Simply Calphalon SA10H Nonstick Hard-Anodized 10-Piece Cookware Set

Simply Calphalon SA10H Nonstick Hard-Anodized 10-Piece Cookware SetI invested in this set almost 4 years ago. I had this set for less then 2 years when I noticed that some pans were showing signs of peeling. I never washed the pans in the dish washer and I only own bamboo and plastic utensils so I knew the peeling was not from my neglect. I called the Calphalon customer service number and was told I would need to ship the entire set back (at my own expense). I was told it would take 6-8 weeks before I would be notified whether or not the cookware was going to be covered under the warranty. If the cookware was not going to be covered I would be responsible for return shipping on the cookware set. NOT the kind of customer service I would expect from a company as well known as Calphaon. I have purchased cheaper cookware at a big box store and had it last longer then 2-4 years. I will have to replace this cookware and will not be doing it with any products in the Calphalon line.



We purchased this set from another venue.

When you first open the box and see the new set you are thrilled.Especially if your old set that you just replaced was horrible.

BUT after you have had it a while you start to realize that owning this set of cookware requires a LOT of effort on your part to keep it looking nice.

The bottoms darken easily and need constant attention to make them look good.

On our particular set, the largest saucepan interior was "bubbled".Well....we are NOT everyday cooks in this house and it only took a few months for the interior finish to begin chipping off the pan.

We had to go out and buy all new utensils and special scrubbers etc. to clean these pans.Most things we had in our drawer just didn't work well with this set.Stick a metal fork in it once and IT'S DONE!

Remember....NO dishwashers, NO metal utensils, NO harsh chemicals, NO abrasive scrubbers, NO cooking spray, NO stacking of pans, NO contact with other surfaces or the exterior WILL scratch!

In short....these pans take your full attention but when you buy anything worth having, you are willing to expend the extra energy and time to take good care of it.

If it weren't for the interior surface chips, I would have to give this set an "ALMOST PERFECT" score!!!!!

I was looking for quality when I purchased this set, and I got it!I read the instructions that followed it.I hand wash, use only plastic and wood utensils, and no non-stick cook spray.I couldn't be happier with them.Nothing sticks, the handles don't get hot, it's a pleasure cooking with them!(I have not tried them in the oven yet, but they are oven safe to a degree!)

I gave this as an early Christmas gift for my wife. She absolutely had to have a set of non-stick cookware. She loves them.

*Pros

Sharp Looking Anodized Aluminum Finish, Solid Feeling, Comfortable Silicone/Steel Handles, Made of Thick Solid Aluminum, Heats much quicker then Stainless Steel. Cleanup is a Breeze, Good Weight sits firmly on the stove when empty). Great Value, Amazon/Calphalon even threw in a free 12" "bonus everyday pan" separate from the set.

*Cons

Anodized Aluminum doesn't like your silverware nor does the non-stick. Many things you have to remember not to do. No Metal Objects, Handwash only, No Stacking, No Green Scrub Pads, No Cooking Spray, That is if you want them to last a while. Also if you have a stainless steel sink, I wouldn't allow them to touch that unless you don't care about the appearance of the black anodized aluminum. Or if you do, you could polish them with the alum polish they sell every once in a while.

Overall my wife and I are both very pleased with this set. Even though it has all the drawbacks associated with a non-stick set and then some, we've managed to find that the clean up, speed of cooking, and Looks outweigh the negatives. Gave it five stars because it works like it should.

When I bought this set 3 years ago, it cost me about $300. I thought I was making a long term "investment". I was super careful with them, as was my husband. We never stacked the pots, we cleaned then with cloth, we used wooden spoons and plastic utensils in them. The small sauce pot is still doing ok, and the stock pot is still working out great (I must admit, we use these two pots infrequently). But the other pots and pans are all just about shot. The non-stick coating on the large skillet just started popping off in tiny shreds one day, all in the food. And once that breach was made, it was all over for that pot. Large chunks started chipping. My guess is that it got "too hot" when cooking... i hear a rumor that you are not supposed to cook on Hi with these pans, though I didn't read that anywhere when i bought them. The large sauce pot's non-stick coating didn't pop off like that, it just started to kind of dissolve away. Who knows how much of it we ended up eating. And now I read on the net that even the fumes of this non-stick stuff are toxic. Anyhow, we are tossing them after 3 years and switching to cast iron. Pretty short lived, if you ask me, but at least the price has gone down.

Paderno World Cuisine 10.25 Inch Blue Carbon Steel Crepe PanI bought this as a birthday present for my wife, but wasn't expecting it to really perform any better than any other pan for making crepes.Blow me away, the blue steel finish took on seasoning beautifully and the high heat retention of the steel seared crepe batter beautifully.Recommendation follow the Cook's Illustrated crepe recipe; including instructions for 20 second sear test with a drop of batter for perfect results every time.Like any uncoated metal, the blue steel can rust if not properly seasoned so follow the same maintenance rules you must use with cast iron:never leave soaking in water; smear oil over it with paper towel after washing and heat til dry on burner or in oven to draw the oil into the metal.I've used this pan dozens of times with perfect results.In retrospect, looking at this thin little pan I find the results shocking.Center to edge heat distribution is superior to my All Clad pans when making crepes.Sear is better too.This pan is just ideal for crepes.Great value too.

This is a perfect crepe pan. I was initially going to get the smaller pan, but am happy that I went with this slightly larger one.Quick cleaning and seasoning and it was ready to go. The first crepe even came out perfectly.

This was an excellent buy. You can make a lot more in it besides crepes. It is perfect for basically any breakfast food. It comes to you as basically a big hunk of steel, covered in some oil that looked strange, so we wiped the oil throughly off in case it wasn't an oil we'd want to eat and seasoned it ourselves. It is important to season a pan like this properly right off the bat. If you don't know how, look it up online. I read this article right around the time I was seasoning the pan:

If you have never made crepes before, I suggest the first thing you make in this pan is a fried egg. Caution: this pan cooks QUICK. I was surprised at how fast I cooked my egg at medium heat. It was completely done in 30 seconds basically. This pan is basically like cauterizing your food, which is part of the beauty I think. My only complaint is that its not easy to flip stuff, so use a nice silicone or wooden spatula the first time to make sure you don't burn the thing you're cooking by accident trying to flip it.

Otherwise, enjoy the pan!

P.S. buy a cast iron pan handle mitt along with it or you will most certainly burn yourself.

The difference between cooking with a regular pan and a crepe pan is pretty great. The pan retains a lot of heat and so I can make crepe after crepe with a lot of ease. The best part is, it doesn't require a *high* temperature to cook, so the preheating is very quick. Crepes cook faster and evenly because of the shape and material of the pan. You can tell this pan is fantastic right when you pick it up and feel the weight of it. If I have the batter already made, making a crepe takes less than 2 minutes, so now I have one everyday before school.

Tramontina Limited Editions Barazzoni 12 Inch Full-Clad Copper Exterior Saute PanI sigh with pleasure when my eye catches my copper-clad Barazzoni pots hanging in my kitchen. The pots are beautiful and they perform excellently. They have an elegant shape; a soft, but sturdy feel to the handles, and they have a nice weight--not light-weight, but not too heavy to lift or maneuver either. The line is called "Butterfly" and it was designed by Claudio Bellini. They feel good. The cool-to-the-touch handles are made of oxidized metal that creates a dull black finish that compliments and highlights the gleam of the copper. The handles are on the slim side, but they still work fine for my long, thin fingers.

I am reviewing the 3.5 quart-size pan that is one of the sizes available here.It has a handled lid, and besides the long handle on the pan, there is also a "helper" handle on the opposite side.Looking at the pictures, it might not be obvious to see: The lid is shiny stainless steel with the same dull black handle as the pot.

I bought this size because I love my Calphalon Contemporary non-stick 13" diameter, deep-sided skillet.This pan is basically the same size.I really like the high walls--seems to serve my purpose more often than my low-sided 12" skillet.I also like the way the pots angle in slightly at the top--the shape seems to help hold and distribute the heat. I have a Viking gas cook top that does not allow a very low simmer flame and with this line of pots I can achieve a small, very slow bubble simmer that I usually cannot create and maintain.

How to clean? Cleaning these copper pots is a breeze if you use Wright's Copper Cream.Wright's Copper Cream Polish, 8-oz. This is a great product that never scratches (always make sure your sponge is clean and your pot is already washed.) "Elbow grease" is not necessary either, if you don't wait too long between treatments. You can clean a copper pot in a minute or two.

With this Barazzoni Butterfly line, I do not believe that quality or performance could be affected by pot size--they will all work wonderfully well. And the lip is the same on the entire line, so they should all be "dripless".

Earth Pan Nonstick Cookware 10-Inch Skillet, Terra CottaUnlike a lot of people, I don't have any issue with the look of this cookware. Yes, it's a little "sparkly" but not overly so you can't see it unless you're really looking at it and I don't care if the inside is the same color as the outside, I think that's kind of cool...my issue is with EVERYTHING else.

I bought this cookware because of the less hazardous, POFA, PTFE-free nonstick coating. I'm a personal chef with very health-conscious clents. The cookware was babied from the second it came out of the box, per manufacturer's guidelines, and this is what I've found:

The non-stick coating is as expected. For a few weeks. Even with careful washing, drying and treatment, with less than 2 months of use the non-stick properties start to wane and stuff starts to stick, even with a little oil in the pan (scrambled eggs never really turn out great in these pans, not sure why but it's not me or the eggs it happened with the brand new pan that replaced the clearly defective pan I got). OK, I was willing to sacrifice a little non-stickiness for the sake of the less dangerous coating. Then, while hand washing the 10" pan I noticed a big chip of paint gone from the outside bottom of the pan.

I called the manufacturer (Farberware) who said at first that I was SOL because it was longer than their warranty period and that I would have to go through Amazon anyway. VERY unhelpful though, of course, apologetic. Called Amazon, who at first referred me back to Farberware. When I explained what already happened, they very graciously agreed to make an exception and replace the piece but I needed a transaction number from Farberware to show I had tried to resolve it with them first. Called Farberware back for the number,who at this point very "generously" and with a completely different customer service "story" this time said if I emailed them a picture of the defect, they "might consider" something, though not expressly guaranteeing anything, and if they deigned to replace the piece based on some secret, arbitrary process, would not say if it would even be the same product or the same color. Once I called Amazon with the transaction number, they held up their end of the deal and I had a replacement quickly. THANK YOU AMAZON! Now I noticed a pant chip missing from the bottom of the deep saute pan.

BOTTOM LINE: DON'T BUY THIS COOKWARE, IT'S ESSENTIALLY JUNK AND NOT DURABLE AT ALL, EVEN IF YOU DO EVERYTHING RIGHT. I know you get what you pay for, and it IS relatively inexpensive, but less than 2 months for cookware is ridiculous and Farberware's response was completely unacceptable. Kudos to Amazon for stepping up. If you want safe non-stick, buy the expensive ceramic pans one piece at a time if you have to. That's how I will replace this waste of money.

Well I was hoping I could give a review on this product. Here goes:

It was received in a very timely manner! I use this pan almost every day. Seems to be of a better quality than the teflon non stick options out there. I love that it does NOT contain the harmful stuff thats in teflon, dupont, etc. Nice size, color and love the handle too, its silicone. Its very easy to handle and has a nice feel to it!

I L-O-V-E it!!!!!!!! I believe the price was a fair price for such good quality! Seems to be easier cleanup than other pans...SO GLAD I made the purchase. I only hope they come out with more items-like perhaps a 3 or 4 or 5 qt. sauce pot. I dont remember seeing any. Perhaps sometime in the near future; If and when they do, and I IF I can afford more of these "Earth Pans-I would definitely buy more!!!!!!!

I was just looking for a fry pan to replace the Tefon one I have that was worn out.This pan was the closest to it.Be aware these pans aren't a durable as the Teflon.After a few weeks I got a big scratch in it and I wasn't doing anything different than I did with the Teflon pan.I'll stick with the Teflon from now on.Be careful of what you cook in it.I tried cooking some ground meat in it and I had to soak it and strap it out to get rid of the food I cooked.I'm just glad I didn't get the whole set like I wanted in the first place.

I purchased the 10 inch EarthPan II Terra Cotta on June 29 2012. It arrived a few days later and I liked the way it looked. I read the directions very carefully and strictly observed them. Always cooked at medium or lower heat, no abrasive tools, didn't even put it in the dishwasher. The results were good and I considered ordering the same pan in the 12inch size. Then on September 7, 2012 my wife pointed out that the coating was flaking off the external bottom of the pan. I called the customer service number having read on the packaging that the copany is "dedicated to producing great quality cookware" and that they "wished me years of cooking enjoyment." The customer service representative (what a misnomer)told me the pan had a 30 day warranty and there was nothing they could or would do to address the problem. I was advised I could continue to use this pan since it was the outside coating that was flaking do I wait until it flakes coating into my food before I throw it away? The service person apologized but there was nothing she could do. They trumpet this product as "ECO-FRIENDLY" but I don't get that if you have to throw it our after about 60 days of light use. DO NOT BUY THIS PAN! DO NOT PURCHASE ANYTHING FROM THIS COMPANY! -

The pans had an amazing nonstick quality for the first two weeks or so.We handled them carefully, following the provided directions to the word.They inexplicably began to lose their nonstick character and, after a month of daily use, we had to scrub a bit to get the food out of the pans.What started as light scrubbing eventually caused the need for heavy scrubbing and now...well, they are basically useless.Very disappointed and I wish we could get our $$$ back.If you plan to use these pans for occasional duty they might be fine, but for daily family duty I'd stay away.

I really like the cooking performance of this skillet, however, the pan is not flat on the bottom.It is raised up in the middle, so for instance, when you pour in a little oil, it all flows to the edge and there is no oil left in the middle.I don't have an induction cooktop, but seems like that would not work if you had one.Clean up is a breeze.I love the handle, it is very comfortable. If not for the uneven bottom I would buy the smaller size as well.I'm going to try out a different model BergHOFF to see if I can find one with a flat bottom.

Arrived in loose packaging that didn't prevent the nonstick coating from being dinged and chipped. Sides were warped. It is REALLY big. Would take two burners on a conventional sized Whirpool gas range to adequately heat the cooking surface area. Returned for defects mentioned.

I purchased this 8-inch Saute, the 12-inch Saute and the 3 Qt Saucepan from the Kitchen Classics cookware line.After doing extensive research online and in-stores, I decided to try my luck with these pans.Wow!I can't believe the look, feel and performance of these products and at these prices!

The pans feel "heavy" but not in a bad way at all.They are very thick-walled aluminum and stainless steel construction, which helps evenly distribute and control the heat so my food doesn't burn.

The Teflon nonstick coating I can tell is very durable and has been extremely effective every time I've used it.No need for any spray at all, so my cooking is healthier too.

I love the feel of the handles they have a bit of a rubberized grip, but with a soft touch.The rivets are very strong and high-quality, one of the features I really wanted in my new cookware.

I sauté often and found the Teflon high end finish to be superior then what I have used in the past.I would recommend these pans to any of my family and friends. I will look at buying the matching stir fry and sauce pans.

Berndes Tradition 9.5 Inch Deep Frypan with Glass LidI don't know what I'd do without this pan.I use more often than most of my other pans combined.It is a true nonstick, and a great size when cooking for one or two.It heats evenly and retains the heat.I'm totally spoiled by the wooden handle so that I don't know how to react now with a handle that gets hot.You will never regret buying this pan.

I have gone through several sets of pans for the past 10 years or soone of the sets was scanpan which lasted about 3 years and the last set I had bought only lasted three months(I shouldnt disclose the name of the brand), and can't remember other sets. So, this time, I decided to buy something that would last a bit longer, and I started searching for one and came up with this brand. The product descriptions told me this Berndes pan was what I wanted, but I was still skeptical so I only bought one pan although I needed to get more pans.Anyway, I'm loving it so much the bottom of the pan is quite thick, but it's still pretty lightweight. It's been about a month, and I'm very happy with it so I just recently ordered more of Berndes. FYI, after searching for more information on the internet, I found out that they had moved their manufacturing facility to China once, which made it difficult for them to do quality control, but they moved it back to Germany for a better quality with higher price tags. If i'm to compare this to Scanpan Professional, Scanpan is thinner although I can't say Scanpan is lighter.I love this Berndes much more than Scanpan so far.

I picked up one of these used. It's becoming my go to skillet for small meals. I have to agree with the other reviewer about the handle. It fits my hand well and I don't have to worry about being burned by it. What's really nice is what is attached to it. For it's considerable thickness this pan is light and well balanced.

It's cooking performance is excellent. Heats up quick and will do most jobs on low to medium heat.

The used one I have came with some scratches on the nonstick and I don't know how that came to be so I won't comment on it's durability. They do look like the work or ill handled metal utensiles though.Still food releases easily.

I'm most impressed with it's browning ability. It rivals my mag pro and cast iron. I'm so impressed I am considering buying another new.

I would have never bought this pan if I had seen the reviews here, but I bought it on an impulse at a cookware outlet and I'm so glad I did! My pan doesn't have any of the problems (hot handle, peeling nonstick) that the other reviewers here have experienced. I suspect that since those earlier reviews the pan has been redesigned by the manufacturer.

Whatever the reason, I absolutely love it! It's the only pan I've ever found that is the perfect size (4") for english muffins and orowheat sandwich thins. Honestly, I'm a rather practical person, so I generally don't buy things with little characters on them, but this pan has ended up being the most-used pan in my kitchen. It's perfect for making scrambled egg sandwiches, so I use it several times a week.

If the handle starts heating up or the nonstick peels off, I'll update this review, but in over six months of weekly use, it's performed like a little champ! And, over time, the cartoon egg on the handle has grown on me, it seems kind of shocked or amazed... perhaps because it has to watch me cook an egg!

BTW-The secret to light, fluffy scrambled eggs is to use a low heat and stir constantly.It takes a little longer, but it is so worth it.

While cute, this little pan is difficult to use. There's no room to use a spatula, so you'd better like the eggs cooked through you can't flip for over easy, and the egg white is too deep to do sunny-side up. Also the handle gets hot and the little plastic egg bit is not enough to grip, so you have to use a potholder. Plus, it's so small that it won't fit any normal-sized burner another burn risk to your fingers.

Although somewhat of a novelty item, it does produce perfectly round shaped fried eggs. I have had the best results by spraying it with oil and when I want to flip the egg, I loosen the edges with a spatula, slide it out of the pan and on to the spatula then flip it back into the pan.

I must admit, I'm shocked at all of the one-star negative reviews on this pan. This little thing is great!Firstly, I'm certain that 99% of the perceived issues with this pan are because people aren't using it correctly. For starters, LOWER your heat. This is a really small pan and heats up very quickly.As such you can't expect it will act the same as a much larger pan. The first time I used this I made the same mistake and put the heat where I would for a larger pan.

I had the same problem with the egg sticking.But then I lowered the heat and presto the pan worked great!Now I realize the pan heats very quickly and only minimal heat is necessary. I spray some cooking oil in the pan, let it heat for a minute and then add the egg.It slides off easily every time now. Realize, too, that non-stick coatings will deteriorate quicker under extreme heat.

The only issue I've found is that it is necessary to have a narrower plastic spatula so you can get under the food to turn it.

Once you learn to use the pan, it is really a joy to use. The design seems to have been modified to correct the handle issue and I haven't had that problem at all.

For the money, it's a good buy !

My wife loves for me to make her an "Egg McMuffin" kind of sandwich, except with egg whites only, and on a bagel, and with Virginia ham intead of Canadian bacon. I make one for her almost every morning befoe I go to work. I had been using these egg rings, which you lay down on a hot frying pan. They work sorta ok. But egg always leaks out because either no frying pan in completly flat, or the rings are not. I have not ever figured it out. Then along comes this pan. Seems to be the perfect size for the pefect round egg. And really, it is! The egg cooks up fine, especially if you keep the flame on low, which on most gas burners give you a flame ring the size of the bottom of the pan. This also seems to be just the right amount of btu's for proper cooking. Turning the egg over is a problem, but not a huge one. Best option is to let the egg do 90% of it's cooking on the first side, then use your smallest spatula to turn it over for the last 10 or 15 seconds of cooking. There is one fatal flaw to this pan. It is the handle! For starters, it is of an almost useless shape, too wide and too flat to hold comfortably, were the second problem not evident-the handle gets just about as hot as the pan! Now the makers have seen fit to afix a goofy egg character on the end of the handle, I suppose to insulate your hand from it's cooking temperature surface , but alas, it gets just about as hot as well. Having said all that, I still use the pan every day because it is the only one of it's size I have been able to find. And it does make perfect round eggs for that morning sandwich my wife must have!

Addendum: 7/11/2012The makers/importers of this pan seem to have read my complaint! ' The pan now comes with a re-designed , insulated handle which is so much better. I can now say the pan is just about perfect!

Let me address a few comments I've read above concerning this unit.

Yes, sometimes the hot dogs don't want to roll at first.Why? Because the way they are vacuum sealed squeezes them into a squarish shape.Don't worry once they start to heat and plump they'll roll just fine.As I stated above and others mentioned if you are cooking longer dogs you'll only be able to fit 4 dogs instead of 8.The bun warmer is more of a bun drier as others have said so we don't use that.The right knob turns the rollers on and the left knob controls the heat.We run the left knob at 5 o'clock and in 20-25 minutes you'll have a nice evenly cooked hot dog with perfect color and perfect temperature inside. We've cooked more than 100 hot dogs on this unit since my purchase less than a month ago, unit is still going strong with zero issues.

In conclusion I can't think of one bad thing to say about this unit.

If you are even a little interested in this item don't hesitate, order one, you won't regret it.



I found this product to be very nice looking and well constructed. And, it worked as advertised. My mistake was using very fat hotdogs for the first run. Careful placement was necessary to get them to rotate without rubbing together. Regular hotdogs would have been a wiser choice. Between initial warmup and actual cook time, it does take a while, but it is meant to cook slowly while turning the dogs. The machine is completely silent when operating.

Cleanup is very easy with the roller assembly and drip pan removable. but one must wait for the machine to cool down first to prevent getting burned.

If hotdog stand style doggies are your thing, you'll love this machine.

We went to use this for the 1st time New Years Eve. Everyone was excited because it reminded us of olden times. It started to turn then quit. The motor was turning but not the rollers. Very sloppy fit. I took it apart by prying the rubber legs off and taking 6 screws out of the bottom. Adjusted the motor mount so that the spindle went farther out into the roller spindle. Put it back together and it works great. Shouldn't have to do this with something new.

The Calphalon Commercial line is the top of the line, just like the Professional, but with stay-cool handles. The thick, sturdy aluminum heats up quickly and evenly, and goes from the stovetop to the oven up to any temperature.

My favorite dish to make with this pan is a large omelette for two to four people. You saute the onions, etc., until carmelized, then add the whipped eggs, top it with diced tomatoes, basil, oregano and cheeses, then broil at about 450 for a couple minutes until browned. Simply wonderful!

I also cook stir frys, poach fish, bake casseroles, and brown meats in this truly Everyday Pan.

Now, for the issues: As with all true Calphalon products, you can not put hard-anodized aluminum into the dishwasher. It will damage the surface, leading to pits and discolorations, and void the lifetime warranty to boot!

Second, this is not a nonstick pan. If you want nonstick, buy Calphalon Commercial Nonstick, the best ever made (The Commercial nonstick line has the more advanced LRS3 coating versus the much less effective LRS coating on the cheaper Professional Nonstick II line).

To clean, simply buy a Dobie pad or its equivalent. For the tough stuff, I find a little Bon Ami or Dormond cleaner does the trick without too much effort.

The Calphalon Commercial line is ideal for those who want quality cookware that's guaranteed for life and pretty much indestructible. My absent-minded-bachelor kitchen contains nothing that cannot withstand all manner of accidents, falls, and spills. The Calphalon Commercial line enables me to cook like a pro without endangering my cookware--and to clean like a fiend when I've cooked like a pyro by accident.

You can clean these pans with abrasive cleansers like Comet. I used to sell them in a boutiquey store where they'd have come back in droves if we'd misinformed people on this point. Another reviewer expresses appropriate caution regarding putting them in the dishwasher--it's for dishes, silly, not knives of pots--but I do this on occasion and it would take regular dishwashing with powdered (sandblasted in there) detergent and lotsa stuff to bang the pans to really do a number on them. Discoloration is not the stuff of diminished utility.

Aside from the line being the most practical stove top option bar none, the pan is a dream. Not so shallow as an omelette pan, nor so deep as a wok, it does the range from stir-fry to saute, to bake and roast. I'd recommend this pan to anyone who maybe wants to start a cookware collection--it's so many pans in one. I used to sell this stuff (not on commission, mind you) to students with their first apartment. Moms and dads would express concern that the kids would ruin it--au contraire: you get a ten dollar pan and it'll be beaten to bits in a matter of weeks by the likes of careless ol' me, but you get a heavy, solid pan like this, they'd have to be trying to break it.

Cautions:

-Lower the heat if you're used to inferior pans. If you get this pan and find yourself saying, "It burns everything," you're conveniently forgetting who chose the heat on that burner.

-It's not non stick--and they *do* sell the best non stick--but it is highly stick resistant, especially if you LOWER THE HEAT.

-The handles can get HOT so be sure you're armed with a potholder of any sort.

I have bought this pan just recently after reading the many reviews on this site, as well as doing some research on the Commercial Hard-Anodized line of Calphalon products.

This was really worth the money and I can see how people would pay full price for it was well, since so far I haven't found a drawback to this pan.

It cleans up as easily as nonstick pans do, and that includes the inside of the lid that gets splattered when stewing stuff covered in the oven.

It heats VERY evenly, there are really no hot spots at all, and very quickly.

It may not be nonstick, but when preheated properly and with a bit of oil/butter/rendered fat, even tender meats such as lamb don't become burned onto the pan.

The meat browning is excellent, yielding wonderful deglacage, and it also allows you to brown the meat, add other ingredients, and put the entire thing into the oven. More importantly, the meat cooks so that it is browned on the outside and tender inside, as opposed to nonstick skillets that make even the better meat cuts really tough on the inside and do not give a nice brown crust at all. The hard-anodized surface of this pan seals in the juices, making even stew beef more tender than you could ever cook it after you browned it in a nonstick pan. In fact, I haven't used my nonstick pan at all since I got this one--I don't need it.

The handles don't get too hot on stovetop, but they do get rather warm with prolonged cooking. However, that is to be expected, and I haven't had a problem using them with a pair of thin potholders. They obviously do get hot in the oven, but that is to be expected as well.

Overall, a great pan. It's been sitting on my stovetop since I received it, and I have been using it quite a bit.

I will recommend it to anyone starting a new kitchen, or just choosing a first skillet to buy. The size is nice, it is large enough to make stew or other dish enough for 4-6 servings easily, likely more but I haven't tried to fill it up further than just the bottom.

Another important point--if you plan to fry eggs, I would recommend a nonstick pan instead of this one. I like my eggs beaten with milk, and that sticks really easy, so I would not trust that to any surface other than nonstick. This hard-anodized pan beats nonstick hands-down for anything and everything else, however.

If you haven't tried this Calphalon line yet, definitely buy this pan--it's well worth the money, and it is likely to become your favorite kitchen toy!

UPDATE:

I have been using this for about about half a year longer now and I am still as pleased with it as I was before.The surface has not become damaged even after extensive use (although I have not cooked many acidic foods in it, I have used it for making wurst&kraut in the oven), it has not warped, and the clean-up continues to be a breeze.

Recently I have used it to sear some sesame-oil coated scallops for a Thai curry dish, then deglazed it with coconut milk (a pretty thick liquid), and it all came together rather beautifully, with no burned-on spots or off flavors.

Another huge advantage I have noticed over time is the fact that the handles are small, and do not get in the way of cooking something else next to the pan when using it on stovetop.

I have before, and I still recommend this to everyone and anyone.In fact, I have recently purchased a second one, because I use the one I have literally all the time.

Having used Calphalon pots and pans in our kitchen 20 years or so, and my wife and I both being avid cooks, and having raised four children in the process, I feel I can give some pretty good advice here.

This particular Amazon offer is how I like to buy Calphalon, at least after my initial set purchase. Everynow then you see something really useful for your collection at a GREAT GREAT price. I've got this very pan among the 15 pots and pans in my Calphalon collection, and use it quite a bit.

Some reviewers contend that you can't wash these pots in the dishwasher, you can't use brillo, or that the anodized coating will wear off, or that the handles get hot.

Yep, all true, But, errr, so what?

I have purchased Calphalon for my family many times, and most recently for my recently wedded son in law and his bride.

What I figure about Calphalon is this:

You got two choices with it:

A. You can use brillo, toss it in the dishwasher and don't worry about it, OR

B. Take very good care of it, meaning don't put it in the dishwasher and don't use brillo.

Now in comparison, All Clad Stainless steel can be put in the dishwasher, but you're now using a stainless steel pot around an aluminum core, and I think Calphalon on a gas burner is the cat's meow as far as I'm concerned cooking. Copper pots are pretty, super expensive, but they are a REAL pain to keep pretty. (My wife snorts reading this...you DON'T know, she says. I guess she does clean our copper pots and I don't.)

What I like about Calphalon is that you CAN toss them in the dishwasher over and over. (By the way it's the harsh dishwasher detergent that causes the problem of metal discoloration.) And I do use brillo. YES, eventually some of the anodized coating wears off (on the inside) and this way of cleaning them results in metal discolorations over a period of months or years.

So what, I ask? They're just POTS, for gosh sakes. We don't need to mystify them. I still use the original pots I bought 20 years ago, and like the ONE RING, I don't think you can destroy these pots. I've dropped them on concrete floors, left them on burners and in the oven.

And yes the handles get a bit hot. Use a hot pad. With metal handles you can toss the whole thing in the oven at any time.

And I like the metal lids over the glass. They don't break. I can take off a lid to look inside the pot if I need to.

I'm not trying to be smart alecky, it just seems to me that if you want eternal pots and don't EXPECT them to look brand new ten years down the road, you can clean these pots anyway you want to and they'll remain completely functional for YOUR lifetime, at least.

If you're THAT picky about looks, you can get copper and work yourself to death using copper polisher, and alternatively brillo will still scratch All Clad in stainless steel (even though you CAN toss those in the dishwasher without discoloring the finish). So since no pots are PERFECT, then the PERFECT, but expensive solution will be to buy pretty copper pots to hang up and display above your stove (but don't actually use THEM), and buy the Calphalon to use, take shortcuts, be lazy, abuse the heck out of them and store them in the cabinet...

But I just buy the Calphalon (and a couple of copper pots and cast iron items for other things), and the copper pots aren't looking so swift either cause we (errr...she) got tired or cleaning them meticulously years ago.

This is going to be my favorite pan very soon. Its a large size being 12 inches across. Its heavy and its also 3 to 4 inches deep. This pan is perfect for frying, sauteeing, making stir fry, and pasta dishes in here. This is an extremely attractive price for this pan, and I couldn't pass it up. This pan is wonderful as it goes from the stove top to the oven. The handles are heat resistant and you can turn the pot on the stove while cooking. It also comes with a large lid that fits the pan.

This is a pan is heavy aluminum, and while it is not non-stick, it is stick resistant, and besides a quick deglaze of the pan generally takes care of any residue left over its easy to clean up. The thick aluminum makes the pan heat evenly, so there are no hot spots. I look forward to adding more of these pans to my collection!

Stansport Gourmet Castware 10 1/2 Inch Fry Pan, RedIt is easy to clean and cooks evenly and quickly. It is a heavy and very attractive pan. I would diffently recommend this product.

the size is larger than one can imagine, heavy solid, takes two hands and arms to lift it so this is not for the weak. It arrived with the box slightly opened, but th einner box from the factory was intact. Th lid had a few chips won't affect usage but looks defective from the start. I have a induction cermatic top stove and I have not tried to use it as of yet will have to season this first and give it a go. Kinda concerned because the bottom is not completely flat and has a ridge on bottom edge of pan, will this affect heating and cooking? I won't know until I use it on the stove. Anyways it should be an excellent camp pan if the stove top fails. I love the red speckling on the exterior.
