Simply Calphalon Enamel 10 Inch Covered Omelette Pan, Black

This is a great pan that is incredibly easy to use. I gave this pan as a gift to my wife and she loves it. Don't let the name fool you, while you can easily make a great omelet using this pan, it's just as good for any sort of pan frying or sauteing.

Pros:

Great heat distribution I haven't noticed any hot spots on this pan in the months we've had it.

Heats and cools rapidly This gives you great control over the cooking temperature. Turn the heat up and the pan heats up, turn it down and it cools. Allows you to brown nicely without burning.

It's a great size The 10" size is big enough for most meals while not being too big for single servings. Our 12" skillet is too cumbersome and for some tasks too big. Meanwhile, 8" skillets are too small for most tasks so they just take up space. We use this and our 10" Lodge skillet (which the lid for this fits nicely, I might add) more than any others.

A good shape This is important too. The edges are very rounded, this allows you to easily work along the sides of the pan. Plus, it's not too shallow so you can fit a good bit in it.

A very comfortable handle It has a rubberized handle that isolates heat well and provides a comfortable grip.

Glass lid It's good to be able to see your food if you need to use the lid.

Cons:

Not dishwasher safe It's nice to throw things in the dishwasher and forget about them, but you can't do that with this pan. This is offset by the surfaces being very easy to clean, so a quick rinse and a little soap does the trick.

No metal utensils This is the downfall of most non-stick cookware. I don't mind, I've had T-Fal in the past that was supposed to be able to take metal utensils but ended up flaking. Yuck. Still, if you are weary of plastic this pan won't work for you.

Oven safe only to 400 degrees You can fry something in this pan and finish it in the oven, but only at lower temperatures. This is because of the glass lid and the rubberized handles.

Overall it's a great pan. This, or something like it, should be in every kitchen.

My mom specifically told me she needed a glass covered 10" non-stick pan that also had slanted edges to prepare her omelets like she wants.I'm her favorite kid now!Ok, so I'm her only kid but you get the picture, she's delighted as this design, in 10" with the glass cover was difficult to find.
