If you are already familiar with pressure cooking then Kuhn Rikon is the best in class, and if you are already aware of Kuhn Rikon, there is nothing more to add. If the size is right for you, it will serve many, many years.I've had a the 2L model for four years, and never had to replace any parts.I left that one at my second home so I will never be without one, and just purchased this 2.5L here. What seems like a loose screw on top is a simple, responsive and sturdy pressure release valve.The plastic handles would only melt if one were using a flame that extends beyond the sides of the pan.By heating it up at medium heat and reducing it to extra low once full pressure is reached, the flame will be nowhere near the sides of the pan, especially on this wider 2.5L model.This takes only a couple of minutes so I see no need for a roaring flame.Dual handles allow you to move the pan while hot, or hold it to run cool water from the tap over the edges for immediate pressure release when desired.The base is very thick so there is no burning of contents.The steam inside reduces all sticking and the lid comes off quite clean.I have electric rice cookers but almost always use the Kuhn Rikon instead because it is much faster and the texture of the rice is better. Only 25 minutes for brown rice, 5 minutes for white.

Right from the get-go this pressure frying pan worked great. I felt sort of on my own because there aren't a lot of pressure frying recipes out there. But I am an experienced pressure cooker user so I felt fairly confident jumping in. One of my favorites is slow-roasted tomatoes, 2 hours or so in the oven 7 minutes in the PC frying and I couldn't tell the difference. A beautiful job of frying potatoes, 5 minutes prep, 2-3 minutes browning potatoes, 5 minutes PC and you're ready to go. In other words you can brown and pressure cook with oil with this pan and when you add water, you add a lot less than with a regular PC. it's a well-made unit which you would expect for the price.
Those are the pros, the cons:
Instruction book inferior like many from Europe. Almost nothing about the frying pan and I find some of the suggested times to be a bit off too. Recipe book mixes in a few frying pan recipes with regular PC recipes which makes them hard to find. They need a separate frying pan instruction book and separate recipes for FP.
There is a little safety valve which comes unattached to the top. Difficult to find clear instructions on how to attach and once attached has a tendency to fall off. Poor design.
because of 'dimpled' bottom of FPPC no trivet is included as with other KR PC's.( Dimpled bottom supposedly acts as a trivet.) But some of FP recipes call for a trivet so it should be included.

I decided to buy these after I got tired of having food burnt "in the middle" due to the pan being extremely hot at the center. I value nonstick surfaces for the easiness on cleaning, but I also had bad experiences in the past with scratches and losing the nonstick properties after a while.
I've owned this set of pans for a little over a year now, and it is amazing how they are still as good as their first day. The nonstick surface is still new, and the pans are very easy to clean, with the right weigh and thickness that allow for a decent distribution of heat.
If you are not a professional cook and need a set of reliable cookware for daily cooking, I highly recommend this. They are not extremely expensive as the professional-grade cookware in the market, but I found out they perform almost as good (no noticeable difference for an amateur like me).I have a large stainless steel set of cookware and had some odds and ends of non-stick for many years.I wanted to replace my old non-stick but didn't want to pay the price of some of the higher end brands.This cookware has a nice weight to it and fits the purpose just fine.I've been able to do some required high temperature cooking without sticking or burning.The only drawbacks for me would be that I wish the set included a 12" frying pan (w/lid) in lieu of the dutch oven.Also, it would be nice if it was dishwasher safe, but it is so easily cleaned that small negative shouldn't deter a purchase.A couple of comments on other reviews prompted me to provide some more information about the T-Fal Signature Hard Anodized 12 Cookware Piece Set.
The set includes 8 and 10¼ inch sauté pans, 1, 2, and 3 quart covered saucepans with lids, a 5 quart Dutch oven with lid, a slotted spatula, and a serving spoon. The lids are made of tempered glass and each has a small hole to allow steam to escape. The lids from the Dutch Oven and the 3 quart saucepan also fit the 10¼ inch and 8 inch sauté pans. The sauté pans are equipped with the T-Fal Thermo-Spot heat indicator which changes appearance when the pan reaches proper cooking temperature.
A generic set of Use Instructions is available in paper form in the carton and in pdf form at T-Fal's website. It provides information about seasoning the cookware a necessary step to ensure longevity.
You may register your product at their website or by mailing in the card that comes in the carton. Warranty registration forms ask for the UPC code so you may wish to write it down before discarding the carton.
The set I received today was made in China.
(When purchasing sponges with scrubbing surfaces or other scrubbers, make sure that they are approved for non-stick cookware. I recently learned that lesson using different cookware. Alas.)

I was but wasn't surprised by all the positive ratings I see.
It's true!
Drawbacks:350 degrees max.NOT dishwasher safe.No cutting or whipping.Also, my dutch oven has a spot by the rivet where the non-stick surface coating is not consistent, as if it had been scratched, but I have not noticed any peeling or ill-effect from it, so I haven't even contacted them in regard to the warranty.
I rated these a 4 because: They deserve a 4.
They are very nice pans, don't get me wrong, they are not HIGH END pans, but they are GREAT PANS FOR EVERY DAY USE.In my case I wanted pans that were not too heavy and were easy to clean up.I have owned a set of Kirkland (Costco) Hard Anondized Cookware for years, they are EXCELLENT PANS and very easy to clean, my problem with them is that the big pots and skillets ARE VERY BIG AND ARE HEAVY.Now that we are empty nesters and not getting younger those big, heavy pans will be reserved for things the somewhat smaller (esp. the skillets and stock pot) T-Fal pots cannot accomplish.
These T-Fal pans look like the perfect solution to ease of care and not too much weight to haul around a lot.They are non stick which requires special attention, if you mess that up it's over far as I'm concerned, but so easy to clean!I won't even stack them w/o something in between for fear of scratching them.
I hope my review helps you decide if these are the right pans for you.

PS the handles are nice but don't cook them, 350 is max in oven.There are permanent vents in the lids, which is fine by me, less boiling over!

Update, October 2008. After two months of non stop use, some of the non-stick surface is starting to bubble. Read the warnings carefully, it tells you to not let it soak in water. I didn't let it soak, but I let food stand in it sometimes overnight. I've stopped doing that, and there is no more deterioration of the surface. I will still rate it highly, and be more careful in the future. I guess I just didn't think a non-stick surface could be harmed by food sitting on it over night.Live and learn I guess.
Update. December 2008. Well last week I scraped off the rest of the "non-stick" coating. I was worried that if I didn't I would be eating it. It started coming off in large pieces a few weeks ago. So, the coating is not very good. I have several non-stick pans and pots that are many years old but still have the non-stick surface intact. Still, the electric skillet works good, but you have to use oil or spray when cooking or it will stick to the pan. Beware, the non-stick stuff they use is NOT what you are used to seeing in a pan. Still use it almost daily though:)
A nifty little electric skillet that fries, braises and bakes! I bought mine for fish fries but use it for much more, especially during the heat of summer since it doesn't heat up the kitchen like a conventional stove does. I think this is my 3rd or 4th of this little 11 inch Presto electric skillet.They don't wear out.I keep giving them away, trying new cookware.My space is too small to accommodate more than one cooking appliance like this.This version of the Presto skillet is a little different from previous ones.Mostly cosmetic.It works great, fits nicely in my small space, is very easy to clean.The nonstick doesn't come off.It's light weight.It heats fast and cooks evenly.Not much splatters on the heating plug, which goes below the handle for some protection.Of course, the whole pan is submersible once the heating plug is removed.

Metal utensil safe and it cleans easilyThis pan was purchased to update my cookware for induction use. It is a solid, well constructed pan with high sides. The height helps reduce splatter, within reason. Heat is distributed evenly and the handle stays cool (the cool handle could be attributed to the induction system, as no heat radiates outside of the cooking surface on the pan).
The price was great and it would be interesting to see just how much difference there could be between this and a similiar style, though much costlier pan.Since durability cannot be attested for without passage of time, and this is a stout pan, I would recommend this pan on all other counts. Enjoy.

I bought this set of cookware in late spring, and I just love it. I cook with gas, and I can turn down the flame to almost nothing and still maintain a nice simmer. It cleans beautifully, though it can't go into the dishwasher (which isn't a big deal). My only complaint, if it actually is one, is that it needed a 12-inch skillet, but I ordered that today. The first time I used the large covered sautee pan I was shocked to find a number of scratches on my cooktop
My husband and I could not imagine how the scratches came to be there as we have always taken care of the ceramic top. this is not a new cooktop and had never been scratched before
Upon turning the sauce pan over we found a sharply etched logo on the bottom of the pan.We have used several of the other saucepans and one of the frying pans without incident, but there is no doubt that the 3 qt sautee pan did leave a deep scratch on our ceramic stovetop.
I now hesitate to use any of the larger pots from this set.

The pots and pans look amazing, with the brown color that is different from your average cookware. they are very durable, I have had them for 2 years now and they look like new, and yes I do cook on a daily bases. Since it's a non-stick set, no scrubbing is needed, I just pop them dishwasher and they come out looking like new. I love this set so much that I am getting this set for my mother this Christmas.

It has been almost a year since I bought these pans and the 8" and 10" are holding up pretty well, but the 12" is not. The coating is flaking in spots and things are sticking to it, even after being freshly coated.I just called to ask about warranty coverage and found out that you not only have to pay to ship it to them, but also include a check for $11 to get it shipped back to you. So I'd be looking at about $25 to get one pan inspected for warranty and replaced. On top of that, I was not impressed by the customer service agent and her unfriendly tone. If I was looking to buy pans again, I would be hesitant to buy this set because I'd expect for the cost of them that they'd hold up longer than a year, that their warranty replacement wouldn't be as costly and that their customer service would be at a higher level.I love this pan.It's a great size just over ten and a half inches across at the top with a very nicely designed slant / curve to the sides that makes flipping things a breeze.Flipping is also helped by the excellently sized and shaped handle good and long at over eight and a half inches and nice and broad so it is easy to hold on to, without being so big or clunky that smaller hands should have a problem.It's also a hefty pan, more so than it may look.Each time I pick it up I am surprised pleasantly by the weight.That weight comes largely from a thick bottom that distributes heat very evenly.The sides are also pretty thick, giving the whole pan including where the handle connects a rock solid feel.According to the company website the pan is made from stainless steel covering an aluminum core that covers the bottom and also runs up the sides.
I think almost any non-stick you can buy these days is going to do a good job at first.This one certainly does.In fact, it's wonderfully slippery.The real question here is about durability, and I can't comment to that for a few more years.The cookware does come with a 25 year warranty.You can see the warranty and register your cookware on their website () if you want.The warranty covers the usual 'defects in materials and craftsmanship' but doesn't specifically mention the non-stick coating, however.
Durability is especially important to me because one of the reasons I like to buy American has to do with the environmental impact of consumer goods.First, I want my stuff to be manufactured with some regard to environmental regulations, and thus I prefer to support American and European manufacturing.But moreover regarding durability, it seems clear that the MOST environmentally sound thing is to not have to buy more products at all.That is, regardless of how 'green' a manufacturing process is, it has more impact than doing nothing and the less something has to be replaced the greener it becomes.The pan that lasts the longest will certainly have a big advantage in the most 'eco friendly' competition.(Cast iron seems clearly to be the winner in any durability competition, but for some cooking applications I prefer this kind of non-stick.)So, kudos to this pan for being made in Wisconsin and appearing so far to be durable.
I'm looking forward to getting the 8" version of this pan at some point, and certainly would recommend this line of pans to family, friends, and... you.

This is not my first one purchased my first one I purchased over 3 years a go, first one still working like new. These pans are so much better then the low (quality Chinese you buy at Walmart even the Name Brand Chinese made) Heat is so much more equal Nonstick works great. The bottom is not flat. I have a ceramic stove top and the pan doesn't heat up evenly.. Also when I pour a small amount of oil it would roll to one side. It is unusable for a flat ceramic stove top.

In the 10 piece set I bought, the bottom of the 10 inch deep fry pan is not flat and it wobbles on the cooktop.I called customer service and was told to ship it to them (at my expense) with a check for $7 (return shipping) and wait 4 to 6 weeks for their evaluation or repair.I don't think this is a reasonable way to deal with a product defect.

They're light weight.They cook evenly.
They clean easily.
But in the end, they're unfit for use on a modern glass-ceramic cooktop. The bottoms are not smooth. They have raised circular ridges that have a certain amount of sharpness to them. If you use gas or old electric-eye coils, no problem. Otherwise, stay away.

I love, love, love these pans.I was looking for something that was not teflon because of the negative health effects I have read about, and this cookware is a wonderful non-stick alternative.The instructions say you can use little (or no) butter/grease etc., but I always use just a touch depending on what I'm cooking, and NOTHING sticks to these pans.They wash like a breeze so no problem not putting them in the dishwasher.They seem to brown more evenly and heat more effectively than my other, cheaper pots and pans.I would highly recommend to anyone willing to spend the money.I am looking to add additional pieces not included in this set.

I've read many reviews on this cookware not everyone is happy with it. As for me it's going well so far. I've had it for over a week. I will be coming back if I have any trouble with it.Aside from the non stick coating working well the biggest plus for this set is the weight. They are not excessively heavy. I have wrist and arm problems and I can't be lifting a pan that weighs a ton to pour something out. Heavy nearly cast iron weight has been the trend in upscale cookware lately. The weight is more similar to that of upscale cookware 3-4 years ago. Heavy enough to be sturdy and distribute heat but not unmanageable. The handles do stay cool on the stove. They are very sturdy but partly hollow which helps them stay cool. I like the eco friendly angle on these. They fact that they use recycled materials is nice.
I'm not 100% sure these are any safer than teflon. How can you be sure if they've just come out with it? Taking the precautions not to scratch your cookware and not cooking on high heats are probably the best precautions you can take. I've tried cooking with stainless steel and I get frustrated with the sticking and the cleanup.
Don't skip reading the directions!
I made sure to read the directions inside the box and the tags on the pans. You cannot stack this cookware it must be hung or you have to have enough space to line it up flat on a shelf. I don't have much space so this is one point that isn't convenient. However it makes sense that you wouln't want to stack non-stick cookware. Obviously you must use only wooden or non stick safe utensils.
You can only cook at medium or low heats with this cookware. High heat ruins it. This means I have to be more patient and wait for the pans to heat up. Once they do heat up they do a great job of cooking without anything sticking to the pans. Eggs do not need oil at all but you have to wait for them to cook long enough for the edges to start curling a little then you can turn up the edges let the egg cook a little longer then flip it. They slide easily out of the pan.
I eat long cooking steel cut oatmeal cooking it has been a little diffent.I have to keep adding water as it cooks I've tried adding the normal amount and it absorbs up in this set with the lid on and then it still needs more cooking. I have not yet tried filling it to the top with water. The oatmeal comes out nice and cleans up easily.

You do have to wait for the pans to cool before cleaning them per the manufactures directions. I am being very careful to follow all directions to a T. No scrub pads inside the pan only a soft cloth. They give the ok for a gentle scrubbing on the outside only with the proper type pad. They are cleaning up very easily 2 minutes or less most of the food rinses right off without a cloth. There's only one set on the market I know of only one set that is dishwasher safe and they run about $600-$700.00. I believe the maker is Calphalon (not all sets by them just one set) they are sold exclusively at one department store online. I'd rather just wash them and save the money.
I am being careful with the lids I gently set them on the pan and remove them carefully. Some people slam lids on and off not helpful to a non stick finish!
I wish they had a smaller steamer pan. The pot with the steamer is good for something like corn but the size is a little excessive if you are not cooking for a large family.
The set is a good value. I probably got them for $130.00 at the time my shipping was free. If I get 3-4 years use out of these I will be happy. I don't expect them to to last a lifetime for that price. Even though they do have a lifetime warranty there's very little room for using it. They disqualify normal wear and tear and many other conditions that might make someone send a pan back. If go with Calphalon, Circulon or one of the more upscale cookware sets (that weight a ton) they have a more liberal return policy so long as you have used as exactly as directed they do replace pans. However all manufacturers make you pay the shipping to send them back for exchange. Cuisinart is no exception.
I would recomend this set based on my use thus far (please see my updated review a the end after long use). If you have the storage space and are willing to follow directions by the manufacturer for using them I think you will be happy.
Update: One month later still immensely pleased with these pans. I do get a little impatient waiting for them to heat up on the medium heat. It helps to put the lid on at first and take it off if you don't need moisture in the dish you are cooking. I highly suggest getting wooden utensils. I got a set for 3 bucks from a Walmart type place. I notice even the so called high heat non stick utentsils start to melt just stirring food around. That leaves a potential to get plastic in your food or scratch your pan. So long as you clean the wood utensils up right away (no soaking)along with your pans they will last a very long time. Oil the utensils up after clean up with food grade mineral oil.
If you get a little food on the side of your non stick pan take another baking fill it with water and a little soap let it soak for 30 minutes or so and it will wipe right off.
UPDATE (Maybe it's been a year now?): DO NOT use non stick cooking spray on these pans it will eventually ruin them. I called to see how to remove and was told to use Barkeepers Friend. It still does not work to get it all off entirely. My large cook pots and sauce pans are still in good shape and I am happy with them but I rarely use oil in them. My small skill is ok I have not used it as much. The big skillet while usable is not in good shape due to the cooking spray. I now use a cast iron skillet for much of my skillet cooking. I like it better it's easier to care for. I am still happy I have the other pans for general cooking though. You could get by without oil if you want to make eggs the non stick skillet but you need a great deal of patience. I find eggs without oil bland so I got tired of it and started using cooking spray. I'd still say if you take good care of these pans you will be happy with them.

I ordered this pan beacuse I liked the old RevereWare pan I have had and wanted another.I received this pan and could not believe how much lighter and of less quality it was as compared to the original RevereWare pan I have had for years. I looked on the botom of the new pan and it is made in China.IS IS A PIECE OF JUNK.I returned the pan.I would not recommend this pan to anyone.

I received the 3 Quart Saucepan as a gift and was eager to compare it to the one I have had for almost 20 years.I have read other reviews that complain that the pan is "light weight" and "made in China." I found this pan to be of the same weight as my old pan with the same rivet construction and copper-clad base. The copper bottom is stamped "Indonesia" unlike my old version which is stamped "Rome, NY." The quality of this pot is complete junk.I made a mistake of throwing out the packaging and now I am stuck with this POS.The worst part about this pot is that the interior surface is very rough and covered with dangerous metal residue from poor manufacturing process.I spent 35 minutes scrubbing it off AFTER the pot was put through a dishwasher.I am still not comfortable using this for food preparation.They should pull this terrible product off the market immediately -it's simply irresponsible for this company to sell this crap to it's customers.
See attached picture -the paper towel on the left shows how much metallic residue was on the pot AFTER it came from the dishwasher.The paper towel on the right is the amount of residue that was still there after I scrubbed the pot with a dish washing sponge for over 10 minutes!

It is still too small for a proper handle on the lid so it just has a tab.Many people drill a hole in the tab and add a split ring so that the lid will work with a lid lifter.Fire gloves and fencing pliers also work to handle a hot lid.
I bought this to take on solo camping trips, especially motorcycle camping. I have a larger dutch oven but it just isn't worth bringing when I'm cooking for myself. I also bring it along with my larger oven when camping with others.
It fits my needs perfectly.
I have cooked breads/biscuits, stews, meat, shepherd pie/pot pies, frittata/spanish tortilla, and more over charcoals and even wood fires. I carry a small can of spray oil and use a pair of welding/utility gloves (handy to have along anyway). It is fully capable of baking a tiny but perfectly browned and tasty hamburger-bun sized loaf of bread or just about anything you can do in a larger dutch oven. Cleans up easily (assuming you know how to cook with cast iron). It can also come in handy for heating up sauces or side dishes on the grill or in an oven at home. There is a learning curve with any dutch oven but that's part of the fun.
As far as I know there is simply nothing on the market to compete with this. If you want a small cast iron dutch oven (and don't want to build it yourself) this is your choice. Fortunately it's a viable choice.
I recommend drilling a hole in the lid tab. You can use pliers but it took me less than 5 minutes with a cordless drill. I sized the hole to match a meat flipper I also bring along when camping, but you could also fit it to a tent peg or similar.

This is my first Amazon review in over 15 years ordering from AMZ.I am very enthusiastic about this product.This is a great product!If you go camping by yourself, with someone else, with four people this is great!Generally DO cooking assumes that you are cooking for a crowd.This does not.You don't need many coals (hope you have a chimney), and you won't have any leftovers.With a 12" DO and the 1 quart here you can cook an entree and cornbread or a cobbler.First time out (two of us) we cooked stuffed peppers and then while we were eating the peppers, we cooked a jalapeno cheese cornbread.This shouldn't be your first DO purchase (12"/8 quartshould be first) but it should definitely be your second.Criticisms re no hole in the handle are valid.I am still lifting my lid with the pliers on my multitool.I may end up drilling a hole in the tab handle on top, but my sog pliers are fine.
I have cooked cornbread (for five), a cobbler (for five), a mtn man breakfast (for four), and stuffed peppers (three) in this DO.It is great for any small camping trip.

The ONLY drawback is there is no hole in the lid for a lid lifter.5 minutes with a cordless drill and a 5/16 bit did that job (cast iron is very soft, but brittle).Other than that, it is perfect for baking for one or two!Lodge products never disappoint. This size is fairly new to Lodge but is the perfect size for my husband and I for either a meal or dessert while camping. I love that the cookware comes pre-seasoned. Delighted to report that I am THRILLED with this expensive splurge! All-Clad is NOT about expensive hype and status, those these pans are beautifully made, instead they do everything cookware should, and have literally changed the way I cook. Having attended CIA and worked as a professional chef for a few years, I know the golden rule for food not sticking: preheat pan, add oil, let oil heat for 5-10 seconds, then add food. Using these guidelines with the Copper Core, nothing sticks! And I mean for some things, like omelets or fried eggs in the 10" frypan, the performance is as good as my brand new Calphalon NonStick was; when you can just slide omelets and fried eggs out of the pan without ANY sticking at all, why would you ever need Nonstick or Teflon based products?!
However, these pans are also superbly capable of developing a fond on the pan bottom for deglazing and subsequent sauces; in fact I have had them give every last bit of the fond up when deglazed, almost cleaning the pan for me! That's the best thing about them--they do everything right. I am not sure if it's All-Clad propriety stainless "recipe" or what, but these pans are so amazing to be able to function on all levels from eggs sliding out with ZILCH sticking to chicken breasts sticking just enough to develop rich fond for complete deglazing, to the light and glazy fond from sauteed onions and garlic for developing a richer risotto when deglazed with wine.
Mind you, this is partly about knowing some basic cooking principles, and these pans might not act so obligingly in non experienced hands, because when I read about people commenting on how everything sticks in their All-Clad stainless interior, I know it isn't All-Clad's fault, believe me!
I have found the copper core very responsive and quick to adjust to temperature. Perhaps not as great as true copper pot and pans, but noticeably better than aluminum cores (Stainless line) or anodized aluminum (Magnalite Pro/Calphalon). These pans heat up and boil water faster than anything I have ever used, aside from true copper cookware, and when turning the heat down, or removing from burner, they also cool incredibly quickly. It's nice to have semi-copper performance with the ease of stainless steel clean-up. And this cookware does clean-up quickly and easily, particularly when using Barkeepers Friend. I use plastic and wooden utensils (no metal) and they still look almost brand new after several months.
The copper band however does tarnish and discolor just as much and just as fast as a true copper pot or pan, so if you are fanatic, you will need to polish the tarnish away fairly often (at least every other week). However this is barely noticeable for us real world users, and Barkeepers friend does a good job of semi-polishing the copper (but it won't gleam).
I know, I know, they are SO expensive. But honestly, if you know how to cook or want to learn with responsive cookware, I honestly feel this is a great investment. I am wholeheartedly thrilled that I made it and cannot recommend highly enough.Next to my All-Clad Copper Core Dutch Oven, this is my favorite cooking utensil. I also have the 12 inch fry pan I use when company comes over. After using this pan a few times I threw out all my nonstick cookware. Now I use nothing but All-Clad Copper Core. Every morning I scramble eggs in this pan. I put a pat of butter in the bottom, turn the heat to medium (never high or you'll scorch any pan), let the butter start to turn brown and throw in my eggs. They don't stick; it's amazing. The few times I do have some stickies, I just soak in water for 10 minutes before washing and they easily come clean. About once a month I might soak the pan with a 1/2 inch of vinegar for an hour or overnight. It turns the bottom shiny and new looking. This pan is also great for bacon, sauetingpork chops and chicken--just about anything. And, I never have to worry about toxins migrating from nonstick cookware into my food.

You cannot beat All-Clad in the quality department. After using this pan for a week my family even noticed how my cooking was tastier. This pan does a fantastic job caramelizing meat and veggies. It heats very quickly and evenly. But it also cools very rapidly because the copper is a fantastic conductor of heat and cold. I like the copper core better because of the ease of maintenance. Just a little Barkeeper's Friend and it shines like new. The handle stays cool enough in most applications for me to use it bare handed. The sides are sloped just right to impress your friends with a little food flipping action. I've used it on both electric and gas stoves and was happy with the even heating of both. If you can swing the price you won't regret it.

Let me start by saying I give this pan 3 stars more for price then performance. This pan cooks as good as the $120 MC2 or LTD pan. Its about 1mm of copper sandwiched between aluminum and stainless, not nearly enough copper to get the full thermal benefits of copper. I got mine for a little over half price. If you have the money to plunk down $225 for a frying pan, save up for a little longer and buy a Matfer Bourgeat fry pan of the same size. 3mm of copper and stainless interior will be worth the extra dollars. The Matfer is the Ferrari of frying pans. Otherwise, go for the LTD (The thickest of the All Clad line) and use the money you saved to buy ingredients for a killer dinner. Dont buy into the copper core hype, it really cooks no better then the cheaper All Clad models. This is the first piece of All-Clad Copper Core cookware I have owned, and it is by far the best piece of cookware I have ever used.Be mindful that the different lines of All-Clad have significant differences.For example, the MC2 line is lighter, but at the expense of durability (note the limit on the temperature at which the MC2 pans are oven-save) and heat distribution.I didn't want to have to deal with the care of the Cop-R-Chef line, with its exposed copper outer layer.But I did want copper for its excellent heat distribution.To give you an idea of my perspective and how I view my cookware, I've been cooking a while, and have studied French and Northern Italian cuisines.I don't believe in having pumpkin-shaped soup tureens cluttering up my life, and I have Global knives that I keep razor sharp, but only a few that I use to cover everything.I sear/braise/roast primarily for main dishes, with the occasional stew.This pan exactly met what I hoped for; a good pan to serve as my mainstay for daily cooking, that would be durable and hassle-free while giving me good results and allowing me to improve my cooking that much more.It replaces a Scan-Pan nonstick that served me well for over 3 years before its nonstick properties started to fade, and I have to say that I like the All-Clad better for everything but cooking eggs.But you have to know what you're doing with one of these pans to get the best use from it.
Some will complain about discoloration of the stainless steel; they are using too much heat.Others complain about sticking; they aren't cooking the way you need to, with a stainless steel pan.
So a few things.One, these pans transfer heat very easily.This also means that even though the pan will distribute heat very well, it also won't dissipate that heat.So you don't need to heat it as much as with an aluminum pan...trust me.I found myself turning the heat down the first few times I worked with this, to get the cooking results I was used to, sometimes by as much as one-third.
Two, you have to use oil.Not much, and not extra-virgin.The solids that give EVOO it's green color scorch, and the flavor benefits of EVOO go bye-bye when you heat it.Use yellow olive oil; it's very heat stable and healthy for you as well.Get the pan hot first.Then add the oil, and let that get hot...it should start smoking just a bit.Then add the food.
Three, you have to recognize that the food *will* stick, at first, and that this is good.The maillard reaction (aka, 'browning') requires contact with heat, and the way food will latch onto this pan (at first) is wonderful for this.This also produces the fond that you want for making sauces.But remember...don't crank the heat, or that fond (and the crust on your food) will scorch.When the food has browned, it will automatically release from the pan, just like it had never stuck in the first place.In fact, this isa great way to know how far along the food is.If you're cooking duck, beef, pork, etc...this is a good thing.If you're cooking something that should not brown (an omelette, for example), then why are you using this pan?Use a non-stick for that.
Now the really good news.It's stainless steel.You don't have to baby it, as long as you ease up on the heat.You can scrub it like crazy to get it clean.No, it won't look as nice as it did the day you unpacked it, unless you are willing to spend an awful lot of time working at it.But it's a pan...it's for cooking food, not for hanging around your neck like a piece of bling.Don't be ashamed if it shows that you use it :)
