As a Pampered Chef consultant, I too, am very concerned with keeping my non-stick cookware safe, and this is just the product for that! My 10 pc. set and 6 open stock peices ALL fit on this rack with ease! It has adjustable heights and is so very easy to install! I love that it can be put just about anywhere! It has sure cleaned out my cabinet space and now all my cookware is easily accessable! My lids hang on the hooks as well. I would like to have more hooks, but it comes with a lot. I highly recommend this product to anyone who is looking for a sturdy out of the way place to store any of their cookware and utensils, that still is fashionable. For the price, this can't be beat!!
June 14, 2007 Just a quick update. After all this time, my rack is still awesome! No rusting! No movement in the anchors! And I've added hooks and more pots! I now have the Executive Cookware and have 11 pots and pans and a set of Stainless Steel Mixing Bowls, and lids all on my rack! What a space saver!! I am so impressed with this item!! I bought one for my mom and both of my daughters!! I wish I could get extra hooks that match but you can get some similar at the hardware store.
July 30, 2010 Another quick update. I now have All Clad Stainless Steel Cookware that I've added to my rack! It is still in PERFECT condition and is still perfectly anchored! What a great buy!! I am recommending this product to every Pampered Chef consultant that I know. All my family members have one now! We love it!!

After spending a lot of time looking both online and in stores, I decided on this pot rack. After looking at and comparing the various aspects of several racks, this Innova model offered by Amazon made the most sense and was clearly the best buy for the money; all things considered.Simply put, there were units costing well over $100 or more, that really didn't offer much more (if anything) for the higher cost some were even over $200+ !! And at just under 40 clams and super-fast, 3-day free shipping, I couldn't be more happy with my choice and the Ama-Zoney purchase experience. The rack is both well-built and spacious at 34" X 17". The finish is a smooth, satin black and the center grill is bright and shiny metal which looks nice together. The hardware kit provides a generous 12 hooks to hang the cookware and 4 chains and ceiling hooks to allow for a stable, "rock-free/won't tip" installation real important, as some units with 2 hooks & chains can easily tip if the weight of the hanging cookware is not closely balanced and even on both sides. This can easily happen if you neededto use 2 pieces of cookware that happened to be on the same side of the rack, leaving the opposite side considerably more heavy and the whole mess could tip over; dropping your nice cookware on the floor or somebody's unsuspecting head! So, be sure and use ALL 4 hooks and do it right!! Also, it is important to try and screw the ceiling hooks directly into the wood ceiling joists (beams) if possible, especially if you plan on loading this bad boy up with heavy cookware, like I did. If you're not going to, than just use the proper toggle bolts and you should be fine. But as always, screwing the hooks directly into the joists is clearly the most secure way to fasten anything that has to support any considerable weight. Also, try and mount the hooks, close to the same dimensions that are on the 4 holes in the rack this also allows for both a "plumb" and more stable rack. I think the rack also looks nicer, when the chains hang plumb (completely vertical), as opposed to being "angled". On my particular installation, I was replacing an existing pot rack and there were already 4 holes in the ceiling that were screwed into the ceiling joists. So, to keep the install solid, I simply slid the4 hooks/chains more towards the outside corners of the new rack to keep it as plumb and stable as possible, without the need to re-drill any new holes. I also added 4 lighting canopies from Home Depot ($5 each) to improve the kind of crude, unfinished look that black hooks alone offer. This allows for a smoother and more attractive transition from the chains to the ceiling a real nice finishing touch that makes the unit look more elegant and expensive. I also spent the whopping 97 cents at Wal-Mart and spray-painted both the canopies and the chains a very similar black finish for a more consistent and matching appearance (see my photos). I added a tulip light kit to the pot rack to further enhance it's appearance and brighten up my stove and counter areas. (You can also add a black clip on,flexible light that I saw at Home Depot for about $9). I am totally pleased with the finished look I got for the money; after adding only a few inexpensive and easy personal tweaks of my own. This rack offers a great value for the money that most people would be completely pleased with. If you're more of the "style-over-substance" type, than you'll likely have to spend 4X-6X the coin to satisfy your taste. For me, this rack has both great functionality and looks more than good enough for the money. Enjoy life!

I was skeptical of buying a hanging pot rack at such a low price, but the good reviews convinced me to give it a shot. This one obviously doesn't compare to the really expensive ones, being relatively lightweight and made of less heavy-duty materials, but it is definitely a good value for the price. It is very attractive and plenty sturdy enough to hold all of my cookware except the cast iron pieces. Functional and well constructed, this rack fits the bill for a very good price.Measuring 34" by 17", it was just the size to hang my new set of Calphalon pots and pans along with two KitchenAid frying pans.Installation was easy and, owing to some luck about the placement of joists in the ceiling, it hung just where I wanted it above the counter island.Since the hangers are well supported by the joists, I'm sure it will hold more than the rating of 40 lbs.I would rate this a Best Buy.

A+ to Cuisinart!I had such high hopes for this product after reading the largely positive reviews.I would give it one star, but I'm going to give it two *just* in case I was committing some sort of user error.
I bought the griddle to use with pancakes and little else.I'm on a fat-restricted diet.Having read online that cooking sprays gunked up cooking surfaces due to the lecithin they contain, I used only oil.My technique was to use about 1/4 teaspoon on a hot griddle, then spread it around using a silicone spatula.This worked for about two weeks.During that time I used the griddle on nothing more than medium heat, washed it with a sponge and water (sometimes soapy, sometimes not).Despite this, a residue began to build up.As it did, the non-stick properties deteriorated.The last time I used it the sticking was awful.My attempts to flip a pancake failed completely, with the pancake accordioning as I pushed the spatula against its unyielding underside.
That's not all.The last time this thing failed, I was careful to pour the pancake batter on the two circular surfaces of the griddle that had seen the least buildup.No dice.Accordioned pancakes.
By way of comparison, I have a Calphalon skillet.It stuck some when I used no oil whatsoever; however when I used the technique described above, it performed flawlessly.It's a few months older than the griddle and has to date seen more use than the griddle.But, as I said, it performs flawlessly with just a touch of oil.
And finally, if memory serves, the instructions on the griddle's packing box indicated that one should season it by the common technique of oiling then baking it.I have little experience with these things, but is it really true that you're supposed to seaason non-stick cookware?
In sum, this would have received one star, except I'm doubling the score to two to allow for the possibility that I'm doing something wrong.But inasmuch as I have Calphalon whose performance is vastly superior using the same care and maintenance techniques---well you be the judge.

Demeyere Proline 5-Star 11" Frying Pan
I actually think people put too much emphasis on their cookware. As long as you're not cooking in a bad pan (e.g. a $20 one from Ikea), most pans work well. People fall for the cookware endorsed by Martha Stewart and Michel Bras and other celebrity chefs. When I was picking out cookware, I almost decided to go with Mauviel upon seeing a large display of it, simply because it looked nice and I knew it was a "high class" brand of cookware. That said, these pans have the benefit of working on induction stoves and having welded (rivet-less) handles. (Mine has a helper handle across from the main handle, but I don't see it in this picture?) My dad has restaurant-grade pans (Lincoln or WearEver), and they perform similarly despite the price difference. His are, however, not ones I'd leave out or display in an open kitchen system.
I also own Demeyere stock pots and sauce pans, and like them all.

This is the best frying pan I've used. When I first received it, I noted that it came well-packaged inside a nice carton box. So far, so good. When I opened the box, I noticed that the pan was quite heavy. This was a good sign for me since it tells me that the pan was made of high quality materials. I've used a lot of cheaper pans before and although they were very light, I had to throw them away after a while.The pan heats quickly and evenly. Thus, your food will cook evenly and you can use the whole inner surface area of the pan for cooking. The long handle remained cool to the touch while cooking. The helper handle (shorter handle) became slightly warm after a while but you can still touch it while cooking. Even though the pan does not have non-stick coating, the food did not stick to it. However, you need to make sure that the pan is hot enough for use before you start cooking. You may sprinkle a few drops of water on the cooking area and if the drops move around, the pan is hot enough to start cooking.
Cleaning was very easy. The food and sauce that I mixed with the food did not stick on the pan. I cleaned the pan with a soft sponge and dishwashing soap before rinsing with warm water without any issues. In addition, the pan is more hygienic and easy to clean because there are no rivets or screws attached to the inside of the pan.
I am now a fan of Demeyere cookware. They are made to last and are very easy to clean. Demeyere cookware may be more expensive than other brands, but you are investing in cookware that offers a lifetime of healthy meals (no nonstick coating), high quality materials, and easy cleaning. Moreover, I highly recommend visiting Demeyere's official website for more information on their cookware. Demeyere is the only company I've seen that uses different technology depending on the purpose of each cookware.

I ended up deciding on Demeyere after reading many reviews and watching a few youtube videos from the manufacture. First impression, I liked that it did not have rivets! Especially with fry pans, rivets can be so difficult to clean as food gets trapped; which also worries me about potential bacteria.This pan is incredibly heavy, which took some time to get use to but so well made. It takes a while to heat up as others have mentioned. I use the water test to make sure it's at the correct temperature before adding anything, including oil. (Check out the free video on they have sample videos and one of them is on pan frying.) Once the pan is at the desired temperature, food does not stick and it cleans up beautifully. If it's not at the right temperature, it's a mess to clean. (I've learned the hard way.) You do have to make sure to keep the flame down to medium, even while heating for best results. I treat it much like preheating my oven. Put it on the stove, then start preparing my ingredients and within 5 minutes or so it's ready. If it is a bit messy, I will add a little white wine over the heat as if I'm deglazing, works like a charm. Also use barkeepers when needed; but am now ordering Demeyere's special soap to give it a try to. I love the 11" size, perfect for my family of four. Also looks beautiful hanging from my pot rack! It's an investment, so I am buying one piece at a time.

I enjoyed reading some of the other reviews about this pan and have to say most of them are very accurate.The only exception I find is that the pan doesn't seem to be as easy to clean as some would claim.It is a stainless steel pan, so if something gets a little too hot or you don't have enough oil it will stick (eggs come to mind).I now use a carbon steel griddle for eggs which works so much better with less oil.To clean the Demeyere proline, I found that one of the blue scrub sponges is usually sufficient for anything that gets stuck (it is designed to scrub but will not scratch the surface of this pan).In one particularly bad case, some canola oil splatters got very sticky and I couldn't get it off until I used some Dawn Power Dissolver.The pan looked absolutely new again.
Go to Sur La Table to see these pans in person, then buy it for much cheaper here at Amazon.You will see that the handle is the most comfortable of anything out there.The11-inch has a helper handle.
The even heating of this pan is incredible, so much better than a cast iron skillet.This pan is a true joy to cook with!

I worked in restaurants for many years before going into the federal gov't, and good pans or bad pans would show their true colours over time.
For those w/ any arm/wrist/finger troubles, know that this pan is comfortable to handle, but still may be a little heavy (a good sign actually), The handle is rounded is easier and "softer" to handle than the Sitram Commercial line. This pan is a powerhouse, if you will, and can handle and endure heavy use in the kitchen, which is why it is "commercial grade" in both name and quality.
I would recommend using only wooden spoons and spatulas in this pan. Pure virgin olive oil is the best to use to get the pan going when sautéing, but extra virgin oo is good for lighter cooking or when simmering. Using a wooden spatula (never metal) will keep things from sticking just fine -scrape when necessary w/ the wooden spatula. Do not forget to keep your wooden spatulas/spoons/cutting boards oiled too. (See my other reviews for suggestions on this topic)
Oil sprays are not necessary and only last so long anyway. This pan will become a valued partner in the kitchen. It is a joy to use knowing that you are using a high quality item. It is good to hand wash these pans and to use a little bit of "Bartenders Friend" to keep them shining like new. It is also good not to use high heat, but rather middle heat zones for smooth cooking.
The bottom line is that this pan is perfect, and beats a tephlon or other nonstick pan in durability without trouble. In addition, unlike the nonstick pans, you do not have to worry about scratching it, no peeling of the coating, and best of all no chemical concerns leaching into your food -there has been much debate/concern about this. I do not use nonstick pans for anything.

After 52 years of housekeeping, I have finally found the perfect cookware.This little pan is everything the company says it is:nothing sticks to it, it's level with even heating, it takes less electricity to cook with, it can be put in the dishwasher, and the handle really does stay cool, so I don't have to grab a potholder every time I touch it.It makes a perfect omelet.I won't be putting it in the dishwasher, though, because I use it so often that I have to keep washing it.I suffered with Revere Ware (wedding present) for years, finally moved to Calphalon, and am now moving the Calphalon to the garage.It's heavy, has lost its non-stick quality, and since the arrival of the Sitram frypan, has lost what was left of its charisma.The one Teflon pan I own has gone to the landfill.Because I live alone, this pan is just right for one pork chop, one chicken breast with mushrooms, one Egg Beaters omelet.I am ordering a larger frypan, a stewpot, and a saucepan.What a find!

I bought two of these pans in an attempt to stop using non-stick teflon forhealth reasons, and I was also tired of having to discard my non-stick pans once the surface was ruined, even though the rest of the pan was ok. Sitram pans are not non-stick, and I have yet to 'season' them so that they perform as a non-stick pan.Consequently I ended up scrubbing them to get them clean, but they clean easily this way, so I am satisfied.As for using the pan, this pan does cook/fry/saute well, and conducts heat fast (even on an electric burner), so that I cook at a lower temperature than my all-clad non-stick pan.They are better quality than my all-clad pan.And as for others who had trouble getting the sticker off the bottom of the pan, try soaking it with lighter fluid (works best) or 3-in-1 oil (works ok), and it should peel off relatively easily.Cooks recommend seasoning a pan like this, which is probably something I should have done before using.To do this, add0.5 in or 1.5 cm of oil and a handful (lots) of (coarse if you have it) salt to the pan, and let rest overnight.Then heat on low heat on the stove or in the oven until the oil is very hot but not smoking.Leave the pan until almost cool, and then discard oil and salt.Wipe the pan dry.Once a pan is seasoned it should never be washed, just wiped out with a dishrag/cloth while still warm.

All of our Swiss Diamond items are hand washed in hot, soapy water, rinsed in hot water, hand dried, and put away.The hand treatment on the Swiss Diamond products is to prolong the surface life.
This particular lid rests on it's edge in a cabinet, over to the right side, and the cabinet is lined with the rubber mesh cabinet liner material.
This lid was found shattered, beginning in the center, with crack lines radially outward.The edge glass was all intact, though cracked.
This glass is apparently tempered, as all the glass pieces were roughly rectangular in shape.
It's too bad that Swiss Diamond doesn't warranty lids, as I'd surely get this one replaced under warranty.As it stands, I'll have to purchase a new one, and, as the name of this product states, "Replacement ... Cover".. so plan on replacing it at some point...I bought an 11-inch Swiss Diamond fry pan at a local "gourmet" store that claimed it didn't come with a lid. And that they had none available that fit it. This seemed strange so I was delighted I could locate the lid through Amazon. My order was fulfilled promptly and the lid fits perfectly.

My brother ordered the Swiss Diamond Skillet for my birthday a few years ago, but didn't get me the lid.So I ordered this lid and it fit perfectly, and is nicely constructed.It's nice to be able to see thru it when cooking also!I would recommend it if you have the Swiss Diamond skillet that it fits. I actually have a Circulon wok/skillet that it fits too, so it does double duty.I love it!Pictured you see a round lid. Description says that the lid is round, but what arrived was a square lid. I was shocked, and had to doublecheck the listing. Nowhere does it imply that it's a square lid with rounded corners, and it specifically says that you could use it with other brands, which I might have been able to do...if the description were accurate. Returning this for a refund, really frustrated that even the picture is round when the lid itself isn't. When I order online I expect the pictured product to be what I receive unless the description specifies otherwise...and I don't think that's unfair.

Anolon Advanced Hard Anodized Nonstick 12-Inch, 5-Quart Covered Saute Pan
I kept glancing at the 10" open French Anolon pan I'd bought at Amazon 10 years ago, which is still going strong.The old Anolon admittedly has some discoloration and "seasoning" at this point, but 10 years for a nonstick is nothing to snear at.So I went for this Big Baby.
And love it!This is my go-to pan, even though it's labeled as a saute, I make everything from stews to pasta sauces to chili in it.It's great for stir-frying loads of veggies, and you can whip up healthy fried rice concoctions with leftover brown rice and freshly sliced veggies with an egg or two scrambled in.Speaking of eggs, for brunches I beat together some eggs and eggwhites, then saute whatever veggies are on hand to fill up the bottom of the pan, pour in the eggs, top with cheese and bake in a 325 F. oven for 20 minutes for the biggest, most delicious fritattas ever.
This pan is so versatile I can cook pasta for two in it, drain the pasta, wipe it out, add olive oil and a little wine and saute greens and garlic, add back the pasta and some broth and voila, pasta prima vera in one pan.Chicken thighs brown well in it, then add barley and broth and some Morrocan seasonings ... OK I'll stop, you get the picture!
It seems like everything I make in this pan comes out better.And this is my first glass lid cookware how fun to see your meal cooking as the steamy little bubbles roll down the inside of the lid!Just be aware that quality cookware needs to be treated well follow manufacturer's instructions no dishwashers, let it come to heat over a medium setting, and clean it gently.The only con I'd issue is that the pan is heavy, but you get a lot of bang for this Kichen Hunk.
I bought this about 4 months ago and use it several times per week. Even though I cook a lot, I am not usually one to shell out over $100 on a single pan. This was totally worth it! This one is a keeper. Truly non-stick, easy to clean, larger size can accommodate a big meal! It is heavy, but this helps with even heating (and heat retention). Looks and feels very well-made, should provide one with a lifetime of culinary delights. We're getting to be good friends, this pan and I. Bon appetit!
UPDATE: Over 2 years later (May 2011) and the pan and I are like BFFs. Still cooking delightful meals, accommodating both small and surprisingly large portions, non-stick in-tact. I stand behind my previous review. Add this to your cookware arsenal and you will not be disappointed.

I've used the Anolon pan with glass lid for more years than you can imagine. (I've even given it as a gift for friends because it is so versatile in the kitchen.) The size 12" is generous for cooking food and I love the fact that it is a non-stick pan (good to keep calories and fat down.) The first design worked well, but this new Advanced design (with helper handles and a secure handled lid) is even BETTER than ever, and it's oven safe, too! One note: You do have to practice care with this pan. (NEVER use metal utensils on it, nor non-stick spray, nor excessively high heat no need for it anyway because it will tear up the non-stick teflon type surface. (The first one that I enjoyed for over 15 years, looked like it went through the war, but I still used it to its final hour!) It is not a stretch to say I use this saute pan daily. Had calphalon pans, but on our electric stove the non-stick coating inside started peeling off. Tried out an Emerilware pan and I'm never going back. Using my second one I bought and am currently making an apple pie where you cook down the apples first in two skillets. You can really tell the difference between calphalon and Emerilware as they heat up and cook down the apples side by side. Emeril's pan heats up much quicker and evenly distributes heat around base of pan making for nice even cooking. I highly recommend these pans to everyone.

Exceptional quality cookware!Also have a 12" companion piece which is also exceptional.I always cook with Olive Oil, never a cooking spray.I use only bamboo and plastic utensils on the Teflon surface.Clean the pan with nothing harsher than a sponge, plastic wool and Dawn.Hang the pans by their handles when not in use.

I've used this pot several times now for searing meat, braising, and making stews.It's so sturdy and I love the way it looks.I enjoy having pretty things to cook my food in, but they must also get the job done and be easy to clean. I really like the way things turn out when I cook them in this. I have made lambshanks, beef roasts, and cooked a whole chicken in it. I like that I can braise the meat in it, add other things, and put it in the oven so it is just cooking with one pot.Food did taste a little odd the first couple of times I used it but that went away by the third or fourth use.
It will want to develop rust so I have found I need to season it after every couple of uses. I wipe crisco shortening over the entire inside of the lid and the inside of the pot. Then I put the lid on and put it in the oven at about 200 degrees for half an hour or so. After I use it, I wash it out and dry it thoroughly immediately. This is not something I would leave dirty for more than a few hours because it is iron and I think you would be asking for rust to develop. I don't think I would even leave it soaking for any amount of time. After we eat, I wash it and dry it right away. I have found that I need to cure it again after every two or three uses to stop rust from developing.
It is really heavy for me to lift when food is in it.
Food tends not to burn onto this pot when cooking so it is easy to cook with and easy to clean. I left the roasts in the oven for about 4 hours to get them really tender with some liquid and no spots burned on the food anywhere. I have never had food burn to the bottom. You can't get that with a pan made of anything else.

Around the fire that night I heard/learned from them the virtues of "the wok".It makes sense, but still not sure how I missed it all these years of camping.I'm a pretty simple person, and this is now my "one Pot" versus a tradional pot and a small skillet. Since I use one bag only on trips 1 item vs. 2 is a real plus.
It makes sense when you hear that the wok was designed for open fire cooking that the orient is drastically short on firewood in a lot of its rural farm areas that it evolved it's shape over eons of use by people who use "one pan" to cook everything and usually pass that pan from generation to generation. and it's really true, it requires SO much less fuel/wood/time on the hoome-stove to heat and cook with this wok versus my old pot/skillet.
Of course, the chopsticks went into the trash for me, but it fries my fish fine, makes pancakes (my version of bannock, I have pancakes for my bread too) it's easy to make noodles, even a box of mac/cheese if you wanted. easy to boil water given the inherent design. The lid functions as a plate and/or bowl if desired. It's easy clean up and most of all it LOVES open fires. In the coals, or on a grid/grate, it's really a sweet/simple set up.The first few days out I will take heavier items like real potatoes and carrots and the lid/wok design makes it easy to steam them too, not just have to fry them.I may not be right for you but this piece of gear is AWESOME for me!
I have the fabulous smaller version of this GSI wok and was excited to get its larger brother. Note that is not a wok for backpacking. This wok will serve for creating meals while car camping or at home in the kitchen, but it is too heavy to be associated with the word 'outdoor' unless you're traveling by pack horse.
The big disappointment is that this wok does not have a domed lid, unlike its smaller incarnation. This means that you'll be unable to use a steamer basket in this wok or be able to cook larger items.

The product image is somewhat disingenuous due to angle of the wok in the product image (taken directly from GSI's product page). You'd never know about the problem lid unless you have seen the product in person.

Also, the lid is not the same material or quality as the wok itself, and appears to be an after-thought add-on to what is simply an aluminum wok with a folding handle.

Altogether, at 1 lb. 15 oz., this is simply a lightweight kitchen wok with a non-stick surface.

It is a shame that the person who left the other review was mistaken on what this product was, but they should not have given this product only 3 stars. This product deserves 5+. I am a trained chef and an avid backpacker. This is a great product! Giving the ability to deep fry, stir fry, and more to a still lightweight pack is better than sliced bread. Unless of course that sliced bread is somehow included in the breakfast you have made in the wok.

I've had the 11 inch version for many years now, and I use it both at home and in the field when I go camping. As a single guy, it works great when I'm at home. Don't let its size and weight fool you. Its built better then some pots I've owned, and the non stick surface is still completely intacked. Okay, so it does not have a domed lid, not a problem for me. makes it easier to pack. I use mine over a Trangia cook stove, it works great.

I use this 11 inch wok at home for one or two person servings instead of my 14 inch which is too large and heavy sometimes. The nonstick(inside) and the anodized(outside) finishes on the product look good and the non stick seems to work well(used it about a dozen times so far) with clean up being up to "non-stick standards."The unfolded handle has a tiny "give" to it where it joins the pan but doesn't affect the tossing action.Only took it car camping once but it's fairly lightweight so carrying it around in a pack shouldn't be an issue in many cases.The lid is perfectly functional as I only use this pan to stir fry/toss.

This is our second raclette by Swissmar and I was excited to try the granite top.I quickly learned that it doesn't get as hot as the reversible metal top on my other raclette and it doesn't cook meat or vegetables nearly as fast.I know I can put it in my over to get it hotter than the element can do and then put it on the raclette but the element should be able to heat it enough to cook as the metal grills cook.Because there is no lip on the granite top, it is difficult to turn things over with a spatula.The cutout around the grill for juices to run into fills up quickly and then the grill overflows onto the table or counter. We love our raclette with the metal top and use it 2 -3 times a week and have created lots of great recipes for it.We were excited to get the second one so we could have people over for dinner as the first is way too small for 8 people.Now we have two but one doesn't cook well because it only has the granite top.

I ordered this pan to replace my old one. After a week of use I have found it to be a very good frying pan. It conducts heat well and is easy to clean. It is much more light weight then I expected, and it's construction is very solid. The only down side is that I was lead to believe I was getting a yellow frying pan (my favorite color). The the one that came was orange, it's no big deal but if you order this product be sure to pay attion to the fact that it comes in assorted colors and you are not guaranteed a specific color. I have found for pancakes (and omelettes) you need to buy a good quality pan and this Caphalon has been great. It gives even heat, which is really important for good pancakes. It is a bit big to store but still smaller than a typical 12 inch large frying pan that most families have. I am very careful to use a Silicon Caphalon large spatula to keep the surface nice. But so far, so good, the surface has held up so far.

Calphalon Contemporary Nonstick 11-Inch Square Griddle
Our Calphalon griddle was "dead-flat" and worked very well when it was new; I would have rated it at 5 stars.
Unfortunately, after about a year or so, the bottom bulged downward; so much so, that it rocks to and fro on the very center of the griddle on our glass-top electric range. [My wife had always cleaned it in hot water, since we knew putting a hot griddle in cold water could cause this to happen.] It's still usable but most of the griddle's bottom no longer touches the range's glass top.

We replaced the Calphalon with a Circulon Elite Nonstick 12" Round Griddle; its bottom doesn't bulge.The Circulon is also aluminum, but has a heavy bonded-on stainless steel bottom plate. The total thickness of the bottom is about 3/8", versus 1/8" for the Calphalon.
