Commercial Hard-Anodized Omelette Pan.For most of human history, we managed just fine without non-stick pans and this pan is a fine example of why you really need not bother with Teflon or any other type of non-stick pan. Read the reviews for this and other Calphalon Commercial Hard-Anodized pans and you'll hear that food releases when it's done. Cook things properly and they'll slide right off. I love not worrying about scratching a non-stick surface. The anodized aluminum has many of the advantages of cast iron without the hassles (cleaning issues) and worries (rust). No need to season with oil in the oven, etc. Just use it a few times and it breaks in nicely. Your first fried egg or two might stick, but don't be discouraged.

I bought this pan for my son and his partner for Christmas.They absolutely love this pan.It's well made and performs as they expected.

Great little pan.Solid and well made.Dishwasher and oven safe.However, make no mistake.This is not a non-stick pan.Even with a lot of butter in the pan, eggs stick terribly.Thus, minus one star on a pan Calphalon labels as an omelette pan.

With that said, if you want a little pan for searing a filet mignon for one person, this pan is perfect.If you want to cook for more than one person, I would recommend the 10 inch version of this pan.

NOT NON-Stick! Great quality of build. Looks like it will last a lifetime. Just wish it was non-stick. You cannot make an omelette with this.
