Scanpan Professional Fry Pan

Scanpan Professional 8-Inch Fry PanI've been looking for a really good set of pans literally for years. I tried a number of brands and styles and ultimately was dissatisfied in some way even the expensive ones had something I didn't like. Then when I was checking out a recipe on a cooks site, I saw that the site was sponsored by Scanpan. So as an experiment (and because my old omelet pan was shot), I decided to buy the 9 1/2" Scanpan fry pan. What a great pan! The heft is perfect, the handle well set and easy to hold, the non-stick is truly non-stick (even water just beads up on it), and it looks good on top of it all. I've already ordered the 12 1/4" fry pan and have made a list. I'll be replacing all my pots and pans with Scanpan professional over the coming months. Below are what I see as the pros and cons:

Pros:

Great non-stick when I make omelets, I don't need any butter at all. Burgers, chicken, steak, etc. don't stick at all.

Cleanup the surface is so non-stick that a simple wipe with a paper towel gets it visibly clean; followed by a little soapy water, and you're done.

Easy to hold it's well balanced, nice heft, and the handle is well shaped, it's very comfortable to work with.

Even heating the pan heats up *very* evenly.

A pan I can put in the oven unlike many non-sticks and many cheaper pans that have plastic handles, you can put all the Scanpan Professional pans in the oven when needed without worry. The pan even came with a little pot holder that slips over the handle for when you use it this way.

The handle doesn't heat up on the stove even though it's metal and riveted to the pan with large metal rivets, the handle stays cool and comfortable to use.

Looks great the stainless handle and the all-black pan just plain looks good.

Cons:

Dishwasher while Scanpan calls these pans "dishwasher safe" it's also "not recommended" that you put them in the washer. I tried it once and got a little of the outside black coating to come off not so it was noticeable, but I got a little bit of black dust on the towel. According to Scanpan, repeated washings will cause spotting and splotching. The good news is that it cleans so easily that it's not a deal killer.

Purchasing simply getting a hold of some of the pieces can be a challenge. I had to wait nearly 4 weeks for the 12 1/4" fry pan to come in as nobody in the country seemed to have it. Additionally, you're local stores probably aren't going to carry Scanpan, so if you're impatient, you're just going to have to learn to live with waiting for your cookware.

Price this is not inexpensive cookware. It's not outrageous lesser brands cost nearly as much but to outfit a kitchen is going to cost you somewhat over $1k by the time you're done (for what I want, I'm just over $1,500, for example). Do what I do and buy a piece a month or so and it's not that painful though.

Lids this is a personal choice, so it may not be a con for you, but I like glass lids not the type Scanpan puts on the classic line, but the type they put on the CTX line. Well, the professional line only has stainless lids. I'd buy CTX lids instead, but the CTX line is *very* limited and they just don't have all the lids I'd need. But, if you like stainless lids, or just don't care, this wouldn't be a con for you.

Rivets this is both a good news/bad news item on one hand, the rivets assure that the handle won't come loose; they hold the pan well and make sure you get a long life out of the pan. The bad is that food can collect on them that needs some vigorous scrubbing to come off. So far, I've not needed to use a toothpick to get the food off the perimeter of the rivets, but it wouldn't surprise me if at some point I make something that does require it.

So, all in all, this pan is the best fry pan I've ever had and all the other brands I've got are going to be getting donated away over the next few months as I completely replace them with Scanpan products.

After reading all of the good reviews I decided to get this pan.If I really liked it I was also going to purchase the chef's set of other pans.When it arrived I was so excited.I had been using a cheap omelet pan that all of the teflon had worn off and I was ready to invest in some good pans.Two things I found out.If you put veggies in your omelet and they touch the pan it will stick, but it cleaned up easily.I had to put a teaspoon of butter in.Second the rivets stick out and food collects around them so I have to take a toothpick to them occasionally.One of the rivets started moving, which I don't believe it is supposed to do.I called Scanpan 3 times so far and keep getting an answering machine.I leave a message but no one calls me back.I will try again today.I am deliberating if I should get the classic in the other pans but I hate the glass lids and this problem with Customer service is leaving me leery of making another purchase with this company.

Update.On the last call I was able to get a hold of customer service.The return was easy and the pan was replaced quickly.We ended up purchasing the 10 piece professional set and have been thrilled with how easy these pans are to cook with. We have not had any additional problems and I have recommended these pans to several of my friends and family.The only thing I would not recommend is buying the pasta insert.Anytime I use it water boils up all over my stove.I have tried to put less water in until there is not enough water to cook the pasta.I am now using it as a strainer in my sink.

With a lot of non-stick pans on the market right now, I wasn't sure how ScanPan would be much different than the rest. After using this almost daily for the last few months, I can say that this pan has far exceeded any expectations I've ever had for a piece of cookware.

The surface is so tough, you can use it worry free with metal utensils, and they even suggest giving your pan a cold water blast right after use to steam clean. No other non-stick pan would ever tell you to do this. Most of the time, a simple wipe with a paper towel is all the cleaning you need.

I'm able to use so much less oil in my cooking, and yet still produce flawless golden brown color on meat and fish. Eggs are a piece of cake, too!

These pans look quite impressive as well, and would be at home in any well appointed kitchen. All of this being said, they throw in a lifetime warranty on top of it. I'm sold!

I gave this pan a 5 star rating when I first started using it.I was looking for something instead of Teflon pans that I had to keep replacing as they degraded with use.Initially the pan performed beautifully.I noted, for example, how I had to chase eggs around the pan because my spatula pushed them rather than slipping under them.It was not much later, however, that I noticed that it did not cook omelets well.They tended to stick and I still needed my Teflon pan for those.Overtime the situation has gotten much worse.Now I need to use it as I would any ordinary pan with olive oil to keep things from sticking.It's still an ok regular pan, which is why I still give it two stars--an ok pan but no longer does what it is supposed to do.

My girlfriend has cystic fifrosis and is understandably cautious about her health.She wanted a nonstick pan that didn't use teflon and release the toxin PFOA.I did a pretty extensive search on line for green products and consumer reviews.This pan does not use teflon and tied with two other makes in Consumer Report for the highest non-stick rating.I bought the smallest, least expensive one for a trial run.This pan has been great!We have cooked eggs, onions, even cornbread in this pan and nothing has sticked.We have also used conventional metal utensils with out a mark.This pan has deivered on all it's claims.We couldn't be happier and plan to buy more to add to the set.The only downside is that these are expensive but is worth it since you don't have to treat it delicately.

BergHOFF Earthchef Premium Copper Clad 10-Piece Cookware SetThis cookware was stated to be great for glass top stoves and " would never warp " ...unfortunately mine came slightly warped right out of the box. I called customer service and they were polite, and when asked if they were supposed to be perfectly flat he said yes and to return them if they werent. I opted for a refund and not a replacement. The sides of the stock pot are very thin as well as the other pans walls. They did boil water fairly quickly. Also, one reason I chose this set is because BergHoff is a Belgium company and I was under the impression that these were made in Belgium. When asked, the customer service representative could only say that they had plants all over the world and had no way of knowing where they were made. I'm trying not to buy stuff made in China and he said that it was possible they could have been made there. There was no indication where they were made either on the pans themselves or the box. The bottom of the pan did say BergHoff Belgium, but not made in Belgium.They were not packaged very well and I could hear pans rattling, although none were damaged. Being this is the first review of this set I feel bad giving such a negative impression, but its my honest assessment of this product and I feel that one of the strengths of amazon is the reviews, I find them to be very helpful.



()Once upon a time, I was a very serious cook.There was nothing I wouldn't tackle in my home kitchen.Over the years, my cooking has become more utilitarian, with only occasional flights of creative fantasy.And with limited disposable income, I have to admit that I never have the best culinary tools on hand.I recently upgraded my pots and pans to the BergHOFF Earthchef Premium Copper Clad 10-Piece Cookware Set, and I have to tell you, it's been a real eye-opener!

Here is what I mean by that: just by having better cooking implements, I get a noticeably improved end product.This is especially evident with, for instance, the sauté pans.These pans conduct heat better and more evenly than my old, cheap pans.Fish fillets and potstickers come out with a pleasing crispness that had been lacking or difficult to achieve in the past, and more evenly browned.This sort of difference is more difficult to quantify with a pasta pot, but who's to say the water isn't coming to a boil faster?I should really do an experiment to test this.)

These are not non-stick pans, so you'll have to use a little fat or Pam while cooking certain foods, but I have not had notable difficulty with foods sticking when they shouldn't.

My final comment is the most superficial, but it's worth noting how nice these pots and pans look in my kitchen!It's lovely to have a full matching set, and they're attractive enough that I feel I can serve in them.The ten pieces that make up this set are well-chosen.They may not fill every single culinary need that I have, but they're good for the vast majority of them.I have to admit that I've never cooked with the very finest/most expensive pots and pans on the market, so I can't compare, but the Earthchef set is such a radical improvement over what I had been using that I could not be more delighted!

()Okay so a little background on me... I learned to cook in a steakhouse kitchen and I am accustomed to putting my cookware through absolute hell in order to get food turned out quickly.I've been extremely disappointed in a number of prominent brands because of their ability to stand up to high-heat, multi-condition cooking.I spend at least 20 hours a week in the kitchen at my house so I can be somewhat picky about my cookware.

I received this pan set as part of the Amazon Vine program and after seeing some of the initial reviews, I was ready to be disappointed.I can tell you after almost a month of using this set in every condition I could think of, this is a 5-star product.I have broiled with it, sautéed, cooked down tomato stock, deep fried, pan fried, and straight up baked with it.I've been nothing but thoroughly impressed.This is not "non-stick" cookware but I have yet to burn anything to it.Clean up has been amazing and as long as you follow the maintenance instructions included in the package you won't have any problems.Again though this is not a "non-stick" set; in all honesty, this set couldn't perform half as well as it does if it were.We have not yet had to soak any of the pans to get food off and we clean them with a nylon bristle brush (I have had more issues cleaning residue out of Teflon coated pans).

I really love the stock pan that it comes with and I had no problems with warping or staining after using to cook down several bushels of tomatoes over the course of two days (the pot was on heat for over 8 hours each time).I love being able to through the pans cover and all into the broiler to finish what I'm cooking or to hold it warm (again no problems with warping even in using the pans to broil in).I love being able to use my metal utensils instead of having to use flimsy nylon spatulas, etc.I've yet to scratch or mar any of my pans yet.

In my opinion this is an intermediate set of cookware for people used to cooking on stainless steel.If you rely heavily on non-stick cookware, it's going to take some getting used to.My only issue with using the pans (and this was more of a learning curve on my part) is that the pans hold heat really well.It takes some forethought when removing the pan from heat as it has a tendency to still cook for a few minutes after turning the burner off.If you want something that can hold up to heat and that will allow you to maintain a large degree of versatility in how you cook, go with this set.I have been shamelessly touting it to all my friends since I got it.

()If you read Amazon's description, you'd think that this is a sort of organic or green non-stick cookware.But I think it's inadvertantly misleading because as I understand it, the description for this cookware covers a number of different products in BergHoff's "EarthChef" line, some of which have non-stick coatings.In fact, you can see the non-stick coating in the photos, but these appear to me to be regular stainless cookware and not non-stick cookware.

I sent an e-mail to BergHoff over a week ago to ask where these pans are made and I also asked what the thickness of the stainless was.To date I have not received a reply. Not good.

So what's the quality of the pans like?Frankly, I think it's just so-so.Most of my pans are All-Clad, Calphalon or Meyer.Generally, I think these pans are much lower quality.Obviously, you'd expect them to be inferior to All-Clad and the like, but even if you can get it out of your head that I even mentioned All-Clad, I think these are just ok pans and pots.Not great, not bad.

The material used seems thin.Also, I experienced more discoloration than what I was used to after only my first use.There was also a clear sticker over the copper disc on the bottom and I didn't see this.So it melted all over my burner and then baked on, making for a messy clean up.

This cookware is "copper clad" and while it took longer to heat than I might have expected, it did retain heat well.Not sure what make this cookware so Earthy, as they seem like regular old stainless pots and pans to me.

The cookware arrived packaged well and I did not notice any warping, as did another reviewer.

As of this writing, this set is a somewhere under $200 with free shipping.So that strikes me as being a reasonable deal for someone looking for a cookware set.So I suppose that I would generally recommend it, but you get what you pay for.It's a decent set, but not a great one, in my view.I'm disappointed that BergHoff doesn't promptly respond to their e-mails too.Hopefully, my experience was the exception and not the rule.

I've been using these pans for about 3 months.The stainless steel is naturally non-stick.Although not to the same degree as Teflon, food washes off with minor elbow grease and a little warm soap.Which is okay with me since I'm trying to remove carcinogens from the kitchen.I've had to adjust my cooking due to the fact that the copper core heats up quickly and retains heat well.These pans are so good, I've realized just how crappy the stove is.Handles stay cool, and the classic design is a definite plus.I was also looking specifically for a set with a saucier (deep skillet), which is difficult to come by.Try a roux in this and you'll never go back to a saucepan. My killer mac and cheese sauce cooks up in 20 minutes now, versus the former hour!And the two-handle design and stove-friendly construction means this set is highly flexible.Can't recommend these any higher, looking forward to having these for years to come.

Cuisinart GW22-20 Greenware Aluminum Eco-Friendly Nonstick 8-Inch Skillet with Helper HandleI have four of these pans. One of them simply never worked right from the start. The other three were great. Things always stick in this one pan even though I treated it before I used it as directed. Eggs cling to the bottom of the pan & even though I use oil or spray oil on the pan, they stick horribly. I contacted Cusinart about the life-time warranty & asked for a replacement. They finally responded after two months of my emailing them with requests, & they stated that I would have to mail the item to them & enclose a check for an addional amount for them to mail me back the item if they determined that the defect was my fault. I couldn't believe this. The mailings would have cost me over $21more than 3/4 of the cost of a new pan. With that said, I wanted a new consumer of this product to beware of the terrible treatment which I felt as a good consumer.

I wouldn't call this a non-stick.More like "easy-clean" after soaking in water.Omelets stick pretty badly, pancakes need some extra oil, and crepes are too much trouble.It was really nice for the first few uses, but they all are for a couple of weeks. A different $7 regular non-stick pan that's a year old still does much better than this pan.I have an electric stove and it can be pretty tough on pans even if you're careful.Maybe on a gas burner it would have done better.

But here's why the 3 stars, and why I still use this pan: I've never seen it smoke and I've never detected any kind of teflon smell.After the first few weeks when it was clear that this wasn't going to be the pan I'll use for eggs, cheese, or pancakes, I started using it as a griddle for frying meats or stir-frying vegetables with almost no oil.The meat juices or sauces sometimes stick to the pan, but as I mentioned, they come off easily after soaking in water.A stainless, enamel, or aluminum wouldn't do that without some scrubbing.And it never smokes, which always made me nervous with the regular teflon.

I am waiting to see how it holds up. you have to wash them by hand and not in the dishwasher

this is a negative in my mind. I have a flat glass top stove , The larger pan is not completely flat and does not sit evenly on the stove top. This causes the pan to heat unevenly and I have to keep things moving to make sure of even cooking. If I could send it back and get my money back I would. I don't know who to contact.

Ekco Kensington Tea Kettle, BlackEkco used to make inexpensive but functional kitchen equipment. Apparently not any more. This Tea ketttle is terrible.Not only is it hard to fill it but it is impossible to pour from it with out spilling. I have been trying for months and every time it drips. No frills tea kettle does what it should until you try to pour the water out. The design of the lid handle means as you are pouring the water, the steam coming out of the hole goes right over the fingers that are holding the lid open. At some point in the design phase you really would have thought someone would have noticed their red scolded fingers and said "Maybe we should move the handle". Buy something else. There are a lot of no frills tea kettles that cost about the same without the lesson in steam vs flesh.

Smart Planet CDM-2 Pigs in a Blanket MakerI bought this feeling a little blind--there were no reviews and the product information didn't indicate how big the finished product is.I've used the mini-donut maker Smart Planet MCM-1 Mini Cupcake Maker before and read all the reviews for the corn dog maker Smart Planet CDM-1 Corn Dog Maker which helped me make my decision to purchase this product.

I've used it twice--the first time I used gluten free waffle batter, the second time I made gluten free corn bread some with diced up hot dogs.Each well holds 2-3 tablespoons of batter.If the wells aren't filled enough the tops don't brown.If they are filled too full the batter runs out and connects the wells, which wasn't a problem as the batter still cooks.Clean up was easy.

These make great little finger foods. I love that I don't have to heat up the oven to have nice baked goods.

Update: I made non-gluten free treats for family.I made mini pigs in blankets with little smokies wrapped in refrigerator biscuit dough like Grands. I split the dough into 3 sections and wrapped each section around a little smokies. I did the same thing with colby/jack cheese sticks--cut the cheese stick into 3 section and wrapped the biscuit dough around each section. This was a big hit with the grandkids. Another treat was just a basic muffin mix from the supermarket. This was very popular with my grown kids and grandkids alike.



This little machine is the best invention ever!I can't believe I was making mini corn dogs by hand in a Fry Daddy for my daughter who has numerous food allergies...now I just whip a batch of corn dogs or pizza rolls whenever she feels like having them and there is no mess to clean up.Great directions and suggestions included.

I totally agree with the other reviewers, this is a wonderful machine.I just received the machine and have made four helpings of mini corn dogs.It is not rocket science.The first time I placed the batter into the small cells, it leaked a tad, but not too much to be a problem.The next three times were a breeze.Yes, you have to cut the hot dogs in smaller pieces, but SO, just a few seconds to accomplish this feat.It is so fun to use and once the cooking is complete, you smile at your accomplishment. I read many reviews on this maker before I bought it. It works great and my kids love the bit size treats. Make sure you heat the unit and oil the reservoirs before using it.

The first time I used it I used refrigerated croissant rolls and precooked breakfast sausages. I had to cut the sausages to fit into the reservoirs.I cut the dough triangles into smaller pieces and wrapped the dough around the sausages. It worked real nice and only took a few minutes to cook.

I also tried cheese. I did the same with the cheese as the sausage. I cut them to small pieces to fill the reservoir and covered them completely with dough (leaving no holes.)If you try cheese, this can be real messy if you use too much or cook it too long. The first time I used cheese I let it cook too long. It was a little messy and I had to clean it up before using the unit again. The second time I chilled the cheese in the refrigerator and made sure I didn't cook it too long. (I believe I only let it cook two minutes.) This worked a lot better and didn't make a mess. Next time I am going to try chilling or freezing the cut pieces of cheese before cooking.

I gave this unit 4 stars instead of 5 because you cannot remove the plates for cleaning. I wish one of these companies would make a unit with removable and exchangeable plates, so you don't have to buy several units to do pigs in a blanket, brownies, donut holes, etc.

Bayou Classic 7417 12-Quart Cast-Iron Oval Roaster with Domed LidThis pan (After a lot of cleaning and seasoning) made the best Thanksgiving Turkey ever...It was moist and perfect and a few guests told me it was the best they had ever had.I had never used Bayou as I love Lodge but they did not offer a roaster in this size (needed something for a 18lb turkey that JUST fit.)The quality of the cast iron was OK and needed more seasoning than a lodge that are pre seasoned but it did a GREAT JOB...I have cooked 2 small chickens in it and they were great as well...



After reading the other reviews I was a bit skeptical, but the problems seemed associated only with the inadequate packaging for shipping.With Amazon's free shipping, I thought I would just have them send me a replacement if necessary.

The unit arrived without shipping damage.But it contained a large crack which was due to the original casting operation.Also the cover didn't fit.I decided to try ordering the Camp Chef to see if that was any better.

On the packing slip, it states that the S&H was over $26.Amazon must be losing money on just shipping this unit, let alone having to pay for the return shipment via USPS!I can't believe that Amazon doesn't either pull the product or make Bayou Classic fix their horrendous QC problems.

I purchased this roaster from another retailer because I had a coupon but wanted to rate it here since I depend on Amazon reviews when it comes to making purchases.

The first thing I did was take sandpaper to it & scrub it with hot soapy water to remove what was on it. After several times of seasoning I decided to try it out before Thanksgiving.I fried a chicken using two burners on my stove top and it turned out great, no sticking. I fried in it a couple more times to help with extra seasoning then it was time to do the turkey.

Thanksgiving, I roasted a 24# turkey.The turkey fit nicely in the pan and came out very moist and flavorful. I wasn't able to use the lid with a turkey this large so I used heavy duty foil instead. I'm sure with a little smaller turkey the lid will work fine.

The casting's not the best, but then again it's not Lodge.The lid doesn't fit perfectly, but it does fit and has a lip so it won't slid off and as with any cast iron, it's very, very heavy. Overall I'm extremely happy with this roaster and glad I made the purchase.

With this cast iron roaster you can do it all. I use it in the oven, over a fire, in a fire, on the cooktop, in a gas grill, over propane flames, etc.We used it for fryin fish, cooking biscuits, roasting pot roast, baking cakes, and onand on. de Buyer Crepe Pan, Blue Steel

Blue steel crepe panI recently took it into my head to start making crêpes and didn't have the proper pan (or for that matter, anything even close). I became familiar with the existence of this pan through the Williams-Sonoma catalog and, based on its glowing reviews, decided to see if I could pick it up for less. This pan doesn't have a high list regardless but at the time of this writing, Amazon's price is the lowest anywhere, even without the free shipping. :)

This is a quality pan made of what's known as "blue steel"; according to Wikipedia, "bluing" is a manufacturer's process that partially protects carbon steel against potential rust. In order for this pan to be safely seasoned and used, the coating on the pan's cooking surface (which, as I understand it, is independent of the bluing process) must be removed. DON'T EVEN THINK ABOUT IGNORING DE BUYER'S INSTRUCTIONS TO BOIL POTATO PEELS IN THE PAN PRIOR TO SEASONING IT WITH OIL. I mean it. When you see the sludge that comes off the surface of the pan and the color of those peelings, you'll be tempted to repeat that particular step. Go for it--I did (de Buyer has a video of the procedure on YouTube). Dispose of the peelings, rinse the pan THOROUGHLY with very hot water, and wipe it HARD with paper towels to remove as much sludge and bluing as possible. Heat oil (I used rice bran--very high smoke point and not too expensive) in the pan and keep it hot but not smoking for about five minutes, pour it out, and AGAIN wipe thoroughly with paper towels until the cooking surface no longer yields blue (don't worry about the underside unless you're planning to do some very funky frying) and rubbing in the oil will have given you a beautiful, glassy cooking surface. Your pan is on its way to being well-seasoned!

You need only brush a little butter or other fat on your pan's surface to get started on your crêpe odyssey and your seasoning will just keep improving over time (as long as you don't burn it). DON'T RUSH THIS PROCESS. Just let it happen gradually. Bravo has a nice online video of Julia Child and Jacques Pépin making crêpes that renders the procedure virtually idiot-proof and is well worth watching.

I do have a few minor complaints: this pan has a welded handle and de Buyer also manufactures what's essentially the identical pan with a riveted handle but it's only available in Europe; I'd like the option of a choice. Also, the booklet on the pan's handle and the protective cardboard sleeve provide different seasoning instructions (respectively, boiling vs. frying the potato peels); go with "boiling."

This pan couldn't be more perfect for its intended purpose which isn't surprising considering that de Buyer has been manufacturing cookware, in France (NOT East Asia), since 1830. In fact, my very first batch of crêpes shot off the pan like hockey pucks which just emphasizes what other reviewers have noted: SEASON THE PAN ACCORDING TO DE BUYER'S INSTRUCTIONS. At some point, I intend to add the blini pan to my repertoire: de Buyer 5512.12 Professional Blinis Pan 4 3/4" 2.5 mm. If you want to make your own crêpes, I can't recommend this pan highly enough.

Just used this pan for the first time, and every crepe came out perfectly.The instructions said to brown some vegetable peelings in it before using it the first time, then clean with hot water and NO soap.I did this, and if anything the pan outperformed non-stick ones I'm used to.By the way, the secret to making great crepes is to let the batter rest for an hour or more before cooking.A good way to dry non-stainless cookware like this is to put it back on the burner for a short time after washing.Highly recommended.

This is a great, authentic crepe pan. Be sure to season it exactly how the directions describe, and not to use dish soap to wash it (water on a wet cloth or paper towel is fine). It helps to get a crepe spatula to turn crepes when cooking with this pan, but you do not need a batter spreader. I recommend "Crepes" by Lou Siebert Pappas for her 3 basic crepe recipes and crepe making techniques, but note that the rest of the recipes in this book are very elaborate.

The last crepe pan I bought before this one was the Calphalon Commercial nonstick crepe pan. A great pan but it stopped being nonstick after only 1 1/2 years. With all the controversy surrounding nonstick coatings I decided to go old fashioned and buy the classic blue steel crepe pan by De Buyer. Now after quite a few crepe batches I can say that this is the best type of crepe pan and it'll probably last you a lifetime. It heats up really well and cooks crepes at a medium heat setting on my ceramic cooktop. It should be treated like cast iron but is much lighter and has a really smooth surface (unlike my cast iron round griddle) which is ideal for delicate crepes. It does need to be seasoned and its nonstickability improves after each use. Some caveats I discovered: follow the manufacturer's directions for seasoning; use only plastic or wood utensils (it can actually take metal, but metal can actually scratch your seasoning so you'll have reseason); never use soap or put in the dishwasher; and never scour the pan with anything stronger than the pads used for nonstick coatings. After cooking, I just rinse in hot water wiping with a sponge or a dobie pad, dry, heat on the stove on medium low heat, add a little oil, then wipe the pan with a paper towel and let it cool before putting the pan away. The clean-up is only one extra step but the pan is worth it. Don't worry if it gets dark; it's just part of its patina and indicates the pan is developing its nonstick surface. I find that it does a superior job cooking crepes, pancakes, naan, eggs, etc. or for heating up tortillas. Its temperature response is better than the Calphalon and the price is right too!

BTW, only buy De Buyer. I bought a cheaper blue steel pan that was made in China and it warped when it was heated. De Buyer's been manufacturing these since 1830 in France; I think they have the best ones on the market.

This pan is exactly as I hoped it would be. After the first few crepes (hadn't made them in decades and needed to get a rhythm going), it was a breeze. Has a good feel to it...substantial but not heavy. Seemed weird to first fry potato peels in the pan, but I did it and the pan is non-stick now and cleans up beautifully. (Don't be alarmed if the surface of the pan looks like it's getting ruined with the potato peels. A good soaking in plain water and a soft dish brush will take care of that.)

Emeril Stainless Steel with Copper Dishwasher Safe 5-Quart Saute Pan with Lid, SilverI did quite a bit of research about pan types prior to getting this one.It came highly rated from CR and .I've only ever owned nonstick (anodized) before this and of course as with many, the non-stick coating gives up the ghost within about 3 yr.The promise here is that stainless will last nearly as long as cast iron without all of the worries about how to clean it.As recommended, I've used only low to med-heat and only cooked foods that generate their own non-stick (meats, poultry).I've never been able to deglaze before with non-stick this is pretty cool!Yes, if you're used to non-stick there is quite a bit more that gets stuck to the bottom of the pan (but I've been pretty good about letting it preheat 5 min before putting anything in).But, if you follow the included cleaning instructions (although they appear to be generically written, not just for stainless) it comes mostly clean.I can always make out where the meat was sitting.Then I toss a little barkeeper's friend in there, and BAM (sorry Emeril!) as good as new. Plus, I can cut food up while it's in the pan... try that with non-stick!I've only had it about a month and noted a little discoloration on the bit of copper that is visible on the bottom.But I'm not too worried about discoloration, just performance, and it works great.Of course, if it still works a year from now, I'll get back on here and put another review in.

Since I already own several pans from Emeril's stainless steel collection, I knew I would be satisfied with the performance of this one as well.

I chose the 2 qt. size because it's the optimum size for a small family.The sides are 3 inches high (the height of a regular l qt. saucepan) and the diameter is 8 1/4 inches (which is wider than a regular 2 qt. saucepan).Because of the way this pan is sized, it can be used for sauces, sauteing, browning or just heating leftovers.It's very well made and very versatile.

NOTE:While the 5 qt. size of this pan may have two handles, the 2 qt. size does not.This isn't a problem for me, but it might be for someone who is looking for a pan with 2 handles.

I highly recommend this product.

I bought this pan because the standard pans that come with sets are not large enough to prevent spills when handling large amounts of food.This 5 quart pan with its high sides is perfect for sauteing big volumes like a pound of spinach for example.

Fit and finish is perfect.Its bottom is very thick and has a very uniform heat distribution.Handle stays cool.See through cover is very helpful for adjusting the intensity of the heat. I'm using it even for stir fry dishes in place of a wok.It has turned into one of the most useful items in the kitchen.

Make sure to turn off the heat long before the cooking is over since it stays hot for a long long time because of its thick bottom.

I ordered the 5 quart. Despite other people's comments that they had issues with Amazon sending the wrong pan, I had no problems, thankfully! 5 quart Pan has a glass lid with a handle and the 5 quart pan itself has two handles (one long and one small on side).

I've had no issues and I'm very happy with my 5 quart Emeril Pan and Lid. I would recommend.

Santa brought this pan for us and we both have to say that it's really a great pan and a good value.

So far, the non-stick finish is holding up real well (although we have only used it less than a month to be honest)..

What surprised me was how evenly it heats (figured the corners would be colder) and how light weight it is.

We have done the burgers and pancakes on it with out an issue, as well as toasted rolls, french toast, bacon, sautéed peppers and onions, fried eggs etc... and have not had a bit of problem so far.

We did learn a few years ago that non-stick surfaces last longer if you take the extra time to hand wash and dry them, and have done so with this pan too.So far, it still looks like the day Santa dropped it off.

I will say that my wife would like it a bit better if it had a cushioned grip, but so far, that isn't a deal breaker.

These "Toastabags" actually work very well for making grilled sandwiches in the toaster and have the added benefit of being washable and reusable, but there are durability issues. My wife picked these up on sale at a kitchen specialty store to try out since we eat a lot of sandwiches.

These bags are made of a nonstick material that easily holds two slices of bread and the sandwich ingredients of choice. Once assembled, we apply spray butter to the outside of the bread and insert into the bag. The first problem we encountered was fitting the bag into our old standard toaster, but even overstuffed they fit just fine in our shop kitchen's toaster that can also fit bagel halves. While these are advertised to last for up to 50 uses, we had our first one rip after just four sandwiches. Our second one is still going strong after six uses. Perhaps the first one to fail was a fluke, but it was disappointing.

The results are much better than expected, at least for grilled cheese (with or without ham) and Rubens. The outside of the bread gets nicely toasted and the insides are wonderfully "melty" hot.

Other than my concerns about the durability of these, I am very impressed with how well these work!

I was out of town last weekend for a wedding and finally drove back into town Sunday evening. Groceries were scarce in the house. Odds and ends and maybe 2/3 of any recipe, but I did have some bread and some tasty Havarti. Really convenient way to make a grilled cheese without the clean-up. You can even add other ingredients in-between the bread and cheese (I put apple slices, Yum!) and the bag holds everything together while melting the cheese and toasting the bread evenly. I use a toaster oven and it keeps the cheese from making a mess dripping everywhere. The best thing about this product was how I could slide the bread and cheese into the toastabag, then slide the bag into a plastic sandwich bag which I put in my lunchbox, and just pop the toastabag into the toaster at work and have an ooey-gooey grilled cheese sandwich in a matter of minutes! I do kinda wish they came in different sizes or shapes, as some of the breads I eat are too cumbersome for the toastabags.

It worked just great, but when I washed it, the fabric tore along the seam. One use. The sandwich came out perfectly, but the product description indicated that it could be used repeatedly.

I can't sew it because the thread wouldn't withstand the heat of the toaster. Shame, because it is such a good concept.
