Anolon Nouvelle Copper Hard Anodized Nonstick 10-Piece Cookware Set
I've had this set for just under two months, but we do not eat out and everything is home made so this cookware set has undergone a trial by fire, as it were. We've made a variety of dishes on our glass top stove and everything has been cooked to perfection. Water boils rapidly in this cookware, perhaps due to the double full cap bases. Cooking is even too in the pancake test, all of the pancakes were evenly browned the same hue. Rice, stir-frys, spaghetti, soups, sauces, veggies, fried foods -they all are easy to prepare properly with the Anolon Nouvelle set. That isn't to say that they'll keep overcooking from spoiling a meal but it seems hard to do wrong with them. Directions do not recommend cooking with anything higher than medium heat, but we haven't had any issues occasionally going higher. The tight fitting lids help keep dishes from boiling over and lock in the steam to help keep them from drying out. Lids on or off, these are very attractive looking pots and pans. We have a pot-rack, and hanging the Anolons from it gives the kitchen a more elegant look.
I intentionally left some sauce in a pot on medium heat even after we were done making a meal. It dried up and stuck to the bottom and sides and looked like it would be a hassle to clean up. I poured some water and detergent into the pot and let it sit for a while. When I came back to clean it, it wiped off easily. I'm really impressed with the nonstick coating on this set, it just works. The DuPont's Autograph 2 Teflon coating is supposedly the best currently used by Anolon. The flush nonstick rivets are another nice touch. Note: this set is not dishwasher safe. I've re-heated food in the oven a couple of times with no problems, though I doubt I'll ever test the 500 degree limit.
A star comes off for few reasons. The steep price tag may dissuade a casual buyer, though you are paying for a quality product that should last at least five years. You have to decide if a set in this range is what you need. Casual cooks may not need cookware so sturdy.With the amount my family cooks, these will be a good value. Chefs who prefer glass lids will need to look elsewhere. I also wish a 12" skillet was included in the set, but the 10" can handle most of what we'd need the other for. With 6 pans (and 4 lids) in the most common sizes, this set should be able to handle everything except some specialty dishes. The pots are slightly heavier than others I have used, but their sturdy handles make them easy to maneuver and lift.
I am very pleased with how the Anolon Nouvelle set has performed so far and look forward to creating many more mouth watering dishes in them well into the future. If any durability issues arise, I will be sure to append this review to make note of them.

()Summary:Overall, a solid set of pans.However, there are some trade-offs.I would recommend this set to someone who likes the appearance or the handle design.However, considering the price, I personally would choose to either save money on a set that is very close in quality, or spend a little more money to get an even nicer set.In balancing all the features (some two stars, some five) into one overall rating, I came up with three stars, "It's OK".The smaller cooking surface and the cost were the primary reasons why three stars instead of four or five.
Assumptions:When shopping for a set of pans, I would first make sure I need every pan in the set.Choosing individual pans (instead of a set) can save money and ensure you only buy the pans you truly need.For example, there is not a 12" skillet or 12" sauté pan in this set (which would add cost if you buy separately), and you may not use the included 10" skillet very often (which you still pay for as part of the set).For this review, I assume every pan size and type in this set is needed.I am comparing features relative to all price points (Mauviel, All-Clad, Demeyere, Calphalon, George Foreman, and pans that were "free" with groceries) and rating the overall value based on what else is available relative to the cost of this particular set.
Appearance:One benefit of this set is that there is an exterior glaze which reduces stains that can otherwise permeate untreated anodized aluminum.The exterior is more of a glossy light gray pearl color.It is not the flat charcoal gray of a typical anodized aluminum.I found this difficult to determine from the photo.However, the appearance is solely a matter of personal preference.
Function:The non-stick is not any better or any worse than other pans anywhere near this price range, including the free pans.The flush rivets are coated in non-stick, which is a great feature to avoid accidentally scrubbing delicate non-stick while trying to get sticky rivets clean.The working area in the center of the skillets and the sauté pan are a little smaller than competing pans of the same size.The stock pot is perfectly proportioned between its diameter and height, allowing a little better access than my same-size Calphalon that is taller and thinner.
The solid base helps with even heat distribution at the bottom of the pans, but the thinner anodized aluminum sides do not share this benefit.This is not a clad set of pans, to it's understandable that the sides will not distribute heat evenly.However, the solid exterior base is smaller than the cooking surface of each pan, so heat will be a little different at the center of the pan than it is at the far edges.This may not seem like a big deal, but the copper base is the big selling point and it's partially negated with uneven heat.(Note:The copper will patina unless polished, and this is unavoidable with all copper cookware.)A slight flare at the rim of the stock and sauce pots help pour more easily than all other straight-edge pans where liquid dripples down the side instead of pouring cleanly off the edge.
Hands down, these are the best handles of any cookware I've used.They are thick and very easy to maneuver.By comparison, All-Clad handles are thinner awkward when pouring.The lids look nice, with welded handles (avoiding a rivet).The handle loops look taller, and provide as much or more clearance (for a hot pad, etc.) as other manufacturers.
Analon recommends using no more than medium heat to avoid warping, which isn't uncommon (and to avoid unsafe fumes and melting the non-stick coating into your food), but is a drawback.Being oven safe to 500 degrees is a great advantage.It is not safe for the broiler, but few if any non-stick pans can be used in the broiler.It is also not dishwasher safe, though most nonstick pans get pretty beat up in the dishwasher, even if they claim to be dishwasher safe.
I hope these considerations are helpful.You will not be disappointed if you ultimately purchase this set after considering the pros and cons.

It would have been a full 5 stars if you could only use them in the broiler for finishing and use them in the dishwasher, but I live in a dream world!
The very first thing I'm going to say is to read the instructions that come with your cookware set very carefully since the manufacture is taking the easiest way out and has printed the directions that are for more than just the Anolon Nouvell Copper Anodized set. It can be quite confusing if you don't have the directions/instructions right in front of you. The manufacturer notes that the copper-bottomed set needs special care before using the first time. Also, this particular set cannot go in the dishwasher.
The second thing I'm going to say is to take their reprimand about dry boiling quite seriously. I haven't done so in the past, but after reading the warning I'm a bit petrified that I may somehow do so in the future and that would be very ugly!
What I did love hearing is that we can use this cookware in the oven up to 350° degrees Fahrenheit. These are NOT broiler safe. No non-stick is broiler safe.
In my first test of this product I did a simple one which was to simply boil water and to see if having copper clad bottoms made a difference...it did come to a boil somewhat faster but not at warp speed or anything.
I was also a bit worried to find that these pots and pans were a lot heavier, and sturdier than my old stuff as I am getting older now and my grip isn't what it used to be. But the handles are well balanced, and even with a full load in the larger sauce pan, I had no problems getting it to the stove. A real worry since I have a glass top stove and I really don't want to drop anything on it and break it.
Next up was seeing if it heated evenly. And using my hand to test the bottom of the large frying pan I could tell that every part of the bottom was heating at the same time. I know it's not a scientific test, but heck I'm not running a professional test kitchen! I am just your everyday average home cook. I do not cook uber fancy.
I cooked simple food that can leave a mess. Rice for instance. The rice came out lovely and since the saucepan is made so sturdily, and the lids on ALL the pieces fit so snugly, the water never boiled off and was perfectly absorbed by the rice. (Perfect rice)
Hamburger patties---not my favorite on the stove top, but a good test nonetheless. The large pan holds 3 very large burgers and fried them up perfectly.(Perfect patties)I used the frying pan next to cook some fried then simmered pork chops, (Perfect)
Lastly I used this to make a typical Hungarian dish--Chicken Paprikas and Hungarian Dumplings which can be difficult and time consuming to prepare and cook. But, I am happy to report that this cookware has the ability to cook perfectly sautéed onions and stew the chicken. And the stockpot held enough dumplings that it made even them almost fun to do. Again, clean up was a breeze . (Perfect Chicken Paprikas with dumplings)
The non-stick coating is sufficient in that I had no scrubbing to do even when I had a little problem with an over-cooked, (oh okay, I'll admit it I burned something I wasn't watching) spot. Not scrubby needed just a nice short soak in hot water and a sponge. These are not dishwasher safe.
Edited to add---it has been almost a year that I've had these and they remain as perfect as the day I got them.I will even admit to throwing them in the dishwasher now and again with no adversereactions.

The ex-wife took most of the cookware in the divorce time to replace. Reviews of Anolon's products convinced me to give them a try. The holiday deals for their 'Copper' set with bonus pieces was also appealing. Ordered the 10 piece set. The construction, weight, appearance and overall quality were very-very-good BUT you don't buy cookware to look at it. So, fire it up! Went for the basics eggs of various kinds, grilled cheese, browned hamburger, pasta and sauce,... It was so easy to use these pans & pots they heat quickly, cook evenly, and are even easier to clean nothing seems to stick to them! I was so impressed that I purchased a handful of the other pieces not included in the starter set. I am very happy with their products and am sure they will have a long and useful life. An incredible pan. The more you use it the less food is likely to stick. Unlike non stick finishes that tend to flake and must use wood or non-mar utensils, you can use any utensils and still get non-stick performance. I already have number of nonstick PFOA, PTFE, and Cadmium free pans. They all good, but have common issues: they do not last long, one needs to buy a variety of silicon utensils in order to use them properly, and most of them are good for sauteing, not for frying. At that time myBialetti Aeternum Saute Pan, 12-Inch started to wear out, so I bought this one.
I am so glad I did. This is an amazing pan by all means. It is truly nonstick, it needs little or no oil, it handles metal utensils great, and it fries, not only sautes! The omelet slides from it amazingly smooth, as it does from most of nonstick pans, but the steak slides from it same easy and perfectly seared.
The pan is surprisingly light weighted. The shape is perfect for me. The walls are wide and tall enough to keep my stove top clean of burned-on spots. The flat bottom (~6.5 inch in diameter) is perfect size for cooking for small family. Cleaning is easy because it NEVER(!!!) burns.
Long story short: I bought a second pan, just in case, but my friend took it from me she loved it so much. Then I bought one for Mom, and planning to buy two more: one for my sis, and one for my daughter.
The first skillet I bought in Target is still going strong, in fact it is still looks like new even though I use it every day several times a day. I use it for omelets, steaks, cheese sandwiches, stir fry, sautéing veggies, Jambalaya, I even cooked soup in it a couple of times and pasta.
So far I couldn't find a single flaw in it.
If you are looking for a perfect pan, healthy and safe, you can cook pretty much everything in this is the one to buy.I am using this pan for almost anything. It is not heavy to handle and easy to clean. This is the best pan I ever had!Our previous woks have always bent and buckled leaving a wobly mess on the stove.We've used this several times and it has stayed flat.It's not too heavy and lets us cook up a great stir fry.I'll be getting the next size up for bigger meals.I was expecting a heavier pan, but lightweight it's much easier to handle and "flip" the food.It's solid, flat, cooks evenly, comfy handle.Very happy.My daughter is a college student and lives away from home.She asked me to buy this for her so that she can cook more often at home and save money.She loves this pan and uses it a lot. I would have given five stars if it is a little less expensive.
Le Creuset 3-Ply Stainless Steel Fry Pan
I didn't compare to All-Clad which I feel is too expensive for comparable performance, and not nearly comfortable enough. I didn't compare Cuisinart and Calphalon stainless because I feel they cut corners to compete on price, and don't compare on quality (poorly balanced, handles too short, etc). But those are personal preferences, your mileage may vary.
THE SCOOP:
Mauviel is 5 ply and Le Creuset is 3 ply.
Price is in the same range, though Mauviel m'Cook is a little more expensive, 15 to 20% more. But both are less than All-Clad, and more expensive than Cuisinart.
Both are clad on bottom and up the sides.
Mauviel is made in France. Le Creuset stainless is made at their own factory China (which means the work is not subbed out to a contractor in China, but rather that Le Creuset has a manufacturing plant in China where they manage the production).
THE RESULTS:
They both heat up at the same speed and are equally even. I saw no difference.
Le Creuset's pan was much, much easier to handle. Creuset's handle is more ergonomic. Helper handle on the other side makes things easy to manage. And overall, the Creuset was better balanced, I feel.
Quality-wise, Le Creuset wins. The execution and attention to detail is flawless. The Mauviel just feels a little less substantial and less carefully put together.
APPEARANCE:
Attractiveness is a personal thing, but I prefer Le Creuset. If you hang your pots and pans on the wall, though, then you might prefer Mauviel. Here are my thoughts:
Le Creuset looks sturdy, but does so elegantly, like a country kitchen style, while Mauviel is amore streamlined design, more refined shape, but not as attractive to my eye.
The Mauviel exterior is shiny stainless, while the inside is brushed stainless. Mauviel is logo is pressed into the base of the handle. The brushed interior just feels a little less classy and uninspiring sitting on the stove.
Le Creuset has two toned brushed/polished stainless exterior with a polished interior. Le Creuset logo is pressed into the base of the stainless handle and the top of the helper handle. I find the execution of the two tone exceptionally well done (way more attractive than Cuisinart's two tone french classic "high end line" for example) and the details, like the riveted handle are supremely well executed.
Le Creuset does have printing on the bottom side of the skillet, which detracts a little bit from the quality feel. Does not make you want to hang your skillet on the wall.
For hanging pans on a wall, Mauviel's shiny exterior, slimmer profile, and non-print bottom look better to me.
On the stove or table, though, I find Le Creuset is actually more modern and elegant looking, even though it's more sturdy. Its shiny interior and attractive shape are inspiring to me sitting on the stove awaiting my creations, but this is personal preference.
Le Creuset Stainless Fry Pan Summary:
PROS:
Quick, even heating. It's aluminium/stainless 3 ply clad.
It's heavy and thick, which means there's enough aluminum in there to actually distribute the heat across the entire pan. Performance demonstrates this.
Clad on bottom and up the sides.
Handle is excellent. Best out there, in my opinion (better than Calphalon, All Clad, Mauviel, Cuisinart).
Has a helper handle. Superbly handy.
Very attractive (see above report on attractiveness for details).
CONS:
Printing on the bottom (Le Creuset, plus some symbols indicating that the skillet can be used on gas, electric and induction). Doesn't affect performance at all and isn't noticeable unless you're looking at the bottom of your pan. So if you're hanging your pots on your wall, it's not as elegant as an all-smooth shiny stainless like Mauviel.
All in all, I'm quite in love with Creuset Stainless. It performs great, it's comfortable to manage and beautiful to cook in.

We have a larger All-Clad pan and the handle seems to have been designed by a sadist.This Le Creuset handle is very comfortable and the pan's polished surface cleans up nicely.The thick three ply aluminum core distributes heat evenly when placed over our gas burners.We haven't used the wide pouring lip but I can see where this would be convenient.The 9 1/2" size and weight are perfect for many uses.Calphalon Cool Grip Handle for Professional Hard-Anodized Cookware, Large

Calphalon Contemporary Nonstick 12-Inch Flat-Bottom Wok
I used believe it was frivolous to pay professional cookware prices for Teflon-based non-stick since the coating wears off no matter the calibre.But this is a great pan at a very reasonable price and Calphalon's multi-layer non-stick should last two or three times longer than a comparable Revereware or Farberware stir-fry, justifying the investment.And trust me, the pressional-weight anodized aluminum base makes a huge difference performance-wise.It heats hotter and more evenly and maintains its temperature even filled with lots of ingredients.
Though its great for stir-frying delicate or stick-prone items like eggs, fish, and rice, I uee it for lots of other preparations.I use it as a general-purpose saute pan. It's great for browning high-fat items like sliced sausages and bacon.However, I use it most of the time for making pasta sauce. Once the sauce is done I toss it with the pasta right in the pan.The wok shape makes tossing and pouring the contents easy.I also found out recently that the round shape makes browning large pieces of meat for braising much easier than a flat bottomed fry pan since it won't tip.
Since the nonstick is Teflon-based, avoid using uncoated metal utensils.You can spend a small fortune on nylon or silicone coated tools that eventually melt or peel, or five or six bucks for wooden or bamboo utensils that will last a couple of decades.
Also, it's not a good idea to heat Telflon-based pans empty.Overheating both damages the surface and supposedly releases toxic gases.Unlike conventional pans which should be pre-heated dry to minimize sticking, pour in a little oil first.In addition to protecting the pan, you also know when the pan is hot enough to stir-fry or saute when the oil just starts smoking.
I've been desperately looking for a durable, non-stick wok and never found one satisfying my need until this. I tried various brands such as Circulon(sp?) and Analon. Circulon is good but not very durable because residues are easily trapped in the grooves and not get cleaned, therefore the Teflon layer would peel off over years. And Analon is not really non-stick. So far this Calphalon works well for me; I don't know how long it can last though. The only cons are the heavy weight and the bottom are too narrow.It'd be better if they can reshape it to have wider bottom and offer a 13"-er.

There are so many reasons to love this pan. It is easily my favorite piece of cooking equipment that I've ever owned and I use it virtually every time I cook. I also own the 10-piece Calphallon pan set, but it is the Wok that I always turn for most meals.
This is a very solidly constructed pan. The metal is thick, probably 6-8mm including the nonstick treatment. This means the pan holds its heat and maintains even temperatures whether flash searing vegetables or slow roasting garlic. The precision control offered over temperature is excellent. The handle is also heavy duty. This is a pan that if cared for, will last a lifetime.
Asian cooking purists will argue that a non-stick wok defeats the point of stir frying, the creation of "Wak Hay" or Breath of the Wok, created by the accumulated residue that builds up on the inside of a carbon steel wok and that adds its own distinctive flavor to the food cooked inside it. While that might be nice as a quasi-religious concept, it is less desirable from a food safety perspective. Carcinogens are a real problem with any burned food, as the layering referred to by purists who use steel woks is nothing more than charred bits of former meals. For me, a nonstick pan is the way to go for a wok as it requires using much less oil, and hence the food it produces is both carcinogen free & better for you.
This is simply a must have if you are used to non stick pans and use a wok at all. I upgraded from an Annie Chen non-stick wok I had owned for many, many years, and I am so glad that I did. Calpalon makes extremely high quality pans, and this 12-inch wok is among their best in my opinion.

I didn't get this pot here found it at TJ Maxx for 60% less. This pot is heavy, and very heavy when you get it full of food, but it is sturdy and heats very evenly. I have the whole collection of Calphalon Contemporary now and have been very happy with them. I've had some of the pots for 2+ years and they still look brand new.

Wish I bought this item from Amazon, now I'll have to pay for shipping to get it returned. We primarily used it for eggs and quesadillas (not high temperatures) and the pan sunk in the middle somehow...it doesn't sit flat against my glass cooktop and therefore doesn't heat evenly. I had the same problem that I had with my $25 discount store pans!

I purchased these pans to replace my old T-fal and other non-stick pans with a safer alternative. I have been very pleasantly surprised with these pans. They are the best non-stick surface I've ever had. I also own a Cuisinart pan with a PFOA free coating, and these have a much better "non-stick".
I also have some Ecolution pans which I purchased from a brick and mortar store, and discovered that there are different "lines" of the Ecolution pans. The ones sold here are lighter weight than the other ones I have purchased, but they were also slightly lower in price. I have not seen any noticeable difference in cooking between the two different kinds of pans.

I like that these pans are eco friendly and do not have the dangers attributed with teflon when it starts to break down and peel after extended use or exposed to excessive heat. Brought these items several weeks ago, just opened after a two month move...first pan I used the green just sort of melted off the bottom.Of course, to late to return! If you want to hang them on a pot rack but never use go for it!!!

Another Woll failure.As with the other Woll pan I bought, it was great while it lasted but the surface has begun to fail after less than two years.At least it is a little better than the diamond finish pan, still usable to some degree despite missing finish.But not for much longer.

I like to cook, I have many frying pans, yet none of them comes close to this one. I think that it is the best frying pan on the market. It is very easy to clean, no food sticks to it, it conducts heat very well. The only thing is, that some people may find it a little too heavy. That's a pretty big design flaw in my opinion when cookware can only be used on low and medium heat settings.
My second complaint with the set is that the smallest pieces are too small to be useful. The smallest pot, for example, is absolutely tiny. It fits inside of the smallest pot from our old set and is smaller in diameter than the burners on the stove.
It's a good basic set for the $100 price range, just know that you're gonna have to invest in additional pieces for a full range of cooking.
* Wanted to add, too, that advertising this as a "15-Piece Cookware Set" is a bit misleading. The measuring spoons are utensils, not cookware, so you're really only getting a 10 piece cookware set here.

This set of cookware was great when I first started using it. It was non-stick as described, heated evenly on an electric stove and overall I was pretty satisfied with it. After using it for a year, my opinion is beginning to change. The handles on the pots keep coming loose and have to be tightened every couple of uses. The non-stick bottom, although I have been very careful to avoid scratching or damaging it has started to peel off in little bubbles. The bottoms tend to get burn marks that you can't scrub off even with some serious elbow grease. I think when you buy these, you are buying the name. You could probably get a similar item for much less money at your local superstore. Not thrilled.

I do not understand the negative comments about this set of pots n pans. Short of spending your life savings this is the best set of quality pots you can purchase. They are exceptionally thick and heavy duty. The aluminum construction makes for more even cooking. I would take an extra set of these any day of the week. They make you want to wash and hide them when you get through cooking so no one else in the household can use them. Save them for yourself. This is one set you can take pride in for years to come.And if your food burns but does not stick to it like other reviewers have mentioned, then I suggest you either lower your heat, or pay closer attention to what you are cooking. Food will burn if left unattended and your house along with it.

I do many different kinds of crepes (salt, sugar, etc) this pan is just perfect for that purpose, you do not need to even clean it after use it. spread the heat very well over the entire surface. I found this more beneficial than electric crepes pans or any other stuff. besides the size is just great for them.Love it so far!
Nice even heating on gas stove so far. I was most impressed with the disappearing marks in the center indicating the right temperature for pancake/crepe cooking. Nice low lip which makes flipping easy but prevents run off from batter. It's a bit heavy, but works great.My wife is Breton.This is the best pan we have found for crepes and galettes.I have actually bought a couple of backup pans in case these ever go out of production.As a french living in USA, I was desesperate to find a good "crèpes" griddle. This one is perfect, you can prepare sweet crepes or salted crepes without adding butter. It is good quality. You can't be disappointed with T-Fal.
