Scanpan Classic 11-Inch Glass CoverThis is, of course a perfect fit to the pan.The domed lid makes for a good moist cooking environment, and you can see what is going on inside.The black knob is easy to grab and does not get hot.I vacillated between this and the steel cover, which looks easier to store.I am glad to have this but would consider the steel cover if storage is a problem.



I got this for a 20 year old Scanpan that had its original lid broken.The design has changed a little over the years but it still fits the large fry pan and the stock pot.The quality is good and it is easy to clean.I expect it to last another 20 years at least.

Simply Calphalon Nonstick 12-Inch Everyday PanI really like this pan.I use it everday for almost everything.There are two drawbacks, the first is the rounded edges. It is hard to spoon food out of the pan. The second is the handle.I have burned my fingers twice because some of the hand is not coated with silicon.

The Simply Calphalon Everyday Pan is a joy to use. Its design is simple and elegant and the pan is wide enough to fry, stir-fry, and cook everything from asparagus spears to skillet lasagna. The handles have a non-slip grip that also stay cool to the touch. The only thing I wish is that it was 3 inches deeper so food wouldn't spill out of it when stirring.

This pan is what it says, it is a 12 inch everyday pan.It is made of sturdy materials.I do like the non stick coating.Clean up is a breeze.It is however, a lot more shallow than I anticipated.I expected something more Wok-like in depth.Also the dome lid is not as "domed" as I would have hoped. Both of these factors make me glad I did not throw out my old everyday pan.Still looking for the perfect one.

As others have written the pan has too shallow of sides. This would be the perfect pan as it offers a large surface area to saute or cook with. Unfortunately the pan has shallow pan sides meaning when you try to stir or saute the food tends to fall out onto the stove top.

The pan seems to heat evenly and offers a large surface area to cook steaks or hamburgers. I probably would not try frying chicken or stir-frying in this pan due to its shallow pan sides.

I wasn't sure I would like the double handles instead of one being a standard long handle, but it is nice to not have to rotate the pan around to fit on the stovetop with other burners in use.

The pan cleans up nice and the lid fits well.I used it in the oven to bake scalloped potatoes and they turned out great.

I haven't tried to cook eggs without a bit of butter or oil yet, but I haven't used much of either one when cooking and have no problems with sticking.We use it almost every day.

I have to say that this product is of EXTREMELY high quality, and I am surprised how well they work. Something that has to be taken into extreme consideration, however are their size. Though they are high quality they are also not meant for any type of extreme cooking. They work for very basic meals, and are perfect for the beginner chef or the college student. To give you an idea of how small they are, none of the bases for any of the pans are larger than my hands. THAT small. Nevertheless storage is a breeze and the 3 different pieces give great opportunity to get creative when designing meals. You most definitely cannot serve more than one person with these, but their small size also means that everything cooks quicker under higher heat (can be a disadvantage). It also means that any worth while cooking must be cut up into miniature sizes, which can be fun as well.

If you are a beginner college chef, go for it!

I really like these pans. They are the right size for small single size cooking. I only gave it a 4 because I have a hard time getting them to stay up right on my gas stove. The handles are heavy and upset the pan. I have to put them have above the flame and half off to get them to stay up right.

Lodge Logic L6SC3 Cast Iron Lid, 9-inchgot rid of the microwave and don't have a toaster oven.This lid makes the pan essentially a little oven of sorts.It also allows for frying up things that splatter while containing the mess, sometimes I use it with the lid ajar so steam escapes and splatters mostly don't.I'm probably going to buy lids for presents for members of my family, cause I like having a lid that much.

Something to keep in mind is that the lid has to be treated the same way as a cast iron pan, for me that involves mostly inverting it over an open flame after use.Failure to do this will result in a rusty lid, you don't really want that.Mostly I don't wash it cause by and large it is covered in either water or oil/fat and I'm ok with baking those out.

Purchased for a 9 inch skillet,; it does not fit properly, however, it fits my chef skillet perfect.; am very happy about that. Need to order a 9.5" lid for the 9" skillet.

Coleman 12-Inch Steel Non-Stick Fry PanBought this because I wanted a fold up handle for packing.The light weight and folding handle packed into the camp kitchen very well.The folding handle is sturdy and the the small opposing handle is nice.But I could not rate this higher because the non-stick material is delicate and not very non-stick.After one weekend camping trip, there were scratches thru the non-stick coating.I will use it until the non-stick surface deteriorates, but it will be replaced by frying pan with a regular surface.



I bought this for my annual camping trip and was very excited when I received it.It was nice and large, and the folding handle was a cool feature...made for easy packing.But my excitement wore off the very first time I used it.I lit up the camping stove and started cooking some scrambled eggs.It seemed fine at first, but as it heated up the middle became extremely hot and there didn't seem to be good heat distribution.I stirred the eggs using a soft silicon spatula (no metal at all), but the non-stick surface in the middle still started chipping off.So after just one quick use, the inside of the pan was already missing some coating and the bottom was also heavily scratched from sitting on the stove.I'm be throwing this pan away and looking for something else for next year's trip.

See title. The folding handle is nice, the size is convenient, and the extra handle is a good feature, but all the extras in the world don't make a pan advertised as non-stick fulfill its most basic function. It's also too thin to spread heat properly the middle gets hot much faster than the rest, and if you're cooking something you can't stir (like fried eggs), food in the center burns (and sticks) while the edges stay raw. I'm very disappointed and will have to replace this skillet soon, which is sad and needlessly expensive.

This makes a great camping skillet. Handle folds for easy packing and it's not too heavy. We also use it at home sometimes because it's light, non-stick, and with handle folded it doesn't take up as much room as a traditional skillet.

Every household should have at least on cast iron pan. This is why; they are great for searing meats: steaks, burgers, tuna steaks and the like. Bacon in the morning: Somehow bacon cooks up well in this pan, probably because of the even heat distribution and retention. Anyways, this is a good sear pan. My only criticism is the inside surface is gritty, so it is not good for cooking eggs or pancakes. These items tend to break-up when you try to flip them. This is not a good general purpose pan, consider it a specialty pan. But what it does it does well!

I got this at a local shop specializing in close outs for $25.This was an absolute steal, probably the buy I have had all year.This is a very heavy enameled cast iron pan in a pretty red.The pan is a very thick cast iron with a thick handle.It easily weights more than similar LC, Staub, Lodge pans.It has a much needed helper handle.The inside is a black enamel that easily washes up and you don't have to worry about re-seasoning it.(you do have to season the rim, which is no big deal).I cannot speak for longevity yet, but this one cooks wonderfully, nice and even.I bought one and was so impressed I went back and bought the next size up.Get one while you can!

This was a gift to someone else.As far as I know they like it.It is very heavy, so if your not strong, this is not the pan for you.

I have never had so much difficulty cleaning a pan after cooking scrambled eggs!Food clings to this pan with impressive tenacity.

The interior of this pan is very rough and the material is not smooth at all.This is in no way a non-stick pan, in spite of the porcelain enamel coating.

After spending more time cleaning the pan than cooking scrambled eggs and eating them, I will in the future use this pan only for cooking food that is very unlikely to stick.

I bought a Bialetti Aeternum pan at the same time, and I'm very happy with the Bialetti.

Maybe my pan is defective, and not actually enameled?I have a Tramontina dutch overn that has a white enamel interior, and it works great.This Tramontina saute pan has a black interior, so maybe the factory forgot to enamel this pan....

Handle feels solid, its metal with a rubber grip that stays cool.Non-stick surface has not scratched yet, in 3 months of usage.I find the same in most Circulon products, that is what lead me to this.The dark anodized outside also looks sharp.

Usage:

I use this to stir fry and steam.Wow, it is great!I use a wooden spatula, it has not scratched the surface, unlike this other non-stick pan that I have.The conductive metal also provides great flame control.Cleanup is very easy.

Cons:

No lid (this is the major reason for -1 star), and it's big, its not easily washed in a small sink.

Final comments:

I was tempted to buy an iron wok for the "wok hey", but putting oil in this thing and heating that up also seems to work well.Also, I don't have to season this thing like an iron wok, and it is a lot easier to handle.I pick it up with 1 hand and put the stir fry on a plate.It is also a lot easier for my girlfriend.I am tempted to buy a second for backup, I like it so much..Of course I did NOT stirfry a crab in this thing, would have ruined it.



I loved it for the first few months I was using it, and was using it everyday. But the coating starts to come off and have to shop for a new pan now

The material is very durable and nonstick is great, except that this particular wok feels so heavy, maybe because of the long handle. I prefer thesame size wok with the 2 shorter handles, which is also easier to clean too, because the short handles don't stick out of the sink!

For three years I have used the Circulon elite hard-anodized 14-inch nonstick stir-fry pan as my main stove-top cooking pan.Not only is it a great high temperature stir fry pan, it also is perfect for omelettes, soups, stews, sautéing. Both small and large cooking tasks can be done in this single pan. Nothing sticks and mine shows no signs of wear after almost daily use for three years.I typically use a 800'F silicone spatula (Cuisinart) which effortlessly moves veggies around and lifts omelettes without hurting the pan surface. Ihave previously used both steel and nonstick woks and this is by far the best.It cleans up in a twinkling. Having been fortunate enough to have had two pieces Circulon cookware in the past, I was chomping at the bit to own a large wok with the same qualities.

Finally, I bought this wok and...wow!It's huge, heats evenly and exceeds my expectations! Cooking with this wok is a joy. It's large enough to stir fry copious amounts of meat and vegetables without losing anything over the side. I find my stove is left cleaner cooking with this wok than any other pan I own. And food gets cooked evenly no matter where it is in the cooking space. The sides get as hot as the bottom, exactly what a wok is supposed to do.

To get the best life from this wok DO NOT PUT IT IN THE DISHWASHER.I ruined my large Circulon skillet by tossing it in the dishwasher over and over and it eventually lost the coating and rusted. Clean this by hand ONLY and dry it off. Don't use any scouring pads or powders and oil it lightly once it's dry. It will last many years. My other Circulon piece is over 6 years old and it looks like new because I've refused to wash it any other way. Also, NEVER use any cooking sprays with Circulon. I'm sure that contributed to my other large pan's short life.

My only problem with this wok is storage, (did I say it's HUGE?) but that's my own fault for not having a gourmet kitchen.

Mauviel M'Heritage M150B 6535.30 12-Inch Crepe Frying Pan with Bronze HandleI have been making crepes for 30 years, using various frying pans.I fry my crepes in butter at high heat, getting a beautiful golden-brown finish. The thinner pans heat quickly for fast cycle-times, but also heat unevenly because of poor heat distribution.Most recently I have been using All-clad copper-core 12" frying pan which works pretty well, but I wanted the very low-profile edge, and the heavy copper for the ultimate even-heat distribution.

So I bought this Mauviel 12" crepe pan, which is 1.5mm copper with a stainless lined interior.Mauviel has 3 different handle options for most of the cookware stainless, cast-iron or bronze.For this pan, I could only find the bronze.

The handle has turned-out to be the biggest problem.First of all, this is a heavy pan, weighing nearly 4 pounds.The handle is just too thin it is barely an inch wide, and about 1/4" thick.It is just uncomfortable to work with lifting, rotating, flipping the crepes with this handle built like a butterknife.But, by FAR the biggest problem is that the bronze handle conducts a ton of heat from the pan up the handle.By the time I made maybe 4 or 5 crepes, the handle was so hot I couldn't touch it anymore.So I had to grab an oven mitt and use that for the remainder of the batch.

I don't understand how a company that has been making cookware since the Andrew Jackson administration hasn't yet figured-out how to make pan handles that are cool and comfortable to use??I NEVER have this problem with my All-clad.Why doesn't Mauviel redesign the handle, or at least offer a silicone handle sleeve to fit their pan handles?Is this the best they can do for $250?

So now I am looking for a silicone handle sleeve that will fit which is a nightmare because no one publishes any dimension on these sleeves, except the length.So it will be trial and error until I find one that fits properly.

On the positive side, the pan worked as well as I could have hoped: it resulted in beautiful, uniform, even browning and absolutely nothing stuck to the nicely polished stainless.Of course, being raw copper, the exterior quickly oxidized with a pattern of bluish/purplish colors in the pattern of the gas burner. It is relatively easy to bring it back to new with copper cleaners, but I'm not sure if I will bother doing that every time.I bought this for its cooking performance, not as an art object.

Update Aug 2012: I did find a silicone handle that works really well a 'black silicone pan handle for 14" pans' (product #806849) from US Foods Culinary E&S Next Day Gourmet Black Silicone Pan Handle 6-1/4"L For 14" Fry Pans that was very inexpensive.This makes all the difference in the world. WITH the handle, I will upgrade the rating from 3* to 5* it makes that much difference. Never mind the 1* review on the handle it fits perfectly on this pan.

Perfect crepes every time. Great addition to kitchen and mauviel collection.

Easy to clean and use. We love love love it.

Joyce Chen 23-0001, 14 inch Lightweight Cast Iron Wok

Joyce Chen 23-0001, 14 inch Lightweight Cast Iron WokI just got this wok. It was absolutely perfect, no cracks etc. There are several of these new light weight cast iron woks on the market now here and on e-bay. I wanted a flat bottomed wok because they work best on a western stove. With a flat bottomed wok you don't need a wok ring and you have more surface area near the flame so you can get enough heat to do a proper stir fry. I also like the long wooden handle instead of a plastic one. It is also preseasoned so that you don't have to go through the hassle of seasoning it, although it really is pretty easy to do on these new cast iron woks.

This new cast iron is as much stronger than the thin traditional cast iron sometimes used in chinese made woks and much lighter than the heavy thick cast iron woks that are widely available. Just don't try to wash it when its hot as reportedly they can crack. I have worked with both thick and thin traditional cast iron and this is clearly the best. With the thinner cast iron you can make more rapid temperature changes than you can with heavy cast iron.

There are several other kinds of materials used in woks.I also like the new thin light weight cast iron better than carbon steel because usually those are not preseasoned and I often struggled with keeping them seasoned.Whatever you do don't get a nonstick coated wok as the coating is damaged and comes off at high temperatures required for stir frying. Also avoid stainless steel woks as meat tends to stick so you need to use a lot more oil. You can't develop a seasoned coating on stainless steel. In my opinion, stainless steel woks are good for steaming but not for stir frying.



This is a great WOK.I replaced an old non stick one.I can heat this Cast Iron one so much higher.Things cooked quickly and were not "steamed." Worked well on my stove top also -had to return several previously that were described as having a flat bottom, but when I received them the bottoms were not completely flat.Love that it is cast iron and I can use metal utensils.It really is lightweight.I have problems with my hands but was able to pick up the fully loaded Wok easily.

This wok is fantastic! I have used cheaper ones in the past, and have always been disappointed with the results. But I finally convinced my wife that spending 50$ on this would be worth it (we bought it at a store in the mall). I am so happy we bought it!

You can really see the quality of this thing. From the firm handle to the weight of the wok, the uniformity of it all is amazing. And it gets amazingly hot. My dinners now are absolutely amazing. I never knew my old wok just didn't get hot enough! I've used it three nights in a row now and want to keep using it!

I would definitely recommend this to anyone, as long as they know how to take care of their cookware because I would hate to see someone ruin this expensive wok by throwing it hot into a sink or not maintaining it correctly!

The lady in the store also mentioned that she wished she bought the cast iron one as opposed to her carbon steel one after I made it to the register.

First and second orders were both delivered with one of the woks damaged with a huge crack which almost broke the wok in halves.I thought it was due to poor handling and shipping so complained to Customer Service, returned damaged woks, and got replacement.Undamaged wok does look good, until you start using it.I used it to cook only once and handled it with care. Before I had a chance to use it again the next day, a 3-4 inch crash showed up !!!

I own a glass top electric stove (GE Profile). It isn't easy to cook at a high temperature, but Joyce Chen's lightweight cast iron wok heated rapidly and cooked quickly with minimal splattering on my stove top. Another concern was that the wok might slip around the burner as I stirred and scratch the glass top. Although there was a small bit of slipage, the glass burner was not scratched. Perhaps this is because the bottom of the wok is fairly smooth rather than rough as some cast iron fry pans tend to be. Although warned to delay dipping in or filling with water while the pan was still hot for fear of cracking, I was pleased that the pan cooled quickly within 30-40 minutes and then could be washed. The entire process of cook and clean was simple with little mess and great results. I am very satisfied with my purchase. So take heart all you glass top stove owners; stir frying works wonderfully with this pan on a glass top electric stove!

Swiss Diamond Nonstick 5.8-Quart Cast-Aluminum Covered Deep Sauté PanOver the years we have gone through several nonstick pans, which seem to wear out quickly and not be able to withstand much heat at all. We very much like the Swiss Diamond Saute Pan, which is nonstick at any setting of the stove we use with it, even high heat. The relatively high sides and 12" diameter make it big enough to cook a large amount at one time, good for leftovers. The glass lid is also very good, with a setting in the knob which allows us to vary the amount of steam escaping. The handle is quite fine and does not get hot in use, something we were initially concerned with for a metal handle.



This pan seems to be as indestructible as a non-stick pan can be. This is my second Swiss Diamond pan, and so far I am impressed. I have only had the other pan for about 6 months and so far so good. Finding non-stick pans that hold up to both high heat and to abrasion has been a hard task. So far I like the Swiss Diamond pans and as long as they continue to hold up I will slowly replace the rest of my pans with them.

I have several other pieces of Swiss Diamond cookware, recently adding this one.I love the pan, but I hate the metal handle on this pan.It is similar in shape to the black handles, but not quite.It is slippery to hold, so your grip is not as firm as with the black handle.This is of concern because this pan is heavy empty and MUCH heavier when full.The handle is too long (longer than the black handles) and it doesn't match the collar on the pan (which looks strange), nor my other Swiss Diamond pans, as this is the ONLY one with a different handle.I wanted this pan for the size, so I guess I will keep it, but I'd like to see the black handle on it, not the metal.

The Swiss Diamond brand is the absolute best brand of pots and pans I have ever used.I have since purchaced several more pans including the grill pan and lid.I won't buy anything else.

Calphalon Simply Calphalon Enamel Cast Iron Panini Pan, RedTried the same prime rib eye from Costco at two different friends houses.Once was grilled on an outdoor grill, and once on a pan.Both tasted bad and looked bad.I decided to try the same steak myself so I went out and got this pan.Unbelievable pan.Followed the instruction to heat up the pan by letting it sit on medium heat for few minutes, then laid down the steak.The wonderful sound of sizzling started to pop.After 5 minutes, I turned the steak.OMG!!Beautiful grill mark, and the steak looked unbelievably tasty.I grilled the steak for about 20 minutes.5 minutes on each side, then 2 minutes each side twice.Sat it for another two minutes. It was a perfect medium well, and it was my first time grilling!!Never realized the prime rib eye from Costco can taste this good.

The couple down side for this pan is the weight and cleaning.It must weigh at least 15 lb.Cleaning is quite a hassle, but it helps if soak in water.

Over all, I am very satisfy with the pan.

Revere 1400 Line 7-Piece SetWith the purchase of this set, I now own Revere ware made in at least three different locations.I own 16 older pieces made in Clinton, IL in the U.S., four unmarked double boiler and steamer inserts from the same vintage, one tea kettle made in China, and now this set of 7 pieces made in Indonesia, which I just purchased for a guest kitchen.

While these Indonesian made pieces are the same style and sizes as the older U.S. made pieces, they are not manufactured in the same way.The primary difference is in the bottoms.The finish on the copper on the bottoms is rougher, and more importantly, the bottoms are slightly warped.The bottoms can be popped in to be slightly concave, or popped out to be slightly convex, but they aren't flat.In addition, the tops don't fit perfectly snugly.

That's quite different from the older Revere ware pieces manufactured in Clinton IL, whose bottoms are flat and are much smoother.For this reason, you should be skeptical of recommendations for Revere ware which mention how they've been in use for many decades, since those recommendations are likely based on the better quality pieces made years ago, rather than the pieces now available.

All that said, most of the pieces in this Indonesian made set are serviceable.While the skillet might not be perfect for pan frying, the saucepans and dutch oven should be fine for sauces, soups, or other water based cooking.The copper on the bottoms appears thick enough to even out the heat distribution, unlike the copper plate found on some cheap knockoffs.At this price, the set is acceptable as an inexpensive starter set that will do for a casual cook or for use until one can afford high end pieces from places like Williams Sonoma, or used U.S. made Revere ware from auction sites.



I have two 58 year old Revere Ware pans that are in great condition.The new ones have less copper, and stain much more easily.I am disappointed, to say the least.They are not as good as they once were.I suppose current management has sacrificed quality for profit.

This Revere 1400 Line is very light-weight with lids that don't fit. The bottom surfaces aren't flat, and the pans wobble on my glass top range. Steam escapes because the lids are very loose. After boiling water in the pans, spots appeared on the inside surface. I thought this could be the last set of pots and pans I bought, but that's not the case. Revere should be ashamed of the quality of these pans manufactured in Indonesia.

I received the Revereware seven piece set for Christmas.I've used the frying pan maybe four times.It warped.The current pans are not the same quality they were 15 years ago.The stainless steel is not as thick and the copper bottoms look painted on.I'm afraid to give them a good scrubbing for fear of scrubbing the copper right off.The pans are also not made in America any more and the poor quality of the pan reflects that.I am disappointed.
