I like the Contemporary Nonstick series from Calphalon because I have never had any success using the anodized type of pan, this is the more traditional non-stick and I am happy with it. I've had several of this series for over six months now and the surface is holding up fine, no deterioration so far. The design of the pan is good, the handle stays cool on the stovetop and you can put it in the oven because it is all metal. The weight is comfortable and the shape is stable on my gas cooktop.

I love this pan and use it all the time.I make eggs or a frittata for 1-2 people, hot sandwiches, small quantities of sauce and can even blanch small amounts of vegetables in it.I have both this and the 10 inch pan and for a 2 person home I use this 8 inch pan most often.If you have a larger home then the 10 inch would probably be more handy.

This Calphalon is nicely sized and balanced.However, I'm still looking for the perfect non-stick fry pan.I've used this for the last month, and have found the non-stick qualities and cleanability (if there is such a word) haven't performed to my expectations.My main use is for eggs, and they still stick, especially if scrambled.I use Egg Beaters, and haven't found that they "slid" out of the pan, OR easily wiped-clean.

This is a replacement for the same product purchased about 7 years ago. Eventually the non-stick surface chips and flakes, but it WAS used nearly every day, and we didn't always remember to use wood or silicone utinsels. All in all, a good piece of cookware: heavy enough to heat evenly, and easy to clean (do NOT put this pan in the dishwasher). We also have this pan in the 10" size.

This is durable, wont fall over even with large books, holds large books and small books and even just a piece of paper. I'm not much of a rooster person, this is my first and only rooster in my kitchen, but I think it adds such a fun whimsy to my kitchen. It sits on my island, so it's center of the kitchen. If I know what I'm going to cook that night, then I put the recipe on the stand for the whole day and it actually gets me motivated to cook! If I have no recipe planned for the near future, then I just sit a pretty cookbook on the stand and it still motivates my wanting to cook. Oh, and I love having my recipe upright and in front of my face while I'm cooking! No more sitting it on the counter, where it gets all dirty and I have to constantly look down and find my place. Having it upright and in front of your face really DOES make it easier!!



This is an attractive cookbook holder. It also appears to be sturdy. That said, it was a "no go" for me because only small to moderate sized cookbooks will fit in it. Since many of my favorite books are large and jumbo sized I need something with a larger capability.

A nice looking, nicely constructed holder but make sure it suits your needs before ordering.

This is the perfect size for two for an omelet, or some chicken or fish. This is one of very few small pans that comes with a lid that and the excellent quality overall makes this pan well worth the price. And Amazon? The first pan we received was scratched! But it was obvious the scratch occurred when Calphalon packed the cover upside down before putting it in its own packaging, not from anything Amazon did. For this price, I expect a "perfect" item. Returns with Amazon are painless! A few clicks of the mouse and I printed out the return label; re-packed the pan and sent it back. BUT! Amazon had sent us a new pan which arrived at least a day BEFORE Amazon received our return! Amazon was one of the very first online merchants we started shopping with nearly from their first year. I have had this for some time now long enough to have made over a dozen omelets (which is all I've used it for) and it's been just great. Nice weight and feel, and thenon-stick is flawless.

This is my favorite kitchen pan. In addition to omelets, I use it to pan fry steaks. And it is so esthetically pleasing I leave it on the stove when I'm not using it just to show it off. Best pan ever!

After buying cheaper skillets over a number of years only to have the coating scratch and start to peel, I was delighted with the Calphalon skillets.I have had 2 of the skillets for almost 2 years now and haven't a scratch on either one of them.Great product.My only complaint is the handle on the lid tends to get too hot to handle with out a mitt or hot pad but feel that is a minor point overall.

This pan is a nice size for cooking eggs.Unfortunately the handle is really short -I would not want to use it if we cooked on a gas stove.The lid fits/works great.Overall a decent non-stick pan, but the handle should be longer.

Wolfgang Puck Stainless Steel 10-Piece Cookware SetI received a set of Stainless Steel Wolfgang Puck pans from my parents as a gift two years ago.They figured I would enjoy some high class cookware especially since it came with the extra cooking utensils.I was so excited to have designer cookware, and I have been repeatedly disappointed in so many ways.I'll spell them out clearly so others can make an informed purchase:

1) This cookware starts out looking great, but after a few uses on a gas stove, the pitting and discoloration of the steel is terrible.I read all the instructions and cared for these pans with much effort handwashing, gentle cleaning, etc.They have been so pitted and stained after the first month of average use that I'm embarrassed to use them when other people are in my kitchen because they look downright dirty.I even tried gentle silver polish, overnight soaks, and just good ole' elbow grease without success.

2) Uneven cooking.I have been cooking for over 15 years, and some of that has been in professional kitchens.I routinely find that these pans heat unevenly causing food to burn in certain spots.The burned areas then stick to the pan.Forget trying to make delicate things like an over-easy egg.Almost every time I cook something using a dry cook method, it stick badly.I routinely break egg yolks, have well-buttered grilled sandwiches stick and then fall apart upon turning, and even less delicate things like 'hamburger helper' dishes have burned, but only in spots.Thank goodness I don't have kids in the house that might require 30 seconds away from the stove because cooking in these pans requires constant attention.Now, please assume I've tried adjusting the heat and stirring thoroughly and frequently.The same dishes I've made for years in other pans has ended up burned in these pans.I've even had the stove replaced over the past two years, and nothing has helped this issue.

3) Skin Burns! Stoves are hot so sometimes handles heat up on any cookware, but the handles on the pots, and especially on the lids seem to heat up much more than I'd anticipate.Steel is a conductive metal, so I'd expect some heat, but I've burned my hands more than a couple times by simply lifting a lid without a potholder.Actually grabbing the side handles of a pot could cause serious burns even after only a few minutes on the stove.This is just unsafe and poor design. I've also had friends who have cooked with me in my kitchen comment that these pans/pots 'spit'... what I mean is that if I'm heating water in the small saucepan, as I pour the hot water from the pan into a cup, the water spits and sputters (often onto the hands causing burns) as it contacts the heated edges of the pan when pouring.I've had this happen a little with other cookware occasionally, but it's a large problem with this cookware.Again, the heating qualities of these pans causes the areas not in contact with food to heat up very quickly.

4) Rivets are dangerous.To anyone shopping for pans, please take this point into consideration.When a rivet is exposed to food, such as they are with this pan, you set up a recipe for disaster.Food can become wedged in the small spaces around the rivets which makes cleaning very hard.Additionally, if those areas aren't cleaned properly, lodged food can grow all kinds of nasty food borne illnesses which are directly transferred to food next time you cook.Yes, heat kills bacteria the next time you heat up the pan, but it doesn't always kill the toxins that the bacteria produced while it was alive and well before heating.The toxins are what make you hospital-worthy sick.With these particular pans, they cut some corners with the rivets also, and they look as if they're oxidizing and beginning to break down.Again, disappointed.

5) The larger pots do not stack.Have ample cupboard room because even my small set takes up more space than it needs to.Poor design.

So, I'm stuck with a set of cookware that looks bad and cooks poorly.Who cares about the price or how good of a deal you're getting if you're food is sticking and your hands are burning?My recommendation: save your money and buy something else.



I purchased this set after I had cheaped out on two separate sets I had purchased from Big Lots and Target.Those sets started to fall apart after two weeks and couldn't withstand repetitive, long-term use (I make a lot of stews and slowly cooked items).So I opted to purchase this set with the only expectation for it not to fall apart.

This set has remained resilient for me.Easy to clean, easy to cook in, and considering the frequency of usage, it still looks great.Nothing is peeling, falling apart, and the handles are still sturdy.I also appreciate the variety of cookware, allowing me to cook beyond my stews.I might not know much about gourmet cooking, but personally I found this to be a prudent investment and would recommend it to anyone.

I purchased this set from Ross for $69.00 and it was a steal.This is my first purchase of a stainless steel set.I have used Calphalon and Circulon before and liked them also-but they were nonstick.

The secret to using these pans seems to be to heat them up with nothing in them to not much over a medium heat before cooking in them.Then reduce heat to what is needed.I have a gas stove and these pans DO NOT require high heat to get the same heat as you would with other pans.NOTHING sticks to them so far.They clean up beautifully with no stains, discoloration or pits.Because you don't need high heat from your stove the handles are easy to handle.The lid metal does get too hot to handle without a pot holder-but they do cool off quickly.

If you keep the heat on the pans to med high at best and probably lower, your handles can be held with bare hands.The heat seems to stay in the heavy bottom of the pans.

Before purchasing these I read a lot in chats about using stainless pans and several experienced cooks seemed to say the same thing:heat them without anything in them before you cook in them, then reduce and cook.It works!!!!These are fantastic pans and I am sold on having stainless-especially these pans of such great quality.

I have had Wolfgang's cookware for 10 years now and it is as shiny as the day I bought it. I do not put it in the dishwasher, and to remove stains from the bottom of the inside of the cookware all I use is white vineger. enough to cover the bottom, and warm it. Let it stand for 10 mins and rinse. thats it.

I have never used polish on these pots and pans as its not necessary.

The only complaint I really have it that the rivets on the inside, some are pitted and some are not, but thats because at one time or another I was cooking above the cooking line.

I have been cooking for 21 years, and professionally for 16. I think this cookware is great, you just have to use some common sense in caring for them. With good cookware there are certain things you have to do to take care of them.

I wish I had the same thing to say. I have the 10 piece set also. I think it is cheap due to the studs (that connect the handle to the pot). They look horrible after cooking in them several times. Im not sure why. But they all look that way. I havent seen any other set do that. My old cheap Wearever set didnt do that. I will buy Calphalon the next time. Im burnt on Wolfgang Puck. I do like the untensils alot

After almost an entire year, a supervisor finally proposed sending a replacement BUT ONLY IN A DIFFERENT SIZE.It seems he didn't want to be bothered pulling the correct pan for us.The fact that there were so many broken promises from them over a year, he still didn't see fit to make sure we had the complete set which we paid for.

They do work as the infomercials show.But given the inferior quality of the cookware, as well as the absolutely deplorable customer service, we consider the set to be a waste.We're scared to use it and have never had a worse buying experience in 60 years.

A one star review is much more than the manufacturer deserves.

We sent a pan back six months and after calling them twice, we are still awaiting a replacement pan (they keep saying it's on back order.) Very unhappy.

That being said, my mother has reported that the pan is the perfect size. She's able to fry an egg, make a tiny omelet, or cook any small portion in there and it is indeed very non-stick and very easy to clean. Suffice to say, it's a hit.

This looked like a nice pan for the 5 minutes I had it. I ordered it because it says it is made of stainless steel and I bought an induction "burner" and this pan to go with it. Turns out that the pan is aluminum which won't work with the burner. Amazon sent the return form and it is on it's way back unopened and unused.

When I took the WB out of the box I was appalled by the cheapness and light weight of the product. this griddle you cannot get an even temp on.....it either burns or doesn't cook the food.the heating element left a ring on the cookside....the good thing about it is you can wash it in the sink.we had an old WestBend that lasted for years and was great....sadly dissappointed in this one.

It has some serious flaws.

The area closest to the temperature control does not heat adequately, despite the magazine review saying it heated evenly across the entire surface.I've used it half a dozen times and I know for sure this is a weak spot.

Even worse, it is really hard to clean, no matter how you follow instructions, it stains very easily, gets very sticky and is way too labor intensive.Wait till you try blueberry pancakes. . .

I havn't had any trouble with mine sticking.It heats evenly and the thing is huge will do eight pancakes at a time.I don't use any oil, and most importantly, don't use spray oil (Pam etc.).Those products will destroy a non-stick surface with one application

We have put up with this griddle for at least a year. It's fine except that the heat is uneven. The end of the griddle closest to the plug-in is much cooler than the rest, so those pancakes are still gooey while the rest are ready, so you end up "babysitting" your pancakes (taking some off, adding batter, then taking the slow ones off, etc.)when you should be eating. We just sent it off with our son to college, so we get to buy a new one!

I thought this pan would be perfect for eggs and breakfast stuff. Seemed great for the first couple of months, but then slowly I started noticing little pinhole pits in the ceramic coating. I have been nothing but extremely and overly "delicate" with this. Always washed separately to ensure nothing banged into the ceramic coating. I use nothing but bamboo and silicone utensils to cook so there should be no reason for this pitting. I think I'll stick to classic indestructible stainless steel and cast iron. I'm about done with all these "cookware fads" of disposable cookware.

I have had this pan for well over one year.

**When I need to sear, I use a stainless or cast iron pan.**

It STAYS on my stovetop, almost all of the time (cleaned).

I use it everyday.

I use no more than Medium Heat ever.

I do not overheat while preheating.

I use a VERY light coating of oil, or residual oil from previous cooking.

I wipe it clean with a paper towel when possible (usually).

If needed, I wipe it with a sponge under tap water.

If xtra crusty, I soak before sponging (rare!)

I NEVER use any sort of scrubbing surface.

I only occasionally use soap.

With the above care, this go-to pan looks and cooks as if brand-new.

Farberware Classic Stainless Steel 10-Piece Cookware SetI have always liked the Farberware cookware for over 30 years. The steel pots are perfect. I am not crazy about the non-stick ones, wish they had covers too, and a bit heavier. Besides, I don't care for non-stick surface as much because it could leave toxins after a scratch. I like the glass lids, they are easier to clean. The size of most pots in this set is fairly small which you may not realize from the size provided in quarts, but appropriate for a small household's kitchen. Overall, it's a pretty good quality set for the price compared to all those other brands with highly inflated prices.

I love the farberware cookware.the pots are perfect.some lightweight pots my wife purchased actually warped and thus rattled on the stovetop.since i am the cook, it drove me crazy.i threw them out in less than a month.the only "problem" and the reason for 4 not 5 stars is the non-stick pans. I hate the non stick surface because they scratch and can leave toxins in the food .cant convince my wife that you must use wooden utensils, so i just threw them out

I have owned my Farberware for 12 years and love it.It was made in the USA. So when I wanted to get cookware for my daughter, Farberware was my 1st choice.I ordered a "10 piece classic set" from Amazon(They sent it through another shipper but it came on time and was well packed)

When the set came my daughter cooked oatmeal in the small sauce pan for 3 mornings and noticed the finish on the bottom of the pan was chipping off I called the plant and they said that they would replace it. Before I could send it back we used one of the larger pans and noticed it had a small chip in the bottom and was discolored on the sides and bottom. I looked for the warranty which said it was "limited lifetime" but didn't cover discoloring and a lot of other things. This was STAINLESS STEEL. It didn't say what was meant by "lifetime" so I guess it was the lifetime of the pan, which was 3 days in this case.I then checked to see where it was made and it was Thailand. I called the plant again and they don't make anything in the USA anymore.I boxed it all up and returned it.I learned most cookware is made overseas now, so I don't know what to buy. But it won't be Farberware. It is a bunch of junk! I'm hoping some other factories overseas are better, they couldn't be any worse.

Great value for the price. I have always found Faberware quality to be trustworthy. I recommend this set for everyday use for a small family. The pots are not big so if you cook for a lot of people, this is not the set for you.

At my house, we use cast iron.Not some overpriced designer brand like a Le Creuset Cookware Set , 20 Piece.Just the simple hardware store and sporting goods store items hat I have accumulated over the years.That's right.We cook our meals with camping gear.Remember, if it taste good when you're camping, it will taste good at home.Nothing makes pancakes, eggs, and bacon better than a cast iron pan.And when you have well seasoned cast iron, nothing sticks to it.

But despite all the benefits of cast iron, that's not what we're here for.We are here to talk about this pan.

Now what is the big deal with this pan?Why do I own, not just one, but two of these?

My current bed-wench was complaining about the cast iron.It is heavy.I agree.I can see how a wench, given a choice, would not want to heft a cast iron pan.She still has a hard time with not using soap when cleaning my cast iron, and she still hasn't gotten used to continually heating and oiling the cast iron pans to keep them from rusting.

This pan is made with aluminum.That makes it light in weight, and it resist corrosion.My wench can wash it in hot soapy water, and doesn't have to heat and oil it after washing.This pan is light enough for my wench to flick her wrist and flip the food in the pan.Get two.You can flip one over the other, and use the second pan as a lid.10' is a good size for cooking a plate of food.Need to make two plates?That's what the second pan is for.Aluminum tends to take heat, spread it out, and dissipate it.This is why heat sinks are made of aluminum.How is this good?Heat rises.The pan takes the heat from your burner, spreads it through the pan (evenly), then releases it (upward) into the food in your pan.The surface is very easy to clean, which allows you to wipe and wash, then move on to cooking your next dish before the pan cools off.And since aluminum is light in weight, you have a decreased risk of injury if you're cooking on the line and flipping food all day.

Cons -

The large stock pot doesn't seem to be as thick or heavy duty as the other pots/pans.

Lids are kind of thin, I would think the might get banged up some.

Long ship time from amazon approximately 2+ weeks. They tell you that up front.

Overall Again I'm trying to be fair, if your expecting some show pieces for you kitchen to display these probably aren't for you. If you want a nice working set of pots and pans you can't beat these for the price.

Update 12/08Since my review the price doubled on the Nordic Ware set. What was a great deal at $50 is just so-so at $100ish. Still a decent set, just not sure you couldn't piece together something else for the price range.



I love this stuff. Lightweight and non-stick.I use the largest pot to make popcorn. I make popcorn with olive oil and the Teflon is so slick that I never have to wash the pot with soap. I just wipe it out with a paper towel. Great value and supports American labor. The more money we pour back into our communities, the better. The economy is like a river. The more tributaries that feed it, the stronger the river or vice verse.

I just bought this cookware set and it's excellent!All of the pieces are of extremely high quality.The skillet and pots are good, solid aluminum; heavy enough to heat evenly but light enough that they're easy to cook with.I just tried out the skillet and made a wonderful omelette.This is excellent cookware at an incredible price.I'm going to buy some more NordicWare pieces.

We were shopping for a good set of cookware for a good price.The problem is that reasonably priced sets tend to be junk and/or have some lid gimmick making them impossible to clean.They also tend to have some weird size saucepan or tiny stockpot that forces you to spend more money and your stuck with a piece you don't need.

This Nordicware set is the ultimate minimalist set.Only the things you need, perfectly constructed.The pans are thick aluminum and super-slick.We have experienced no warping or flaking non-stick.We even abuse these pans by putting them in the diswasher.The rubber handle covering can be slid off for placement in the oven.I couldn't find anything indicating the oven-safe temperature, but my guess is 350F is safe.

The only complaint I could come up with is he lack of a 12" skillet.Fortunately, I already have a nice skillet and no need for a second.

It looks like the price has shot-up since I purchased this set.

This cookware is simply the best I've had in a long time. I was looking for some budget pans to supplement what I had. Boy was I surprised when I opened the box. At this price you better snatch one up for yourself! The non-stick coating in the pans is thick, not that stuff that flakes off after a few uses. The pots are heavy and well balanced. It takes a little longer for them to start heating, but then they cook well. They hold heat well and don't burn the food on the bottom.

Update #2 (Dec 2012): All of them have rusted and I had to throw all the pots away.

It is a small set, but the pans are beautiful! I had a set of stainless steel pans with metal handles, and whenever the pan gets hot the handles burn my hands so I have to wear gloves just to make soup. These pans however, have plastic handles which are much easier to handle without getting burned. It's a really great price for this kind of quality.

I wasn't sure what to expect when I ordered this wok, but I was very pleasantly surprised. It is extremely easy to wash and it appears to conduct the heat nice and evenly.

I found the 12-inch version of this pan at my favorite grocery store (of all places). It was down between this one and a Bialetti non-stick pan, which was about half the price. The Nordicware sold me (even though it was more costly) because it is broiler safe and almost guaranteed not to warp. I tend to cook at a moderate heat while my husband tends towards a more "on or off" type approach -the stove is either cold or on HIGH. The result has been more than one warped griddle in our five years of marriage.

But the best part is the heft and slick-as-glass surface of the pan itself. Eggs slide right out, no problem. And the handle placement, weight and thickness make the balance of the pan very easy to work with. My only quibble is that the entire handle is not covered, thus the hurried cook may find their fingers burned if not paying attention.

I love my 12-inch so much I'm buying this 10-inch, just to make sure we have our bases covered. HIGHLY recommended!

Calphalon Commercial Hard-Anodized 9-Inch, 2-Quart Chef's Skillet with LidYou rarely find Calphalon at a deep discount so I decided to try this little pan out. I own most of the Professional Hard Anodized cookware. This pan is lightweight, easy to handle and maneuver over the stove. It heats evenly on my gas stove. It's best to use the lowest flame setting when using over gas because it also heats rapidly.

Generally, I like the size, weight and ease of use. The cover also fits other pans I have. Cleaning is a breeze but I recommend to anyone who doesn't have a lot of experience with Calphalon to read up on the cooking and cleaning suggestions that come with your pan. This pan is NOT non-stick but if you use as directed, this hard-anodized pan will not stick and will definitely be easier to clean.

While the Cool-V handle does stay cool during cooking, it seems to get in the way. The handle curves higher on the stove than I'm used to and I've accidently hit it a few times when adding food to the pan or working around the stove. The pan is also lighter than the Professional Hard Anodized I'm used to so it doesn't stay flat on the burner unless there's food in it.

I'm impressed with the pan's versatility. It's great for frying, making or reducing sauces, sauteeing, deglazing and stir-frying. The small size makes it ideal for 2-3 people.



Cooking has been my hobby now for more years than I care to admit.Unlike many folks, I do not think everything in the kitchen must match.So I don't have a matching set of cookware.I have tried about everything, and for various reasons, my cookware collection has evolved into a mixture of things I really like to use: Calphalon Hard Anodized, tin lined French copper, Le Creset, and the one essential of all, the cast iron skillet.

This particular pan I bought simply because it was so [inexpensive].I could not visualize a 2 Qt. Chef's skillet.It turned out to be slightly larger than I feared, but somewhat smaller than I had hoped.I think it is best to describe this pan as an improved 8" omlette pan, ie. higher sloped sides with a lid.

My most used pans are: #1, my 12" cast iron skillet; #2, my 6 1/2 Qt. Calphalon Stock Pot with Pasta Basket; and coming in at #3, surprisingly, this little Calphalon Hard Anodized 2 qt. chef's skillet.

I do not use it for making any particular dish.Rather this has become a workhorse in preparing ingredients for other dishes, e.g., to sautee mushrooms (you need the slopped sides and a cover), to sautee vegeetable or seafood stuffings for entrees, to make up a pasta sauce for side dish portions.Think of any time you need to sautee or panee something for another dish and you will be using this little pan.Heck, I have even used this pan to make up sauces, gravies, cook custard, and many other non obvious tasks.It is just real comfortable to use.I do not use this for stir frying, however, a use suggested by others.It is too small.Besides, I have yet to find a better tool for stir frying than a seasoned steel Chinese wok.They are big, and completely non stick, but have an appeaarance only a mother could love.

I would have given this pan a 5 star rating, except for the fact that this is a support weapon, not the main gun.Sort of like no one would ever rate a four iron as the best club they have ever owned, but a good four iron is necessary to score well.But anyone whose cooking has progressed beyond spaghetti and Ragu, should have this pan.

There seems to be some confusion about how hard-anodized pans differ from non-stick pans, which I'd like to clear up.

I have used many Calphalon hard-anodized pans for things like cooking chicken and scrambling eggs, as other reviewers wrote, *without* problems. There are instructions included with the pans that explain how to do so.

The first, very important, thing is to make sure the pan is very clean. A Scotch-Brite pad and some elbow grease are needed. Bits of leftover food will cause serious sticking.

The second thing to remember is that the food must be at (or nearing) room temperature. Cold eggs and chicken directly from the fridge WILL stick to a heated pan.

Following these guidelines, hard-anodized pans ARE virtually non-stick. If you really want a non-stick pan, and use it for primarily eggs, omelettes, etc, it is better to buy a non-stick pan.

If, however, you want to buy only one pan for things that non-stick can't do (like browning and deglazing for meats) and you want to use that pan for scrambled eggs as well, it can be done. It just requires a bit more work.

So, buy hard-anodized if you're looking for versatility, buy non-stick if you're looking for non-stick. (Or, buy both!)

First off, let me say that in the last four months, I've bought probably 20 pieces of Calphalon's Commercial Hard Anodized cookware through Amazon.com.Except for the items in this recent order, I have been purely tickled with the products' performance.These items included products from both from the Toledo and Chinese manufacturing facilities.

Calphalon, sadly, discontinued this product line several months ago.Amazon is down to only five items out of dozens in their open stock listing.And I think they are getting down to the bottom of the barrel.In this shipment I received two items from this line that were junk.They should have been shown as scrap, seconds, or outlet merchandise.The first was the 7 qt. casserole which I reviewed separately.

This item, the 9 inch, 2 qt. Chef's Skillet was equally disappointing.The body of the pan was almost 30% thinner than my other frying pans from this line. (barely 2mm thick)The finish was also inferior:It was noticably lighter in shade than all my other Calphalon Commercial Anodized cookware and on the bottom, it appeared to be showing almost bare aluminum across the surface.The Grey finish was almost see-through.Also, the surfaces of this pan were comparatively rough.

Again, with all due respect to the reviewer who insisted all items are of equal quality regardless of origin, this woefully inadequate example of Calphalon qualtiy was made in China.

I hate to say it, but I am beginning to think that stores of this line are depleted and only the dregs and defective items may be left.

Either that, or there may truly be a problem with the Calphalon items of Chinese manufacture.

In any event, this piece is also enroute back to Amazon.com for a refund.

This Calphalon Commercial Hard-Anodized 2-Quart Chef's Pan with Lid is a "collector's item" from the newer line of Calphalon's Hard-Anodized cookware. Thus, it is the same alloy aluminum type pan as in the older "Professional" line, but its handle is "stay-cool" sculpted stainless steel, instead of an older chrome-covered iron handle, which could get very hot to the touch. The 9-Inch bottom of this chef's pan is slightly smaller than that of the 3-Quart Sauté pan, another useful pan that usually comes with a Calphalon starter set.

This pan is a bargain. Since Calphalon rarely offers such deep discounts, it seems worthwhile to add it to one's collection. Because it has the rounded chef's shape, I would use it for stir-frying, reducing sauces, and making demi-glace. I have two flat-bottomed woks (Joyce Chen and Calphalon), but they do not work that well on an electric range. This chef's pot works well for a small-to-medium stir fry on either gas or electric burners. When the stir fry is done, I use a Calphalon nylon scoop to remove the cooked food, then I reduce the sauce.

The hard anodized finish of this chef's pot makes it virtually non-stick. Using a pan spray is not a good idea because it can leave behind a sticky residue. Hand-washing is recommended, with use of Bon Ami or Dormond cleaner for any stubborn stains.
