About a month ago I moved cross-country and went from a large kitchen to a pullman kitchen. I sold all of my cookware consisting of about 15 pots and pans comprised of Calphalon One Nonstick, Allclad, Copco, etc. I saw this nonstick set and purchased it because it utilizes Hydrolon®, an exclusive, eco-friendly, water-based solvent that replaces toxic PFOA solvents. I wasn't sure how good the nonstick would be, but it works great on my electric glass top range. I gave it my usual fried egg test and it slid right out of the pan without any oils. I then heated up the pan and put in a slice of swiss cheese for 5 minutes. It came out without leaving a mark. Having previously used top of the line nonstick cookware, this has proven to be of equal or better quality for 1/2 the price. Also, the glass lids have a small vent hole to permit steam venting so you can view what you are cooking. I am very pleased with my purchase. Also, the individual bags they use for packing is great for separating the pans when I put them on top of each other in the cupboard so the nonstick is protected. Nice touch. I have now added the 11 inch frypan to the set. I also like the fact that the cookware is induction compatible should I get an induction burner in the future. Oven safe to 350 degrees.

My older PTFE (Teflon) coated pan was wearing out, as the coating gets damaged over time, so I wanted a non-stick replacement pan.
My new Berndes ceramic coated pan is amazing! It's more non-stick than PTFE coated pans and more durable. I'm very happy with it. And as an extra bonus, it does all this without using PTFE.

This pan, and its companions, are restaurant-grade sautee pans with a very sturdy aluminum handle and slick, non-stick cooking surface.The bottoms are flat, heavy aluminum for even heat distribution.I added some rubber insulating grips for the two pans I purchased (8" and 11") but they are not really necessary in a commercial kitchen where everyone uses some type of favored insulating device from potholders to gloves, to dish rags.

I guarantee that you'll love these pans.If memory serves me, I paid only $6 for this pan.
And yes, I am a former chef.But I am not Anthony Bourdain I don't consume prodigious amounts of alcohol.And I am not nearly so skilled as Tony.But I continue to cook for my family and friends and use this type of pan almost exclusively.They last several years easily.And at $6, you can replace them when needed.My last 8" pan lasted 7 years.

I've been looking for a good non-stick pan for years and have never been satisfied with the durability or performance of the products I've purchased. So here we have a pan marketed as being made with diamonds that render the surface "indestructible." It's hyped up with cool-sounding technology jargon like "nano-composite." The manufacturer blatantly claims the product contains no Teflon whatsoever, and says the pan is safe for your health.But what's the reality here? In reality:
* The nano-composite non-stick cooking surface is made primarily with PTFE, the chemical known as Teflon.
* The pan is marketed as a product that contains NO Teflon and is safe for your health.
* The non-stick surface scratches easily with a common fork.
* Scratching the surface with a household fork causes microscopic bits of the composite material (PTFE and diamonds) to be released into the food being cooked, whereby they are swallowed by consumers.

Cuisinart 66-7 Chef's Classic Nonstick Hard-Anodized 7-Piece Cookware Set
My main complaint with the Cuisinart cookware is they heat up very quickly due to the thin 3 mm thickness.The fry pans are the weakest items of the set.After side-by-side comparisons against Emeril's All-Clad Hard Anodized, I much prefer the Emeril brand. The Emeril pans are 5 mm thick and seem to cook more evenly and are not near as temper-mental as the Cuisinarts.
For not much more money, I would look at the higher quality Emeril Hard Anodized set; and sorry Amazon, the best deals for Emerilware are using one of those 20% off coupons at Bed Bath and Beyond or Linens N Things.
As always, you will never find a perfect cookware.This Cuisinart 7 piece is no exception.It is great but not perfect.Its light weight is very impresive and handle isn't that hot after long period of cooking time.Easy to clean.The non-stick surface is better than other brand.It takes very short time to heat up stuff too.However, couple weaknesses, the lit does not have a small hole to release pressure which we have to watch out for overheat spill.Plus the lit is not the same design as the pot itself, it heats up really quick.So be careful.It is not a good idea to buy plastic handle with the lit, it will deform and loose after a while.Over all, it is better than what I expected even though I have owned this set of cookware for 4 weeks.

The coating of these pans started to come off after two years. The cuisinart customer service was good and replaced 3 of these pans already. However, the coating in one of the new ones is starting to come off again. I've only had these for a short time but I have tried them all and I'm super impressed! Especially for the price!! Fabulous! I made a cheese sauce in the small pan and when I stirred it it pulled away from the pan like dough does! Then I put the sauce in the larger pan with noodles and put the whole thing in the oven to bake mac-n-cheese. Came out perfect and the mac fell right out! I just wiped the pans clean no problem! I'm a huge fan of cooking on the stove then popping the pan straight into the oven and soo many pans can't do that! The only thing I can think of I'd improve is I'd put a vent hole in the lids. These don't have that, but no worries cause they are wonderful in all other ways! I also scrambled an egg in the fry pan with NO oil or butter... didn't stick! Can you believe it!?! Nice. UPDATE 07/15/12:This pan is still performing well and looks good.Since I like it and my 11inch so much, I bought this pan in the 12 inch size, plus the nonstick pans (7.9, 10, 11, & 12 inch sizes) and Art & Cuisine Austral sauce pots in Plum color.I am looking forward to cooking on these for years to come.
