Simply Calphalon SA8785HP Nonstick 5-Quart Chili Pot

Simply Calphalon SA8785HP Nonstick 5-Quart Chili PotI think Calphalon has missed a bet in attaching the label "chili" to this versatile pot, because it suggests that its best use is limited to making chili.But mine is well-loved and used almost daily for cooking virtually everything -chili, yes, but also soup, sauteed fresh veggies, simmer-all-day pasta sauce, pot roast, ETC.I also use it when I need a high-sided skillet. The heating is very even, making it a lovely choice for carmelizing onions and other vegetables, as well as meat. I love this pot so much that I have given a number of them as gifts.

Calphalon calls another pan, sort of a flat-bottomed wok, its "everyday pan."I have that one, too, but it has drifted to the bottom of the stack because I DON'T use it everyday.They should have applied that label to this pot instead instead of the "chili" label.

We've owned this pot for a little over a year now. The non-stick coating works VERY well, making cleanup a cinch! Also, it's the perfect size for cooking dinner for our family of four.

The one problem we've had with it is the durability of the non-stick coating. We first noticed some of the coating flaking off a few months back. Since then, the flaking has accelerated to the point that we're not using the pot anymore. We have always used wooden or plastic spoons with it, so we don't believe it is a result of neglectful use.

After years of everyday use, I wore out my Calphalon 8785 pot despite my best efforts, the interior became scratched, and the exterior lost its anodized look. I'll keep it for backup, but it is officially retired.

I prefer the steel lid of the old pot because the handle is part of the lid; the new pot affixes the handle to the glass lid with big rivets. Structurally sound, no doubt, but a weak spot.

I don't see any real benefit to a glass lid; I don't watch the food cook, and if I do, I'm busy stirring a roux or sautéing, so the lid is off. Not a selling point for me.

Functionally, the pots are similar. The non-stick surface releases foods, but I cannot use metal utensils to stir or scrape. I use olive wood utensils out of habit, but the other members of my family are not always so conscientious.

The price is right, and this is a fine product. I have no idea why it is labeled "chili pot" it is too small for chili made in my kitchen.

I look forward to another decade of daily use with my new Calphalon pan.

Emeril Stainless Steel Dishwasher Safe Stockpot with Glass Lid Cookware, Silver

Emeril by All-Clad E8849964 Chef's Stainless Steel Saucepan Dishwasher Safe 3-Quart Sauce Pan with Lid Cookware, Silverperfect size for spaghetti, or a nice pot of soup or stew and it goes in the dishwasher if you want to clean up easily

As another reviewer has pointed out here, this All Clad Emeril is very much lighter in construction than regular All Clad or even All Clad Emerilware of yore.Some years ago I ordered an Emeril All Clad cook set, all items have heft and each has a good heavy base.I suppose costs have skyrocketed in stainless manufacture, but the lightness of this pot came as a surprise to me even after reading the other reviewer's comment about it.Nonetheless, this is a big stockpot, a lot of metal, and it does just what I want it to do.In this pot, finally, when 19" spaghetti is introduced to the boil it stands on end without my assistance. That's enough for me. Thanks, Emeril and thanks, All Clad.

Revere Polished Aluminum 10-Inch Nonstick Skillet

Revere Polished Aluminum 10-Inch Nonstick SkilletI have owned this pan for 3-4 years.I plan on replacing my 10 inch about that often as they begin to show some wear -that isn't bad for $20 or so.I have not found a nonstick surface that holds up to metal utensils or high heat.If you are careful about these things, this pan can last several years.I use mine almost every day.

This item has good depth (holds lots of food, and I can stir contents without dribbling over the edge) best skillet I ever had my old one of the same type lasted years.

I needed a new 10" non stick fry pan and purchased this thinking it would be heavier than it really was.I was worried when I first used it thinking my food would burn easily etc.Well, it is a great pan!It browns chops and chicken well, the heat distributes evenly.It cleans up really well.I really like it.

Update March 2013. This pan is still going strong. I use it for everything and the finish is still as good as it was when I first got it.

My mom bought me the 12 inch version of this skillet about 8 years ago, and it's been in daily use for at least the last 5.I can't believe how well it's held up!The non-stick finish is still intact, with only the most superficial of surface scratches, and still works great.So when I couldn't stand my 10 inch "Simply Calphalon" much-more-expensive-piece-of-garbage skillet another minute, due to terrible flaking and peeling of its coating, I looked high and low for a 10 inch Revereware.Nowhere to be found, until I came to Amazon.Thank goodness they still sell these here!I'm going to buy another 12 inch and store it away, just in case of the terrible event that Revere would stop making them all together; that's how much I love them.

I was afraid this new one might be different since it was several years since my old one was purchased, but it looks and feels just the same.I cook everything from eggs to chili in these skillets; their deep sides allow browning of meats followed by adding substantial amounts of liquid, all in one pan.If you treat them nicely, following the manufacturer's instructions, they'll last for many years.Only use plastic or wooden utensils, avoid super-high heat or drastic rapid temperature changes. It's not necessary to wash them after every use; they're so non-stick that you can usually just wipe them out with a paper towel -this helps preserve the coating.When they do get dirty, hand wash only; dishwashers are harsh on non-stick coatings.I've done all of this with many other brands of skillets and still they wore out after only a year or two; Reveres are the only ones I've found that last.

I was looking for "old school" skillets that weren't so heavy like the anodized ones they are making now. I had TFal for years, but it finally shot craps. The TFal being sold on Amazon had reviews stating they were shallow skillets. That wasn't what I wanted, so I took a chance on these. I am very pleased! They are great...lightweight, non-stick, and the perfect depth. They do discolor on the outside as another user mentioned, but that doesn't bother me. My skillets are kept in a cabinet and not on display. The only thing I warn against is using metal utensils! I was kind of mashing some hamburger and stirring it with a regular stainless skill serving spoon, and it did knick it up a little. My TFal wasn't that sensitive, so I didn't know. Ooops!

Heuck 33062 Porcelain Enamel Cast Iron 3 Piece Skillet Set, Red

Heuck 33062 Porcelain Enamel Cast Iron 3 Piece Skillet Set, RedI was so excited to get this since it was so affordable, I thought!But you get what you pay for!This smelled like enamel, so I don't know what type they use.It didn't smell completely safe, though!It looks like only one layer of enamel and you can see the metal through it with imperfections in the iron peaking though.The edges are rough and uneven.I bought one 11" Lodge enamel pan for about the same price as this and it was worth that and more!The Lodge has excellent quality!

I bought this thinking it would be safer than the typical Teflon pan and easier to clean than a cast iron but after a month it literally exploded on the stove and I had to shove my daughter out of the kitchen to keep her from getting hit by the pieces.

I tried to return it but Amazon will not accept it back because it's been more than 30 days.I feel completely cheated.This was not only bad quality because it exploded but it was clearly cheaply made as it was very light (not like a cast iron pan should be) so I suspect there is very little cast iron in it at all.

DO NOT PURCHASE THISthe Lodge cookware, it may be more expensive at first but since I'll have to buy Lodgeware now to replace this hunk of junk I'm very sorry I didn't just buy it in the first place.

I purchased these pans about a week ago, and I've been making scrambled eggs in the largest one every single day since I bought them. This morning I put the eggs in like normal and walked over to the sink to grab a cutting board; thank goodness I turned away because I heard a LOUD POP and then another LOUD POP. I jumped out of my skin. The enamel had exploded off quite violently, and there was enamel shrapnel all over the stovetop and contaminating all of my food. I bought these pans to get away from using toxic Teflon but exploding enamel is hardly safer.

I purchased these in 2008 and one of the skillets exploded on the first use.There were tiny shards of glass all over my kitchen and in our dinner.I tried to file a safety hazard report with Amazon, but couldn't make it through all the legal disclosures.I wasn't able to return them as I waited longer than 30 days to use them.We threw them in the trash.I have several Lodge and Le Creuset enameled pans that I have used for years without any problems.I saw these today while searching for something else.I'm surprised they are still being sold.Please don't buy these.

Presto 09984 Probe

Presto 09984 ProbeI lost the original probe & cable, so I couldn't use my little fryer for awhile. This is a very special cableyou can't find it at Radioshack or anywhere else! It has two holes & one probe, which is unique. It connects to a special magnetic part on the other end, which gives you the ability to disconnect in a second, & not fumble to try & turn off the thermostat when it's hot. My other electric pans are not like it. Now I can make tortilla chips by the pound, & fry my won-tons.

I use 9inch induction skillet, put a little bit of grape seed 0il in it, set the temperature to 375 degrees and in less than two minutes I'm cooking french fries. Omelets are a breeze. I use the 10.5inch induction skillet to cook the bacon. Along with the Nuwave I purchased the porcelain coated cast iron grill for cooking steaks, hamburgers and pork chops. I set the Newave on sear and all three of the meats come out beautifully cooked.The shipping was faster that stated. It is a new way for me to cook and I enjoy it.

Calphalon Contemporary Nonstick 10- and 12-Inch Omelet Pans, Set of 2

Calphalon Contemporary Nonstick 10- and 12-Inch Omelet Pans, Set of 2I purchased a two pack of the 8 and 10" skillets from Macy's this past summer. All my pans work great. I find they are a bit like cast iron.Once they heat up (on medium), they retain their heat and cook evenly. I use medium heat, and can often get by with med-low. No warping or flaking yet. (The key is to not use any more heat than necessary excessive high heat can ruin most skillets) I also got a griddle which is the Calphalon One Infused Anodized their top line. I love it as well, and would purchase either again.I went mostly with the Contemporary line due to lower price. Be sure to read the packaging to see what line you are getting, as they have several lines out there.There is the 'infused anodized' and the 'hard anodized', nonstick and without the nonstick, etc.

Check out their website for more information.

These pans have excellent heavy bottoms. I don't have too many gripes, except it would have been nice if the handles were welded to the outside instead of being bolted in. Stuff will stick to the bolts.

I just cook neater and avoid the bolts, and I'm fine.

We use these pans for literally EVERYTHING that can be cooked on a stovetop!

SHIPPING was SUPER FAST!!!

*** UPDATE *** September 10, 2008

Excellent product UNTIL we had guests who "helped us" clean up and put them in our super heavy duty dishwasher... After that, the finish was never the same. I have ALWAYS hand washed my non stick pans. I'm afraid the trip through the dishwasher killed them. Now, our dishwasher is brutal, much more harsh than the average dishwasher, i have to admit.

We still use them, I'm a fan of the heavy bottoms and even distribution of heat. But now, I have to use cooking spray to keep food particles from sticking :(

These are the pans that get used in my house almost every day.They are heavy which distributes the heat evenly, but make the big one difficult to carry when it's full.The nonstick surfaces are better than most, but don't last forever.After about 4 years of frequent use, they started sticking a bit.

After 3 years of use, my skillets were starting to show wear on the bottom and the coating was just starting to come up a little bit.I've never put them in the dishwasher or used any utensils other than plastic but I know I have sometimes set the skillets inside of each other or let other dishes sit inside of them while in the sink.

I followed the instructions on Calphalon's web site for the warranty and returned the skillets paying about $12 for shipping.I didn't need an RMA number or to contact the company just wrote a letter outlining what they ask on the website (name, address, problem, etc.) and shipped (and tracked) them.About 2 1/2 weeks later in the mail I got 2 brand new skillets shipped to me from Calphalon same size and type I had sent to them, but brand new.

I'm very impressed with their customer service and plan on taking extra special care of my skillets and will hang them on a pot rack and make sure to not stack them in each other and follow all other instructions and hope that the coating doesn't come off.But, if it does, I know Calphalon will take care of it, and for $12 shipping much better than buying new skillets!

A non-stick skillet is a kitchen workhorse.For today's home cooks, the skillet may serve its traditional role of frying and sauteing, but in addition, for the cook in a hurry, a follower of Jaques Pepin and Rachael Ray, the skillet may replace a pot when there are liquids to be reduced, since the wider top offers more room for evaporation.While a traditional skillet may be prefered for developing a fond, the carmelized bits of food that add flavor to a dish, many of us would sacrifice a bit of flavor for an easy clean-up. While non-stick skillets won't make a good pan sauce, they have an edge when it comes to cooking delicate foods such as eggs, or thin fish. Every cook whose aspirations go beyond microwaving a frozen dinner should have a competent 12" non-stick skillet.

That said, non-stick surfaces have a limited life, and so it's wisest to watch the price.The bargain price for these two pans is an attraction, although, while the box says it's a limited time offer, I've seen this deal at the same price for some time now.Beyond that, when Cook's Illustrated rated inexpensive non-stick skillets, their top rated 12" skillet was about $33 -not enough to break the deal.

That said, the two skillets for around $50 is a good value.While a 10" skillet may be less versatile than a 12", it may be a good idea to have one around if you have a small kitchen, or a smallish stovetop, and no way of fitting two large pans side by side.The sloping sides of this set, aside from having a modern look, are an aid in removing food neatly, and are a real boon for those trying to learn how to make a neat omlette.Durability seems good, and while heat distribution isn't perfect, it seems to be on a par with similar pans I've used.

The handles stay cool over long cooking time, and the non-stick coating generally cleans easily.

In sum, these are good everyday pans at a favorable, but not dramatically inexpensive price. If you're shopping for skillets in this general price range, the two-fer deal should rate a place on the short list, but there's no real wow factor. The price is good for the two pans together, but if you're unlikely to use them together, you may be better off with a marginally more expensive skillet at a lower net cost.

Cuisinart MultiClad Pro Stainless Open Skillet

Cuisinart MCP22-30H MultiClad Pro Stainless 12-Inch Skillet with HelperFor years, I've been afraid of stainless fry pans. My experience with them was limited to the time when I was young and not as experienced of a cook. I did not really know how to avoid sticking or how to clean them, and the stainless pans I had 19 years ago I gave away out of frustration.

Let me say, wow! I have really been missing out by cooking on nonstick pans all this time. You just cannot get the kind of sear on a nonstick pan as you can with this.

As for clean up? I use barkeeper's friend and it is high-gloss shiny each time!

You really cannot beat the price on these. They are solid, heavy-weight, have good heat distribution, and they clean up beautifully. What more are you looking for? Don't pay hundreds on all-clad, when you can get these high quality pans for soo much less.

I wanted to add for those that have trouble with sticking: the trick is to let it heat up first, then add the oil, then your food. Hot pan. Cool oil. Food. You'll do much better and avoid sticking a lot better!

First let me tell you I have no affiliation with All Clad what so ever I am a retired caterer.This is the first piece of Cuisinart cookware I have purchased.

Right out of the box this has the heft and looks of All Clad it is a beautiful pan.Howevever, as I do with all the cookware I purchase I put it on a level surface and see if it wobbles.Unfortunately this one does to a small degree.This means that unless you are cooking on a gas stove you will get uneven heat.

The way Amazon is bouncing around it's pricing I got this one a few days ago at a real good price with Amazon prime.I will keep this pan for that reason and to remind me you get what you pay for.

Before all the reviewers who believe there should never be a negative review written abouta product they adoreplease remember this may not be an issue to you but it could be a big issue to someone else.

If the price of this cookware brings the masses back to stainless steel cooking I am all for it.Getting away from teflon is the best step you can make in not only improving your health but also your cooking skills.

I bought this skillet to sear salmon, before puttting it into a 425-degree oven.I am not sure if it is a good thing to put non-stick into a hot oven, so I bought this pan.It worked like a charm.It sears perfectly, and after the oven for 7 minutes, it was a mess. but it cleaned up shiny as new following the directions to fill with water, and clean with Bon Ami or a similar product.It was a brown mess but now looks like new.The important thing is to read the instructions that come with the pan.I think I'll order the other sizes since this one worked so well. I think it works as well as the All Clad pans I have but at a fraction of the price.

After reading about the possible health risks associated with Teflon, we carefully went shopping for stainless steel. While I agree that a lid would have been lovely, I must say this is a great pan even heat disbursement with a good sturdy feel to it.We have used it for everything grilled sandwiches, breakfast meats, searing, sauteing and just last night made a huge batch of homemade chili. Clean up is a snap! We love this pan! Just purchased one for my daughter.

I needed some new pans to add some capacity to my kitchen.We can't have Teflon due to the risk to our birds, and I dearly miss it.I have not had good luck with Stainless in the past, but aside from cast-iron which is not always practical, I had no choice.

When I was looking for a new pan, I found that there are two basic types to choose from: The ones with the thick conductive disk on the bottom, and the ones like this pan, that have a much thinner conductive layer, but that goes all the way up the sides (referred to as 'clad' as in multiclad).I already have the type with the thick disk, and because I cook with gas the sides are always way hotter than the bottom, as the flame licks up the sides and heats the relatively thin sides much quicker/hotter causing burning issues.Some will say that the thick bottom traps heat better and is good for searing steaks...But that's what my my grill is for, I wanted a pan as a daily driver so a clad stainless pan was my choice.

As for this specific pan, one question mark I've seen raised here is the handle is too small for some...And I actually happen to have the 12" Cuisinart (thick disk bottom style tho) with the same handle and have this to say:A totally crap handle to use on the 12" size, but completely fine for the 10" and 8".**SPOILER ALERT**Yes, I liked the 10" version of this pan so much, I bought the 8", and pretty much all my comments stand for both (but not the 12").

One thing I learned from all my research is that heat control is critical for this pan (or any other stainless pan for that matter). This is one area that my thick bottom pan utterly failed at, because I would inevitably use too much flame to get it to heat up, and when (not if) it got too hot, turning off the flame did absolutely nothing for a looong time as that thick disk tried in vain to dissipate heat.This is one area that I can say this pan absolutely shines in!It is quick to heat, responds well to flame adjustments, and if I over do it I can pull it off the heat a little (or a lot) with predictable results.

As far as sticking issues, when I get it right I don't miss Teflon one bit.Scrambled eggs, fish filets, scallops...If I heat the pan right, and use enough of the proper fat, cooking on this pan is pure bliss!When I get it wrong, well...It sticks.I am personally taking this as a challenge to become a better cook though, instead of considering it as a negative for this pan, so no points off for that.

If you want hassle-free cooking, I think Teflon may be a better choice if you're willing to live with the (potential) health consequences.If you're willing to put in some effort though, these pans are an excellent choice, and the price is not that bad compared to other high end equipment like all-clad.

Lodge 2HHC2 Hot Handle Holders/Mitts, Red Pepper, Set of 2

Lodge 2HHC2 Hot Handle Holders/Mitts, Red Pepper, Set of 2These are perfect for all lodge skillets and I also use them on the older pieces of Calphalon that get hot handles.These are so much handier than having to pick up a pot holder repeatedly, you can just slip them on and leave them right through to clean up.

The first thing you need to realize is that when cooking with cast iron, the entire piece gets HOT.It is an even heating surface, and yes, that even includes the handles.That's why Lodge made the Hot Handle Holder Set, and they really hit the nail on the head with this one.The holders fit perfectly on the handles of the pans that they make.They slide on easily and can remain there while you're cooking the item, if it is not near an open flame of course.They protect your hands from heat, even when holding the pan for extended periods of time like while you're cleaning it after cooking.It also makes the handle more comfortable, and provides a pretty good grip.The red peppers are my favorite, but I also have a set of the green salsa holders and they're nice too.Lodge is a company that is known for their quality, and this product is no exception.

This product works pretty well, fitting onto the handle well.The issues with it have been mentioned in other reviews: It's somewhat on the thin side, and can get hot if you leave it on the handle while cooking.Taking it off and back on everytime you manipulate your iron skillet can be annoying, especially if you forget and burn yourself however, the learning curve is rather short, especially after you burn yourself.And since the skillets are guaranteed to hold an even temperature throughout the whole skillet, you are assured of a nice, even burn to your entire palm.

I would pay a couple of bucks more for the Lodge Max Temp Handle Mitt it's thicker (so you feel less of the metal handle, giving you a psychological edge in being able to grip it firmly), stays cool longer, and although it's not in festive colors and pattern, it's utility-driven.

May shield heat a touch better than a kitchen glove. They are OK if you are going to use them on the cast iron handles for a few seconds at a time. Anything longer than that and they will get hot and so will your hands. So, unlike what a previous reviewer said, you cannot leave them on while the pot is on the stove, unless you are not cooking long enough for the handles to get hot (and in that case why even buy them), or if you want to get burned. The choice is yours. Hope this helps.

These handle covers are very handy and work well.I bought them with a Lodge cast iron skillet.Glad I got them since I know it would just have been a matter of time before I had burned my hand since I usually use more modern skillets.I am sure I would have forgotten to pick up a pot holder or an oven mit at some point before grabbing the iron handle.I have a gas stove top so the other thing I like about these sturdy handle covers is I don't worry about cloth hanging down from the handle to catch fire.

Cuisinart 722-911NS Chef's Classic Stainless Nonstick 2-Piece 9-Inch and 11-Inch Skillet SetI have these pans in the 10 and 12 inch sizes. I Like them very much, weight is good not too heavy nor too light. I wash them in the dishwasher even though they recommend handwashing.

I would actually prefer to have these smaller sized pans as the 10" is a little large for cooking for just one.

The nonstick surface is good quality. Again they are not comprable to All Clad in weight but are a good compromise and they don't cost over $100.

These are excellent non-stick pans so far.Non-sticks usually last me 2 or so yrs. before I have a problem with the coating, so it's early days yet.But they clean up easily and retain their finish.Heat distribution is fine, omlets don't stick or scorch.

Berndes SignoCast Classic 13-Inch, 6-Quart Saut? Pan

Berndes SignoCast Classic 13-Inch, 6-Quart Saut? PanI have consistently been disappointed by non-stick cookware.I wanted to buy a non-stick pan for day-to-day use that would stand up for years to come.It's been only a few weeks but I have a good feeling about the berndes.

This Saute Pan is large enough to handle the biggest tasks, but adequate for smaller tasks as well (I regularly cook for only two).It distributes heat evenly and it appears to hold heat well.I was expecting the pan to be heavy, but it is very light and the extra handle allows for ease of movement when you have a great deal of food in the pan.

And did I mention non-stick.It's as good or better than any non-stick pan I've ever used.And you get a feeling that it is non stick through and through.Plus the exterior is made of the same non-stick material so clean up is a piece of cake.

It's more expensive than most non stick, teflon coated pans but it's solid.It may be cheaper than Calphalon, but I'm not impressed by Calphalon.It's not so non-stick and not as even a heater as everyone says.Maybe I've seen the wrong Calphalon, but you're probably wasting your money on it.

Give Berndes Signocast a shot.The bigger the better.I only have one, but that's all you really need.This pan shares it's cooking duties with my Sitram Magnum Pro line, a Sitram Cybernox pan and a set of Le Creuset.I don't know if I'd buy an entire set of Berndes (I'm pretty old-school in most of my cookware choices) but give one a try you won't be disappointed.

UPDATE:

After a year and a half it's still going strong.Even the sides (which scrape up against other pots, pans, & utensils) still appear perfect, in terms of the non-stick coating.I will never again buy a non-stick pan that isn't made by Berndes.

I love this pan.It is expensive but the best pan for me.It is quite large and the non-stick surface is so smooth, both inside and out, and no sign of wear after about a year of use so far.Very nicely made.A good investment.

I like to throw a ton of vegetables into one pan and saute them: this pan is the best I've ever used for that purpose.Also, it has a really nice non-stick coating (or is made out of a great non-stick material, I can't tell which).The only drawback of this pan is that it is huge; you probably won't want to make scrambled eggs for one in this pan.

Want Berndes SignoCast Classic 13-Inch, 6-Quart Saut? Pan Discount?

I buy Signocast with a purpose, one pot or pan at a time rather than a set. That way I get what I want one month at a time, and all my utensils are used. Berndes Signocast is superior to a lot of the the higher priced alternatives with one additional benefit...they stay clean with very little care.Cooking results are outstanding, and since I generally grill or roast my meats, I don't worry about searing. Excellent product.Make sure you buy the ones made in Germany rather than China if you want consistency.

Nordic Ware 8 Piece Rangeware Set

Nordic Ware 8 Piece Rangeware SetI have had this cookware for about a month and I'm very pleased with it. The best part about the cookware is that it is very easy to clean. It will scratch if you don't use plastic or wooden utensils when stirring food. But overall, a very good product.

Calphalon D87821/2P Commercial Hard-Anodized 2-1/2-Quart Shallow Saucepan with Lid

Calphalon D87821/2P Commercial Hard-Anodized 2-1/2-Quart Shallow Saucepan with LidI bought this pot three years ago, and it was my first piece of "serious" cookware. I used it to make various pasta and other sauces, and its large surface area and even heat were very good. It was also easy to clean. Per the manufacturer's instructions, I cleaned it by hand, using a Scotch-Brite pad when needed. It was a beautiful pan. And, after three years, sauces started tasting funny, and I noticed that the inside was significantly lighter in color than the outside. A quick check with an Ohmmeter revealed that the anodized coating was gone, and I was effectively left with a plain aluminum pan. The other cooks I have talked to say that this is just what happens after a while, and the pans go in the sandbox for the kids to play with. Now, at the fantastic amazon.com price, it's not too bad to just buy a new one every three years, or you can mail the pan back to Calphalon and try for a warranty replacement. After this experience, I will certainly never use a Scotch-Brite pad on anodized aluminum. Still, a clad pan such as All-Clad offers similar performance and will last forever (15+ years), so I think that's what I will replace it with.

I recently ordered this based on my appreciation for Calphalon products and the great price.This is a fantastic saucepan that can practically double as a saute pan.It is surprisingly large and roomy, and the extra diameter gives it plenty of room for fitting in two or three chicken breasts, a modest steak, or a handful of veggies.I love it for making coq au vin since it isn't too large and goes right in the oven.

Nothing sticks to this pan if you add just a dab of butter or oil, and it heats up and cools quickly.One great feature of pure aluminum cookware is the fact that aluminum dissipates heat quickly, so pulling the pan off the heat is a great way to regulate the temperature when making a sauce.This is a great product and a wonderful addition to my Calphalon cookware collection.

Buy Calphalon D87821/2P Commercial Hard-Anodized 2-1/2-Quart Shallow Saucepan with Lid Now

Ok, let me get this straight...Amazon has 2 different 2.5 quart Calphalon Commerical Hard-Anodized saucepans, the regular, and the shallow.Inspecting the technical details of the two pans, one quickly realizes that they are identical except for the diameter and the height of the pan.The shallow is, naturally, more shallow (3 in. compared to 3 7/8 in), and therefore wider (8 3/8 in compared to 7 in) to accomdodate the fact that they hold the same amount of volume.What does this mean?More SURFACE AREA.What does surface area do?Well, think about it for a second:more of the pan is in direct contact with the heat because of the larger bottom.As a result, more of the food is exposed to the heat.The result?Faster cooking!

And this is a "sauce" pan after all.So what does this mean for sauce?Same thing as above, but remember, more of the sauce comes in contact with the air.More surface-to-air ratio = faster reducing times for sauces.

So we've established that from a technical standpoint, the shallow saucepan seems superior.It cooks faster because of a greater area for heat to contact food and for the surface of a sauce to contact the air.With that in mind, take a guess which one costs more.Surprsingly enough the pan with the lower amount of surface area costs at least %50 more than the more useful shallow saucepan.

So unless you are looking for a pan that reduces more slowly and has a much lower amount of versatility (try browning a couple of chicken breasts in the regulation sized saucepan...you'll have squished chicken), I recommend this pan whole-heartedly.The anodized aluminum does not react with acidic foods such as tomato sauces, looks really cool, heats quickly and evenly (aluminum is an incredible heat conductor), and won't bust your budget.This is the perfect way to own a piece of excellent cookware for a bargain basement price.Just remember, it is stick-resistant, not non-stick.This browns up much nicer than the Calphalon non-stick stuff, and you don't have to treat with kid gloves.About the only thing you can't do is throw it in the dishwasher (which you shouldn't do with any decent pot or pan) and use a knife or electric mixer in it (a hand blender is fine...the blades never touch the pot).

If you own any Calphalon, you already know.

If not, you should.This is a great deal on a very useful pan.Once you've tried a calphalon hard anodized pan, you will probably never be satisfied with anything else.I currently own six pieces, lost two to my ex-wife.(They actually feature in our divorce agreement I got computer, stereo, custody of our son, and 1/2 of our Calphalon... I miss the pans more than her... :^)

I've owned Calphalon, Anolon, Farberware, etc.The Hard-Anodized products from Calphalon are the best.I give this pan and a few others (like the 12-inch Everyday Pan) as gifts, almost universally appreciated.If you are serious about cooking, they are worth the $80-$100 and higher price tags.If you pick up one of the pieces that are on the frequent super-deep discounts it is a steal.

The heating characteristics of these pans are great I refuse tomake candy or fudge in anything else.(I make 20-30 pounds of fudge each December)As long as you keep the heat 1/2 to 1 step lower than you would use with another pan, cooking time is the same and it is difficult to burn things.If you DO manage to burn something, just let the pan cool off and wash with normal dish soap (NOT dishwasher!!) and a scrubby sponge, it will clean up almost perfectly with very little effort.

I've found the Pots'n'Pans and nonstick Calphalon products to be acceptable, but they can't compare to the Hard Anodized Aluminum product lines.Don't get distracted by 'nonstick' coatings, that require special utensils and usually start to flake and peel within a year.This product is solid Aluminum, subjected to an Anodizing process to harden it, with NO added coating.As long as you don't abuse it, cut in it with a sharp knife, or use dishwasher detergent on it, it will last a LONG time.

This Calphalon Commercial Hard Anodized "Collector's Edition" 2 1/2-Quart Shallow Saucepan with Lid is a perfect "test" pan to see if you like cooking with this superior line of cookware. My first piece of Calphalon cookware, a 1-quart shallow saucepan, convinced me to buy a 7-piece starter set, and I have added more and more pieces over the years. As Calphalon rarely discounts their cookware, I have looked for their "specials" like this Saucepan.

Of all my saucepans, my 2 1/2-Quart one seems to get the most use. This shallower version of that same pan (with a larger diameter base) will be perfect for a sautŽ, such as making a mirepoix. It would also work for making a sauce because the sides are straight.

Hand wash this pan with a mild liquid detergent, and you will enjoy it for many years.

de Buyer Steel Frying Pan, Made of Heavy Quality Steel

de Buyer Steel Frying Pan, Made of Heavy Quality Steel - 20cmSpecs for 24 cm/9.5 in. pan:

* 9 3/8" outer diameter

* 9 1/4" inner diameter

* 6 3/4" flat bottom cooking diameter

* 1 1/2" depth

* 3/32" (~2.38 mm) thickness of steel

* 3.0 lbs. weight

The back of the minimal packaging states:

"IRON FRYING PAN * without coating * PFOA and PTFE free guaranteed * No chemicals added Environment safe protection * Ecological, recyclable, adn good for the environment * HEALTH: Iron molecules from the pan contribute to good health * Allows for high heat which seals quickly keeping vitamins and nutrients in food * COOKING QUALITIES: High temperature = perfect for SEALING, BROWNING and GRILLING * SEASONING: the more the pan is used, the better the performance * The darker it becomes the better it is for natural nonstick properties * "

The first thing I noticed was the handle had some sort of speckled coating/paint on it. The only de Buyer pan I've seen in person had a handle that was bare steel, just like the pan itself. Time will tell if the finish holds up well.

The small pamphlet did not include the "boil potato peelings" seasoning tip. The included instructions said to add 1 mm of oil and heat until smoke appears. My sister-in-law, who recommended de Buyer, had success with the potato peel method, so that is what I chose to do.

I've only used the pan a few times. It has worked almost as well as a teflon fry pan, with only a little sticking. Cleaning was very easy with hot water and a stiff brush; easier than modern (rough) cast iron. Perfect size for an omelette.

This is my first product review, so I'm witholding a 5 star rating only to see how this pan will hold up over time. I'm not sure there's really anything that could be done to improve a fry pan. I would only note that 3 lbs. may be heavy for some folks. I personally like it because it's very stable on the stove.

I can't add photos to this review, so I'll try to add it to the product description.

Never sticks, easy enough to rinse in hot water and we're ready to go again.

This pan shows high quality construction and cooks beautifully.It is light, and inexpensive.I have only used it a few weeks, so I can't comment on the longevity of the non-stick surface, but, as always, with reasonable care it should be fine.I am looking forward to using it.

Nordic Ware Restaurant Cookware 10.5-Inch Nonstick Frying Pangreat pan, works exactly like a nonstick pan should.cleans easily and made in america!nordicware makes quality products, and this pan is no exception.

I had just finished purchasing a new basic Cuisinart stainless cookware set and so like it, but there are some things that just require a non-stick frypan...like grilled cheese sandwiches or french style omelets. I accidentally ran across the nordic ware restaurant cookware while looking at bakeware and decided I'd get the nonstick 10" fry pan and it was LOVE! My husband was a bit fearful of the stainless set anyway, and I grew up cooking with aluminum or enamel cast. It has a nifty handle cover that slips on and off, depending on if you want to use it in the oven or on the stove. Its not too heavy to handle, even for me with my fibromyalgia. It takes rough handling quite well, especially all that omelet making on high heat over a rough electric coil burner. This is the cooking I'm used to, and I think I may even get that large covered saute for chops and the like.

Clean up is a breeze, either by hand or in the dishwasher. Temperature regulation is also easy because its aluminum, so it heats and cools quickly. I really can't recommend it enough.

I can see why this pan is so highly rated by others.What the pan lacks in aesthetics, it makes up for in performance.My pan did arrive with a chip in the non-stick coating around the rim, but it is well out of the cooking area so I didn't bother returning it.I purchased a Nordic Ware Pro pan at the same time, and that pan easily earns five stars.The Pro is a little more expensive, but well worth the additional cost.

Had wanted one that is not expensive that I coul throw away after one year. This pan is very good, food just slides off. It is a bit bigger than I had wanted for makimg omlettes, but is now good for more uses. Will look to see if I can get a smaller one. Best is that it is made in the US, that was the most important thing for me.

Chef's Secret 22-Piece Element Super Set

Chef's Secret 22-Piece Element Super SetHi y'all,

If you've read any of my other reviews, you know I try to tell you what I think about the item, rather than gush or slam emotionally.

I got on the waterless cookware research kick after attending a Saladmaster party. I loved the idea of waterless for the health benefits and flavor of the food, as well as the quality of construction of the surgical steel pieces. My husband is a full time seminary student, and I homeschool our children. There is no way we will ever be in a position where $2000-5000 for a set of cookware will be a good buy in our opinions. I am not impugning Saladmaster, at all. I'm saying we can't afford it, and even if we could, I don't have it in me to shell out that much money for pans.

What anyone considering this cookware needs to consider is that waterless is a distinctive, and probably a new way of cooking. It requires adjustment in practice and thinking unless you already cook waterless. The idea is to cook the foods at a low enough temperature (212 degrees F or less) and with as little liquid as possible so that the majority of the nutrients are not cooked out and additional calories from fats/oils/grease are not cooked in. The natural flavors of the food really do come out when cooking waterless. It is a technique that requires a little patience and maybe some practice if you are in the habit of bringing something to a boil and cooking it until it is done. Waterless cookware does not mean you won't burn dinner if you are not paying attention. That is not to say you can't use these pans exactly the way you use other cookware--with water. If you want to cook waterless, you have to be in the kitchen until the steam valve whistles so you can turn the heat down to low or off. The food continues to cook from the steam and it's own liquid. The instruction manual that comes with the cookware has recommended cooking times for vegetables, and those should be followed because when all the liquid evaporates, the food will burn. If you're leaving the burner on, and you're leaving the kitchen, set a timer to come back and turn the burner off. Also, you have to use the right size pan for the amount of food you're preparing. The bottom of the pan needs to be covered with food, or the natural moisture in the food and the little water that clings to rinsed off vegetables cooks out too fast, and the food will burn. Other waterless cookbooks are avaliable, and I recommend getting one so that you can learn how to adjust your favorite recipes to the waterless cooking method.

I found other sets on-line, and the affordable ones are made by Maxam--if you have Maxam, World's Finest, Chef's Secret or Steam Control, Maxam made it. The expensive ones are made by Regal--Saladmaster, West Bend, etc. Regal sets are made of T317 (grade)surgical steel, and there is little difference in quality between the T317 and T304. Maxam offers T304 surgical stainless steel in 5, 7, and 9 ply (layer) construction, though I've been told the nomenclature has changed slightly so that the layers are more easily understood. Mom gave me a set of the 9 ply, and it is fabulous.

The quality is outstanding. The company has been in business since the 1950s, and when you look at and use the pans you can see why. They have a mirror finish and are very heavy, especially compared to standard metal cookware--even stainless steel. The multi-layer construction is incomparable to the standard 18/10 stainless I'm replacing, and I was using one of the nicer sets. The handles are sturdy and stay cool when cooking. The set is completely self-stacking, which is significant. Other cookware can be stacked, but the lids slide around, and the cookware slips off if it isn't balanced just right. These lids lie flat under the rim of the pan, which makes a flat surface for the next pan to set on. Nothing slides around or crashes the second you close the cabinet. The set comes with a lifetime warranty, excluding handles. I don't expect the handles to wear out in the next several years because they look sturdy, but if they do need to be replaced, they can be easily replaced with a screwdriver (as opposed to having to replace the whole pan when the handle comes off) and they are inexpensive to purchase from the company.

The price is excellent. You can't walk in Linens & Things or Dillard's/Foley's/Macy's and get a full set of cookware of this quality for the price. You probably can't even get a bigger set. Most of these waterless sets run between $200-300, depending on which ply you choose. Some websites charge more than $300, but do not pay it. There are too many out there that sell for $300 or less. Even if the handles break, or you drop one and break your foot, you can buy 10 sets of this waterless and still come out cheaper than the any of the Regal lines.

Clean up could not be easier. The pans are all dishwasher safe, and everything comes off by hand very easily. I scorched butter beans last week. I was not sure how much water was needed to cook dried beans, nor how long to cook them, and I burned the bottom layer badly. Butter beans(large lima)are very starchy, and nothing is more difficult to scrape off of a pan besides blackened, carmelized, starch. I followed the directions in the manual by scraping out that which could be salvaged, adding water to the pan, returning it to the stove, and bringing the water to a boil. When it was boiling, I scraped the scorched food off with a wooden spatula. I have have not had burned food come off teflon that easily. My standard stainless was a real pain to clean up when things burned--I've had to do the dryer sheet trick, and not had alot of luck with that. I don't generally burn dinner, but we've all done it occasionally. I was actually worried about having to clean this one up because the pans were brand new, and I didn't want to scratch them to get the black off. I need not have worried.

I really like this set, and I won't buy any other kind of cookware. This set passed the Saladmaster baking soda test, and the fresh/frozen vegetables I have cooked in it taste better than they do when cooked in standard cookware. The meats have been more flavorful, juicier, more tender, and absorbed the seasonings better. It takes less time to cook dinner, and l don't have to worry about a pot boiling over. I am glad that more of the nutrients are staying in the food I cook, and the price is unbeatable. I don't know whether or not you can boil an egg with a wet paper towel in these or not (because I haven't tried it yet), but for less than $300 and better quality than the mall, I don't care.

If you want to know exactly what you are going to get, read on for an intricately detailed description with references to the product pictures that I uploaded...

This set is not what I expected. I thought that this was a name brand, but there are no markings anywhere that say "Chef's Secret" and all pieces are made in China.

The bottom of the pieces are stamped "Multi Ply 12-Element; Surgical Stainless; Waterless Greaseless" (see pic). The inside of each handle is stamped "Mfg. in China, Nat'l Headquarters USA" but is too light and small to take a picture. The Limited Lifetime Warranty is backed by "CSC," which has a P.O. Box address in Dallas, Texas. I am assuming this is the US Headquarters.

Brand name and country of origin aside, these pieces are very solid/durable, look beautiful, and are a pleasure to cook with. In my opinion, they are well worth the "discount" price that Amazon and other retailers are selling them for, but I would not buy them at the "list" price.

(*) These are the top volume measurements on the inside of these pieces, but they will actually hold more if you fill above this level.

Each piece has a mirrored finish on the outside and a satin finish on the inside cooking surface and bottom encapsulated heating surface (see cleaning note at end). There are several pieces that fit snugly into each other for various combinations of stack cooking. The plastic lids fit into, not onto, the mixing bowls (see pic) and form a tight seal.

The insides of the Saucepans and Roaster are marked with volume measurements in quarts (see pic). Each handle is attached with two rivets (see pic) and has a black plastic insert that insulates the handle and gives the pieces a finished look.

The Thermo Control knobs (see pic) are, in my opinion, more novel than practical. They make the pieces look interesting, but I have not found them to be very useful for the type of cooking that I do regularly.

One reviewer commented that the lids rest in the handles; however, the 2.0 qt Saucepan is the only piece in my set that does this (see pic). The rest look like they might fit if the plastic handle inserts were removed, but I am not certain.

With regards to the review about the metal melting, the instructions warn that the pieces might melt if left dry over a lit gas burner or hot electric element for prolonged periods. They also advise "NEVER PLACE COOKWEAR UNDER A BROILER" (the only instruction in all CAPS). Unfortunately, there is no mention of use in a conventional oven or maximum safe usage temperature.

According to several other online retailers' websites (via web search), each of these pieces is made of "XL304A" "Surgical Stainless Steel," which is a carbon-free, nickel-free, alloy of the following elements:

(1) Chromium: gives metal its corrosion resistance;

(2) Silicon: an excellent heat conductor;

(3) Manganese: prevents rust and corrosion;

(4) Copper: an immaculate heat conductor;

(5) Molybdenum: used for hardness & strength;

(6) Columbium: used for its corrosion resistance;

(7) Titanium : corrosion resistance & strength-to-strength ratio;

(8) Vanadium: stabilizes against oxidation;

(9) Cobalt: for wear-resistant;

(10) Iron: for weight and strength;

(11) Stannum: resist corrosion, especially from salt;

(12) Lanthanum: increases strength.

A chain is as strong as the weakest link. In this case the weakest link is Stannum (Latin), which is better known as Tin, and has a melting point of 449 degrees F (according to various sources via web search).The overall melting point of the XL304A alloy depends on the percent composition of each element in the alloy and is probably much higher than 449 degrees F, but I could not find a source to verify any more information on this alloy. I will contact CSC for more information on maximum safe usage temperatures and post if they respond.

Another reviewer who actually baked with these pieces noted that the plastic in the thermo control knob or handle inserts can melt in the oven. Fortunately, the handle inserts can be easily removed with a Phillips screwdriver (see pic) and the Thermo Control knob can be easily unscrewed left over the top, or "lefty-loosey" (see pic).

I have not used these pieces in the oven yet, but I might try at some point. If I do, I will remove the plastics, but I am not too worried about the metal melting since I rarely bake above 350 degrees F. Of course, I'm not an expert and recommend that anyone who chooses to bake with these pieces proceeds with caution and at their own risk. Aside from melting, the instructions warn that high temperatures may cause blue or golden-brown staining/discoloration (see cleaning note at end).

As mentioned above, the pieces are covered under a Limited Lifetime Warranty, backed by "CSC" with a P.O. Box address in Dallas, Texas. The warranty covers manufacturer's defects but does not cover handles and knobs (or melted cookwear). The warranty states that CSC will repair, replace, or return the piece within 30 days. The owner pays shipping both ways whether or not the piece is covered under the warranty.

The included "Instruction Book for Waterless Cooking" (see pic) is a handy reference and is well written; albeit, brief. It notes various advantages of Stainless Steel, gives basic care instructions, and outlines basic usage with cooking recommendations for different types of food and various recipes. Regardless of the instructions, you will probably burn a few things as this cookwear takes a little getting used to.

A note on cleaning... Stainless steel is supposed to "stain less" than regular steel but it doesn't mean that it will never stain. Burnt-on food and stains come up easily with boiling water or after soaking and scouring. BUT, you won't want to use a scouring pad on the exterior because it will be almost impossible to polish back to a mirror finish. Go to your local market or hardware store and purchase some stainless steel cleaner to keep the exteriors gleaming.

Happy cooking.

I've had this set for several years and absolutely love it.Clean-up is a breeze and yes, I've burned things in these pots.Soaking the pan removes most of the burned-on food an SOS or Brillo pad takes care of the rest.The lids can rest in the handles when you need them to a feature I really like.The set also allows for stack cooking a great help during the holidays!The waterless/greaseless method of cooking allows the natural flavor of foods to really pop.Don't add salt to vegetables they will taste way too salty if you do.Try cooking corn on the cob in it it comes out tasting like it's been salted AND buttered!Start out anything you cook on medium heat and then lower your temperature to medium low or low for the remainder of the cooking time.You should never have to use high heat ever again.Try stuffing a whole chicken with peppers and onions, throw in some potatoes and carrots, and you'll have one of the most wonderful meals ever season the meat only.The leftovers make the best chicken soup ever!Or season a roast as you normally would, throw in peppers, onions, potatoes, carrots the meat actually absorbs the pepper taste and it's great!I've never used this cookware in the oven, so can't attest to its ability to withstand external heat the look of the handles seems to preclude oven use, though.Also, be aware that food cooks much more quickly in this cookware, so be careful to not overcook it.The longer you cook it after it's done, the less juice you'll have.

I recieved this as a gift, and I absolutley love it! I am 23 years old and am just getting into cooking, the kind that doesn't include a microwave or boxed dinners. The first time I used the large pan was mildly irritating, because alot of the food stuck to it and it was a pain in the @ss to clean the burnt blackness off the bottom. Then, after reading the instructions (I like to use things without reading the instructions)it said that this cookware should NOT be used on high heat. You can by all means cook things that require high heat in the directions, but just turn the dial to 6 instead of 8 or 9. Once I figured this out I never had any more burnt pans or food stuck to the bottom. Also, these pans retain heat for a longer amount of time than regular cookware. I have turned the stove off and watched the food continue to cook for 4 to 5 minutes before simmering down. Overall, this cookware is very solid and well made, but you can't just start using it like you would your regular old cookware. It's made differently, with different materials and more layers so you have to read the directions, but once you get used to it you will never go back to "regular" cookware!

I've been using this set for 4 years now. The pots and pans themselves are great; they cook evenly and clean easily. My biggest complaint is the knobs. Up until 6 months ago I didn't have a dishwasher, so I had no problems because I was washing everything by hand. Since I've started using a dishwasher the plastic part of the knobs on the lids has become brittle and started breaking off. I have tried finding replacement knobs that fit but because the bolt that holds the knob on is attached to the lid, it's very difficult to find a knob that fits the exact length and diameter of that bolt. My husband is so fed up he's insisting I find a new cookware set.
