect size for grilling for 1-4 people.I debated on the grande size, I decided that since I don't grill everyday it didn't make sense to spend the extra money and deal with storing the larger size.Also, I selected the round style over the square, my stove burners are round so I figured that the round style made more sense for me.

I often marinade chicken tenders in Emeril Lagasse's marinade (he has several different marinades that you can find in your local supermarket) a day in advance and heat up this pan and toss on the chicken.I usually make a veggie or two and some rice, it is a very quick and easy dinner and is also very healthy!You can also use this pan for everything from burgers to a tuna steak.

This pan is not dishwasher safe due to the nonstick surface, but don't worry it is a breeze to clean.I have the George Foreman grill that has been sitting in the cabinet collecting dust since I bought this pan.I don't like the George Foreman grill because you can't really wash the grill surface very well.The grill surface should be removable so you can really clean it.This pan is very, very well made and is backed by a lifetime warranty.Sometimes this pan is sold as a special..., if you see it grab it.It is a steal at that price.Once you try All Clad you will be hooked too! Highly recommended! A+!

I've been using grill pans for years and have bought many brands.This is the best one, hands-down.I gave away all five of the others I owned after the first time I used this pan.I love All Clad cookware in general and this is my first non-stick.The results are so superior to any other grill pan I recommend it to everyone.If you want healthy and perfectly prepared grilled food, whether it's fish, meat or vegetables, without a drop of added fat, this pan is for you.Buy it.

I'm a big fan of All-Clad and have a lot of All-Clad LTD and MasterChef pots and pans.I feel All-Clad has a great design methodology and makes great quality gear.Also, their non-stick coating is the best in the business.This grill pan, however, isn't actually clad the secret of its low price.It's made from a single piece of anodized aluminum like a Calphalon pan as a brief examination of the edge reveals.The beefy handle is the most All-Clad thing about it.The nonstick coating isn't the usual All-Clad type either although it certainly is top quality.As a grill pan, this one is very good that's not the problem.

Grill pans make grill marks on your food but are no substitute for actually grilling.There's no smoke flavor or high heat caramelization.The only thing the grill pan gives you is the sear marks.To that end, the nonstick surface fights you.Metal gives much better sear marks than nonstick coatings.In order to get a nonstick pan to give good sear you must really crank the heat up.This makes a lot of smoke which make a good lid a necessity.Sadly, this pan doesn't include a lid.I found that the Calphalon 12" "Everyday" pan's lid is a perfect fit by coincidence so I use it every time.

I have the luxury of a grill outside my kitchen door.I'm the kind of hardy soul who has no problem stepping out in the snow in shirtsleeves to flip the steaks.I find all grill pans to be a very poor substitute to actually grilling.Maybe if I lived in the city and couldn't grill as easily I'd be more enamored of this pan.As it is, I mainly use it under duress (such as during bad rain storms when I reluctantly must grill indoors).

I recently tossed a Calphalon grill pan in the trash after I could not clean it after use. Looking for another grill pan to replace it, I found this gem. I don't know how Amamzon can offer this high quality pan for this price, but grab it. Wonderful heat distribution, very large cook surface and NOTHING sticks!!

I could not believe that I found this pan at this price.I was further astounded when I received it and started cooking on it.It is absolutely fabulous.NY Strip streak comes out truly delicious when you simply sprinkle some salt and cracked pepper on it and then throw it on the grill pan.Also works great for bacon.Also works great for burgers.Also works great for...anything you could think of.For cleaning, I recommend immediately filling it with water after taking the food out, enough to cover all the bottom, and then let it sit til after dinner and you start doing the dishes.If you do this, then I recommend an OXO brush (ASIN B0000CFQOB) with nylon bristles.Gently brush between the grooves to loosen the remaining material and then use a sponge.I recommend the nylon brush because it is hard to get a sponge to get every bit of remaining material along the grooves.But overall this is incredibly easy to clean and even easier to cook on.I still cannot believe I paid only fifty for this item.

Lodge Color ECSGP53 Enameled Cast Iron Square Grill Pan, Emerald Green, 10-inchI bought this and the Emerald Green Panini Press together. They make a great team together. The grill pan is great! it heats evenly and slowly. I use either EVOO or refined peanut oil on this pan to give it its non-stick properties. I use the Misto can to spray a light coat on it and when its at the desired temperature I start cooking. I havent had a problem with things sticking and burning to any of the Lodge Enamel products. Any sticking that has happened has been quite minor. Keep in mind no enamel product is going to be as non-stick as teflon. Period. But with the right cooking practices, they can be as non stick as you need it to be. The Lodge Silicone handles work perfectly fine with all the Lodge Enameled and Le Creuset products (including this one).

Lodge Color vs Lodge L-series: I talked directly to their customer service to get the low down on this subject. Both sets are enameled the same way by the same vendor with the same amount of enameled layers. They obtain the same quality control. Other than the obvious shape and color differences the only thing that separates the 2 sets are the stainless steel handles and embellishments on the L-series. I was also told by customer service that they are phasing out the L-series and are going to continue to move forward with the Color series.

Just an FYI the Emerald Green is a little darker than the Le Creuset Fennel Color if you are looking to match the two sets. You might notice more of a difference in color between the Lodge's dutch oven and Le Creuset's French oven (same thing) but overall they are quite close in color. But between the skillets you wont notice hardly any difference unless you examined them right next to each other. They actually match quite well. I own Le Creuset pieces in Fennel and Lodge Color pieces in Emerarld Green. I have not seen either out perform the other.

This pan is awesome, I'm not sure why people think it's difficult to clean, it's not.If youhave had any experience cooking with cast iron this is your pan, if you are a lover of non stick, it might not be.I've cooked burgers and chops and they come out beautifully!

This is really a great product.Cast Iron, if cared for, is just about the best cookware you can buy.

While my title says "indoor grilling", I guess you really are frying in a pan, on the stove.So sorry if that's misleading.If you use the pan right, however, you'll get great grill marks on your food.

How to use:

Drizzle a good olive oil, or canola, back and forth across the pan.Take a piece of paper towel and rub the oil all over, making sure the ridges and grooves, and sides of the pan are coated.

Heat the pan on the stove over medium to medium high heat.I don't recommend using on Electric because you cannot get the quick temperature changes you need.And certainly not for a glass or induction type range top.

While it's heating, lift the pan and swirl the oil around, keeping the pan bottom coated.When the oil just begins to smoke a little, the pan is ready. Cut the heat down a bit and put in your meat.

If you don't FILL the pan, you can leave an area empty. that area will stay hot, so when you flip your meat around, that part will still be hot enough to leave marks...

I find I can cook 2 strip steaks, or three hamburgers or pork chops in this pan at a time and get great results.

Cleaning:

Could not be easier.After the pan cools, gently scrape any large bits of residue out of the pan with a spatula or fork.Fill half way with water, and return to the stove top.Turn up the heat and boil.

Don't let it boil dry, just boil for about 5 minutes.When that's done, let it cool a bit so you can safely dump the water out.Then, take a sponge one with a 'safe for teflon' scrub pad works (the ones I buy are blue) with a little dish soap, and go over the inside of the pan.Rinse, dry over heat, and put it away.

You don't want to scour the pan.The oils bake INTO the surface of the iron, making a 'non stick' surface of their own.

If you see RUST, scrub the pan with the scrub sponge, then coat with canola oil, rub all over with paper towel you want a coating, not pools of oil and put into an oven.Heat oven to 300 and bake on for an hour or so.

This is a great grill pan!! I love using this pan when I want a steak or chop, when outside grilling is impossible. Since it's already seasoned, it not only gives great grill marks, but great flavor. Another great buy that's worth the price.

This is a nice pan.It's very heavy and the ridges are just right.I wish they also had one a little larger.This one is OK for two or three people since fits three boneless pork loin chops or two good sized strip steaks.You can get eight lamb rib chops (rack) in it, but they're a bit crowded.

My son gave me both the 12" and the 8" Emeril frying pans.I use the small one for crepes.They have been perfect pans, and they are in constant use.I do not put them in the dishwasher, but nothing sticks to them, and it's not necessary.I use wooden or plastic utensils with them, but there is not a single scratch in either pan, after 2 or 3 years.The finish is very nice.They wash easily with just a sponge or a dish rag.The weight is sturdy, but not too heavy.They are really the two nicest pans I have had and do have.I just ordered 2 more this morning, since they are on sale, and I want my kids to have them.I don't know why people seem to have problems with them.They're great!

If you want a non-stick fry pan that lasts, from a company that stands behind their LIFETIME non-stick guarantee, you don't want this pan or anything from Emeril. I had the Emeril 12" nonstick fry pan for about 2 years. I followed ALL of the care instructions to the letter, but it became a gummy mess that everything stuck to. I returned it for a new pan under their lifetime guarantee, and was surprised when they returned my old pan suggesting that I hadn't followed their care instructions. I even called a manager to no avail. This pan was babied. If you get anything non-stick, get a Calphalon. I also had an 8-year old Calphalon non-stick fry pan that I returned at the same time as the Emeril. Calphalon sent me a new pan with a sample of their suggested cleaning product. The Calphalon lasted four times as long as the Emeril, and Calphalon stood behind their lifetime warranty. I threw the Emeril in the trash and went out and bought another Calphalon.

I really couldn't believe I was going to get an authentic Emerilware from All-Clad pan, figured there had to be a catch somewhere, I own All-Clad Stainless steel, a set my husband got for me one year and love it but still needed a nonstick pan. As you may know, All-clad is very pricey just for one item. Low and behold I found this, of course on Amazon.com. I bought two, just in case one "broke down" after use, at least I would have a new one to fall back on until I found something I liked. Afer all, I couldn't beat the price. Well low and behold I now own two fabulous pcs. of non-stick cookware. Highly recomend, you won't be dissapointed. And remember, as some of my friends and family seem to forget, DO NOT PUT NONSTICK IN THE DISHWASHER!! Wash by hand and they will look like new forever...

I'm not big on buying things because they have celebrities' names on them, but this pan came into my house through no fault of my own. My boyfriend bought it because he wanted an inexpensive pan with a smooth non-stick surface for making eggs. We had basically no expectations and were prepared to throw it away and buy another one in 6 months.Boy, was I surprised!

I have come to love this pan so much it has come between me and my beloved 8-inch cast iron skillet, which USED to be the pan I used for everything. While the cast iron skillet browns a little better, you just can't beat the ease of use of the Emeril skillet. I use it so often I got tired of it always being dirty, and I actually went out and deliberately bought a second one.It's my go-to pan not just for eggs, but for a single serving of just about anything.

In my cooking lifetime, I've become resigned to spending hours trying to scrub leftover cooking oil off non-stick pans, only to have a permanent layer gradually build up, which impairs the non-stick quality over time. No matter how I scrub with soap and hot water, when I rinse, there's still a visible oil sheen. With this Emeril pan, that struggle is over.It releases both food and grease like nobody's business, and you almost don't need soap to get itclean! Almost.

I've also been highly impressed by the durability. I've been using pan #1 for at least a year now, I think, and despite near-constant use, it doesn't have a single scratch on it, nor any discoloration on the interior (there is some on the bottom but who cares).It continues to release food and grease as beautifully as the day itcame into my house.

The only downside I've observed is that the handle is not as heat-resistant as I'd like. It's usually not a problem, but occasionally I have to hand off a hot skillet to my cooking partner, and I found out the hard way that the lower part of the handle actually gets too hot to easily touch. You have to keep your hand out at the end. Or use a hot mitt, of course. Considering I also cook with cast iron, which does not come with fancy features like heat-resistant handles, I'm not fazed by this, but I was still surprised.

I've been very surprised by the bad reviews for this line which say the durability is terrible or even only so-so, as that has not been my experience at all. So far it has proven to be the most durable of any non-stick pan I've ever bought. Can you honestly say you've ever had a non-stick pan last a solid year, with frequent use and washing, with absolutely NO degradation in performance? I couldn't until now. I note that another review stated the quality of the sets is noticeably less than the individual pans, and I wonder if that's the reason for the bad reviews.

iittala Dahlstrom Collection

iittala Dahlstrom 10-Inch Cast Iron Fry PanI invested in this line of cookware about 6 years ago.I have two 3L, 5L, and an 8L of these pots.(There are also some super heavy cast iron skillets that I highly recommend.) They are truly top quality, and are of similar clad construction to allclad.The extra bonus is that they are very stylish.I won't lie... I am willing to pay extra for style with substance.

They also form a mighty impressive display on my potrack ;-)

here is what's good about this cast iron skillet:

1)very sturdy, very manly, very well mounted,polish steel handle, stays very very cool to the touch even on high heat, even the closes part of the handle near the skillet is a bit warm but not very hot to burn you.

2) black enamel coating in and out, unlike true cast iron pans, these resist rust and if you get them wet and forget to clean and dry them right away the enamel coating prevents rust from starting.

3) cast iron is very heavy, the designer thought of reducing the weight by making the side walls of the pan thin to reduce the weight. unlike the kind from lodges the wall of those pans are thick and adds to the weight.

4) the base of the pan is extra thick, thicker than ordinary cast iron pans from lodges. This pan sits flat and so thick it won't warp over constant heat and cooling every time you use it.

5) this pan is not made in china. would be foolish to buy a pan for $140 and made in china. made in netherlands to somewhat justify the hefty price.

6) if you take care of the enamel then this should last a very long time. nothing cheap about this pan's handle and manufacturing process and technique. However cast iron material cookware is cheaper than stainless steel.

7) if you are looking at other cast iron enamel fry pan this is the best one. better than le creuset or other china made le cruset style cast iron skillets.

8) the side wall are flared out at a wider angle so easier to accommodate cooking utensils such as thongs without accidentally burning your hands on the rim of the skillet.

what I don'tlike about this pan

1)only comes in black but that is minor and just a preference

2) the inside flat part could be 1/4" smaller in diameter than a regular 10" skillet. 2 pieces of center cut pork chop would be a tight fit, can be cooked pan fryed but the 2 pieces of meat would be touching each other.

3) Cast iron cookware is cheap, so why so much as $140, would be nice if it is priced below $100. This make it the most expensive cast iron fry pan I ever came across.

4) very heavy and enormous long handle size. This is not a negative, this is the only way the pan's handle can stay cool to the touch from cast iron heat retention properties. I can only imagine women that are around 110 pounds would probably hurt their wrist if held the pan and lift it with one hand. I am a 200lb male and I use 2 hands to carry this thing. but can use 1 hand on the stove if needed to turn the pan so handle faces another direction. amazingly cool handle from a cast iron pan! this pan has the best heat stability, even cooking, and heat retention due to it's hefty weight. but very heavy. itsa good thing the walls are thin otherwise it be more heavy.

5) sometimes if you shop around, new or vintage, for a true cast iron skillet, you can find older cast iron pans with smooth cooking surface and commonly newer ones with bumpy rough cooking surface. I prefer the smoother surface. This pan is enamel coated but it has a rough surface not the smooth kind. I wonder if it still can be just as good of nonstick of a smooth cast iron pan if properly oiled and heated.

My dad has a pot like this and we love borrowing it.When I saw this available, we bought it, even though it is pricey.But when I opened the box, the first thing I saw was a sticker on the box saying it's made in South Korea.Nothing against Koreans, but if I am going to buy a European product at European prices, I expect it to be made in FInland like my dad's pot, not at some cut rate supplier price.The quality of the product even looks "cheaper" than the one my dad has, and his is well used already and still looks 1000 time better.I returned it right away!

Aesthetically, the Dahlstrom fry pan is a thing of beauty. I had read about it and saw it on Amazon. I had to have it! I ordered it knowing full well that it weighed a ton and so when it arrived I was not surprised by the sheer heft of it. So be warned, this pan is not for anyone who might have problems lifting a pan that's almost 6 1/2lbs.

As to its ability to heat up and do the job of frying, it's right up there with my trusty 20 year-old Lodge cast iron skillet. No complaints and the over-length handle is a real asset compared to the short stubby handles seen on most cast iron skillets. So that's the good news. Now the bad. And it all revolves around that handle.I expected it to be attached by rivets. It is not. Instead there are two screws that attach the handle to the frying surface. And those screws are my problem. After a very short time they became loose and the handle became wobbly. I've tried re-tightening the screws a number of time but I can't seem to make them secure.I believe that this is a design fault. Or perhaps, I just got a very heavy lemon from Scandinavia.

Farberware Affiniti 12-Piece Cookware Set, Red

Farberware Affiniti 12-Piece Cookware Set, RedNo, these aren't anodized aluminum and no you can't put these in your oven. But, for a "cheap" set of pans, they're great. I bought these on super sale. The bottom of the pan is flat(not always the case with "cheap" pans I've had) and they cook evenly throughout the pan. You can tell they cook evenly because when you boil water, you get several bubbles spread evenly throughout the bottom. I've had this set for several months now and the non-stick coating is still going strong. One issue I have is that at least one of the pan covers is warped. Also note that you cannot put these in the dishwasher. I especially like the smaller deep pans makes cooking sauce easier because it minimizes splatter issues. The large frying pan also nicely accomodates making crepes. Overall, I'm very pleased with the value of this purchase.



They look and cook great. But be careful not to touch the metal next to the red silicone on the lids ouch, hot.

If you stack them the Teflon inside will chip around the edge.

I would highly recommend this set if you're looking for a set in this price range. We received this cookware set for a wedding gift, and I instantly fell in love with the cherry red colour.It's not a bright fire engine red, but a rich cherry.Just lovely!

As far as the construction goes, I think they're fairly well made. They seem to cook evenly, however the weight of the skillets could be heavier.Until I put food in them, the weight of the handle causes them to tip.I have to hold the handle until I get the food into the pan.That is my only major complaint, but I guess this is common for cookware in this price category.And I'm used to it now.My main concern was how well these pots and pans cook, and they do a fantastic job.I also love the rubber on the handles.The non-stick works wonderfully, and cleans up easily.Please note that I don't have a dishwasher, so I wash them by hand.So I can't attest to how well they wash up in the dish washer.

So far I've used these for a total of 7 months, and they're still going strong.I wish this set came with a saute pan, and I can't seem to find the saute pan for this set anywhere!The matching saute pan is 10" and 3qt.Everywhere that had them for sale is now out of stock.That's a bit annoying.Does anyone know where I can find one (red)?

Oh yeah, the spatula that came with it is terrible.My eggs stick to it all the time, so I don't really use it.But don't let that discourage you from buying these lovely pots and pans.

I used a TON of butter to coat this pan the first time I used it to scramble eggs, hoping it would not stick.UGH they didn't just stick, we (hubby, the dish dog) had to wash it three times first was right after eating, the other two times were after soaking it in scorching hot water for hours.After the 2nd time, it was clean along the flat bottom but what was in the grooves along the inside would not unstick.WHY OH WHY IS THERE A GROOVE ON THE INSIDE OF A PAN? EVEN ON THE BEST PAN, YOU'LL NEVER GET FOOD OUT OF A GROOVE!

Good news, after extensive scrubbing with a scrubby side of the sponge, three washes later, it is clean and there are no scratches from the scrubby sponge.But I will never ever buy this brand of stainless again, EVER. I (HE) will not wash a pan, with that much scrubbing effort and soaking time, three times to get it clean, everytime we cook.Eventually it will end up donated or in the trash.

Weber Style 6435 Professional-Grade Grill PanThis received top ratings from America's Test Kitchen (Cooking Illustrated & Cook's Kitchen). I was skeptical because I have tried about a dozen different grill pans in the 18 months, but none have really worked. This is the best I have used yet.

One was a square-ish pan and the corners snapped and became unusable. A common problem with many pans; they are welded and not stamped or folded. The welds usually break due to the high heat in the grill.

My old favorite is a bowl style; it's decent, but the problem is the top is bigger than the bottom so there is not a lot of actual grilling space. As a result you either have steamed veggies or you have to keep stirring.

The biggest complaint I have about most grill pans is the holes. Either they are too big and things like cherry tomatoes and sliced onions fall through, or the holes are too small. Small holes have many problems: difficult to clean, too many and the food gets too charred, too many holes and the metal separating the holes breaks...etc.

This pan is the best pan I have used yet. It it made of one piece with NO welds; the sides are bent up to create a lip and give the user an edge to flip and turn food. Also, the holes are not actually holes, they are slits. This means that one does not have to worry about food slipping through the spaces; from time to time sliced onions get stuck, but not really a BIG deal. It works great for Portabella mushrooms though it is not just for veggies, it's great for fish. Another big seller is that this is stainless and easy-ish to clean. It's not going to be non-stick easy to clean, you will have to scrub, but with a Brillo pad and elbow grease it's not a big deal.

The only complaint I have is the size. I have a two burner grill (unless I can talk my wife into getting a new grill next summer) and the pan can be a little too big for this type of grill. This "complaint" is not that big of a complaint since I usually don't do veggies at the same time as the meat.

If Weber updates this pan, I would recommend making it available in a smaller size and upgrading the metal; it's a little light weight. It's not bad, a little more heft would be nice.

If you have a grilling fanatic in your family (even if it's you) then buy this pan. It's great! You won't be disappointed. Get this pan.





When I was growing up in the Midwest the outdoor grill meant only one thing, MEAT!Fortunately people are becoming more sophisticated in what they choose to grill.Now it is not unusual to find fish, shrimp, mushrooms, asparagus, you name it, cooking right next to burgers and steaks.

The only problem is, of course, smaller foods can drop through the grill and onto the fire.I have purchased screens and disposable grill pans before and they worked just okay.When I saw this pan and how reasonable it was priced I had to get it.

I like the build of this pan, very heavy-duty without being too thick.The raised sides keep the food from falling off and makes the pan easy to carry.It takes a little effort to clean (I use a SOS pad) but that is to be expected.

I use a small Weber--the Q200-and it is just big enough for cooking for 4-5 people.This grill pan fits perfectly on it but if I want to cook both meat and veggies at the same time I would need a bigger grill.I thought that I would make this little video to show the pan in action.Thank you!

This pan saved our grill!We have a low-end gas grill that was given to me and my husband as a Christmas gift.No matter what settings we tried it would either burn the food or leave it raw.With this pan, we can turn the heat up to where it should be and the food doesn't burn!The only downside is that it is a bear to clean.Other people have recommended Easy Oven Off but I haven't tried that yet.

At the time I purchased this, the product description on Amazon incorrectly stated the dimensions as 14 x 11 inches in one place, and 17 x 11 x 1 inches in another. These are both wrong. When I received it, it stated clearly on the package that this grill pan is 13.5" x 18.5" x 1.5", which incidentally won't fit on my grill. I've submitted the correction to Amazon, but in the meantime buyer beware.

Calphalon D87821/2P Commercial Hard-Anodized 2-1/2-Quart Shallow Saucepan with LidI bought this pot three years ago, and it was my first piece of "serious" cookware. I used it to make various pasta and other sauces, and its large surface area and even heat were very good. It was also easy to clean. Per the manufacturer's instructions, I cleaned it by hand, using a Scotch-Brite pad when needed. It was a beautiful pan. And, after three years, sauces started tasting funny, and I noticed that the inside was significantly lighter in color than the outside. A quick check with an Ohmmeter revealed that the anodized coating was gone, and I was effectively left with a plain aluminum pan. The other cooks I have talked to say that this is just what happens after a while, and the pans go in the sandbox for the kids to play with. Now, at the fantastic amazon.com price, it's not too bad to just buy a new one every three years, or you can mail the pan back to Calphalon and try for a warranty replacement. After this experience, I will certainly never use a Scotch-Brite pad on anodized aluminum. Still, a clad pan such as All-Clad offers similar performance and will last forever (15+ years), so I think that's what I will replace it with.

I recently ordered this based on my appreciation for Calphalon products and the great price.This is a fantastic saucepan that can practically double as a saute pan.It is surprisingly large and roomy, and the extra diameter gives it plenty of room for fitting in two or three chicken breasts, a modest steak, or a handful of veggies.I love it for making coq au vin since it isn't too large and goes right in the oven.

Nothing sticks to this pan if you add just a dab of butter or oil, and it heats up and cools quickly.One great feature of pure aluminum cookware is the fact that aluminum dissipates heat quickly, so pulling the pan off the heat is a great way to regulate the temperature when making a sauce.This is a great product and a wonderful addition to my Calphalon cookware collection.

Ok, let me get this straight...Amazon has 2 different 2.5 quart Calphalon Commerical Hard-Anodized saucepans, the regular, and the shallow.Inspecting the technical details of the two pans, one quickly realizes that they are identical except for the diameter and the height of the pan.The shallow is, naturally, more shallow (3 in. compared to 3 7/8 in), and therefore wider (8 3/8 in compared to 7 in) to accomdodate the fact that they hold the same amount of volume.What does this mean?More SURFACE AREA.What does surface area do?Well, think about it for a second:more of the pan is in direct contact with the heat because of the larger bottom.As a result, more of the food is exposed to the heat.The result?Faster cooking!

And this is a "sauce" pan after all.So what does this mean for sauce?Same thing as above, but remember, more of the sauce comes in contact with the air.More surface-to-air ratio = faster reducing times for sauces.

So we've established that from a technical standpoint, the shallow saucepan seems superior.It cooks faster because of a greater area for heat to contact food and for the surface of a sauce to contact the air.With that in mind, take a guess which one costs more.Surprsingly enough the pan with the lower amount of surface area costs at least %50 more than the more useful shallow saucepan.

So unless you are looking for a pan that reduces more slowly and has a much lower amount of versatility (try browning a couple of chicken breasts in the regulation sized saucepan...you'll have squished chicken), I recommend this pan whole-heartedly.The anodized aluminum does not react with acidic foods such as tomato sauces, looks really cool, heats quickly and evenly (aluminum is an incredible heat conductor), and won't bust your budget.This is the perfect way to own a piece of excellent cookware for a bargain basement price.Just remember, it is stick-resistant, not non-stick.This browns up much nicer than the Calphalon non-stick stuff, and you don't have to treat with kid gloves.About the only thing you can't do is throw it in the dishwasher (which you shouldn't do with any decent pot or pan) and use a knife or electric mixer in it (a hand blender is fine...the blades never touch the pot).

If not, you should.This is a great deal on a very useful pan.Once you've tried a calphalon hard anodized pan, you will probably never be satisfied with anything else.I currently own six pieces, lost two to my ex-wife.(They actually feature in our divorce agreement I got computer, stereo, custody of our son, and 1/2 of our Calphalon... I miss the pans more than her... :^)

I've owned Calphalon, Anolon, Farberware, etc.The Hard-Anodized products from Calphalon are the best.I give this pan and a few others (like the 12-inch Everyday Pan) as gifts, almost universally appreciated.If you are serious about cooking, they are worth the $80-$100 and higher price tags.If you pick up one of the pieces that are on the frequent super-deep discounts it is a steal.

The heating characteristics of these pans are great I refuse tomake candy or fudge in anything else.(I make 20-30 pounds of fudge each December)As long as you keep the heat 1/2 to 1 step lower than you would use with another pan, cooking time is the same and it is difficult to burn things.If you DO manage to burn something, just let the pan cool off and wash with normal dish soap (NOT dishwasher!!) and a scrubby sponge, it will clean up almost perfectly with very little effort.

I've found the Pots'n'Pans and nonstick Calphalon products to be acceptable, but they can't compare to the Hard Anodized Aluminum product lines.Don't get distracted by 'nonstick' coatings, that require special utensils and usually start to flake and peel within a year.This product is solid Aluminum, subjected to an Anodizing process to harden it, with NO added coating.As long as you don't abuse it, cut in it with a sharp knife, or use dishwasher detergent on it, it will last a LONG time.

I am very disappointed in the size of this pan.It is not nearly the size that was stated.I wanted a pan bigger than a regular 9x13 for lasagna but this pan was not any bigger.I will still use this pan for baking in but not for what I wanted it for.I think it is cheaply made.I would not recommend this one at all.

Browne Foodservice 57 24050 Induction Ready 18/10 Stainless Steel Fry Pan, 10-InchThis is a very good quality pan.I have several pieces and you just can't find a better stainless product for the price.They're durable and work on induction cooktops.Excellent weight for keeping pans flat on the burner surface.

It is way too heavy.If you're a chef maybe, but as a regular homeowner-type cook, I think I goofed buying one as solid as this is.I was trying to get a pan that didn't practically go sailing off the stove if you touched it, but this one is too far the other way, (not easily lifted from the burner with one hand).Other than that one complaint, it's a beaut!The thickness of the bottom requires an extended pre-heat, but it pays off at the back end...I just shut it off a few minutes before the food is completely done.The substantiality of the steel tells me this will be the last skillet I'll ever need to buy.

I bought this wok as a replacement for a regular nonstick wok and have been using it almost everyday since. Here is what I observed.

Pros:

Until now, the ceramic nonstick finish is still flawless at this point, while the previous ceramic pan we had had signs of wear already within the 1st month. (Admittedly we were more careful with this after our previous experience) My thoughts are since the previous onewas one of the 1st generation pans that showed up in the market, it seemed they have improved the toughness of the coating to last longer.

The weight is lighter than it looks. For its size it is not too heavy to be unwieldy when cooking stir fry or similar dishes. The handle has a solid feel thus you have a better grip when holding the pan.

The price at 40 USD for this type of pan is a steal. I have done some comparisons with other brands and most likely the reason for this being cheap it is relatively unknown brand at this time.

Cons

Does not work with induction stovetops. I am guessing its made purely of aluminum which is non magnetic. I would have liked this feature.

Does not come with a cover, thus will bump up the price overall if you intend to get one (and I do recommend getting their glass top as it fits the wok perfectly.

Overall I would recommend this wok.

I'm a big fan of ceramic cookware and have nearly replaced most of my skillets and small pots. This added the volume and depth I needed for sautéing veggies and other foods.

You can cook a lot healthier when you don't need non-sticking agents like butter or oil. Foods will stick eventually, it just means you let them dry out or over cook.

A nice, rich color red, too. Love it!

Scanpan Classic Ceramic Titanium 10-1/2-Inch Square Fry PanI purchased this pan to try out the glass ceramic titanium surface.It is a superior surface.We used the pan for 3 months.The problem arose the last time my wife used the pan.She was cooking in the kitchen and I began to smell melting plastic in the other end of the house.The smell lasted for days.There is no external damage to the handle.It must be occuring under the metal band that attaches the handle to the pan.I am afraid to use the pan again.



This is a fantastic pan. There is no hot spots, food browns evenly and beautifully. I find that it heats up faster than my other pans and I use lower heat than I need with other pans. I have bought many other non-stick cookware from Scanpan and I love them all. The food I cook on Scanpan always turns out better than when I use my other pans.

You can't beat a Scanpan product!I use this square shape pan when making pancakes rather than hauling out my electric "same shape" electric fry pan which never did have such a good non-stick surface.The pan cleans up extremely easy.Product purchased through Amazon.
