IMUSA VICTORIA-85008 Cast Iron Tortilla Press Pre-Cured 8-Inch, BlackI started making my own corn tortillas, and at first used a glass pie pan (put dough inbetween two pieces of zip lock plastic, and then squash with the pie plate.)I would have to press hard, and rotate the round pie dish to get the dough to squish out to the right size/thickness.It worked well, but I was afraid I would break the glass dish and cut myself I had to use so much pressure.It was sort of a rocking swirling motion to get it to press out right.It worked, but I had to lean on the plate too much.I had used a skillet bottom, but you couldn't see how big/thin the tortilla was, so if you don't buy this, try a pyrex pie pan on two plastic sheets of ziplock material.

My husband purchased this press for me, and it is so easy to use.I use two pieces of ziplock plastic, cut to fit the press, and my flour (Masa Harina) has a recipe on the back for 4, 8 and 12 torillas.These make balls about the size of a ping pong ball or golf ball.They squeeze out perfectly every time, and I use no pressure at all.

I have read that there are two types of presses: cast iron and aluminum.The aluminum is lighter, but requires more force.The cast iron is heavy, and comes with a "shiny paint job" that comes off with time, according to internet reveiws, but my dough does not touch the press with the plastic sheets, so this is simply cosmetic in my opinion.I did notice some grease on it, but I assumed it was to keep the product from rusting, being that it is iron....you put oil on your cast iron pans for this purpose.It was minimal oil.

To protect my granite counters, I put felt stick-on feet onto the bottom since it is heavy and iron.May not be needed, but it makes me feel better.I could not be more impressed with it, and I can whip out fresh tortillas in about 2 minutes.I had at first told my husband not to get me one, I'd continue with the pie plate, but now I am thrilled to have it.It is effortless.I hate to see that some people had theirs break, or not make thin tortillas, but I imagine it is just a problem with their particular unit.If my tortillas were any thinner, you couldn't get them off of the plastic sheet.If they were thicker, they wouldn't be "right."Hope that makes sense!I like the press, and hope that it lasts.I received it in November, and have used it almost daily, and it is now in January...I haven't seen any issues with the product in that amount of time.

6 MONTH UPDATE

Product is still working great after 6 months.I am going to try wax paper as was suggested by a fellow Amazon shopper, in lieu of the zip lock.I have slowed down making tortillas, so it is not getting "as much use" as it was, but this is merely for waist-line purposes!I'd make them all day, everyday if I could, without getting as big as an ox.It has held up well, and makes excellent tortillas with ease.

This is an excellent tortilla press.We just recieved one and yes, it is a bit greasy out of the box, but this is not a hinderance. It made very flat, thin, and (most importantly) consistently good tortillas.

In order to avoid contact with the grease (which there from the manufacturing process to prevent the cast iron from rusting not necessarily a bad thing), we took a 1 gallon Ziploc bag (food grade plastic) and cut it at the seams to create two pieces of plastic.We then trimmed the plastic sheets to be slightly larger than the press.This works wonderfully, we only need to peel the pressed tortilla from the plastic sheet and lay it in to the griddle.

We would recommend this press to anyone interested in making their own tortillas, sopes, or other dishes requiring use of a press.

The one I received had little grease on it, not that it would have bothered me much anyway.

It also presses the tortillas paper thin.In fact, I had to be careful not to get them too thin at first.

Recommend lining each side with plastic when pressing. Then transfer pressed tortilla to a piece of wax paper then onto the grill.That's just the easiest way we found to tranfer them.

Served warm with some queso fresca yum!

this product is great, i was reading all the reviews before purchasing and wondered about some reviews, because YES it comes with instructions,they are ON THE BOX , yes there is no extra paper, but why , the instruction is on the box in english and spanish! It recommends also to put a plastic bag/ paper between the press, so the dough will not stick. People who don't read the instructions will have a problem working with the tortilla maker. To get the tortilla off the plastic, you first lift it from one side off, put the plastic back on and flip it over , now you take the plasic of this side off, keep it off, turn it over and take the other already loosened up plastic off, now you can bake it in the pan. This whole procedure is important, so you don't ripp the tortilla since it is thin! frying no oil and about 50 sconds each side, heat up the pan first before you start, it frys better. if you take a piece of dough the size of a golf ball or little smaller, you get about a 5-6 inc tortilla, put the ball a little off centerlike somebody else already recommended more toward the back and the tortilla comes out more evenyou may have to try out a bit remember just when you started playing with play dough? trying out different things?:)One thing is trueit is time consuming,but to do it together as a family is the most fun! My wife and I are very impressed with this tortilla press.My wife initially got a plastic press from a local store, and it was horrible.It wouldn't flatten out the tortillas at all because it would bend under pressure.

Then we tried the 6.5 inch aluminum press that is also sold here on amazon.It was much better than the plastic one, but we were still disappointed at the size of the tortillas.

This lead us to the 8 inch cast iron press.It's true that it's a little greasy out of the box, but after a quick washing with soap and water, it is good to go.After putting plastic wrap on both pressing surfaces we gave it a try.It presses our tortilla dough as thin as we want it, even too thin if we decide to push it that hard.The size of the tortillas is much better as well.I would recommend this press to anyone that is looking for a quality tortilla press.

The Boomerang Wok has been wonderful so far. Great for stir frying but also great for flipping fried eggs, cooking tortillas, etc. The pan is very high quality and also very sturdy. It is a bit heavy for its size but that is of course due the extra metal required for the shape of the pot. It comes with a black fabric bag to cover the pan which I assume is to protect it from scratches etc from other pots and pans in the cupboard. Overall, this pan is a good investment in my opinion.

We had a really good experience with Speranza Design Company.The teflon wok was on backorder, so they gave me the option to have the stainless steel wok at no extra charge.It arrived in time for the intended birthday.I haven't had a chance to use it, but my husband seemed to like it.He enjoys flipping his food, so he said it takes a little getting used to, but I think it was worth it.Beautiful looking design.

Old Mountain 10160 Pre-Seasoned 11-3/4-Inch Cast Iron Loaf PanI own a LOT of cast iron..in fact, I probably own most of what Lodge has put out and typiually only purchase Lodge but I needed some additional bread pans and since cannot find Lodge brand any longer I purchased 2 from Sante Cabin and 2 from Old Mountain. Old Mountain arrived quickly, well wrapped/packaged and completely treated. Washed and used to encounter bread that dropped effortlessly from the pan without need for barely any prompting. After a few more uses the finish was even better...perfect.

The Sante Cabin cast iron arrived a few days later, washed to prepare for use and pan immediately began to rust. Description indicates "true seasoned" and "ready to use right out of the box" but also denotes "non-seasoned". It is NOT seasoned and rusted immediately after washing. On the other hand, the two Old Mountain loaf/bread pans were perfect. WAshed easily, zero rust, true non-seasoning and a beautifully shaped loaf.

It is a good pan for baking bread but its description fooled me.I thought I was getting a nice long baking pan at 11 3/4 inches but that is the measurement which includes the handles.This is actually a 9 x 5.5 inch pan. Drat!

I have been looking for an alternative to non-stick for some time, and I finally decided on cast iron for a healthy replacement. After reading other reviews, I decided to try the Old Mountain one. I followed the instructions for new out of box care, and after using it for the first time, I noticed some of the finish came off onto my loaf. I had also noticed an odd smell coming from the pan. I was concerned about what the factory "pre-seasoning" was made of (it's made in China), so I scrubbed it off and followed the instructions for re-seasoning. I used grapeseed oil, and it worked perfectly!

Despite the issues with first time use, this pan does get 5 stars as the smell disappeared after the re-seasoning, and everything I have made (from wheat bread to banana bread) has popped right out with perfect, golden crusts. My recommendation is to re-season it before first use, it's definitely worth the money and improves after every use.

We have owned two of these cast iron bread loaf pans since May 2010. We bake our homemade bread at least once per week, five loaves at a time in our smallish electric home oven. When we bake we use one glass, one ceramic, one untreated stone, and two old mountain cast iron bread pans. There is absolutely no question that our stone pan (Pampered Chef) and our cast iron pans are the best. The only problem with the stone pan is that it's too large. We recently broke first the glass pan and now the ceramic pan and decided to get two more cast iron pans to replace them. They just can't be beat. Perfect loaf size, perfect crumb, great rising because the dough climbs up the slightly roughened surface, and the bread always slips ever so easily from the pan leaving behind a perfect crust that remains moist but firm. Our bread is 100% whole grain without any oils and the bread is consistently delicious and beautiful every time. I would say that the only thing to watch out for is burns. Be careful removing the pans from the oven and for a spell afterwards because they will burn your skin as they retain heat. Ouch! But, generally if that happens at all it only happens once, right? Enjoy! By the way... One reviewer said to wait to find a Lodge cast iron pan (impossible but good luck!), but I say why wait when you could be getting so much pleasure out of baking and eating right now!

I cook everything in this at 300 never higher. It browns my meat and caramelizes vegetables at that temp.

I have had this skillet for just under a year now. I bought it to replace my West Bend electric skillet that had a faulty cord (after about 5 years of heavy use). We noticed immediately that no matter how we washed it, or with what kind of detergent, there were huge white spots all over the pan on both the inside and outside. I have had it a few months now, and the non-stick coating has eroded to the point that when I cooked hamburgers last night, they stuck to the pan--and the same happens with random vegetables and potatoes. Everything sticks, it never looks clean, and now it's starting to hold the odor of whatever I cook in it. I am looking now for a replacement cord for my West Bend that is still going strong after 5 or so years, that doesn't make food stick and still looks new. With my large family of 6, I need something reliable to be a companion to my stove/oven. This is definitely not it. Save your money!

Been using this skillet for five years.Came online to see if it was still sold, and noticed that the handles are somewhat different now, but the design is otherwise the same.

I love this skillet.It cleans so easily, I just wipe it down, after maybe letting it soak in Ajax for a few minutes to absorb any oil.I've never had food stick to it.

It's great for rice, chicken livers, hamburgers, stir fry.For rice, never fill the pan more than one half with water; rice shouldn't exceed one half the water level.(The lessyou use, the drier and fluffier the rice.) Else, it will boil over.Set temp at about 215, and watch it.Takes maybe 20 minutes total.

Skillet needs space to breathe.Make sure it's got a good 12" or more headspace above the top.Keep something temperature-tolerant nearby, as the top gets hot and when you must remove it, you'll need a place to put it down.

In a way it's easier to use than a regular pan, because cleanup is so easy.I've used metal utensils on it, and as a result there are scratches, but no rust.

14' COMMERCIAL ALUMINUM NON-STICK FRY FRYING PAN - NSFThis is a very high-quality frying pan; restaurant quality. The only issue I have with it is that it is very heavy. Fortunately for me, my boyfriend does most of the cooking, but I do a fair amount of the cleaning. The pan is too big to fit in our medium-sized dishwasher. It's large size is nice for cooking certain dishes, but also means that I must wash it by hand. It washes nice and easy with a solid non-stick coating. However lifting it up to rinse can be a bit of a strain on my wrists, given its weight.

I bought this pan for home use. We have a family of 5 and typical pans are just too small for many things. Plus I don't like to get out the griddle all the time for fried eggs and the like.

This pan is huge and when you add in the handle length its enormous. The size makes it difficult to store in our smaller kitchen. Its also very deep. Probably 3 inches. That can make working in the pan a challenge.

Surface is nice. I've just started using it but the non stick seems to be tougher than a standard non-stick.

Being aluminum I thought it would heat quickly but it is very so heavy so it takes a long time to get hot but is very even heat once hot. The handle also got very hot.

I received the frying pan with two scratches in the non-stick coating.I wasn't going to go through all the crapola of sending it back, since they were fairly small and not on the flat bottom.OK, so what's the problem...If you advertise it as new and in reality it's a factory second, then take the stuff back to Mainland China and sell it where you got it.

We are big fans and users of electric frying pans, these things are great, and this one is certainly bigger and perhaps better than the many others we have used to death, BUT there is this one flaw and it is hard to get over.

The vent hole in the glass top is too small. Water vapor stuffs up in this little hole and the lid starts to sputter all around the edge and all over the counter top. Cooking too fast? Well no. The temp control shuts on and off as most of them do, and so when it's in the on mode the pan gets a rush of heat and the top then sputters all over the place.

We have had the pan for about eight months, so perhaps cuisinart has corrected this problem.



My grandma gave us a 12-inch square electric skillet in the 70s, but we hardly ever used it and eventually gave it to Goodwill.It offered no advantage over stovetop cooking.

My wife got the Green skillet for me last month.The 14 inch size makes it very versatile.You can brown a lot of mushrooms without having to batch-cook them.I'm sure it will fry a lot of chicken too.

The heat distribution is good.At 450 F, you can't sear steaks--leave that to 550F+ cast iron or Staub's enameled iron grill pans-but golden-browning is wonderfully easy to achieve.

For open-pan cooking, I would give it 4-5 stars.

I must however, subtract two full stars for the patently inadequate lid design.How many of us use lidded pans without using their lids to cook? It would be nice to use the Green skillet to steam, simmer or boil things, but the condensate on the lid underside flows directly to the pan rim, gathers, then bubbles, spits and drips all over the countertop and onto the temp-control module.I have to put a towel over the latter, not knowing if an electrical short could otherwise occur, and even then I have to wipe up the countertop afterwards.Or I have to "crack" the lid (which lessens dripping and directs it to one area).Not a fatal issue, but indicative of less-than-fully-thoughtful attention to functional detail by Cuisinart.

Two design modifications to the lid would greatly improve things.1) a much larger vent hole with a sliding shutter to adjust the size of the orifice, and 2) a glass or metal circular rim on the underside running maybe a half inch from the lid's edge, to force lid-condensate to dripinto the pan instead of flowing to the lid/pan-edges interface and sputtering out.

All in all, we're using this pan a lot, as it works really well for open-pan cooking, and then using the lid to keep food warm.

Although it initially worked well, this pan was a knock-off, not a Cuisinart item, as stated.The coating began lifting off after a few uses.The recipient contacted Cuisinart, which advised her of the propensity for sales on Amazon often being knock-offs.The parts come from the same source, but there are differences, such as the coating.(Cuisinart was very kind and, since she had the original receipt, allowed her to return the first pan at her cost and then shipped her a genuine cuisinart CSK-250, which definitely had a different coating.)

I have used it twice to make French Cruellers. They are fried in 2" of oil. The first time I set the thermostat for 325F and when the light went out I assumed it was up to Temp. Put my donut in and it just sat there. I tried the 350 setting but that didn't bring the temp up much so I turned it to 450 and was able to get the cruellers done.

Today I decided to try it again. I put the 2 inches of room temp oil in the fry pan. Turned the thermostat to 350F. I checked it with a very trusty Thermo-Pen after 30 minutes and it was barely up to 250F. I finally turned the thermostat up to 450F and ONE hour later it registered 350 on my Thermo-Pen.

I feel there is something wrong with this skillet. I have many many Cuisinart products including all of their stainless steel cookware and I've been very happy with it.I would have written to the seller but haven't a clue who that is or how to find an email link for them.

I have purchased several Cuisinart products in the past, but this electric skillet is just not up to snuff. We have used it for 8 months. It is not easy to clean. The coating is shedding (into our food, yuck!) and I am replacing it with a stainless steel version by another manufacturer. We use our electric skillet every day and curse the day Farberware decided to stop making theirs. This was an expensive experiment for us, and I recommend purchasers think twice before spending this kind of money on a product that does not perform. The one positive is the size. It is quite large, so people with big families might find it useful--as long as they don't mind feeding the coating material to their children.

Presto 07045 Family-Size Cool-Touch Tilt'N Drain Electric GriddleI purchased this griddle intending to use it to cook pancakes, bacon, and to heat torillas.

First of all, the aluminum surface of the griddle is not as thick as I was expecting.I haven't measured it, but I'd estimate it's between 1/8" and 3/16" thick across most of the surface.As such, it does warp under high heat.It was set on top of my smooth top range (range was off and cold, of course!) and when I turned it past 450 degrees, I found that one of the 4 legs would be off the surface.There is a raised lip around the outer edge which would prevent liquids (pancake batter, beaten egg, etc) from spilling off.This is useful and well executed.

Previous reviews noted that your pancakes can come out "striped" due to the heating element. I underestimated this.Though made of aluminum, there definitely are vast differences in heat from one area of the griddle to another.I think this griddle would perform much better if the heating element covered more of the surface of the griddle, kind of like the design of an electric oven's broiler element.

For heating tortillas, I've got no complaints.And this griddle can get hot, as I've done chicken stir-fry and fajitas all on the surface of the griddle.

Overall, I think I paid a fair price for it, but I'd look for a more expensive, higher quality model next time around.



Having gone through several electric griddles over the yearsthis one is the pick of the litter. The tilt feature is nice to keep your bacon from deep frying in its own grease and makes clean up easier. The size is great since you can actually feed a crowd (thats why you bought it right?). There are some hot spots as usual with this type of item but nothing real serious. I would recommend this item if you want to cook up a pound of bacon at a time, a mess of pancakes or 6grilled cheese sandwiches.

I ABSOLUTELY HATE THIS GRIDDLE.We bought oversize to make more pancakes and thought the cool-touch edge was a great idea.The Tilt'N Drain sounds great, but a mere bump of the cool-touch edge and the griddle falls into the drain position.Not what you're looking for when pouring pancakes.First of all, it still only accommodates five normal size pancakes (four corners and one in the middle).The surface is not level, and all the pancakes run towards the center giving them a distinctive oval shape. The biggest disappointment is the heating element.I purposely pour the center one first, and the one closest to the heating source last. Despite my efforts the one closest to the heating element source turns dark brown in no time flat, and the one in the center is barely ready to flip. End result...I'm shopping for a new griddle.

Purchased this last Christmas. Our previous attempts to do pancakes for our family of 4 children were OK, but the small griddles and frying pans just didn't get the job done quickly enough. Most we could cook at a time were 5 in the circular Circulon electric frying pan. So we got this and it does the job. We're able to cook 8 to 12 pancakes at a time, so are able to cook the entire breakfast with just two batches.

I like the drain feature for bacon, but as other reviewers have indicated it slides into the drain position much too easily. It has never done so during cooking, so our pancakes have always turned out great. But while getting it out of the cupboard and cleaning it, those handles just pop out. Would be nice if they had provide some sort of lock or quick-release mechanism.

Also, as indicated by others, the heat is a little uneven. Pour batter in the top right corner last (next to where the heating element connects).

This griddle is BIG, which is what I wanted.If you want a big griddle, this is it.Keep in mind, the size makes it difficult to clean.It does not fit in my sink, so water often drips on the floor (without me knowing) when I clean it. However, this is not a problem with the griddle, just something to be aware of.

Unfortunately, the surface does not heat evenly, nor does the thermostat appear to be accurate.The middle of the griddle is about 15 F warmer than the setting on the thermostat while the sides were 50 F warmer, as measured with an IR thermometer.This is the only design flaw.

The griddle is level!Pancakes, scrambled eggs, and any other items that flow will stay where you put them.Other griddles are permanently tilted to allow grease to drain.This unit will tilt when you need it to drain (when cooking bacon for example), but stay level when you want it level.

The size is great, and I have not found anything that comes close to this.Without a doubt, I would purchase this again.

Initially I thought the 16-inch pan would be too small. You end up with 5-6 servings (prepare to be amazed at how fast people come back for seconds). But it ends up being perfect for my grill a slightly bigger pan would fit, but I wouldn't be able to close the grill, don't forget to account for the handles.

Like any thin pan, don't heat it up without anything it, or you'll make it lopsided. The plastic/rubber coating on the handles doesn't come off on the grill which is nice. A bigger pan would be a bit harder to hold on to as well. Make sure you order a good oven mitt.

Bought this after getting tired of cooking paella in a stainless steel frying pan could never create the "socarrat" aka crusty layer of rice at the bottom, and this pan really allows you to do so. Researched different materials and this one seemed to be the most recommended. It's quite wide my first time using it I had leftover paella for days! So keep in mind that if you don't have large burners on your stove, you might be using two side-by-side to cook the paella. Because the pan spread across two burners on my stove, the key was to keep moving it so that no two spots became "hot spots" and to ensure the rice cooked evenly. I am hoping this is a pan I keep for years so far it's seemed perfect.

The only reason I'm not giving it 5 stars is because the instructions it came with said to simmer the pan with a dash of white vinegar before the first use to get the film/coating off the surface. I did so then washed and dried it, and it left the pan looking dull and slightly worn even though it was brand new. Not that it takes away from its functionality, it just won't look new and shiny any more.

This quickly became a favorite for our Sunday friends and family dinners, especially during the spring and summer months, when we can eat outdoors by the pool. The recipes are plentiful and adjustible to your families taste. I began with a 22 inch then bought the 14 inch, we always make both, the 22 inch "Paella de la Valencia" seafood and the 14 inch all meat, sausage and chicken for the non fish eaters.

I would recommend that a purchase of the 14, 18, 22 or 36 pan would be best, Why those sizes you ask? Well, Weber kettle comes in those sizes, the pan fits right on top of the appropriate grill (you do need an airgap between the pan and lip of the grill or it will snuff your heat) and anyone can cook this amazing dish to your own taste, in a method as close to tradition as possible (without a fire on the ground) in your own backyard. Oh yea the red handle means HOT, someone else recommended good grill gloves and I second that. I use welding gloves, but I already had them. I also wrap the handle with a kitchen towel or washcloth while it is on the table to remind our guests that the handle is HOT also.

The only other things needed to make this dish properly is Spanish "Bomba" rice, saffron and a long (20"+ recommended)spatula. I have not seen these items cheaper than Amazon anywhere else I shop near home, you're gonna want to make this stuff pretty quick after you get your pan so may as well order it now.

We very much like the Swiss Diamond Saute Pan, which is nonstick at any setting of the stove we use with it, even high heat. The relatively high sides and 12" diameter make it big enough to cook a large amount at one time, good for leftovers. The glass lid is also very good, with a setting in the knob which allows us to vary the amount of steam escaping. The handle is quite fine and does not get hot in use, something we were initially concerned with for a metal handle.



This pan seems to be as indestructible as a non-stick pan can be. This is my second Swiss Diamond pan, and so far I am impressed. I have only had the other pan for about 6 months and so far so good. Finding non-stick pans that hold up to both high heat and to abrasion has been a hard task. So far I like the Swiss Diamond pans and as long as they continue to hold up I will slowly replace the rest of my pans with them.

I have several other pieces of Swiss Diamond cookware, recently adding this one.I love the pan, but I hate the metal handle on this pan.It is similar in shape to the black handles, but not quite.It is slippery to hold, so your grip is not as firm as with the black handle.This is of concern because this pan is heavy empty and MUCH heavier when full.The handle is too long (longer than the black handles) and it doesn't match the collar on the pan (which looks strange), nor my other Swiss Diamond pans, as this is the ONLY one with a different handle.I wanted this pan for the size, so I guess I will keep it, but I'd like to see the black handle on it, not the metal.

This skillet has nearly straight sides, of nice depth. As stated, the foldaway base and temperature control fit nicely inside the skillet itself, making a very compact unit for storage. I made fried chicken in it as a test case (something my old skillet failed miserably at!). To my delight, each piece was cooked evenly. This skillet seems to have no 'cold spots' or overly hot spots. The spoon rest cutaway in the corner makes a nice vent for the pan when cooking, and easy pouring for liquids in the skillet.Cleanup was a fast and easy. If you are looking for a skillet that has fast, even heating, easy cleanup and a compact footprint in a cupboard, this is definitely one to consider!

The skillet arrived in perfect condition. Cooking time appears to be quicker then using the burner on my smooth top electric range. The PRESTO heating element is sealed at the bottom of the skillet for more efficient heating of the pan. There is no wasted energy.

Le Creuset Enameled Cast-Iron 10-1/4-Inch Skillet with Iron Handle, CherryLike others, I bought this pan after the New York Times review came out on alternatives to teflon (the review said that this pan was terrific).My husband and I eat omelets for dinner several nights a week and our teflon pans were starting to lose their nonstick properties.This pan can work well for cooking eggs. The trick, as others have noted, is to preheat the pan on low to medium heat and then to give it a light coat of oil before adding anything to it.The day I received the pan I made a 5-egg omelet and it came out well -I was easily able to flip the whole thing without it breaking.I've also made over-easy eggs and they have come out well too.I like this pan better than my old teflon ones because it's less delicate, it's dishwasher-safe, and I don't need to worry about the coating losing its effectiveness.Plus, it produces food with a nice surface, which teflon has a hard time doing.It is not quite as nonstick as a teflon pan, but it gets the job done (and is much more nonstick than stainless).I'm pleased with the purchase.



I have ordered the 10-1/4" skillet, but because of the reviews about sticking/seasoning, etc. I was concerned.So I emailed LeCreuset Customer Relations with my questions and here is what they said (they were very prompt and helpful):

"You are welcome. The change was made [to the satin finish] to allow consumers to use higher heat with the skillets. Seasoning is not necessary since the pan self-seasons as the oil is build up on the surface. Some consumers just choose to do so as a means to help build up the surface. You do not have to use a lot of oil, just coat as you normally would. The more you use the pan and oil it eventually the oil will develop a surface on the finish which then makes the pan act like a naturally nonstick pan. To season, you lightly coat the interior of the pan with vegetable oil and bake in the oven at 200 degrees on a baking sheet for about 5-10 minutes. Afterwards, allow the pan to cool then wipe off excess oil. Your pan can be stored in this manner until ready for your next use."

So the first thing I'm going to do when I receive my skillet is season it (a couple times) before I even use it!Hope this helps!

I've been replacing some of my purple Paula Deen porcelian non-stick pots and pans with LeCreuset pieces in cassis.Why?For me, the Deen pieces (not even a year old) haven't been holding up as the non-stick surface seems to scratch when I just look at it funny never mind when I'm stirring with a wooden spoon.

Yes, LeCreuset vessels are heavy and expensive but I've been lucky to find the pieces I want not only on sale but also with free shipping.So far, I've been very happy with the four LeCreuset pieces I own and really like the option of their going from stove top to oven.(Just watch your oven temperature if you haven't switched to SS knobs.)

I replaced one Paula Deen skillet only to be disappointed in the second as well and then had another one of those "just one more LeCreuset" moments.The LeCreuset cast iron skillet arrived earlier this month and has proved to be a learning experience after reading other reviews.

To season or not to season?My care and instruction booklet clearly states that seasoning is not necessary, so I didn't season.My first omelette attempt started with some butter, I heated the skillet for less than 10 minutes, used room temperature eggs, and ended with a sticky mess.Not enough butter?Was the skillet not hot enough?Was it a combination?I don't know.I can say that after soaking the skillet, clean up wasn't an issue.

I found more to read at other sites and decided to season my skillet because 1) it didn't seem like I would do it any harm and 2) while most say cast iron skillets season themselves naturally over time, I don't use a skillet on a regular basis.My second egg attempt, over easy, started with a spritz of cooking spray (olive oil for me), I heated the skillet for 15 minutes at 3 on my gas stove, used room temperature eggs, and ended perfectly even though I used a wood spatula to flip the eggs.After the skillet cooled, I let some water sit, and cleaned up without a problem.When the skillet was dry, I added a drop of olive oil, and used a clean paper towel to coat the bottom.

Why 4 stars vs 5?While this skillet passed the over easy test, give me a week or so to try another omelette, and I'll update.

*Added a 5th star today.

Sprayed the bottom of the skillet with some nonstick stuff, set my gas stove to 4, let the skillet heat up for 10 minutes, tossed in eggs, some spices, kept an eye on the pan as one edge cooked quicker than the other, used a wooden spatula to fold my omelette, and slipped it onto my plate.

No more teflon for me.

I have seen several reviews here expressing disappointment with le Creuset's less-than-fully nonstick enamel surface. After having had le Creuset skillets for several months, I now suspect the problem is that people are expecting the enamel surface to compare to Teflon. Teflon truly is non-stick, but it has come under fire in recent years for releasing toxic elements when overheated (and ALL skillets will get overheated from time to time, that's what they're for). Same issue with many of the newer "non Teflon" alternate non-stick surfaces.

The fair comparison here is to cast-iron. You can make cast-iron pans just about non-stick, if you properly season the pan right when you get it, pour in a little oil each time before heating the pan, and re-oil and wipe the pan after use while it is still warm. Same thing with Le Creuset enamel within a few weeks of proper use, and oiling, you can get a surface that is very similar in non-stickiness to a cast-iron pan.

Of course, if you want to fry an egg with a brand-new pan and no oil, you are going to be disappointed. And if you want to do "no oil" cooking at high temperatures, this will not be the pan for you. But for those who appreciate cast iron cookware, know how to season and take care of pans, this is just about the best non-iron pan you are likely to come across.
