Neoflam Cast Aluminum Ceramic Coating Fry Pan 11'/28cmI found this at my local Asian grocer. I thought it was cheap too at 24 dollars. If you go to the company's website, they have videos of the pan cooking an egg without any oil. I had to test this myself, and I was surprised that I was able to cook an egg without oil (over easy and no mess), though, the white has to cook all the way before the egg can start sliding around with ease.

For such a great pan, I can't believe that I can't find it anywhere to buy. There are some on Ebay but the sellers are overcharging it by a lot. I tried sending an email to the company asking where I can buy it, as Amazon doesn't seem to sell any, nor any other major online retailer.



I thought these seemed a little overpriced until I used it.It stands up to almost anything and always, always cleans up with a paper towel.It is really the BEST I have ever used or seen.

I cook a lot and this was a true treasure find.

Cuisinart CI22-24CR Chef's Classic Enameled Cast Iron 10-Inch Round Fry Pan, Cardinal RedI have found this pan have great quality and durability. I'm very happy with my purchase. This pan is a superior and safe alternative to the questionable toxicity of Teflon coated pans and it is more durable. I also like it better than bare cast iron. Some reviewers of the Lodge Enameled Cast-Iron Pans suggest treating the pans a certain way with oil to make them more non-stick. Even untreated I don't have much of a problem with sticking. I just coat with oil or butter when I use it. ANY type of pan can be abused or damaged from overheating. This pan is also fairly easy to clean. I hand wash with dish soap and water after soaking. I don't recommend abrasive pads. Occasional subborn burnt on stains can be safely removed with Comet powder.According to the enclosed instructions it is dishwasher safe.

Update:

I noticed that regular cooking of tomato sauce or spaghetti sauce which is acidic is the best way to remove and prevent staining and build up on the inside of the pan.



Recently, I ordered one Cuisinart pan, and one Le Creuset pan....to me, they are equal..(they may come from the same source(?). The weight and finish seem identical. The food sticks to these, identically. Cleanup is equally time consuming...but...it's not Teflon....and the Cuisinart cost a third (+/-), of the price of the Le Creuset. I returned the Le Creuset...just could not justify the extra cost, for a seemingly identical pan.

Guess I really didn't read the fine print was hoping that the enamel was only on the outside and wanted a true cast iron finish on the inside.Either way, cooks fine, looks good, and because of the enamel is dishwasher safe (something that can't be said for cast iron).

This is the third enameled iron pan I've purchased, and the combination of functionality, weight and price are very hard to beat.The two other enameled pans I compare in this review are Le Creuset and Lodge.

I really like cooking on enamel iron pans because of durability, ease of cleaning, and not having to worry about the chemicals in non-stick pans. But to prevent sticking, one should use lower flames than one might be used to with other kinds of pans. Iron retains heat and gets hotter than other types of pans, which causes burning and sticking. And one must coat with oil after heating and before putting the food in the pan.

Shape The Cuisinart bottom is perfectly flat, whereas the center of the Lodge pan is slightly raised (imagine a dome that has been almost completely flattened, but is not perfectly flat).Consequently, the Cuisinart is better than the Lodge for cooking omelettes because eggs gravitate to the perimeter of the Lodge and might not cook evenly.

Shape The Cuisinart bottom intersects the wall of the pan at an angle. The same is true for the Lodge.In contrast, the Le Creuset bottom rises gradually upwards to form the wall, so food won't get caught at the edge of the Le Creuset.Depending on your cooking technique, you might prefer one shape over the other.

Weight-wise, the Cuisinart and Le Creuset are manageable, and the Lodge is very heavy (it is a workout to wash and dry).

Durability the enamel is chipping on the handle of the Lodge, but not on the cooking surfaces, where it matters most. So it's unsightly, but it does not affect functionality.There is no chipping with the other pans.

Price the Cuisinart and the Lodge were each about a third the price of the Le Creuset.

So first of all this is the first review for this item so accordingly when I bought it there was non :) Too bad for me ..may be I would no buy it if there would be a review. So here you go..

To begin with the packaging was horrible. The box came with the handle sticking out of it.

As long as I had a big issue and fight with American Kitchen because some of their 18/10 stainless steel is NOT a real stainless steel every time I buy 18/10 SS I check it.This one is NOT %100 18/10 SS (I mean those parts that suppose to be 18/10). However it is close and not that bad (I would say about %75 is 18/10) otherwise I would ship it strait back.

So I decided to give it a shot.

It heated very slowly and than cooled down same slow (which is normal and good).

I wasted about 12 eggs trying to fry them on low heat, on high heat, with different types of oil but no matter what I did I could not get even one normally fried egg. They just kept sticking to the pan.

I bought it here from Amazon for $32.31 and I will not return it but will look for some better option (better does not mean more expensive).

If you would ask me I would not suggest buying it.

Update:Just tried to fry some meat and it worked out almost perfectly. And that increased my opinion about this pan.

All-Clad Stainless 3-Quart Saute Pan with LidTo be honest if this pan didn't come in the set I bought I probably would not have it.Thank goodness it did because it turns out that I love it.It is great for sauted spinach, veal or chicken picatta, you will find you more uses for this pan everytime you open the cabinet.It heats evenly and is very easy to clean. As all All Clad is, this pan is excellent quality and very well made.I have just about every All Clad item made and love them all.Well worth the money and designed to last a lifetime.It also comes with a lifetime warranty.How can you go wrong?

Also, if you should get something stuck to the stainless steel use a product called "Bar Keepers Friend" to clean it. Most supermarkets have it and Kitchen Etc. and Bed, Bath and Beyond carry it too. The container (like a Comet can) is gold with blue and white writing. All Clad recommends it for cleaning stainless steel and it works like a dream and is very inexpensive.



I was a dyed in the wool Calphalon, Non Stick fan until very recently when I was asked to baby-sit a friend whose husband had gone on a Golfing vacation to Hawaii.

These friends are as set against Calphalon as I am for it: they are All-Clad fans. It was going to be a Calphalon versus All-Clad contest...and I was ready for it.

Well, for the ten days I stayed at their home I was forced to use their All-Clad pans and I, against my better judgement, fell in love with them.

Looking at all that naked Stainless Steel scared me a bit but I turned the heat on high and had a helluva time saute-ing thick Beef ribeye Steaks, Turkey Burgers, Salmon Steaks and even Tuna Burgers and never once did I have a problem with sticking nor with the clean up.

One of the major errors most home cooks make is that they are afraid to turn their burners up and cook with high heat. I guess they're afraid of setting the kitchen on fire or scaring their dogs and cats with all the luscious smoke and sizzling oil.

But browning quickly on high heat preserves the meats natural juices by sealing them in. An added bonus is that you can de-glaze the pan with wine or broth and have a nice sauce to accompany your meat or fish or to top your roasted or mashed potatoes.

Anyway, I was so impressed with this 3 quart saute pan that I bought one for myself. And though it looks a little out of place among all the black Calphalon, it does gleam and shine and makes me smile everytime walk by it.

My wife and I like to cook, but we're cheap when it comes to cookware. We had/have junk pots and pans with broken handles that we've been nursing through for the last 30 years, no lie.

So we bought this All Clad sautee pan just recently, and it is the first "high end" quality piece we ever owned. We saw it used on the cooking shows and "America's Test Kitchen" recommended it.

When it arrived, I thought it was way too big and was ready to send it back, but my wife said the cooking shows say you need the extra room around the food. So we gave it a try with her olive chicken recipe.

I have to say, it is amazing (the pan and the food!). You have to follow the instructions don't overheat the pan, low or medium heat only. It takes a bit longer to heat up also because there's a lot of metal in there. But once it heats up, it is very even and different.

It's amazing how the food cooks evenly and the good stuff carmelizes in the bottom of the pan and we can create the "fond" (I think they call it). It really makes a difference.

I don't understand the reviewers who say it doesn't work or burns food. We're pretty much amateurs when it comes to cooking, but this pan is really noticeably different than anything else we've ever used (all cheap stuff, however). We plan on buying more All Clad and agreed that it's the way to go, we won't be buying any more cheap stuff or "no-stick" cookware.

This was very expensive, but looks like it will last a lifetime and since eating is so...fundamental, we figured why not spend a few extra bucks on something that will last forever and perform too?

By the way, it cleans up incredibly easy also, and unlike "no stick" pans, you can use any type of spatula and you're not going to harm it (although we use wood or plastic so it doesn't get scratched up too much).

I absolutely love this pan. There is no problem with food sticking to the pan because it is such a high quality product. It is 200% better than any non-stick pan that always seems to get scratched and peels. The only thing is, I wish it was a 14 inch pan instead of 12 inch but regardless, I use it for everything and love it. I will continue to buy All-clad pans in the future.

This pan is the one you want for smother frying and braising things (like frying cubed steak then simmering in gravy, making smother fried pork chops, or making a pot roast.)

The straight sides are more useful for frying things then simmering them in sauces.That way, you don't have meat or veggies riding up on the sloped sides of the pan and not cooking all the way through.

The pan does not brown and fry quite as well as the standard fry pan -so it is not really a substitute for your frypan for making burgers, and fast cooked type foods like chicken breast, pan fried steaks, and stir fry. One says it heats up quickly on medium or low heat. Um, no, it heats up pretty slowly, because it's a massive hunk of steel. Only 10 inches though, so you can't fit two T-bones on it, but it fits anywhere. The mass of this grill helps achieve outdoor BBQ style. It's a grill, not a griddle or frypan, so using it on medium heat is counterproductive. Throw it on a High flame for a few minutes before you try to cook. Yes, it will smoke. But you're trying to cook, not worry about air quality!

Another review says things stuck to it because it was not coated. Yes, it is. But things still stick to it because the cast iron surface under the coating was evidently pretty coarse. Oh, well. You don't scrub it with a sponge, you heat it up and plunge it under running water and the "deglazing" will lift off most of the gunk. Give it a scrub with a brush (no soap) and return it to the heat to dry. Total time about 45 seconds.

The third review said that fish stuck to it. This is possible. They used nonstick spray, which isn't all that ideal with nonstick or cast iron surfaces. But mostly I suspect the grill wasn't hot enough.

I, however, did ribeye steaks last night and they were perfect. Look on foodtv.com for Alton Brown's method and follow that. It's great. But remember: HOT!

This is the first grill pan I have had that has not warped after the first use.The thin ridges leave a nice looking sear mark on the food and the valleys between are deep enough to allow the oils to run off so you are grilling and not frying.It is a fairly easy pan to clean and it looks great too boot.The one down side: it is a bit on the small side.A tad expensive but it is worth the cost.

I purchased this item as a "bonus offer" to another Le Creuset item I purchased, even though I didn't think I'd get much use out of it since I already had the Le Creuset double burner grill.Turns out though, I use this little grill more often than my larger grill, or any of my other Le Creuset pieces.It's the perfect size for grilling up a couple of chicken breasts, salmon fillets, or steaks when I'm cooking for just my husband and myself.I can also grill up to four burgers on it.Just like my larger grill, I love the cooking results I get from using this little grill, but it's especially handy when I need access to my other burners on my stovetop.It's also much easier to clean than the double burner grill.

I purchased this grill because it showed up in my daily "Gold Box" at a reasonable price.Inasmuch as I am an incurable meat eater, I grill a lot of hamburgers and steaks.As it's inefficient to fire up a charcoal grill for one little steak or hamburger (I don't think gas grills have the flavor), the skinny grill seemed a good idea.I usually just pan fry in either my dad's old cast iron pan or my copper bottom Revere Ware pan.Because I buy New York strip steaks and burgers with the lowest fat content possible, I have never had much of a problem with fat in either of my regular pans.But now, so I reasoned, I CAN HAVE SEAR MARKS!Not worth the thought; although I did not turn my electric coils up to high or anywhere near high, it seemed that the enamel on the bottom of the grill wanted to cook faster than the meat in the pan. (The enamel is still on my coils and it has been several weeks since I last used the skinny grill.) Further, in my opinion, the little handles on either side of the pan look nice, but were hard to grip when holding hot pads because they are TOO little. (With an electric cooktop, one obviously has to move the pan immediately upon completion of cooking.)As for the smoking pan, I did think that there was more smoke with this grill than with my usual pan but that was not my major complaint. If you like a steak that is "seared and rare" I don't think this pan is for you. You will end up with a seared and melted enameled grill.I did return the grill and, thanks to Amazon, it was received without question and no UPS return charges were applied to my credit.

I bought this for quick grilling.For cast iron, the weight is fairly light and it is very managable in the kitchen. It was a bit sticky on the first use, but it has improved tremendously with use.I don't find it necessary to use the highest flame on my stove to get this hot.I am using closer to a medium flame, so I do wait a couple of minutes or so for the pan to come to temperature.I have no problem with getting the grill marks on the food.I used to own an electric Jenn Aire stove, and the grill on it was always wimpy.This little pan beats the old grill completely.I am very happy with this addition to my kitchen.

Extremely quick and even heating. Handles stay cool. Just all around a great cookset! We almost didnt get it for 2 concerns: we were concerned the handles would get too hot (they stay cool!) and difficult cleaning ..we were looking for non-stick (these still clean quick and easy with a swipe of a brillo pad). We've since realized that non-stick would wear out in 5-7 years but without it...these should last almost forever!Great purchase.

I almost did not buy this cookware set because of the reviews that mentioned leaking rivets.But here's the real deal.

The rivets that attach the handles to the pans are located high on the sides of the pans.If you fill a pot clear up to the rivets, you'll have lots of splashes and spatters as you cook and stir.The easy solution?Use a bigger pot!No spatters, and no leaks.

Out of curiosity, when I was washing mine prior to use I did fill them up over the rivets, and no leaks on my set.

So, a little more on the set in general.I purchased this as a replacement for my 35 year old Revereware, which was wobbly on my new glass induction stove.Also wanted to get rid of the nonstick stuff for health reasons.This is perfect, very stable, great heat conduction, glass lids fit well and make it easy to monitor cooking.A joy to use, and on top of that they look gorgeous.

My suggestion is to notice the cooking hints in these reviews, and to google "cooking with stainless steel cookware" for more hints.With a few minor tweaks to my cooking techniques (which admittedly had gotten sloppy over the years), clean up is a breeze.The basics: heat it dry on 5 for 5 minutes, add butter or oil to hot pan, turn the heat down to 3 and cook more slowly than you may have been doing.Perfect eggs, veggies, grilled cheese sandwiches etc.Then when you're putting the meal on the table, let the pans cool a bit, give a quick swish with a nylon scrubbie, and add warm soapy water before you sit down to eat.After the meal, they clean as easily as nonstick cookware.So easy!

I also ordered the 1.75 qt pot and 4.75 qt pan with helper handle, and these will probably get more use than some of the items in the 10 piece set.

This cookware is wonderful! I purchased it after going through my second set of anodized nonstick that didn't stay nonstick. I wish they had more pieces available that match. I've already bought the saute pan and the roaster separately. Unfortunately, I had to get a nonmatching KitchenAid saucier.

I'll admit I wasn't thrilled about the sloping sides at first. But they've grown on me -they work. The lids don't get as hot as other pans I have.

It heats evenly and holds the heat forever. They're easy to clean a few minutes soak for the worst mess works and you can use brillo pads. You can use metal utensils (wisks, spatulas, *SPOONS*) in it. Folks, there is a reason that you never see the real chefs on Food Network using nonstick!

But for me personally, the best was when my mother-in-law came to stay for a few weeks and realized she had made a mistake paying big bucks for her All-Clad set. All-Clad is nice and great for the status conscious, but if you're actually planning to cook with your pans, why don't you get a set that leaves you some money to buy the great ingredients to match. (Don't get me wrong. My MIL is a great cook -but I think a salesman convinced her to buy the A-C for her new induction cooktop.)

If you're looking for a great set -this is it.

This cookware set is visually appealing, though it discolors with even low heat from a gas stove. Successive uses, though, tend to remove the discoloration. It distributes heat nicely around the base and allows boiling liquids inside to circulate well from top to bottom.

This said, my experience with Meyer's customer service (Meyer Corp. out of Vallejo, CA produces and provides support for KitchenAid-brand cookware) has been far from stellar. Three items in the purchased set contained bubbles in the copper/steel base visible from the bottom.

I contacted Meyer to return the defective items and was put through quite a bit of hassle. The representative first gave a stock answer without reading my message. Then I had to quote KitchenAid's "Hassle-Free Replacement Warranty" to get Meyer to pay for shipping the defective product as it is within the first year of ownership. When the replacements finally arrived about five weeks later, one item was dented. I have requested another warranty replacement for the remaining item. It is now over two months since my initial purchase and I still do not have a complete set.

Conclusion:

Physical product: 4 out of 5

Warranty service: 2 out of 5

Total: 3 out of 5

These are wonderful pots and pans.They have a nice heft without being too heavy, excellent even heat conduction (and they stay hot a long time--if you have electric stove you can turn off burner before cooking is complete, and don't forget to use medium heat).Also very sturdy. (I accidentally dropped an expensive Calphalon lid in the store when shopping, and it easily dented--I was NOT impressed).Handles stay cool, but you should know that the lid handles will get hot with prolonged cooking.

FYI: the lid to the 4 qt saucepan fits the 8" skillet-otherwise, lids are not interchangeable and the 10" skillet doesn't come with one--too bad, I could use one. Also, I find the 10" skillet a bit small (and the 12" that you can buy separately a bit big and heavy, such that it has a helper handle)

I've had mine long enough to use them every day in every cooking situation, and find them very easy to clean.I rarely have to use anything stronger than a "tuffie" or scotchbrite pad with a quick soak.As for the other complaints that they stain, my experience with stainless steel is that they all stain some.The vinegar and baking soda trick works, as does boiling a little auto dish detergent and water in the pan.

But I don't care if my pans are perfect.The outsides stay nice and shiny and the style of these are beautiful and a pleasure to use.

I also purchased the large saute pan(wonderful capacity) and the 10" nonstick skillet(for eggs) to round out my set, both of which I love and use all the time.

For anyone who loves to cook, a real winner! This set should last a lifetime.

The pan was just what I wanted.I kind of wish it could have been slightly larger but it will work fine.I am loving all of my Kitchenaid anodized non-stick cookware.I finally got rid of my trusty old Farberware that I had for 42 years!!!I am just in love with the non-stick.It is making my life a whole lot easier.

The original skillet that was shipped to me took awhile to arrive--I had a suspicion so I called Amazon, and the confirmed that it had been lost in transit. They immediately shipped another one, and gave it overnight shipping so that it would arrive to me the very next day. Great customer service. The pan did arrive the next day, and it looks beautiful, and is very sturdy, just as I expected. The see-through lid is a great feature I'm glad I decided to get. My only con is that it's still smaller than a huge deep pan that I'd like to find, but those are nearly impossible to track down. I knew its dimensions when I ordered it, so I was not disappointed. It's a great pan and is serving its purpose in my kitchen very well!

Calphalon Contemporary 12 Inch Glass CoverI have had this thing on my wishlist forever.It was only $20, but for some reason, I never pulled the trigger on getting it.My birthday rolled around, and being that you don't get presents at my age, I thought I'd finally get this for myself.I know, that's lame, right?"Yay it's my birthday, now I can finally get that PAN COVER I've always wanted!".But well, that's how it went down.I'm sure there's some psychological reasoning behind that I bet people buy more crap on or near their birthdays.Anyhow this shipped to me fairly quickly.The pan cover was wrapped up super-tight in bubble wrap; nothing was going to damage this en-route.I have a 12" Calphalon pan with no top which I've ALWAYS needed.I have the 10" pan too, and it has it's cover, but I always end up using the bigger one ALL the time and always wish I had the darn cover.I was using tinfoil whenever a recipe called for simmer something with the cover on.Lame.Well, this thing fit my pan just perfectly and it matches my 10" pan with cover so now I'm all set.I mean, it's a glass cover for a pan what exactly more is there to say other than "it fits"???I hope you have enjoyed reading this and have a nice day!

After reading some of these reviews I was worried it wouldn't fit my Calphalon contemporary non-stick 12" frypan (code 1392 etched on the pan's bottom). However it fits fine, good seal, nice to have glass. What's not to like?

I ordered both this and the 10" lid. Both of them fit my "Contemporary" non-stick set. I noticed complaints from other reviewers. If you have the "Unison" or other style non-stick these may not fit. If you go to the Calphalon website you will see that the "Unison" pan lids are sold in a two-piece set, but you have to buy the individual lids for the "Contemporary" style. Know your pan styles before you buy, because these lids fit my pans perfectly.

Rachael Ray Hard Anodized Nonstick 8-Quart Oval Pasta Pot with Glass Lid, OrangeI am kicking myself that I decided to buy this Rachael Ray version over Analon's original design.I figured I'd save myself 30 bucks.This pan is really thin and heats pasta water rapidly because of it, but it is horrible for soups, legumes, etc.Because the walls/bottom of the pan are so thin, stuff sticks and scorches very easily.It's best for pasta or corn on the cob.

I do understand that it being lightweight is a plus for a pasta pot, as it makes it easier to lift and pour...but I really was hoping it could do double duty like Analon's oval 5qt saute pan.Thankfully, though it tends to burn my soup, it does clean up easily!



I originally bought the 10 piece set and loved it so much that I keep adding on.This is my latest addition and I love it just as much as the rest.The pot is oval so that you don't have to break up your long pasta noodles and it has a pouring spout on the side for easy draining.It's also super easy to clean.

I love this pot! I tell my husband that every time I cook something in it for him. It fits well on its burner when using another large pot on an adjacent burner. Its non-stick properties are excellentit washes beautifully. I am not really a big fan of the color orange, so I would have liked it to come with plain black handles instead of the bright orange color. These rubberized handles, however, stay cool to the touch, so it is easy to handle. The weight of the pot is goodnot too heavy to be difficult to lift when full, but not too light to feel flimsy or allow food to burn. It is a great pot for every day if you don't want to have to own too many pots, since you can cook pasta, soups, roasts, and stir frys in it. I may buy more to give as gifts to my son and daughter.

I love it, love it, love it. I use this all the time. It really gives you room in the pan to move your ingrediants around. It has a great pour spout on the side, and pasta cooks up so much better as it has room to move around in thepan. Clean up is a breeze. The handles have a great grip support that stays cool on the stove.

I bought this pot after checking it out at a local department store to see if I liked the finish, weight, etc.I've had it for several weeks now and have used it to cook pasta, a large pot of soup, chili, etc.It heats evenly and cleans up quickly.In short, I love it.I especially like the fact that I can cook long pasta without having to break it or wait around for it to soften and be completely submerged.I have a standard electric stove and I find that if sauteeing meat or vegetables for soup I need to move the food around from the sides to the middle of the pan for even cooking/browning, but that's simple enough and no trouble.I noticed that one person noted that the pan was "stinky" when she used it.The first time I ran water in it to wash before using, it smelled funny, but after washing there has been no odor at all.This pan is also perfectly balanced for pouring and is heavy enough to heat evenly without being too heavy for my hands and wrists, which have weakened from years of typing and beginning arthritis.And I love the silicone handles.All in all, I'm very pleased with this pan. Amazon had the best price (got it on sale for $59.99) and shipping was fast.

I have a gas stove and I have adjusted the heat to as low as possible and it still emits a foul smell of burning plastic from the handle. I can even see the deformation of the plastic handle that has been melted even on ultra low heat. I would not recommend this product. I'm not sure if people with an electric stove would have the same issue.



We were very skeptical in the beginning to purchase a cooker online as we always have bought them in India and shipped it to us. However this time we gave it a chance. The product is original. This is a great cooker. Stainless steel is pretty strong and very lite. Cooks very well. Has a new type of safety valve which we love. The weight is also re-designed and makes very little noise unlike the older models. Overall very happy for the purchase.

I have been using this pressure cooker for almost 7 yrs now, without any problems.

Safety valve did break couple of times, but again, that is why its called safety valve.

Its meant to break when there's some blockage or extra pressure build up.

The shape is great:

its not too deep and its easier to stir in and cook without burning your wrists and arms.

Its easier trying to look deep into the cooker if the food is getting cooked right

(applies if you are working on masala gravy).

the base is wider as compared to any other pressure cooker. It helps to evenly distribute

the temperature at the bottom and cook the food faster and just right. If the base is small,

the temperature is high in the corner of the cooker, which cooks the food in the middle but

burns the food in the corners.

5 litres size is just good to cook enough for a family of up to 8 people.

I just love using this pressure cooker.

Its a very good product, 5 rated for what it does. Also I am happy that Amazon is selling it, but they need to do better research on the pricing. Because its too expensive at $79. The price is around 3 times the retail price in India. I searched online and found some chicago store selling it for $35, which at least seems reasonable. But I would still prefer buying it in India and getting it.

Its not been even three months since I bought this cooker and the safety valve is broken. Few of my friends who bought this cooker are facing the same problem.I would advice people not to buy this brand as the valve problem is very common for Prestige. Go for some other brand like Hawkins, etc. Also the company does not take responsibility of replacements parts like gasket, vent valves, etc. A new valve costs $11 and one can definitely not afford to replace the valve every three months.

Lodge CRS12 Pre-Seasoned Carbon Steel Skillet, 12-inchBought this through another store because I couldnt wait for Amazon to get them. I will be buying other sizes from Amazon as soon as available though. This pan carries on Lodges tradition of quality American made cookware. The pan is made of nice thick steel(12ga I was told). Heavy but not as heavy as the 12" cast iron. It is 12" from side to side, aprox. 9.25" cooking area and has a 9" handle. The sides on this pan are not as steep as their cast iron. The factory seasoning finish is excellent with a few very tiny specks of oil build up. The pan heated up quickly and held heat for longer than I expected, but naturally, less than cast iron. I fried eggs and browned ham in it as soon as I received it today. Turned out very well with minor sticking, but cleans up very well. Sure to get better with time! Glad I added this pan to my Lodge collection!

After using this pan for awhile I can honestly say it is a very good one. Being made in the USA is a plus too. Lodge knows a thing or two about metal cookware.

The handle is long so it can be used over an open flame fire. The build quality is sturdy and it will last a lifetime.

There is a learning curve that took me about a month to figure out.Cooking temperature and proper seasoning are a must.

The factory seasoning is OK but it states eggs will stick. I re-seasoned it and it is now virtually non stick.

The more you use it the better it gets. Searing meat at high temps is great.

I enjoy stir frys and just about anything you want to cook you can do it in this pan.

It seemed expensive at the time but this pan is built to last and I won't ever need another in my kitchen. About half the weight of cast iron and that makes a big difference in handling. Heats up quick and cooks evenly. By the time I wrote this review my chicken breasts are done. Fits three boneless in the pan.

I recommend it!

I had the pleasure of purchasing one of these pans at the Lodge Factory Outlet in South Pittsburg, TN a few weeks ago (more cast iron than you can shake a stick at!).

I purchased the 12-inch Seasoned Steel skillet for two reasons:

1.I've been using DeBuyer's 10-inch Mineral-B and find carbon steel pans to be my go-to pans, preferred over my All Clad, T-Fal non-stick, and even cast iron skillets.

2.My mother-in-law recently discarded her 12-inch cast iron pan because it was just getting to be too heavy, so I was interested in finding a substitute with few compromises.

First of all, I like this pan.Like other carbon steel pans, it's dead simple.It seasons easily and is very durable.

But this pan brings some negatives as well.

Pros:

1.Light weight.12-gauge steel is significantly lighter than the 3 mm of the De Buyers in the same size.

2.Simple and durable.There's nothing to break, and no non-stick coating to scratch or flake off.

3.Allows for high-heat searing, and goes from stove top to oven very naturally.

4.The Lodge 12-inch glass lid fits perfectly.

5.It's made in the USA.

Cons:

1.The lighter weight relative to DeBuyer or even other Lodge cast iron means less thermal mass.Thermal mass is what makes those heavy pans perform so well.This pan is thin enough that the heat dissipates fairly quickly.If, for example, I prepare my skillet potatoes in a cast iron pan, the pan comes out of the oven at 375 degrees and stays too hot to touch for a good 15 minutes.With this pan, the cooling is much quicker, being "touchable" after only about 7 minutes (give or take).In short, it doesn't have the thermal mass to perform like cast iron or DeBuyer.

2.The lighter weight seems to allow for warping.I inadvertantly heated my skillet to over 600 degrees for 10 minutes or so.I immediately lowered the heat and let it cool naturally, but the pan no longer sat flat on a glass cooktop.I understand that it wasn't intended to tolerate that kind of abuse, but I would like for it to be more stable.(Lodge was great about exchanging it as defective even knowing that I'd abused the pan.)

3.The seasoning and pan finish are rough--more like cast iron than like the other carbon steel pans I've used.It seemed to function reasonably well on my first pan (the one I overheated), but it remained a rough surface.On my second one, I sanded it smooth on the inside surface and reseasoned it using the Canter method (google it).Much better, and improving with every use.I believe the factory seasoning would be adequate, and would also improve with use, but I was impatient.

Conclusions:

It is what it is.I wanted a lighter-weight pan, and this qualifies, but requires compromise on the other traits I was seeking.I think the quality is great, the price is right, and it provides a good entree into the world of carbon steel cooking.Just be aware of the limitations and trade-offs, and that thicker carbon steel is just that much better.

Twelve inches is the diameter from rim to rim.When I received this pan, I had to look twice to make sure I didn't order the wrong size; Indeed it was the 12 inch, but the actual cooking surface is only 9 inches.

This pan is still useful, but if you're used to cooking in the Lodge 12 inch cast iron skillet, then go for the 15 inch carbon steel pan.

My cheap non-stick pans are wearing out, and I read an unthusiastic review of some of the new "green" non-sticks in Cooks Illustrated.Wandering through a retail store about six months ago, I saw these pans on half-price closeout and bought the 10" model.After a wipe-out and light oiling, I started cooking.That's it.I haven't really had to do more than wipe it out since.Food literally slides out of the pan, just like the non-stick informercial pans.I heat it up, then lower the heat a bit and make eggs, grilled cheese sandwiches, small stirfry dishes.Other reviewers are correct that the pans are small (the cooking surface of the 10" pan is 7.25").
