All Clad Stainless Steel French Skillet with Domed Lid

All Clad Stainless Steel 11-Inch French Skillet with Domed LidTHis pan is in use almost daily. It is a perfect size for anything you want to rustle up.It is great as a saute pan, and the domed lid means you can cook with the pan brimful!I love it!

I didn't actually buy my skillet through AmazonI had gift cards for a department store and bought their overpriced skilletit's less expensive on Amazon.

I used it for the first time last night and was kind of worried. Some reviewers new to stainless steel complained bitterly of sticking and burning and warping. So I read up a bit on how high you should heat the pan and the water drop test and when to put in the food before I finally got up the courage to cook with it last night.I made hashed brussel sprouts and then wilted spinach. The brussel sprouts were going to stick, I thought, until I added the splash of vermouth the recipe calls for and it all bubbled up and off the surface, making lovely browned bits and wilting the sprouts just right. When they were cooked, I didn't even wash up firstI emptied the sprouts and with a little water, went right to work wilting the spinach. It all came out so perfectly I couldn't wait to write a product review. I now have this skillet and the soup/rice pot and I'm looking forward to collecting more All Clad pieces. LOVE this product and the cooking experience!

This beautiful pan is just the right weight and shape, heats evenly, cleans up nicely, is made in the US and has a nice, long, sturdy handle. What more could you ask for? You could ask for a perfectly beautiful, nicely weighted, snugly fitted lid. It's got that too.

I still use the cast iron pan and love that as well. Iron remembers but steel forgives. This is a great pan for anything you want to flip, you'd break your wrist with the iron pan, and the curved sides are just right for flipping the stuff back into the pan and not all over your stove.

Try sautéing chicken breasts in a little olive oil, throw in some sliced carrots, fennel and beets put the lid on for a few minutes. Flip the vegetables around now and then, finally add some chopped scallions and a splash of balsamic vinegar. Deglaze the pan with some wine for a nice sauce. Tough job in iron and lots of fun in this steel pan.

You will need to be generous with Bar Keepers Friend to keep it shining.

Excelsteel 3-Piece Professional Carbon Steel Frypan Set with Ceramic Non-Stick Coating

Excelsteel 3-Piece Professional Carbon Steel Frypan Set with Ceramic Non-Stick CoatingThe pans looked fine and the surface feels nice and smooth, but you can not cook anything in these non-stick without sticking. I ended up using more oil to keep from sticking which defeated the purpose of using non-stick. The handles are cheap made from stamped steel. The first time I used the thin metal the inside bottom burnt.I would not buy.

Got this set of pans today. Started to cook and then saw a crack on the handle and they look cheap in general. Although saved some money but probably will have to return it and buy a better and more expensive set.

These steel pans have a ceramic coating that behaves as good as Teflon without the toxic drawbacks of that notorious plastic.

I have had them for a few weeks now and, so far, I can not tell the difference.

I also like the idea that they are made of steel and not aluminum. The weight is light and they are easy to clean.

I was disappointed in this purchase. The biggest problem is that the bottoms are not completely flat, making them a poor choice for a glass-top range. The quality of the "no stick" isn't very good. The very first thing my husband made was a cheese sandwich. The cheese melted, burned, and stuck. It took a lot of elbow grease to clean it, and a stain remained for quite a while.

10-Inch Natural Finish Aluminum Frying Pan, Fry Pan, Commercial Grade - NSF Certified

10-Inch Natural Finish Aluminum Frying Pan, Fry Pan, Commercial Grade - NSF CertifiedThis review is in response to the one written by DC discussing the dangers of using aluminum. While there is some truth to what he says, aluminum can be used; just use a little common sense.Aluminum should not be used on a daily basis. It should also not be used with acid foods, such as tomatoes, vinegar, citrus, etc.Aluminum is a great choice for many reasons; it is a good conductor, it doesn't stick like stainless steel, and if it has a metal handle, as this product does, the dish can be "finished off" in the oven, a technique that restaurants employ all the time.In addition, if DC feels so strongly about this, I sure hope he doesn't eat out much.Almost all restaurants routinely use aluminum frying pans, stock pots and other cookware as well.Relax, it's okay, using your common sense!

A $17 pan like this sells for $170 with the Julia Child imprimatur. Quality is standard, but what a bargain!

It could be improved only by better salesmanship. Show us more photo angles on the web page, and tell us that it is great for omelettes.

I work as a baker in a fully functioning kitchen, so I am well versed with the use of NSF frying pans.Yes, they do their job just fine.I personally like teflon pans much better, especially for electric ranges like I have at my apartment, but this $17 aluminum pan works fine once you get used to cooking on a non-teflon pan.

My main reason for not getting a nice frying pan is due to roommates that will no doubt destroy a $75 frying pan in a few months.

If you need a cheap frying pan, pick one of these up!Also pick up some STEEL SCRUBBERS and PAN SPRAY!!!

On a side not, who cares if a bit of aluminum is ingested, there are so many sources of toxins in our modern day living, you are only going to shorten your life by stressing over it.

Happy cooking yall!

RE: Straight to the point! Look up Heavy Metal Poisoning, including Aluminum Toxicity

This goes for all Aluminum cookware all across the board on NOT just Amazon but all over the internet. I just decided to look this up on my favorite etailer just to see if it were being sold on Amazon after reading the dangerous side effects of Heavy Metal poisoning

People on ships died from Heavy Metal poisoning in the past from lead, mercury, etc Need I say anymore. These short term to long term side effects is no joke!

Concerned Citizen Response:

I'Ll tell you what buddy, everybody does have a choice on whether of not aluminum toxicity will affect them or not:

Common Sensical Review from a hobby chef and MBA:

With questionable long term effects of Aspertame/Nutrasweet [and I am a health freak, MMA guy, Diet Coke® fiend] one can only weigh in on the manufacturer's , Monsanto's, intentions of valuing profit versus social responsibility within this multi-billion dollar beverage industry...

Don't get me wrong here, the human body should assimilate to every mineral and element as known throughout time but why overload on any possible toxicity with minimal or even full awareness on the impact on the human body?

Great wormanship and top notch build quality I rate that ***** 5 stars

Questionable choice on materials = I rate that * 1 star [rhetorical question is there u zero rating?]

"Paranoid" Review:

Even though I'm capitalist-minded and want all companies to succeed, I personally would stay the hell away from any cookware made from Aluminum, especially when you're cooking for children or the elderly.

Aluminum is for cars like Cadillac or Audi, not for human consumption that can leach onto every food that you cook!

Hopefully the manufacturers will come up with viable alternative to aluminum cookware after an enough movement makes it aware to the public.

Questions drive the content of the debate:

Why is it after an independent research company finds fault with an item, there's usually a quick "independent" research response to it???

I really wish i didn't burn up my moms pan today, because i never realised how much they actually cost. This pan looks great, and i bet it will cook just as good as the one i burned up. I just wish they had a better coating on pans that if when burned it wasn't horribly toxic, bnecause i inhaled a very good unhealthy dose of burning teflon, while i was trying to get the smoke out of the house. Well i guess that'll teach me not to leave the pan on the burner for 3 hours. good thing we have an electric stove or the house could of gone up. I'm glad i didn't burn the house down, but 26 bucks is that a good proce for one of these?

Sitram Catering 9-1/2-Inch Commercial Stainless Steel Fry Pan

Sitram Catering 9-1/2-Inch Commercial Stainless Steel Fry PanThe pan sautes with eaze. The clean up was simple. I really like the balance and I did not need a cover for the handle when it was blazing hot. The heating of the surface was even, no hot spots.

This is my 3rd skillet in less than 8 years. After the first one I said "No more non-stick finish!" (What are we eating when that black stuff starts to scrape off into the food?!) And after the second one, which was a copper-lined Revere pan, I said "No more inexpensive pans that don't last!" The Revere pan seemed great for 2 years, but then it inexplicably developed a large bubble on the bottom of the pan.

I felt this Sitram Commercial Stainless Steel Fry Pan seemed like a better quality. $80 is a reasonable price if it lasts for years; so far I've had it several weeks, so we'll see.

I also chose this pan because it contains no aluminum, but has the necessary copper core for conducting heat evenly. The lip around the edge of the pan is great because it doesn't drip down the side if you have to drain grease or liquid out of the pan and then return it to the burner.

I would warn that if you are accustomed to only non-stick, it will take some getting used to. No oil is necessary if you are browning meat that has any fat in it at all; just let it cook a few minutes on one side before turning or stirring. If you try to turn it too soon, it will stick badly.

Alternatively, try cooking with a few tablespoons of broth instead of oil to prevent vegetables from sticking. Less fat!

I was a bit concerned about the size; I wanted a 10inch pan and this is labeled as 9 1/2 inch. But I was pleased to find that my (Cuisinart)lid from the old 10inch skillet fits perfectly, so I don't notice any size difference!

Presto 06620 11-Inch Electric Skillet

Presto 06620 11-Inch Electric SkilletI've been using this pan on a daily basis for about two weeks now and I can say it has met all my demands of it. Eggs and bacon are cooked to perfection without burning either. It heats up quickly, and low temperature works for most foods. I like the fact that the heat is contained in the pan and doesn't heat up the room like gas or electric stove top burners do. The lid is deep enough to allow you to cook a small chicken or roast. The last test I wanted to do was fry pancakes as one reviewer said it wouldn't get hot enough to do it. Well, I was amazed at how well it did fry pancakes. Using thin batter was better than thick, but it fried either one to a golden brown. As far as I'm concerned this is a top quality product and will do anything you require of it. The temperature control is in degrees instead of warm medium and high as some of the others I've looked at. That feature came in handy with the pancakes as the instructions were to preheat to 375 degrees. Well, that's what I did and it was perfect. Cleanup is a breeze because of the non-stick surface, and the entire pan can be immersed in water with no harm or danger. I can't imagine what else I would want it to do. I would highly recommend this product and will buy it again if it fails after a reasonable amount of time.

Update, October 2008. After two months of non stop use, some of the non-stick surface is starting to bubble. Read the warnings carefully, it tells you to not let it soak in water. I didn't let it soak, but I let food stand in it sometimes overnight. I've stopped doing that, and there is no more deterioration of the surface. I will still rate it highly, and be more careful in the future. I guess I just didn't think a non-stick surface could be harmed by food sitting on it over night.Live and learn I guess.

Update. December 2008. Well last week I scraped off the rest of the "non-stick" coating. I was worried that if I didn't I would be eating it. It started coming off in large pieces a few weeks ago. So, the coating is not very good. I have several non-stick pans and pots that are many years old but still have the non-stick surface intact. Still, the electric skillet works good, but you have to use oil or spray when cooking or it will stick to the pan. Beware, the non-stick stuff they use is NOT what you are used to seeing in a pan. Still use it almost daily though:)

A nifty little electric skillet that fries, braises and bakes! I bought mine for fish fries but use it for much more, especially during the heat of summer since it doesn't heat up the kitchen like a conventional stove does. A great bargain for the price and lasts forever. Makes a great housewarming or shower gift too!

This version of the Presto skillet is a little different from previous ones.Mostly cosmetic. It works great, fits nicely in my small space, is very easy to clean. The nonstick doesn't come off. It's light weight. It heats fast and cooks evenly. Not much splatters on the heating plug, which goes below the handle for some protection.Of course, the whole pan is submersible once the heating plug is removed.

Earth Pan Nonstick Cookware 8-Inch Skillet, Espresso

Earth Pan Nonstick Cookware 8-Inch Skillet, EspressoThis coating is awesome. I waited a couple of months to make a review of it to see how it holds up. it is great, true no stick surface! Now I need a spatula that is as "slippery". :-)

The pan worked good for a year, then it turned into a dud.

I use this for eggs 4-5 times a week.Initially it performed as described. The eggs slowly started to stick.I smoked some oil in the pan once, that pretty much killed the nonstick. It never seen to work the same when I used the dishwasher on it.The non-stick just doesn't like the heat.

I'd advise staying away.I won't be buying another.

Update: The pan is covered by a lifetime warranty.I got mine replaced, but don't expect it to last any longer than the first one.Info:

Mauviel M'steel Frying Pan, 8-Inch

Mauviel M'steel Frying Pan, 8-InchI bought the Mauviel M'steel Frying Pan in the 8 inch and 9.5 inch this Christmas to replace some Calphalon Non Stick pans that were wearing out.Real Simple magazine had a review on this brand and indicated they were a great buy/great find.

They arrived very well packed, and had a layer of wax on them to protect them as well.It was a bit daunting to get the wax off, and took a bit of time to cure them--we did the process (peanut oil and high heat) two times, and then were very careful when cooking with them for a few times after.

The effort was well worth it!The pans are the perfect sizes for just an egg (8 inch) or eggs or an omelette or potatoes (9.5 inch) and they are completely non stick now.The handle feels substantial and very comfortable (I have small hands, my honey has big hands and we both like the handle equally). My honey says that eggs taste better in these pans than any pan he has cooked with in many years--and he is a wonderful cook with lots of experience!

We do not use soap, and we wash out the pans by hand, dry them and hang from our pot rack in the kitchen which protects them from bumping into other pots and pans.

We have used the pans almost every day since Christmas--10 to 12 times each at least.

I really like the way they look too.Very utilitarian looking, they make a statement about how serious we are about cooking and preparing tasty meals. The old adage "use the right tool for the right job" applies here--these are definitely the right tools for this "cook a lot couple"!

We are extremely happy with these pans, and expect that they will serve us well for many years to come.

Simple elegance, functional, it just works.I use it for creeps, omelette, fish (not at the same time).Cleaning is simple just rinse with water or heat slightly and wipe clean with a paper towel.Looks like a very old piece in a matter of weeks, really cool patina.

GreenPan Stockholm Skillet - 8" - Non-stick

GreenPan Stockholm Skillet - 8' - Non-stickI purchased a set of this cookware at Target approximately 9 months ago. I have used the skillet to make omlettes 6-10 times a month. I use a smidge of butter for flavor in the beginning. The pans were non-stick and there were no issues. However, after about three months, the non-stickiness began to wear out and I've got burn marks on the pan that will not come off, despite soaking and hot water and scrubbing with a scratch-resistant sponge. I appreciate the safety factor of the Green Pan over 'traditional' non-stick pans, but I believe I will be looking at another alternative solution so that I do not have to replace the pan every 6 months.

Update:

The pans got to the point by January that they were completely unusable. I could use 3 pats of butter to cook 2 eggs, and I would need 3 more pats to flip the eggs and they would STILL stick.

Target, of course, no longer carries the pans because they suck. I was referred to the manufacturer who first offered to send me replacements (I was quite clear in my email indicating that I had purchased them from Target). I declined as I have since purchased Cuisinart Green Gourmet Cookware set and LOVE THEM. The employee told me they would send me a return label and issue me a refund (in writing). I asked what would be the timeline for receiving refund, when she said it would be forwarded to HSN. I advised her I did not purchase it from HSN as my email stated. She said they couldn't refund it then.I advised her that her oversight was not my problem. I was then treated extremely rude.

If you do research online, you'll see that there are mentions of defective batches and that the Better Homes and Gardens seal is being revoked. They have Facebook pages about how much the Greenpans suck. And I have created a blog dedicated to how much Greenpans suck showing photos of what 'lifetime non-stick' is like as well as the emails I received.

I have been cooking for over 30 years and this is the worst pan I've ever owned. The nonstick properties disappear after several uses making this pan more difficult to clean than any pan I've ever used. Very unhappy

Emeril by All-Clad E9644064 Pre-Seasoned Cast-Iron 10-Inch Square Grill Pan / Fry Pan Cookware, Bla

Emeril by All-Clad E9644064 Pre-Seasoned Cast-Iron 10-Inch Square Grill Pan / Fry Pan Cookware, BlackI went through three non-stick, very expensive pans from the major players, and every time the story was the same. I would really like the pan until I used it about six or seven times, then the non-stick coating would wear off and they would stick like mad. This is because proper grilling can only be done under high heat, in a preheated pan. Doing this to a non-stick pan heats it up well past its tolerances, and destroys the coating.

So finally I tried a cast iron grill pan from Lodge. It was excellent, and took to high heat well. It is pretty hard to clean, the food sticks a bit, and the grill marks are not as crisp as I would like. Still, it was much better than anything aluminum.

When I saw this one, I decided to try it since I like my other Emeril pans.

It is even better than my other one. Interesting, as I strongly suspect these Emeril pans are also made by Lodge. The little tweaks he made to the pan are well thought out. The ridges are tapered such that they almost come to a point. The result is clear sear lines with no sticking. It is also heavier than my other pan, so it holds heat better, and has much higher sides to help contain spatters.

There is one thing to be aware of, however. This pan is smaller than its Lodge counterpart, so it is well suited to grilling for two (even if the things you are making are large). If you are doing more than that, it'll get a little tight in there. I keep my Lodge pan around for the times I need more cooking space, but I can see this one is going to get a lot more use as I normally do two things at a time anyway.

The first time you use it, spray it lightly with cooking spray oil inside and out, then put it on a high heat burner until it smokes. Turn the burner off and let it cool off on the burner slowly by itself. This will help season it a bit (even though it is preseasoned) and make sure that you won't get any sticking the first time you use it.

If you are even thinking of experimenting with grilling, get this pan and give it a try.

Sean P. Logue, 2008

After recently purchasing 2 of these on Amazon as gifts, it has made me think about how much I love my own Emerilware cast iron grill pan, which I've had since early 2005. It is durable and well-designed, though it won't accommodate more than a pair of large steaks. But on the rare occasion I cook for more than 2, I just have a 2nd one handy--or I use my 2 burner, 2-sided cast iron griddle from Lodge. Since I live in a condo and can't use a proper outdoor BBQ grill (county law), I use this grill pan exclusively when doing steaks, whole chicken breasts or pork chops--sometimes seafood as well.

I confess I did struggle with cleaning when I first bought it and was unfamiliar with cast iron, but once I learned a few things, it became a cinch. Here's how I clean mine.

1. Give it 3-4 very hot "power rinses" in the sink by turning the kitchen faucet pressure to max pressure and temp. About 1 minute total.

2. Take a paper towel to pick/rub off any residual food. Sometimes it takes 2 towels if it's very messy.

3. Season it after each use. I take another paper towel to wipe oil all over the interior of the pan and bake in the oven for 30 minutes @ 250F. You can also just use cooking spray.

That's almost always all I do. It takes maybe 2 minutes including the oil. I never use soap (can destroy the seasoning) and never soak it in water more than 5 minutes (can cause rust).

Cast iron is technically not non-stick, but if you season it properly (as I do after every few uses), it effectively becomes nonstick, and for me, it's now to the point that I just don't use my 2 nonstick pans anymore--not even my 8" omelet pan; yes, I do eggs (all styles) in a properly seasoned cast iron now. And since manufactured nonstick coatings can be harmful if some seemps into your food (and body), I feel safer using cast iron than any kind of nonstick, especially Teflon, but even high end nonstick give me some concern.

I also own a bunch of flat-bottom cast iron pans from Lodge, which I also love. Basically all well-made cast iron is just plain awesome, and nothing beats cast iron grill pan when you can't use a grill. I love this pan so much, I want to share the pleasure of cooking with it, so I will continue to buy this pan to give as gifts to friends and family. The thought if giving this less than 5 stars never crossed my mind. It's a great performer!

Feb 2011:

Buying tip: since I continually to keep this product in my "cart," and Amazon gives updates to any price fluctuations in your cart, I've been able to casually observe the price changes of this item for the past 2 years. I got lucky when I first wrote this review in the summer of '09, when this product was temporarily at the shockingly low price of $14.99, and now I am buying another one for $18.42. Since then, this particular product hovered between $24.99 and $28.99. There is no reason to pay more than $24.99 because it goes back and forth so much. If you're patient, keep it in your cart and wait until the next time it drops below $20 and buy 2 or 3. It also seems to be holding at $18.42 for the early part of 2011 so far, which is nice. If you can get it for under $20, you've got a fantastic bargain on an amazing product!

Well, it's a cast iron grille pan. What else can I say about it?

Like all cast iron pans, it's quite heavy, but it will also last for a lifetime(or more). It is also non-stick, providing that it is cleaned and cared for appropriately(there are appropriate seasoning instructions that come with the pan).

Since cast iron is able to reach higher temperatures than non-stick cookware, it makes it a great choice to cook meat when cooking outside is not an option, just make sure to heat the pan for three or four minutes before using it.

If you're unfamiliar with cast iron cookware, follow the instructions that come with it and you'll enjoy a great pan for life. Just remember that it doesn't go into the dishwasher!

This is seriously a heavy duty,, high quality product. The grill has deep grooves which makes for more healthy cooking as the fat stays on the bottom and it just feels like it can definitely take a beating should it ever have to. The only thing I found it lacking (and not really a big problem) is that the handle seems a bit short for a pan of this weight and size. You'd need two hands to carry it securely. Great product overall.

Want Emeril by All-Clad E9644064 Pre-Seasoned Cast-Iron 10-Inch Square Grill Pan / Fry Pan Cookware, Bla Discount?

I had long ago given up on cookware with "non-stick" coatings on them. I now use only cast iron or bare stainless steel. When it comes to grilling indoors, cast iron is the only way to go.

Though I already have a cast iron reversible grill/griddle which fits across two burners on the stove, sometimes I find it too large if I only want to grill a couple of burgers or a chicken breast. So I bought the Emeril 10" Cast Iron Grill Pan to handle the smaller grilling tasks. Don't get me wrong, the pan is large enough to grill 4 burgers at a time, but I don't think I've ever eaten 4 burgers in one meal.

First of all, this is a very, very heavy pan. I know that anything made of cast iron is expected to be heavy but this seems heavier than other cast iron pans of this size. The handle seems too thin to support such weight, but somehow it does.

It comes pre-seasoned, however, I would not recommend that you use it immediately after buying it. The first thing I did after I got it was to give it a good scrubbing with warm water and dish detergent. I then heated it up on the stovetop until it was completely dried. After allowing it to cool down enough to handle, but still warm, I coated it with a good coating of vegetable shortening. Then into the oven it went for about an hour at 375. After doing this, the pan was much darker than it was when I bought it; a sign that it was much better seasoned now and ready to use.

So, this past weekend, I was on a grilling frenzy to try out my new grill pan. The first time I used it, I grilled a couple of burgers and some zucchini. The burgers did stick a little, but not bad for first time use. A little sticking is to be expected the first few times of using a cast iron pan. It will become more and more non-stick after each use. The next day, I grilled more burgers and some peppers and onions. This time there was very little sticking. Later in the day, I grilled some chicken breasts and they came out just perfect, with nice brown grill marks and a smokey grilled flavor. Excellent!

Clean up is easy. I run it under warm water and use a bamboo brush to scrape all the food particles off. Then I heat it up on the stovetop to dry.

Please note, this Emeril Grill Pan is not made by Lodge. It is made by All-Clad. As all Lodge products are made in USA, the Emeril Grill Pan is made in China. I can't compare this Emeril Grill Pan with other brands because I haven't used any other brands. But I am quite happy with the performance of this one. It is definitely of high quality and with proper care will last several lifetimes. I wouldn't hesitate to recommend it to anyone.

Nordic Ware Divided Skillet Omelet Pan & Poacher

Nordic Ware Divided Skillet Omelet Pan & PoacherThe description fails to note a warning contained on the back of the product's label regarding glass/ceramic cooktops; "Use of high or even medium high heat will damage this pan and your stovetop."

The description states, "The pan's heavyweight construction".Actually the pan is made of very thin, lightweight aluminium. This explains how the pan can be damaged by medium high heat I guess.

Yes, I'm aggravated by the omission and false statement. It might show.

I returned mine.

This has proved to be just what I needed. I have an older Antionette Pope Cookbook (1954)which features a recipe for a fluffy omelet. The recipe requires a divided pan. This pan is ideal for that recipe and works perfectly. The egg poaching insert works well too. I bought this pan specifically for this recipe and couldn't be more pleased. My family loves the omelets the pan (and I)are able to produce. E-mail me and I will share the recipe(...). Then you'll be able to appreciate the beauty of this cookware.

The pan worked as advertised. The metal is thin so be careful about over heating. A thin pan helps when cooking an omelet. A heavy pan will overcook.

Love the flip over design... Well made and works great. Be sure to use wooden tools as not to scratch it...

The added bonus of the egg cooker is very nice. As eggs are the best foods you can eat, I eat a lot of eggs...

I hand wash the pan.

I bought this to replace an omelet pan that was at least 30 years old.The handle finally broke off after decades of service and left me in search of a replacement.I found this, bought it, and have been dissatisfied ever since. It is NOT a heavy duty pan (very thin in fact), NOT coated in durable non-stick material (peeling after perhaps 6-10 uses and very sticky even with butter or cooking spray applied liberally) and certainly doesn't cook evenly (burns by the hinge and remains raw at the outside). The search for a suitable replacement for my trusty old pan continues.

This pan is cheaply made and everything sticks.I went to QVC and bought a great omelet pan item #K6518 and what a difference! It's not a divided pan but makes great eggs!

Had calphalon pans, but on our electric stove the non-stick coating inside started peeling off. Tried out an Emerilware pan and I'm never going back. Using my second one I bought and am currently making an apple pie where you cook down the apples first in two skillets. You can really tell the difference between calphalon and Emerilware as they heat up and cook down the apples side by side. Emeril's pan heats up much quicker and evenly distributes heat around base of pan making for nice even cooking. I highly recommend these pans to everyone.

Exceptional quality cookware! Also have a 12" companion piece which is also exceptional.I always cook with Olive Oil, never a cooking spray.I use only bamboo and plastic utensils on the Teflon surface.Clean the pan with nothing harsher than a sponge, plastic wool and Dawn.Hang the pans by their handles when not in use.

Staub Mini Frying Pan, 4oz, 4 _ ", Black Matte

Staub Mini Frying Pan, 4oz, 4 _ ', Black MatteI own three of these mini pans.I own two 9" inch and two 11" Staub skillets as well.Overall,I own 23+ pieces by Staub.I own Le Creuset and I sell and own Vollrath commercial nonstick cookware for a living and I cook.Staub's greatest strength is browning meat and sauteing vegetables. Eggs are tricky in these pans but worth it if you know how to use them.

The Caveat: You must understand how these pans take heat and break them in with a proper seasoning, not curing, before using on a daily basis, especially if you want to do eggs. These pans should be in every home simply for what they represent in quality and performance.

I"m going to set forth the proper way to season and clean pans because I've never found one person who gets it right. I know, you want my credentials.I learned the proper way to season pans and clean pans on the job cooking 10 hours a day 10 days in a row, 25 weeks a year. The mindless repetition of my job taught me how pans take heat and how to clean them.Oddly enough,I discovered my pans worked better longer when I DIDN'T clean them with water.Wiping them out with dry paper towels while the pans were still hot was the quickest easiest way to clean them.I noticed they didn't get that tacky yellow tar that has to be scrubbed out of a pans.Being that I sell nonstick this was a revelation because tar is the enemy to nonstick pans.Tar causes sticking even in nonstick pans. So,there was an even larger revelation to this because it applies to all cookware except cast iron which has to have tar on it to keep it from rusting.

First, enamel is porous and these pours MUST be treated a few times with oil so food doesn't deposit into the pours which eventually would damage the surface of the pans.

The seasoning process does two things. It deposits the oil in the pours but more importantly it teaches you about how the pans take heat. It creates a learning curve and brings you way up the curve. So don't dismiss the process.Cast iron needs very little heat to get hot.Remember that.

Warm the pan on low heat and pour about 2mm of olive oil in the bottom of the pan and wipe it all the way up the sides with a rag. Swirling the hot oil up the sides is the easiest way to do this.Add more oil if needed keeping at least 2mm in the bottom at all times. While massaging the warm oil around the pan with paper towel or rag be careful not to burn your fingers. Olive oil means olive oil. Low heat means your lowest setting. Do this for at least five minutes on low heat all the time massaging the oil all the way up the sides. You never want to smoke the oil because that means you are burning oil and depositing carbon in the pours of the pans. The oil should only shimmer a little. Pay attention. Watch for the shimmer of the oil. Now after five minutes turn up the heat to medium-low always swirling the hot oil up the sides to the rim.The pours are still opening even though you are now bored with the process. After ten minutes turn off the heat and keep massaging and swirling the oil as it cools. Wipe dry and do NOT wash. REPEAT at least ONE more time before cooking. Now, personally, after the two olive oil treatments I buy a whole duck and render duck fat in every pan I buy for the first cooked meal. It's a right of passage for all my enamel. Yes, I I love duck but more importantly it's the best type of fat for enamel. I don't expect you to buy a duck but duck fat is the best fat you can season a pan with after you do the initial olive oil treatments. And, it will put you at the top of the learning curve. What you will learn during this process is how hot the pans get and you will notice a medium-low flame on cast iron goes a very long way. Medium heat could almost be very hot and you will probably scorch food if you don't pay attention.

Always wipe dry with a paper towel and never pour water in a hot pan to deglaze. That forms tar in the pan which is gummy and eventually turns black. Oil is not water soluble so dismiss the deglazing myth. Once cool wash in warm soapy water and dry immediately.

In closing always wipe a tablespoon of olive oil in a cold pan before cooking and always wipe clean, as much as possible, while still hot. Do not be worried about a mess still being in the pan even after you wipe it with a dry paper towel.Wiping the pans is important because it removes a lot of material that WOULD end up becoming tar.Every little bit removed while hot will help. Then later, after the pan has cooled down to room temperature wash in warm soapy water. They should have a beautiful shine to them.Good luck.

I bought two of the 8" pans in July 2011 and was initially very happy. After a couple of months I began to notice that the middle of one pan was swelling, so that oil or sauce did not cover the middle of the pan unless it was a quarter inch or more thick. One flat, one not.I assumed the in-laws or someone must have done something wrong.

On 12/30/2012 I decided to try again since they look and feel very nice. This time I tried a couple of the 9.2" pans.Upon arrival i immediately tested the pans for their "flatness".I poured the exact same amount of water in each and once again, one is flat, one is not. They both have very different dry/wet patterns...exactly like the 8" pans before.

This must be a flaw in quality and unless you like to roll the dice and try to get the flat one, I would go elsewhere with your decision. The amount of oil to cover the entire bottom of one pan is exactly twice the amount of the flat one.Not the way anyone I know wants to cook.I will move to return the new 9.2" and will let you know how it goes.

Cuisinox Gourmet 8 Inch Frypan

Cuisinox Gourmet 8 Inch FrypanI was sent the wrong item twice, they kept sending and insert for a double boiler instead of a small fry pan, finally I cancelled it

When this was fourteen dollars and change, I ordered it thinking"It must be awful."It's actually quite an amazing pan, and I wish I'd ordered two. It's the prefect size for doing small things, while you are using larger pans on the other burners.I just love the construction, and the heat transfer. There don't seem to be any cold spots, and it cleans up well. It's a really nice heavy weight.
