Then I had what may be the best dinner of my life, at Mario Batali's new Vegas steakhouse, Carnevino.It was early fall; they had an item on the menu, "Market Peppers."Vine-fresh, long skinny red sweet peppers were seeded, cored, brushed lightly with olive oil, sprinkled with sea salt, and oven-roasted and then brought to table in this little pan, or one very much like it.The pan was so hot that it kept sizzling them right at the table; you served yourself and the sweetness, the good roasted flavor where the hot iron had seared the pepper skin, was just unbelievable.

You can make this, and other similar vegetable and mushroom dishes, at home in this wonderful little pre-seasoned pan.Because it's cast iron, which retains and delivers heat wonderfully, you need very little oil; foods sear nicely without scorching, and cook through without needing to sit in a puddle of oil to do it.

I pretty much want this on the table every day, filled with delicious roast things.You can also use it for breakfast scrambles, one-person casseroles or pot pie, or pretty much anything else you like it's cast iron, it's indestructible.Just don't put it in the dishwasher no soap please, just clean by rinsing under hot water with a stiff brush, then coat with oil lightly and put it away.



I have fallen in love with Lodge's small cast iron skillets and have several sets of them which I use to serve rustic dishes to my guests.I like the way they look and I like how they keep hot dishes hot.However, there are times that I wanted something that had the same properties as the skillets but had a more conventional shape.I now have a set of both these oval mini servers and the rectangular ones and I love them.

These are great for appetizers, such as wild field mushrooms with grilled baked polenta, fired roasted tomatoes and goat cheese.The cast iron keeps the mushrooms (which would normally get cold fairly quickly) warm for a least a half an hour if needed.I also use these for au gratin potatoes, broccoli and other vegetable casseroles, as well as other warm sides dishes.I usually place the servers on a cast iron trivet in order to keep the table for getting burned.

If you are into rustic and bistro cuisines you will probably enjoy these cast iron servers as much as I have.With proper care these should last for many, many years.

Calphalon UNISON Nonstick 12-inch Everyday PanFast, simple, one pan cooking at its best is possible with this Calphalon Unison Nonstick 12-inch Everyday Pan. The nonstick interior is lightly textured to help properly sear meats, meaning you can think beyond skillet dinners-in-a-box or casseroles. To take the pan on a "test run", I preheated over medium-low heat on my gas stove top burner, lightly coated the interior with cooking oil spray and browned both sides of three chicken leg quarters within about 7 minutes, I then added a cup of water and chopped, fresh vegetables around the chicken legs, sprinkled on some seasonings, covered, reduced the heat to low and simmered everything for just under 20 minutes. The result? A delicious, healthy, quick and easy meal for my family at less than $3.00 total for all ingredients. I'll try to upload a picture.

Important information for anyone buying any kind of nonstick cookware, including Calphalon Unison (which is the very best by my experience), is to never have your stove top burner set higher than medium, always use wooden, plastic or nylon utinsels, and lightly oil the interior occasionally after washing. Although Unison cookware is supposed to be oven safe to 500 degrees, I wouldn't (personally) place it in an oven hotter than 400 degrees... I generally set my oven temperature at no higher than 375 for anything that isn't dedicated bakeware. With simple care, this Everyday Pan should last for years. I love that it's large enough to make a meal in one pan so cleanup isn't a chore after a meal.

Having tried many, many brands of regular and nonstick cookware over the years, Calphalon Unison pieces have proven to be the most durable and reliable with daily, heavy use. Yes, it's expensive, but so is replacing a less expensive, lower quality, much-used pan every two to five years. If you're able to pick up this brand at a reduced price you'll save even more money over time.



Pan was shipped promptly and was well packed.GREAT price.Calphalon says it can go in the dishwasher, but I haven't tried that yet.Not sure I want to chance dulling the outside finish.I like the TWO handles, as a 12" pan is two heavy for me to lift with one handle when it is full of food.I have never had a glass lid before. I liked being able to see in as the food cooked; but I don't like that glass can break.This finish is "sear" rather than regular non-stick, so it is supposed to be able to brown food before simmering.Haven't tried that yet, either.

I have RR 10", differend handle and made more solid, I love it, that is why I got this set.Boy was I fooled.This is more thinner than my 10", the hanndle is different.Looking around in the stores this one is a newer set.Try and find the older ones if you can.

I bought this because we needed some new nonstick frying pans and I wanted some that had a coating which did not chip off. It doesn't. However, the pans are delicate and cannot stand up to higher heat. This means that you can only cook food in them on low heat. What good is a frying pan that you can only use on low heat? This means no cooking meat in them as you cannot sear the outside to keep the inside juicy. No cooking anything that needs higher heat. So far we have only used our smaller frying pan and that only a few times and already the outside is black from the electric burner and the inside has food charred to it. I am already searching for another brand of cookware that is both nonstick and more sturdy, yet does not cost an arm and a leg. I would never buy any more frying pans in this brand.

We have been using these pans daily for almost two months. So far we are extremely satisfied. The pans are more lightweight than our more expensive stainless steel set, but that's a good thing for our older wrists. They are so easy to clean that it's almost fun.

I have owned several "non-stick" skillets, but it seems that the finish wears off so quickly.I checked reviews from different websites and for an inexpensive price range, this set received very good reviews.I waited to review it because I have been too quick in the past to say "I love it", and then a month or so later ended up hating it.I really do love these skillets.I use one almost every day.It is important to know that the manufacturer tells you not to heat the skillet above medium heat to protect the non-stick finish.I haven't found one yet that doesn't give the same instructions.That is very key to making your skillet last.However, even with following those instructions in the past, the finish quickly wore off.Not so with this set.They are still "like new".I am very happy with my purchase and I have owned these skillets for a year.

This skillet is really oval.Really.As another reviewer wrote, find the dimensions and see if it will work on your stove top.It seems like its top "Le Creuset" quality just a funny shape.Side by side burners would work the best.

This is a good pan, but the non-stick is not as non-stick as a well-seasoned lodge cast iron pan.I love the larger size, wish my stove's expandable burner worked a bit more evenly.Although it is a heavy pan, I have a large variation in heat when using on my uneven stove burner, pancakes will burn on one side and be raw on the other.Like that the enamel bottom does not scratch my glass-top stove.

Culinary Institute of America Masters Collection 10' Sauté PanPurchased this recently and after two meals I already know it's the best sautee pan I've ever owned. It's weighty but not unwieldy, feels great, and spreads heat perfectly. It's also already responsible for the best omelette I've ever made and is in immediate full use as it's a huge upgrade from "the usual". With a lifetime warranty, I doubt I'll ever own another sautee pan.

I recently started getting serious about cooking and decided it was time to upgrade my cookware. After doing considerable research I was settled on allclad. I am glad i went to a store and picked up the pan first. after picking up the allclad pan i felt it was a quality pan but the handle was quite uncomfortable compared to the cia pan.

this is the best pan I own. It is a beautiful piece of cookware. It sits on the top of my stove begging for me to heat it up until the oil begins to shimmer and toss in fresh sea scallops until they are a beautiful golden brown.

It cleans up easily, heats evenly, can be transferred from the stovetop to under the broiler,andbecause it isnt nonstick you can produce a nice fond after cooking a protein that can be deglazed and turned into a nice pan sauce.

Buy with no remorse. I recommend this brand to anyone interested in investing in quality cookware. I plan on replacing most of my old nonstick with the rest of the Masters collection line.

Hamilton Beach 38540 16-inch Step Up Skillet, BlackThe reason I selected this particular skillet was because of the drainage lip, and lockable lid. It was more pricey than the others, but since I use a skillet almost daily, I figured I would splurge and get a really good one.

When I received it, I was wiping the temperature control, and the face with the degrees came off. I thought it was odd that the one I received was black faced, but the one on the box was silver, and stainless steel looking. The picture on the Amazon site makes it difficult to see the control.I called Amazon to return it for another. I received the skillet with the same black faced temperature control. The rest of the skillet is really very, very nice. It's just the temperature control thats really, really cheapo! I'm really surprised that this price of skillet has that cheap of a control. I've bought other skillets that were cheaper, but had a much better control than this. (Presto, for example) So, if you purchase this skillet, please beware that the face on the control is plastic coated paper. And use caution when cleaning the control!

This is definitely a step up in terms of appearance when compared to most skillets in this price range.Performance: the unit heats incredibly fast and evenly.The clip top lid is wonderful, because the edge of the pan has a built-in spout so you can pour of broth, liquid, grease, etc.Just try and do that with an ordinary skillet that doesn't have a locking lid, and doesn't have a pour spout.Temperature control is excellent.The thick rubber feet, and sturdy cast metal frame hold the unit beautifully firmly. 1) The built-in drain on the skillet allow air/steam out of the skillet.I thought that would mean heat and moisture would escape quickly, and this would likely not be ideal for certain cooking styles I was wrong. I've used this baby a ton, and the little corner spot allows excess heat, but in no way shape or form affects cooking, steaming, boiling, or any style of frying whatever.For me this really didn't matter, because I would only pan fry, fry burger, fry steak, fry eggs, fry bacon, fry pork, fry fry fry and saute.Any type of pan style cooking is performed with ease within the Ham-Beaches coffers.Anyways, my point is this: It's a great piece, works perfectly, has some awesome features, and looks good.Nothing is perfect, but you will love this product, and it clearly will last a long time.Five stars.ADDED:I've removed some thoughts from my initial review, because I didn't know if the pot would do certain things, so let me just say this: "This is easily the finest cooking product I have ever owned".It will do everything, and do it incredibly well.Cleanup is so incredibly easy.I use this product up to 5 times a day.

I have the presto electric skillet, and liked, but, because the bottom is so thin, everything goes to the middle..very uneven heat.Also the legs are very loose and flimsy, making it very unstable on the counter.This has a very heavy bottom,, and is much more stable.Something I have learned about all these nonstick electric skillets/griddles is DO NOT use Pam or other nonstick sprays, they leave a funky sticky unremovable film...use a little olive oil spray or a little butter.

This skillet has become very handy. It is a good large size and I love the pouring spout and secure cover.I usually cooked bacon on a griddle built into the stove.That left a mess on the stove to clean.This skillet doesn't leave half the mess.Good evan heating.Well worth the price.One minor issue is that the mark for setting the temperature is difficult to see, although the power indicator is fairly close.

Bialetti Collection 12 Inch Saute Pan

Bialetti Collection 12 Inch Saute PanI have had this pan and a smaller one for approximately 3 weeks. All told, for the price, it does a decent job. It is very light weight and as a result, heats up quickly. The result is that food can burn easily if not monitored. This product is made in Asia even though the brand implies Italian-made. The non-stick surface is as advertised, but I'll have to see how well it holds up with more use. A good buy if you're looking for a utensil with good utility and realize that it may not last a lifetime.



Had one that I bought in 2007, made in Italy and a very sturdy and solid finish. Held up very well through years of use and finally discarded it today as the non-stick coating had worn off. Highly recommended for its durability.

I was unhappy with this product so I went back to review it and was surprised to see that I only bought it a year ago. I only bother to review things I really like or really don't like. This pan falls in the really don't like category. The pan cooks all right, but in one year it developed bald spots where the coating just disappeared off the inside, and the handle is just about ready to fall off and can't be tightened adequately. I have probably used it less than once a week to cook for two people and have never used a metal utencil with it only plastic and wood. I have only washed it with a dobie (scrunge). None of my other pans have worn like this. The quality is just bad. I'm going to have to replace it. One year is not enough!

I bought this for my mom, who had a crummy one but figured she was too old to bother replacing it. But I felt, why not have something nice if you have to cook for your loving husband of 60 years!?! She was thrilled, especially when she realized she could make grilled cheese sandwiches for both of them at once.

GRILL HERITAGE SILVERSTNThe Amazon listing says this is "by SilverStone", but Silverstone is the name of the non-stick coating. The manufacturer is Bethany Housewares (listed correctly for the Aluminum model).

I use this as a "mitad" for making injera, the Ethiopian flatbread made from the nutritious grain t'ef, and it works very well. There is a nice lid for this available directly from Bethany Housewares for about twenty bucks. I'm sure any generic lightweight 16" lid would work just fine, but you'll need some sort of lid if you want to make injera. Several websites recommended the non-stick model for injera (over and against the aluminum) and having made injera several times now, I think that was good advice. (You make injera on very high heat, covered, until the bread starts curling away from the grill, so maybe under those conditions the surface doesn't really matter, but I like how easily the bread slides off the grill on the Silverstone, having no actual experience with the other model.)



I got my Bethany Housewares Heritage Grill with Teflon finish for making lefse. I've used it 5 or 6 times for that and it works great.

Better yet, it is the best grill I've ever had for frying eggs, hash browns, sausage, bacon, pancakes, or cooking just about anything else that's grilled. The non-stick finish means it's not necessary to use more than a light brush of oil to fry eggs, hash browns or other food that contain little grease of their own.

And the Teflon seems indestructible. My grill has been used almost daily for a year and a half, often by family members who are not as protective of the finish as I am, and it's still pristine.

Come to think of it, I'll have to take back the bit about me being the most careful one using my grill. Just the other day, I left it on with a turner on top--a turner that melted into a liquid plastic pool on the beautiful non-stick surface. But everything wiped right off once the hot plastic cooled enough for me to do the wiping. Did I mention the surface seems indestructible?

The only drawback, I suppose, is the late sixties look. That, I'm guessing, is because it's such a good product there's been no big push to change things up since the sixties. I think of it as stylishly retro and rejoice that this grill's consistency over the years means I can order replacement legs or a new probe control from Bethany Housewares if needed.

I could live without my electric fry pan or George Foreman type grill, but wouldn't want to live without my Heritage grill.

I got this grill last year (in 2008) and am very pleased with it. I have used it regularly and use it for making dosas, the Indian crepe. I can also cook 2 or 3 rotis on it at a time and it speeds up the process.

It heats up beautifully and maintains consistent temperatures. It is very easy to clean as the probe style electric wire comes off. I usually wash it by hand but my son threw it in the dishwasher once and we saw no adverse effect.

A good product, well made.

Update after 4 years You do get what you pay for is very true in this case. Really excellent quality that has held up well. Present this is the only non stick pan I own and still love it! Makes the largest dosa possible in a home environment. Additionally I have used it for making large quantities of patties/cutlets and pancakes at a time. Cleans well in the dishwasher if you take off the electric attachment/cord.

Caution make sure to dry thoroughly before using again

I've made eggs, bacon, French toast, and a bunch of other food items in these pans and nothing will stick to them. Be very careful about the utensils you use because metal will scratch these easily (minus one star) but if you use nylon then there should be no problem. These are built sturdy also unlike a lot of other inexpensive pans. I recommend giving these a try before dropping large amounts of money on other pans.

I have another, larger Demeyere proline pan, and it is my favorite of all (better than Mauviel, which is heavy; Le Creuset is great but they are casseroles or dutch ovens) . i like that it heats across the pan, it heats up quickly on our induction stove and it is nonstick without the poisonous coatings such as teflon. so i bought the smaller pan for omelettes or one-person dishes. it is just the right size, perfect.

This pan is amazing!Its not for eggs but it does meat and poultry like nothing else.Totally worth buying.

This frying pan heats evenly, even when a cheap electric range. Remember, electric ranges are always at full power or off -lower settings just switch between the two.

While the surface is not non-stick, it is surprisingly more non-stick than any other stainless steel pan I've ever seen. I can pull meats off without chunks peeling off. Even Salmon remains intact with a quick scrape from a spatula.

The one disadvantage is that the pan, with a thick core of aluminum, is fairly heavy -though not as heavy as a cast iron pan of the same diameter.

I had been using an All Clad pan that I was very happy with when I purchased this Demeyere pan.This is the best pan I have used: it heats evenly, quickly and cleans beautifully.It is heavy, but I have gotten used to that.It makes cooking even more of a pleasure.

Yea, its expensive. As the other reviewer said, not for eggs... I have cooked eggs (with a lot of oil), but then a long soak is needed.

Other than that, it is critical for induction to have a great pan with a heavy base.

And the quality is astonishing, your spouse will be angry when you start sleeping with your pan clutched to your bosom. It is that nice, and worth the money (it will be the last pan you will buy).
