Anolon Nouvelle Hard Anodized Nonstick 12" Deep Round Grill Pan

Anolon Nouvelle Hard Anodized Nonstick 12' Deep Round Grill PanThis griddle is NOT part of the Nouvelle Copper line, despite it's Amazon listing. So it is NOT suitable for induction cooktops.I.E. It does not work on an induction cooktop.Maybe it's great on every other cooktop, but on induction, as it is advertised to work on it's a big fat ZERO.Now I will return it.

This pan does not have the copper/aluminum/stainless steel bottom like the rest of the Nouvelle line.

It is andonized aluminum and much thinner that the other pans in the set.

We love the set, but returned this pan.

The griddle pan is the same.

I thought Amazon had sent the incorrect pan since it did not look like the one in the photo which shows the expected stainless/copper bottom that all the other pieces in this collection do have. I contacted Anolon (800-388-3872)since this pan is not listed on their website and they confirmed it did not. I have the Anolon titanium grill pan, so since it doesn't have the desired bottom I did not need this one. Since I like the titanium one, I'm sure I will this one somewhat better due to the different handle and being able to use metal utensils. Also this line is not dishwasher safe and the titanium line is and has held up very well since my purchases made in 2007.

I received the grill pan as a Christmas present. The pan is extremely sturdy but not too heavy. The handle is wonderfully designed and easy to hold.I am also impressed with the depth of the pan.A lot of the other grill pans aren't very deep and the grease ends up going everywhere. So far it is the perfect grill pan.

There are 2 items Anolon Nouvelle products that are specifically copper bottomed this grill plan and the 11" griddle. They have the other features of the Nouvelle Copper Line but are not suitable for a an induction cooktop.Amazon appears to have now updated the description of these two items so they no longer claim to be part of the Nouvelle Copper line. All that said this is a good pan.It is lighter weight than the Nouvelle Copper pans because the laminated bottom layer is missing and some will see this as a good thing. For grilling vegetables or meats this is a nice addition to you your set of pans.

Lodge 10-Inch Cast Iron Skillet

Lodge 10-Inch Cast Iron SkilletI'm a 47 year old bachelor, a pretty darned good cook & entertainer, and I just cannot believe that it took me until about a year ago to discover the joy of cooking in a properly seasoned cast iron skillet; something that my Great-Grandmother knew 100 years ago. I decided to buy one just to try it out on a great looking Pan Seared Rib-Eye Steak recipe that Alton Brown of the TV Food Network featured on one of his programs (you should still be able to get the recipe on the foodtv.com website). His technique for the steaks just didn't work right in aluninum or stainless steel. After getting the skillet and seasoning it, I again tried cooking up the steaks. Incredible. After cleaning up the pan with a little hot water and a scotch-brite pad, then heating it up again until thoroughly dry and applying a thin coat of oil with a paper towell, I left it out on the stovetop to cool of overnight. The next morning I tried it on a couple slices of bacon and fried eggs... the eggs didn't stick to the pan! I was amazed. Good-bye to "disposable" non-stick pans. Since then I've purchased a few other sizes and find myself using cast iron skillets for almost everything, with good old-fashioned sharp metal utensils, the cast iron is virtually indestructable (cast iron cookware is not recommended for highly acidic foods). Now, don't get me wrong, I'm not about to give up my favorite copper Evasee, or non-stick omlette pan, or clad stainless steel saute pans & stockpots, or heavy Le Creuset French ovens. But my Lodge cast iron skillets have become an integral part of my cookware, and the 10-inch skillet is the perfect all-around size, in fact I now consider it indespensible. And... if you ever do "hurt" the skillet, just scrub it up good with steel wool or a scotch-brite pad and plenty of scouring powder, then put in through the "self-cleaning" cycle of your oven (or bury it in the coals of a campfire overnight) and it will come out looking just like new (be sure to re-season). Enjoy!!!

This pan is the second most used in my kitchen, after the cast iron dutch oven also by lodge. I've used it for pancakes, eggs, browning meat, stir fry and probably a great many things I've forgotten. It is easy to cleanand essential for my kitchen.

I use this pan all the time.Every good thing you've heard about cast iron cookware is true.I prefer uncoated pans like this to others like Le Crueset because they impart extra flavor; and, let's face it, onceseasoned, they look so damn cool.It heats evenly and quickly.Properlyseasoned nothing sticks to it.

I purchased mine almost 16 years ago at the suggestion of my parents soon after my wedding. There is nothing better for making a batch of crusty cornbread or searing meat. When we began camping, it got moved to the camper.I'm about to purchase a second one for the house as well as a few more Lodge pieces for both the house and camper.Clean-up is a breeze hot water (no soap!), a quick scrub, wipe it dry and coat it with a light layer of cooking oil or non-stick spray.I can't believe I've waited this long to buy more pieces!

I purchased this for my Mom for her birthday and she loves it.It's a nice size as well as nice quality.

UPDATE:

I purchased this grill for my Mom for her birthday and she was pleased with how big it was so I decided to also purchase one for myself from Cuccinabella. THAT was a BIG mistake purchasing from them! My grill looked new but the thermostat plug obviously wasn't new! The box for the thermostat had oil on both ends AND the unit had a ding in it where you adjust the temp, not to mention the plug-in part was all discolored from being used. Upon receiving and opening the box I was very upset and contacted seller as well as Amazon to report this and requested a full refund as well as them to pay for the return shipping costs.

The company wrote me back the next day stating "I am sorry to hear that. We normally ask for pictures of the item to see who was in charged of packing it the condition but we trust you are being honest so I just went ahead and issue your refund you should see it back to your card that you used to pay for the grill in 1 day. As far as the grill as a token for our mistake we will let you keep it. Again sorry for the inconvenience, we noticed that you bought another grill from us before so we wouldnt want to lose you as a customer for this mistake. Please keep the grill as a token for our mistake".

I thought that was an honest attempt from the company to right a wrong. That was until the seller got caught trying to deceive me on only paying me $35 and not the TAXES and SHIPPING/HANDLING fees associated with the purchase. Total purchase cost of item, taxes, and s/h came to $51.89. Since they had to refund me yesterday for the full amount, I received a UPS mailer from them this morning now wanting the item returned. I just want to make others aware of the bad business practices, order at your own risk!

Cuisinart Cookware Set - 14 Pc.I am transitioning my kitchen over to Cuisinart brand in products this company makes.

This is a magnificent cookware set. I would love to speak of this product 10 years from now and it's durability.

It's only about $160 at Sam's club for the exact same set. My husband and I were there today contemplating buying the set, and after seeing the price here, I think we'll definitely be going back to buy it soon!

always wanted stainless cookware and finally got it!i really like it but gave it 4 stars b/c the lid handles get hot and u need to use a potholder to remove.also, does stick for stuff like fried eggs, but i have a teflon pan for that.takes longer to heat up, but then cooks better on low heat.clean up is easy with plastic pads. it says not to use steelwool but i have used on inside bottom and no problem.will never use on outside!! looks great!i love that shine!!

We put the 12-Inch Stir Fry pan on our wedding registry and were so thrilled when we received it! It is a great pan! The size is perfect for when we have guests over. We loved this pan so much we bought the entire Circulon Contempo Red Set with our wedding gift cards!

We've washed the pans by hand and in the dishwasher multiple times and have not seen any wear on the pans. We love them! Great price too!

This item says it is induction compatible, but not really. Our high-end Bosch induction cook top has worked with EVERY SINGLE PAN we have used on it (that is induction friendly) EXCEPT this one.Even the $10 Walmart generic pans work better. This pan only works on a single "burner", the smallest of those on the stove which is also closest to the wall. That means the over-sized pan has two major problems for us:

1) The pan cannot be easily manipulated because it is too close to the back wall.

2) The pan does not get nearly hot enough.Even on 8-of-10 (which is normally VERY HOT for most pans) this thing barely gets warm other than dead-center in the bottom of the pan, a 6" diameter area. The sidesof the pan, which is the whole reason to get a pan of this style, stay cool enough that nothing cooks if it is not touching the middle center of the pan.

Maybe this pan works on other induction tops but definitely not ours.Sadly I cannot find the cardboard logo wrapper that was around the pan, so we dropped $40 on something that is useless to us.Maybe I can send it to my mother's place and it will work better on a standard electric range.

Sadly disappointed. It looks great, but I don't but pans to look at them... in fact they hide in the cabinets under the cook top, so this really serves zero purpose for us.

Verdi 11' Green Ceramic Coated Nonstick Fry Pan w/ Glass Lid by Amorè, Leaf Pattern Texture, German GREBLON® Coatingthis is a big fry pan.the non stick is amazing.a fried egg comes off the surface easily without any fat.i also love the lid but it does require a little assembly and has one translucent silicon part that looks like part of the packaging so don't throw it away or lose it.also, the handle, once it is properly installed, is designed to turn.i find this unsettling and prefer a rigid handle. lastly, the nonstick (telflon) around the edge where the metal lid touches it wears off from the metal lid.but otherwise it works great and is well made.i wish a smaller one had been available.

Calphalon Contemporary Stainless 13-Inch Flat-Bottom Wok

Calphalon Contemporary Stainless 13-Inch Flat-Bottom WokI use this wok on an electric range.I find it works well provided I turn the heat all the way up to high on a big burner. The problem, of course, is electric stoves, not the wok.As far as cooking goes it is great. As long as it is well heated before you start nothing sticks, the bottom heats evenly, and with a little bit of stainless steel polish it stays looking good as new.My one complaint is that a wok really needs a good lid for simmering sauces. This one does not include a lid, and I have not yet found anything that I can use for one.

I think this is like an American Chinese wok, because like one of the reviewer said, it has a small flat bottom. (That's what my parents prefers, because that way it would NOT move around on a stove. Seriously, we brought a bottom ring for out previous Chinese wok, but it still moves around!) So far, this is one of the best wok i seen!

Good: VERY easy to Clean, and easy to use

Good: The height of the wok is perfect for steaming overnight dish (trust me, my dad even go as far as to measure it out himself before purchasing it at our local Macy's store!)

Bad: it's kinda heavy (to me at least, because my parents didn't think so, i guess i just need to practice more on using it!)

I have been using this 13" inches wok about a year.It is a great product for the price. If anything sticks after cooking; just pour water in it and boil, let the water cool down then clean it.Some people might

think is too big(little bit too big for the standard sink) and too heavy. It is a quality product, I think it will last at least 20 years.Unlike nonstick cookware, stainless steel does not react with the food in high temp.It is good for your health. This wok is best use for cooking Asian vegetables.Remeber to use the bamboo turner.I am still looking for the lid.

I don't have much to add about the wok. It's great but takes a little time to get used to. You don't need the flame as high as on an inexpensive wok as it conducts heat really well. But I was too conservative at first, cooking too low.

One comment was the lack of a lid. E-mail or call Caphalon and get a lid to fit that matches the set. No part number on the lid I just got, but a label on the box says JR1613001. That's the glass lid with a stainless steel ring and handle. Fits perfectly and makes it perfect as far as I'm concerned.

Range Kleen Stainless Steel Non-Stick Open Fry Pan with Quantanium Coating

Range Kleen Stainless Steel Non-Stick Open Fry Pan with Quantanium Coating, 10-InchThis is a good value for a large non-stick pan.The interior coating is excellent, and the exterior is bright-finished stainless. It has plenty of depth and works well in my kitchen.

The only caveat is that it is very lightly-built.The handle is securely riveted to the pan, but the material is thin, which leaves it feeling fragile and floppy. The pan works great, but is absolutely not "commercial chef" level construction.Suitable for amateurs like me..

This item is very lightweight and I expected them to be much heavier for the price. Also, the handles are hollow and for $40, I do not believe they should have been hollow.

Tramontina 3pk Long Life Saute Pan Value Set

Tramontina 3pk Long Life Saute Pan Value SetWe love these non-stick pans, and the price for three of them -and the variety of sizes -is great. Given that most non-stick pans have a fairly short life of several years, when these wear out, it will be easy to replace them without a lot of regret, as we experienced when the high-priced pan we got for our wedding started to rust and flake.

We bought this set over one year ago. The cushioned handles are comfortable for small or large hands, and clean well. This brand of pans has held up better than any other set we have used in the past. We mostly use the small pan for our eggs in the morning, and use very little (if any at all) non-stick spray. A previous reviewer mentioned seasoning the pans per America's Test Kitchen. That sounds like a good idea that could not hurt anything. Maybe it will make these pans even better. These pans were not made in a Communist (China) country, the set I have was made by my friends and neighbors. I would buy this set again for sure.

Buy Tramontina 3pk Long Life Saute Pan Value Set Now

These pans are a very good product, made in our own country.I've had mine for about two years of daily use (often breakfast, lunch and dinner) and the non-stick coating has shown no signs of degradation. This is in contrast to my Calphalon pans, which were much more expensive and barely last a year.I do not baby these pans.I use them and toss them in the dishwasher. The only Issue I've had is that the handles on the smaller pans get a little loose from time to time, but I just tighten the screw. One of these days I'll apply some Loctite to make it a permanent fix.I think my big pan has the handle riveted, and no issues with that one.

When these wear out (no idea when that will be), I will certainly buy some more.

Cuisinart GR-55 Griddler Stainless Steel Nonstick Grill/Griddle Combo

Cuisinart GR-55 Griddler Stainless Steel Nonstick Grill/Griddle ComboGriddle cakes and sausage, grilled salmon and vegetables, grilling burgers and toasting buns, the Cuisinart GR55 is a versatile compact counter top grill and griddle. The two double sided cooking plates are Teflon coated steel; they're easy to install and remove, and because the plates are non-stick and removable, they're a fast clean. I enjoy the fact can use both grill and griddle at the same time. This is great for cooking for my family, too, because it has plenty of grill surface. The plates always heat up evenly and quickly, and the temperature control gives me a ridiculous amount of control over my food's preparation. The excess grease, when using the grill side of things, runs off into a collection troth that neatly hides and stores inside the grill between the two plates. When releasing the spring-loaded plates from the grill, the rest grease gets collected in the troth as well. It's great to pull out on a lazy Saturday morning or for a quick meal before going out. I'm thoroughly impressed.

I first bought a Cuisinart GR-4 Gridder .But the instructions were absoulutly horrible(and I am a lawyer and know the art of understanding the written word). Also thte thing was bulky and awkward with the hinged top. So I sent it back and bought the GR-55 Gridder combo. Glad I did and wonder why I did not own one of these much sooner. Instructions are very easy to understand, everythingis intuitive in the operation, and it is very compact given the size of the cooking area. Grill plates are reversable so you can grillor griddle or any combination of the two. Heat is excellent and although I use it on top of our glass top stove, with the vent on low-I do not think I really need the vent. It is as close to smokless as I could hope for. Clean up is effortless . I have done skinless chicken, tenderloin steaks grilled cheese sandwiches, vegtables , shrimp and scallops and everything has turned out perfect.

I would highly recommend this model Cuisinart indoor grill and in fact am thinking of getting one for my son.

Only thing I would caution about is that heat up takes a few minuets longer than I am used to on my outdoor grill and be sure to give it plenty of time to cool down before you try to remove the grill plates for cleaning.

Buy Cuisinart GR-55 Griddler Stainless Steel Nonstick Grill/Griddle Combo Now

I thought I would love this, given the fact that there are two halves that can be kept at different heat settings, but once I was able to get a good look at it, I realized that the design went off the rails somewhere. Each pan is spring loaded from underneath, causing two major problems. The pans are tilted, so if you cracked an egg on them, it would run right down and out the grease drains.Secondly, each pan has to be clipped in (because of the spring loaded design) and the clips are made out of PLASTIC!Plastic clips will not survive in contact with metal hot enough to cook food.I am extremely disappointed with this, especially that I have to pay shipping to return the thing.

Read Best Reviews of Cuisinart GR-55 Griddler Stainless Steel Nonstick Grill/Griddle Combo Here

We've had the grill/griddle for about 3 weeks and it performs very well.Pancakes come out perfect as the griddle heats very evenly and quickly. We have not yet used the grill side but will soon.

The only reason I did not give it 5 stars is because the drain holes really prohibit you from making scrambled eggs on it and if you want regular eggs you will need to move the egg to the far left or right or it will make it's way to and down the drain holes.

I'm sure because this is a grill and a griddle that they had to have the drain holes for grease when cooking burgers, etc. so I can understand the need.Just be aware that if you're looking at this for mostly griddle type function then I would go with a larger full blown griddle. If you plan on needing both this is a grate machine.

We bought this to replace a 10-year old Hamilton-Beach that died on us. It cooks evenly and well. We grilled sliced summer squash, and each piece browned the same, no matter whether it was: in the center or at the far edge. Steak seared nicely, and cooked well. It's not as hot as a gas or charcoal grill, but then the Cancer Society is warning people about cooking meat at too high a temperature. The best part is that the heating element is separate from the grill plates, and the plates fit nicely in the lower rack of our dish washer; that and the included scraping tool make clean-up a snap.

Rachael Ray Stainless Steel II 6-Quart Covered Chef Pan with Helper Handle, Orangeawesome for the induction cook top! Like a slow cooker. Rachael Ray is the best! Love her show and food ideas!

I had bought the set that this matches but it did not come with this pan so I decided that I would pick this one up separately and after looking everywhere locally found that I could buy it here competitively priced.

I love this set but as anyone that has ever cooked with stainless steel will tell you; it's not the same as cooking on something non stick and requires more attention to heat etc…

I love the handles; they have a silicone or similar material covering the stainless handle and are angled in a way that makes pouring much more comfortable than most department store pots and pans. The clear lids are great and have similar handles so you can see what your cooking and not burn your fingers when removing the lids.

Calphalon Tri-Ply Stainless Steel Omelette

Calphalon Tri-Ply Stainless Steel 10-Inch OmeletteThis pan is a fantastic workhorse. It's the 'go-to' pan in my kitchen. It goes from stove-top to oven/broiler without missing a beat and without doubts from the cook. Heats evenly and quickly, and the handle stays cool (on the stovetop), unlike some much more expensive copper pans with cast-iron handles I've used. This pan meets or exceeds the French & Belgian copper I've used, in terms of kitchen performance; the only place it might rate 2nd is in the aesthetics area, if one prefers a copper/cast iron look and European pedigree. The Calphalon was made in China.

But honestly, the Calphalon pan is one I never have to second guess it does exactly what is asked of it.

For anyone with qualms about foods catching in the pan, do the following:

1. Pre-heat the pan on MEDIUM heat prior to putting any food/oil/butter in it. Once the pan is hot, one can add the food. For example, I've put raw, unseasoned steaks in this pan once it's hot. The meat will adhere for 20-30 seconds until the pan-side is seared, then can be moved, turned, etc. quite as easily as if the pan had a Teflon coating. Eggs also are loose, as long as they've been put into a hot pan that has had a bit of butter added. A fried egg slides around after 20-30 seconds as though it was on ice, as long as one has begun with a HOT PAN.

2. This pan heats up nicely at 60-75% of the burner heat capacity; i.e., if your burner goes from "0" (cold) to "15" (max heat), you shouldn't need to turn it above "11" to get a nicely heated pan that will respond to your culinary desires. Remember it goes to "11."

3. Throw this pan into the oven at 300-F for hours, or under a hot broiler for 10 minutes. And forget about it I have had no warping or any problems whatsoever.

4. The pan cleans easily. Let it cool. Then any stuck-on bits wipe out with a splash of water. If something has really caught, scrape the stainless steel surface with a flathead screwdriver; it will be fine. After several years, I have some superficial scratches on the interior surface, but it's still shiny. The bottom of the pan is slightly tan in places, but again it's just superficial surface discoloration (much less than an All-Clad pan I have, which shows much more brown heat-scarring).

In sum, Calphalon has a fantastic 10-inch pan here. Life is too short to fret over a frying pan anyway.

If you want one, get it. It can probably deflect a hail of bullets too, if an angry mob should appear or one could just fry up some bacon in the pan and toss it to the mob to placate them.

You have to follow these instructions if you want to cook in a stainless steel pan like a pro (instructions from my father :p):

1. Put the pan over low heat without oil in it for a while; a while is usually until you can drop some water on it and see it evaporate pretty quickly.

2. Pour enough oil to coat the bottom and since the pan is hot, you want to make sure that you add your food after you've swirled the oil around in the hot pan a few times to coat the bottom.

3. Make sure there's a little bit of oil in the pan at all times, otherwise you're going to end up burning the oil on the pan.

4. After cooking remove the food and rinse off the pan under hot running water, right away; don't use cold water as it might warp the pan.

All in all, I love this pan, but I would really love it if it came with a lid; I know, it's a fry pan, but I can cook and I want a lid for my more creative projects!!!

Buy Calphalon Tri-Ply Stainless Steel Omelette Now

I own several pans from the Calphalon Tri-Ply collection and believe these are great pans for many uses.Anyone saying these pans don't clean easily is clearly doing something wrong. These pans are not "non-stick" so yes, there may be some elbow grease involved from time to time, but good luck searing a piece of meat with a non-stick pan. These pans do get hot easier and faster than some cheaper pans, especially because a lot of cheaper pans only heat the bottom of the pan by heating an encapsulated disc bonded to the bottom where as these pans heat throughout the entire pan. Make sure when using these pans you get them nice and hot and make sure you have some fat in the pan before adding food.Bar Keepers Friend works great at removing residue stuck on the pans that dish soap usually isnt able to remove on its own.

After using this wonderful pan one can only conclude that negative reviewers, despite their statements to the contrary, must have misused their pans in one way or another. No pan, no matter how well-constructed, can survive abuse unscathed.

I had been using a good-quality hard-anodized omelet pan for my fried eggs.Seemed OK, but I decided to try a stainless steel pan and chose this one.I am delighted I did.The pan has good weight to it, and is beautifully constructed with a brilliant finish.

I put a little butter in the pan over medium-low heat. The butter melted more quickly and evenly than it did in my non-stick pan.I cracked two eggs and continued cooking over a fairly gentle heat. They cooked thoroughly and evenly. After gentle prodding with a turner they slid around the pan better than they ever did in the non-stick.I never had to turn the heat up high at all.

I am sold and it cost me:I ordered replacements for all sizes of my pans.I will, however, keep this pan as a dedicated egg pan.I think that, along with careful cooking and clean-up, will insure a long life of good service.

I am a sudden fan of Calphalon Tri-Ply Stainless.I recently purchased an All-Clad pan and had to send it back, because the quality was terrible. The bottom was actually convex. So, I bought a Calphalon 10-inch Tri-Ply just to try it out.I didn't expect much.Wow, was I wrong. This pan is great, and it costs comparatively nothing.I really don't understand why this pan isn't more popular, and All-Clad gets all the press.

DeBuyer Mineral B Element Iron Crepe Pan, Round

DeBuyer Mineral B Element Iron Crepe Pan, 11.8-Inch RoundThis pan is amazing.Beautiful smooth cooking surface. It truly is non stick. You can prepare scrambled eggs, hashbrowns, etc. and there is no sticking.Omelets were a dream to make.Easy cleanup.Handle does not get hot when used on the stove top.A solid pan, not too heavy.Should last a lifetime.

Heat up time is extremely quick compared to regular stainless steel pans or non stick pans. You can get a nice brown sear on food very quickly.Pan also goes from the stove top into the oven or under the broiler to finish your dish.

You won't believe how fast the cooking time is with this pan.

If you are into enjoying making authentic dosas (South Indian crepes), I highly recommend DeBuyer organic, mineral, environmental friendly, good for health iron pan (not cast iron).Masala dosas made on this pan is so authentic, reminded me of my mom's dosas in my childhood.Even my mom doesn't make such dosas these days because she also uses non-stick pans :-)

This is a "one size fits all" pan, you could use this pan for multi purpose, like making Indian wheat breads (rotis, parathas), for crepes (dosas) and for any shallow frying.

If you plan to get it follow the instructions for seasoning before getting started. It says the more you use it gets better with its non-stick properties.I haven't tested it yet as mine is very new.As it says on the mini instructions booklet that comes with it, it is supposed to be good for health as it adds iron value to the nutrition with its pure/natural iron property.

BonAppetite!

My wife got a DeBuyer Mineral B frying pan for her birthday. I was very sceptical about an iron pan without non-stick coating: I was sure stuff would stick and it would be a pain to clean. But I was wrong, very wrong. Preparing the pan for first use was very simple: just followed the instructions, it took 10 minutes. And NOTHING will stick to these pans, I've never seen a non-stick pan perform this well. The DeBuyer frying pan is by far, hands down, the best frying pan I've used. This is why we ordered this crepe pan too, which turns out to be just as good.

The crepe pan has a low rim which makes it easy to flip the crepes. The pan is light and therefor easy to handle. It is sturdy and the bottom of the pan is extremely flat. I don't see this pan warp unless abused. The handle is coated to prevent rust, but it will get warm/hot. Nothing sticks to the pan, it's really impressive.

We got rid of our coated non-stick cookware many years ago, and switched to using only stainless steel. We've had good luck with the Emeril stainless cookware, which has been durable and useful. For example, when using butter in the stainless Emeril pan, I can cook an omelette and have it release by just jostling the pan.Not really non-stick (stainless never is), but it worked well enough.

Until now, that is.We're cutting back on our use of butter, and have taken to using a light mist of oil (like grapeseed) in our cooking. However, using oil on stainless simply does not impart the same slippery effect as butter (or lard), so eggs and other foods stick instead of releasing.

After some investigation, I found these DeBuyer iron pans, which are thinner and lighter than cast iron, but which claim to have exceptional non-stick capabilities without any added polymer coatings. And they work GREAT.These are less heavy than cast iron, but are still quite substantial, made from very thick and durable iron.

They come with a coating of bees wax, which prevents rusting during storage and shipment.Removing the bees wax is a bit of a pain, and I resorted to filling a sink with boiling water and submerging them to melt off the wax, then wiping away any residual coating.Even though this initial cleaning is pain, it's a one time thing and it's a natural coating, so still preferable to polymer-based non-stick cookware.

The next step is to season the pan, which involves putting a shallow layer of oil in the pan, heating it until the oil begins to smoke, then pouring it out. This step was relatively easy, and again is a one-time thing.

After that, the pan is ready to use.The first thing I made was a thin, five egg omelette, cooked with only a thin misted layer of grapeseed oil in the pan.The eggs released easily, cooked evenly, and the omelette came out perfect.

The manufacturer recommends cleaning with hot water and a sponge (no soap, no abrasives, etc), and they clean up well that way. Then, similar to cast iron, you wipe a little oil on them and put them away until the next use.The oil prevents rusting if you don't use them for a while. These pans are similar to cast iron in that they season as you use them, and the non-stick properties get better the more you use them.

Are they as non-stick as teflon? Not quite, but close enough to work for almost any typical cooking need. Are they more trouble to clean and store?Yes, they do require a little care and feeding. Can you put them in the dishwasher?Well, you can, but it will strip the seasoning and encourage rusting, so you don't want to do that.

However, they are made of iron, and that's it.No polymer coating to flake off and ingest. No poisonous fumes to emit and cause harm (check the warnings for using non-stick cookware around birds, for example). And we're able to cook everything with a thin layer of misted oil, and so far nothing has stuck even slightly. We highly recommend this cookware, particularly if you're looking to get rid of polymer-coated pans due to potential health issues.

Loved this pan with the first use. Made sure I followedthe simple guidelines to prepare the pan. I made one of my best batches of swedish pancake. Basically slid off the pan. This pan worked beautifully on my new induction cooktop.

Fissler Blue Point Pressure 2.2qt Skillet w/ Lid

Fissler Blue Point Pressure 2.2qt Skillet w/ LidOriginally got a set of this pan, a larger one and a steamer insert. Got another when I thought I'd overheated and ruined the first. But cleaned it up and now have two smaller ones.

This pan performs well, but is also a great size to cook smaller items.

Have used a number of different pressure cookers, and Fissler's seem to perform fantastically. This size is especially great performing, and never burns on the bottom. Though I use an induction range, which heats up this pan very quickly.
