Charolles 26cm Shabu Shabu Pan
2/21/12 I've used this now for Shabu Shabu a number of times, and I must say that my only complaint is that I'd like it to be slightly larger, but that's really not the fault of the pan, but more how much crap I throw in the pan when I make it, so this is an individual difference that shouldn't apply to the rating of the pan. Also, because the pan has an opening in the middle to allow heat to pass through the pan, it does make it slightly difficult to get solid items out if you don't have the right kind of spoon.
However, with all that said, this is a great and attractive pan for use with Shabu Shabu or Sukiyaki. Purchase without hesitation. I marked my review up from 4 stars to 5, especially considering the other pans out there look like doodoobutt.
7/16/11 Have yet to use this pan, but since there was a lack of reviews, thought that I would share what I thought about this pan. First, the instructions are in Japanese. Second, the pan is relatively nice, but a little light. I'm not sure how well it will retain heat, but it shouldn't be too much of an issue. It does have metal handles on both the lid and the pan itself. They aren't super cheap, but they aren't also super heavy. This pan seems to be pretty middle of the road in terms of quality. Not too bad, not too amazing. Again, just a review without use.Charolles 26cm Shabu Shabu Pan

Cons: The raised stuff on the bottom makes this an impractical pan for real cooking.
On the plus side it is very fun to hide at friends houses until they find it.Thus the pro's for easily concealed.

I have written a similar review for the 1.5 qt Easy System Saucepan, and like that one, this pan is also tippy. It's center of gravity is weighted toward the handle, and can be very dangerous. If you press the handle to the counter, it is very slow to right itself. If you also have a gas cooktop, the openness of the burner grate increases the likelihood it will tip over and potentially burn you.Calphalon usually makes good quality, but not this time.
Please stay away from this one, at least until they redesign it.

This pan is the perfect size for one person: omelettes, small steak, etc.Absolutely nothing sticks to the interior.Cool handle grip is nice too.Le Creuset 3-Ply Stainless-Steel 11-Inch Nonstick Fry Pan
I called their warranty line. They don't staff it with enough people because you have to wait forever to get through and they throw you to voice mail if it's busy. When you get through to them, they will politely explain to you that they don't pay for you to ship the pan back, despite what it says on their web site. That's right!now I'm out an additional 20 bucks!
THANK YOU LE CRUESET for showing me the best side of corporate indifference.I could get better warranty service if I'd bought from WilliamsSonoma who stand by their products:however I wanted to buy local. Now I understand why my local kitchen store stopped stocking their stuff.Next time,I will buy a cheap pan at Target and if it last a year then I'm still ahead of the game.
Meanwhile,I will ask my gypsy friends to curse the Le Cruset executives who are apparently making tons of money by ripping off their customers.
I was skeptical of the value of this frying pan, but being a fan of the brand, I decided to plunk down my hard earned dollars and take a chance.Boy am I glad that I did! This is a thick pan that heats evenly and doesn't warp like so many of the thinner nonstick products. The handle is hollow and the overall weight of the pan is much lighter than Le Creuset's typical cast iron pans.I have cooked hashbrowns, eggs, pork, burgers, chicken, fried rice, etc. in this pan and it works well for everything.Clean-up is a breeze.Le Crueset says it is dishwasher safe (although it might discolor) but recommends hand washing. The instructions recommend seasoning the pan with vegetable oil before its first use.I did this and haven't had to use any non-stick spray for anything.Cooking meat in this pan surprised me.With the pan on a medium setting, I am able to brown the meat and seal in the flavor much like a cast iron pan. They also make a slightly deeper version of the pan which is great if you like to cook all-in-one stove top meals. The deeper version has a fitted lid that costs twenty dollars extra.

I've only had this pan for a little over a month, so this is not a review of the product's durability. I'll come back at six months and a year from now with updates to this. But so far this is a very nice pan. It heats evenly, has a great nonstick finish, and has helped improve my omelettes quite a bit. Prior to this, I was using a Cuisinart nonstick pan the hard-anodized version...not the Multiclad, which is better and more expensive than their more budget-friendly line. My original plan was to upgrade to the Multiclad, but I have a few pieces of Le Creuset enameled cast iron and have found them to be excellent pieces of cookware, so it seemed like a good idea to try out their stainless/nonstick pans. Up to this point, I'm impressed with the performance.
A quick note on durability. I've read reviews where folks complain about delamination on nonstick pans. I've also had this happen to me on a couple of pans a few years back. I'm not going to assume anything about how other people are using their pans, but my own personal experience tells me that nonstick pans require a bit more babying than regular stainless and cast iron:
1) Do not use with high heat.
2) Do not use metal utensils in the pan for stirring, cutting, etc...
3) Be careful about bumping, scraping, etc... especially on the edges, where the nonstick surface joins the base.
4) Washing by hand is generally preferred over the dishwasher.
5) Probably not a good idea to cook in the oven with these.
Again, I don't know how others are using their pans. But I can tell you that both times my nonsticks died on me, it was because of one or more of the reasons listed above. Just an observation. I'll try babying this Le Creuset just a bit and see how it holds up over time.
If my understanding is correct, this stainless line is made in China. However, I don't recall seeing the country of origin anywhere on the box or in the manual. It may be something that the company is not eager to advertise. I'm generally not a fan of products made in China. And no...this is not because I'm some nationalistic fearmonger waging a crusade against globalization. Rather, it's simply because my personal experience with Chinese products has often shown them to be poorly manufactured and riddled with quality control issues in many cases. That said, if this pan is indeed made there, then in my opinion it is a good example of a well-made Chinese product. The build, fit, and finish is high quality from what I can see.
Bottom line: a really nice stainless nonstick pan from the makers of some of the best cast iron cookware. I'll be back with durability reports as this pan ages.

Calphalon Unison Omelette Pans
So my wife picked up this Calphalon 8 inch omelet pan for those few occasions where I want a nonstick surface.
This pan rocks! It was apparent right from the start that the nonstick material(s) on this pan totally outclass what the All-Clad pans use.And this pan has proven to hold up much better. We have been using this pan for well over a year now and the interior still looks like new.I have no doubt that this pan will last us for many more years.
I still love my All-Clad stainless steel pans. But when it comes to nonstick pans, I think Calphalon is better and the best I have ever used.
UPDATE 1/20/12
The nonstick surface on this pan is still working great . . . while the surface on my last All-Clad "non-stick" pan (a 10 inch skillet) became totally useless. So we tossed the All-Clad pan and bought the Calphalon 10 inch Unison non-stick skillet that is the companion to this one.If possible, it seems that they have even IMPROVED the non-stick surface on these pans.Again, I really like my other All-Clad pans, but for some reason they just don't seem to make a good non-stick pan.Until they do, I highly recommend these Calphalon pans.

While the pan has performed well, there is a 1/8-inch flaw in the non-stick coating. So far it appears to be cosmetic and does not affect the cooking properties. Not worth returning.

My husband and I purchased this omelette pan after purchasing the Unison 15 piece set (omellete pan didn't come with the set).Although the pan is expensive, it is worth every penny!Excellent quality, so easy to use and clean. You don't have to put butter or oil in the pan. . .great for healthy cooking!Make sure to grease the pan before using it for the first time and wait for the pan to cool completely before washing.I highly recommend the Unison cookware to anyone!Want Calphalon Unison Omelette Pans Discount?
This pan was a dream initially, but already has small scratches and a blister after less than 3 months of use!I use this pan 3-4 times per week, never above medium heat and only with plastic or silicone utensils.I have never put it in the dishwasher (although that's supposed to be okay) and I have always waited for it to cool before washing it with hot, soapy water and a sponge.I can't believe the poor quality!Update:My replacement arrived with a small gauge on the cook surface.Really, another problem with the manufacturing process?!I expected more from Calphalon, especially at this price.Needlesstosay, I won't be giving it a third try.

3-Piece Non-Stick Skillet Set
I don't use non-stick a lot so these were a great value. The first time I cooked with them my eggs stuck. The second time I seasoned the skillet like I would with cast iron, the eggs slid right out and clean up was a breeze. That same morning I used all three skillets to cook eggs, bacon, and saugage. Nothing stuck. I have a complete set of stainless steel cookware so these are great to have on hand for cooking eggs and a great value (as I have already stated).

LOVE IT!!!!The top of this pan is the same size as the one I was replacing, but the sides are sloped far more. That results in a smaller usable cooking area at the bottom of the pan. Not a big deal, but now I make smaller crepes.
The nonstick surface is amazing though. I'm pretty sure even the butter was beading up.

Having tried numerous other brands of frying pans all of which warped after a few uses, despite careful handling I decided to try this Kitchen Aid.It is wonderful! It distributes the heat evenly; and, most important, it has a very heavy base that does not warp.I was a bit concerned that the handle would get too hot, but it doesn't.Even though expensive compared to other manufacturers, I feel it is worth every penny.

BergHOFF Earthchef 7-Inch Try Me Skillet
Oh, and regarding the handle heating, which one or two other reviewers mentioned don't worry about it.It's only an issue if you have the flame set so wide that you're heating the sides of the skillet instead of the bottom, which is wasteful as well as counterproductive. It only takes a small flame to develop sufficient, even heat under this sucker.I've left it on the burner for more than twenty minutes and I can still pick it up bare handed.I intend to get the larger version too. This company makes great, green products you can feel good about!
Oh yeah, one other thing I wanted to mention what with the shape of the pan (vertical sides) and the incredible lack of friction, I've FINALLY mastered that "flip" technique you see on all the cooking shows!!I never got the hang of that before!I have had this product (imported from a friend in Canada) for months, and use it almost daily. On a glass cooking surface, the handle is a non-issue not hot to the touch as long as the proper burner size is selected.I can see how gas would have a bad effect, though!Non-stick is really a dream, and even stands up to high-heat cooking without damage.I have not noticed any flavors in the food.As a matter of fact, I can finally taste my food.Maybe the other reviewer has a bad pan?Or maybe my taste buds are not picking it up...At any rate, I am buying more of these, as they appear to be safe to cook with (no chemicals).

Poor product Poor customer service Would not buy again for half the priceWarning: First time reviewer here, but I use the reviews of products exclusively on whether or not to purchase products on amazon.com. I do not want any other users to go through the same poor customer service I did only to gain nothing.
I have purchased a set of Berghoff Scala Ceramic coated frying pans. I used the main 12" pan for about a month. As time progresses the pan started to stick. I contacted the customer service dept. that told me to deep clean the pan with baking soda and water. After it was dry add oil to the pan while slowly reheating it.I did this several times to cure my pan as suggested by the customer service rep. He assured me that it would take some time for this to work. This took place over 4 months after purchasing the set.I then got preoccupied when moving into my renovated kitchen. After dealing with my renovation I found the pan again. It was now 12 months since purchase.I had a new representative that made it sound like the guy I was speaking to previously did a poor job and was let go, which he was very rude. She stated they needed to find my files and reopen the review of my pan.She advised me to send the pan in so the warranty dept. could look at the pan. I had to pay shipping both ways but I figured they would at least get my pan back into good condition.Berghoff never called or emailed that they had my pan even though I sent a letter with the pan. After waiting a month I decided to email and see if they received the pan. The last customer service rep I had was now gone and I had a new one again. She had to find the pan again and pull up the files. After a reply from the newest customer service rep she stated that my pan was not covered under warranty.WHAT?
She explained that due to the color of the bottom of the pan I had overheated the pan and that the warranty was now void. I the dirt she cleaned on the bottom of my pan was on all our pans we had. We have a glass top range that we cool all our meals on. It does get dirty at times. I simply took a nylon scrubber to clean one of the other pans I had just to see how hard it was.I emailed back stating that her suggestion was not the case and that I wanted to speak to a supervisor.Three weeks later still no response.I called and was directed to the same person I was dealing with my emails. She said she brought the pan to her supervisor and stated that she agreed while refusing to allow me to speak to her supervisor.
The facts: Not once did I ever cook with the pan over ½ heat on my range top. I primarily cooked eggs, sausage, warmed up veggies, and cooked some fish. Mind you that I only used the pan 1 month.I hand washed it after every use. At first everything would slide out of the pan. The pan got to the point where I had to scrape it each time after use and then let it sit in soap water. THIS SHOULD NOT HAPPEN AFTER 1 MONTH OF USE!
Due to the numerous customer service representatives, poor service, and average pans I would never recommend anyone buy from this company. They did offer me a deal though, 50% off their retail of a new pan. That was almost the same price I could buy it off of amazon.com.
Buyer Beware Stay Away Learn from my mistakes.

Bought this little pan after getting a new induction stove. It Works great so far, as a normal pan. Heats things up evenly, and the handle does not get hot as some of the reviews suggested. It may with a gas stove, but using it on a induction stove. Not sure why they call it 'practical pouring rim'its just like any other rim.
The surface is about the same as a regular non stick pan in terms of cooking. If you dont oil/butter the food, it will stick and burn on the pan. Eggs dont just slide around using the non stick surface.
If used like any other non stick pan you are used to, its just the same, a bit pricey infact, but does well work with induction cooking.
Lamson and Goodnow 07304 6x1.5" Black HotHandle Handle Holder
PROS:
1)easy to clean just rinse.
2)doesn't matter if it gets wet with cloth based mitts, if it gets wet, it's not going to protect you from the heat. The silicone is impervious to the liquid, so you're safe.
3)Ridges inside of holder there are these vertical ridges inside the holder that help to create more space between the handle and the holder.Since all holders tend to heat up somewhat when left on the handle while cooking, this feature helps alleviate the heating up.
4)has a little hole, you can hang it up!
CONS:
1)The same ridges mentioned in #3 above, makes it kind of slip around when you're trying to get a firm grip on the handle. It is silicone after all, so it's flexible.
2)I use these holders specifically for Lodge iron skillets, and this holder is a little too long for their handles So it kind of dangles. Also, it's a little too big for the Lodge handles as well You have to be aware to make sure you get a nice, firm grip and compress down on to the handle every time you pick it up.
If they were a little smaller, and therefore more form-fitting for Lodge cast-iron skillets, I'd be super happy. But I haven't found any other handle holders made out of silicone as of yet...
Oh, remember, this product ships from Target so no Super savings.
This type of pan holder is just what I've been searching for, but unfortunately it doesn't work. As someone else pointed out, it slips round and won't grip. This is really dangerous when trying to strain off boiling liquid from a pan. I nearly lost the contents on me and the floor. My pans have normal, average size handles.
I will buy this item again if the company can work out how to make a tighter fit. I wrote to them and got nice reply stating this is how they're made and if I don't like them I should return them to the store for a refund. If enough people write they might do something about it.

This holder does a very good job preventing heat transfer from the pan handle to the cook's hand.It maintains protection even when wet.As others have mentioned, there can be some movement on the pan handle but, with a little experimentation on my flat-handled pans, I found a way to hold it so the grip remains stable. It has saved me from burns from accidental contact with the handle (or just plain forgetting not to touch the handle) after transferring the pan from oven to stove top.Overall, I am satisfied with the product.Read Best Reviews of Lamson and Goodnow 07304 6x1.5" Black HotHandle Handle Holder Here

Simply Calphalon Nonstick Double Grill Pan
Feb 3, 2012
Here it is months later and I have literally used this pan heavily over the past few months, much more than I had ever used all the other grill pans I had purchased put together. This pan still looks and works as it did the day it was purchased. Congratulations to Calphalon for this beauty of a grill pan that works beautifully for its intended purpose. Grill chicken comes out crispy and greaseless, steaks come out with a nice char on them and sandwiches are works of art. I am still happy with it and might pick up another to keep just in case one of the sons comes to visit and this disappears when they leave!

Back again to update on this pan..........still performing flawlessly! This is one seriously great pan that has had more use than any other in my arsenal of cookware and it is still holding up fine. The finish has not peeled or degraded in any way and it is a breeze to clean. My stove also is one of the ones with high performance burners and it has not damaged the pan in any way when I sear steaks or grill chicken breasts and nothing ever sticks to it. I do use a pastry brush to swish a light coating of oil on it before I use it so maybe that has helped with its longevity. Many of the double-burner griddles are not able to be used on a flat top stove. This one, however, is perfectly flat on the bottom and works great on mine!I have had it for a few months and use it all the time.We have 5 kids, and it is perfect for making lots of french toast, pancakes, hash browns, grilled cheese, etc. at a time. Also works great for making stir fry because it keeps such a large area hot, you can just keep stirring things around to hot areas. It is also heavyweight and seems like it will last a very long time.Cleans up well and the nonstick is great, too.
*note* I have the pan that does not have the grill bars across the cooking surface,so the top is totally flat as well as the bottom.

I already had one of the grill pans, but it was too small to accommodate two large sandwiches at the same time. This larger pan is a duplicate of the smaller, skillet version, but holds several sandwiches at once. Great pan which I recommend.Great grill, easy to cook, leaves strong grill marks on meat and vegetables.Rubber handles are helpful for when moving grill.
