Nordic Ware 14 Inch Asian Spun Wok***Update (11/25/12)***

Bought my second wok since the first one (of almost four years) had endured the toughest conditions. The coating has started to peel and it is time to replace. Please keep in mind people, these non-stick coatings do NOT last forever and especially if you do a lot of cooking like me. This applies to ALL nonstick products no matter what the costs. If you want something where you wouldn't have to deal with the problem then maybe consider buying a pre-seasoned carbon wok, but then again they involved a different type of maintenance too like spreading oil to clean the wok after you cook instead of washing it. I like to wash my wok clean. This time, I will try to prolong it by using lower heat (instead of max) and go easy with the bamboo spatula.

Still made in the U.S.A., only the stamping on the bottom is a bit different, and thank goodness for the Amazon promo credit which made the deal much sweeter!

Before this, I was extensively comparing to two others: The T fal Jumbo Wok along with the Circulon Elite Hard-Anodized Aluminum 14-Inch and I finally nailed it down to the Nordic Ware. One of the main reasons were because I wanted to replace a $ wok by 'Invitations' that I purchased not too long ago from Bed Bath & Beyond actually it was like $ after rebates and promotions, so no love lost here.

The comparisons...

T fal Jumbo Wok: I was ready to buy this wok from a major retailer. As I was going through the bunch, I could not find one that was like new, either there is a scuff here, a scratch there or a knick in between, and as I went through and finally came to one that was knick and scratch-free; the helper handle was deformed. So I said "screw it". Although this wok looked rather good, but it just didn't have the right feel to it, also, it was a bit on the light side and felt kind of flimsy not worth the price.

Circulon Elite: The same retailer did not carry the actual item but I was able to get an idea from one of their medium sized stir fry pans. The product feels heavy (which I like) but I wasn't too fond of the high-low food release design. I'm sure it was a feat of engineer but that didn't do it for me, non-stick is non-stick, it doesn't have to be any more complicated than it is. I'm more into the long-term and durability of its material that was put into it rather than the fancy grooves. I'm sure it works wonders, but for the addition to its marketing strategy; I wasn't sold.

The conclusion: I wanted a wok which was not only identical to the one I replaced but can perform and handle my day to day tasks. I stir-fry, steam, braise, fry, saute whatever, you name it! The Nordic Ware 14" wok has exceeded all the expectations, if not, more! It was tested in and by commercial kitchens and NSF certified so I can count on its rigorous strength. Upon the first day of using it (unlike the one I replaced and used with wooden utensils; the non stick coating stripped right off of its initial use), I stir-fried some vegetables with high heat from my electric counter top and was able to achieve some nice searings, food releases with a breeze and it has definitely passed the test of time! Before I toss the other wok out, I kept the removable handle and it fit my new wok like a glove. Now I know why the other cheap wok wanted to imitate the Nordic Ware 14" Asian Spun Wok, clearly, there is no comparison!

*Grip handle is a bit thin, but can get used to (I replaced it with the old wok's rubber grip which is more thicker and fits perfectly)

*Removable rubber handle is some work when coincide with oven, the good thing is I don't really use it in the oven except for storing afterwards.

Im in college and just got my own apartment, when i was buying pans, i picked some out, showed them to my mother and asked her if they were any good. She went to the kitchen, grabbed one of her calphalon pans and said hold this, then made me return the ones i had bought.... Well it was then i learned that the good pans are the heavy ones.

And boy is this a heavy weight wok. It distributes heat very well. The surface is great, it washes easy too.

This wok replaced an identical one we've had for about 10 years. My husband is the family chef and he loves its large size for making big batches of stir fry noodles, chinese vegetables. We like the fact that it's a non-stick wok and that it's heavy duty.great for family size dishes.

I bought this for its seemingly great value and have been using it for a couple of months.

First look: great materials, hefty. Two handles makes the wok much easier to handle.

The description is misleading, there is no "Polished stainless steel lids" included.

I really wanted to like it but it is simply not possible.

One major problem with the wok is that the bottom is NOT flat. It was already warped when I got it and it would "roll" around on my ceramic-glass stove top.

Everyone should know that any decent flat bottomed cookware should be completely flat and stay that way. However, the wok came warped(convex). It might be OK for those using gas stoves but I, myself, will never buy this again.

EDIT: I have reduced this 1 star because the teflon coating has begun to bubble and peel in less than a year.

It is occurring at the middle of the sides, where most food do not contact.

I am using a ceramic electric stove so I doubt it is because of the heat.

For reference we had some pretty badly burned out old Teflon Calfalon pans so there was a lot of room for improvement when we bought these. We also have a hot point electric stove we cook on so the heat is controlled by turning the heating lights on and off at different intervals to modulate the lower heat temperatures (Not a steady heat source).The first part of the instructions for these pans was that you can cook effectively at lower heat levels.Absolutely true!We have stir fried and braised beef for stew with the heat on medium.It takes a little longer to heat up but once hot the temp seem to be more stable than the old PansSo far cleaning these pans is super easy. We almost don't need to because nothing sticks to them.A little hot water, a squirt of soap and some swirls with the soft brush and you rinse and done.My family feels better that we are not cooking with Teflon and we are not suffering our cause.

I would give them 3 Thumbs up if I had an extra

The only down side is the size of these pans.This is more a personal preference for our 3 person family. The saute pan and stir fry pan are more family sized than we are used and the 10" flat griddle is a little small for 4 pancakes. A 12" Flat round griddle would be a better for pancakes and French toast.

This is the first thing I grab when I need to cook something.The nonstick surface is really great.It's way safer than the teflon nonstick coating and way more durable than the ceramic nonstick coating from the kitchenaid cookware that I have.I'm gonna be switching all my cookware to Cuisinart GreenGourmet pretty soon.

Update:After 6 months of use, this wok sticks like a stainless steel pan.EVERYTHING sticks to it.You can forget about cooking eggs in this one.

I tried many good brand non-stick pans and was fully aware of that they all end-up becoming "stick" pans no matter how well I take care it I do cook a lot though. But this one is worned-out very fast and I'm very disappointed. After half month of use, I don't think it can be called "non-stick" any more since I can't use it to fry eggs anymore. At that time, it was still ok to do stir-fry. After 6 months, everything will end up got stuck at the bottom of the pan. My husband and I really hate it cause it's so hard to clean especially we only hand wash it with warm soap water and soft sponge since we had it.

Now I've totally given it up. I go back to my faithful stainless steel pans they last forever and MUCH less sticky than this useless one.

Great little pan.Solid and well made.Dishwasher and oven safe.However, make no mistake.This is not a non-stick pan.Even with a lot of butter in the pan, eggs stick terribly.Thus, minus one star on a pan Calphalon labels as an omelette pan.

With that said, if you want a little pan for searing a filet mignon for one person, this pan is perfect.If you want to cook for more than one person, I would recommend the 10 inch version of this pan.

Presto Indoor Grill

Presto Indoor Grilli just received my presto grill and i'm already cooking on it. this is my second attempt at a indoor grill and this is by far the best over the first one. this is a great grill! i've already grilled chicken, steak, and pork chops. it came out fantastic! the first grill had cold spots and did not seem to get extremely hot. this grill gets HOT! the heat is evenly distributed across the entire surface thanks to the embedded element and the cooking area is very large. i grilled 4 large sirloin steaks at one time. the rubber pads under the legs also keeps the grill from sliding around. i like the fact that you have the temps displayed on the thermostat all the way up to 400 degrees. dip tray is nice and the cleanup is quick and simple. the nonstick surface is superb on everything thing i have prepared so far. and amazons price is far less over some of the other indoor grills i've looked at. i am going to post some pics soon of this fantastic grill in action. overall i'm very impressed with this presto indoor grill's performance and price. I bought this to try something different from the typical George Foreman type grill.I was so sick and tired of trying to clean the Foreman grill I already own with the non-removable plates!Hate it!Although there are several brands of tabletop grills that do have removable plates, most of them are overpriced.I absolutely will not spend $100 on an indoor tabletop grill.

I came across this one on Amazon and, after much searching and reading, decided I'd go ahead and give it a try. This is a single sided grill with no lid that comes down on top of it so you have to cook one side of your food at a time.Different from what I've been used to.

So far, so good.I haven't had time to use it a whole lot yet but what I've cooked on it so far has been good.Chicken and steaks.I love using these tabletop grills versus the oven or broiler or outdoor BBQ grill so I'm sure I'll use it for everything.Burgers, fish, chops, chicken, steak, vegetables, etc.

It is super simple to use.Plug in the cord to the grill (like an electric skillet) and plug the cord into an outlet and there you go.It heats up quickly to 400 degrees (or less) and is ready to go in no time.It is lightweight and super, super easy to clean!Thank goodness because that was my main reason for buying a new tabletop grill in the first place.It is totally dishwasher safe but I just rinse mine off in the sink.It has a non stick coating which is fine so far.I did wonder if heating up only to 400 degrees was going to be hot enough to cook steaks but it is just fine.I made them last night and they were great.Because you have to cook each side of the meat, it does take longer than the Foreman type grills but I don't mind that at all.Gives me time to be making the side dishes. The sides are made of plastic.Not sure if they'll hold up well over time or not.

For the price (around $35) I am pleased with this purchase so far.As long as it holds up for a reasonable period of time that is!We'll see as time goes by.If I have any problems with it, I'll come back and amend this rating.

I have several pieces in the Lodge Logic line, and they make my heart sing... the non-stick patina that's developed over months/years of use, the substantial heft of each piece, the rustic beauty, and most of all, that unmistakable delicious flavor that only cast iron can impart.

At $10 and change, I recommend you purchase as many as there are members of your family. Or if you're single, buy two... so you can impress dates by serving individual-sized appetizers or dessert! Then ask for two more for Christmas, so you can add a fun, gourmet twist to your dinner parties.

As with all cast iron, even though this is pre-seasoned, it's a good idea to season it again yourself before using. Generally you don't use soap or detergent on cast iron (and NEVER put cast iron in the dishwasher!!), but when I first get a new piece, I hand-wash it with hot water and a tiny drop of mild dish soap. Dry it thoroughly with a dish towel... then, to remove any remaining water that has been absorbed, put it on the stove or in a hot oven for a few minutes so that any remaining water will evaporate.

Then, coat with a *light* coating of grapeseed oil or organic vegetable shortening. Turn the oven on 400 (or higher, if you dare!) degrees. Put your new skillet into the oven upside-down and line the bottom of the oven with aluminum foil to catch any drips. "Bake" for 1-2 hours. Turn the oven off, then leave the skillets in all night to cool and solidify. Your skillet will have a deeper hue and glossy sheen that it didn't have when you bought it. This will make it a bit more naturally non-stick. The more you use it (or if you want, you can repeat the above seasoning process), the more non-stick it will become.

With proper care, cast iron will become your most well-loved cookware. I'm so excited to have added two of these 8" skillets to my Lodge cast iron collection and can't wait to come up with even more uses for these adorable, super-handy little skillets!

I cook for myself, so this little skillet is the perfect size for 3-egg omelet in the morning, or veggie saute for dinner. I am a small to medium sized female w/ skinny arms, but this skillet is not too heavy so I can still lift it w/ one arm. It's not really non-stick because the eggs won't easily slide off the pan like they would from a good new non-stick pan, but it's much much better compared w/ my stainless steel skillets. As long as you soak the pan in water after cooking, by the time you finish your meal, the food residue can be easily washed off with a brush or sponge. I use a nylon dish brush with hot water and cleaning is very fast and easy. I never use soap or steel wool. Leaving a bit grease on acts like re-seasoning. This is the same way I take care of my carbon-steel wok. The only complaint I have is that the handle is way too short. The skillet is relatively heavy but even with my small hands it still feels as if the handle only fits half of my palm, so it forces your hand to hold it really close to the hot pan really bad design. Though I use it everyday and find it indispensable, the short handle alone is why I am unwilling to give it a five star rating.

After struggling with a set of three regular cast iron pans from a different manufacturer, I finally boxed them up for Goodwill.I never mastered the seasoning part of cast iron usage.I ended up with a sticky residue and one pan rusted.After about three attempts of scouring and reseasoning, I gave up and ordered three Lodge Logic Pre-Seasoned skillets.

It is fanstastic.It worked like a charm with the first use -no problems with sticking at all.I actually smiled while making my burger!My cornbread was also back up to Southern standards thanks to my 10-inch pan.

The 10-inch works well for cornbread and frying.(Actually cast iron is the only way to make good cornbread.) I use the 8 for single burgers.The 6 I bought out of habit, but it also works well for single burgers.

Clean up is relatively easy.Wash with hot water; Lodge does not recommend using soap.Dry thoroughly.I then heat mine on the stove top, turn off the heat, add a tablespoon of oil and use a paper towel to spread the oil on the entire pan inside and out.After the pan cools, I wipe away any excess oil and store the pan.

For anyone who wants a head start on leaving heirloom cast iron pans, I strongly suggest this product.

I own 2 of these little pans, 1 of them for over 30 years & the other had been my mom's for many years beyond that.Had I known back then what I know now (how many times have we all said that?), I would have bought mostly cast iron instead of all the other cookware.It does take a little time to properly care for cast iron but it's sooooo worth it to me.These cast iron skillets turn out a great grilled cheese sandwich, too!Just use a lid on the pan & be sure to cook only on medium-low heat.

Several years ago my mom gave me a wonderful recipe (see below) to make cornbread on the stovetop in the 8" skillet using a lid, flipping the cake over once the batter looks almost done to cook the other side.You have to use 2 spatulas to flip it (the reason for using the 8" skillet).I tried flipping a 10" ONCE & found it takes a better woman than I to get that right!This technique makes a more moist & better cornbread according to my DH & me. Another added benefit is that you don't have to heat up the oven/kitchen.

In a small bowl, mix 1 cup of **self-rising white or yellow cornmeal, 1 Tbs. sugar (optional).In a separate small bowl, whip 1 egg with fork & stir in 2/3 cup milk.Add egg/milk mixture to cornmeal.Stir together just until all is moist.Melt 1 to 2 Tbs. shortening in skillet over medium heat.Sprinkle pan with cornmeal (not too thick) stirring to brown it.This will give you a crustier side.Lower heat to medium-low & add batter to pan and cover.Check batter & once it's looking a little more done than a pancake would, flip the cake using 2 sturdy nylon spatulas.I prefer to cover after flipping & it will be done in less than 5 more minutes.For crustier bread leave lid off after flipping.**Or use regular cornmeal with 2 tsp. aluminum free baking powder, 3/4 tsp. salt in place of self-rising I'm sort of guessing at these amounts as a replacement for self-rising.

My DH laughs at me because of my admiration of raw cast iron, enameled cast iron and how I care for them.I now have 2-10", 1-12", the biscuit pan, muffin pans, as well as the Lodge Pizza Pan.The pizza pan makes a wonderful crust.If we have left over pizza, we melt butter in one of the larger skillets over medium heat.Put 2 or 3 slices in & cover with a lid.Reduce heat to medium low.It will take just a little patience but it will taste as if it were fresly baked.You'll probably stop warming pizza in the microwave.

Another reviewer mentioned roasted potatoes.I agree, this is the perfect little skillet for a single serving size of potatoes.Try this recipe for a late night snack:

1 baking potato

2 or 3 unpeeled garlic cloves, (optional)

1 pat of butter

Shredded cheddar cheese

Olive oil

Salt & pepper to taste

Wash potato and cut in half lengthwise.Cut the pat of butter in half and place in skillet. Put a potato half, cut side down, on top of each piece.Lightly coat the garlic cloves with olive oil.Place cloves in skillet.Place skillet in oven and bake at 375 degrees for about 45 minutes or until tender.The cut portion of the potato will brown and crisp.Remove potato halves and garlic from skillet.Carefully remove garlic skin. Make a slit in the cut portion of the potato halves.Add garlic if using and season to taste with additional butter, salt and pepper.Top with cheddar cheese.

I make this in my 8 inch cast iron skillet a lot. It's the perfect size for single serving meals and snacks.It also makes the best hash browns and since it's not that heavy and already preseasoned, you can flip the hash browns like the pro's!

The 8" and 6" cast iron skillets are also great for tapas. Set them on trivets and serve right at the table.

I got a silicone handle cover, but that revealed another problem: the addition of the rather small weight of the handle cover is enough to unbalance the pan when it's empty.

This is a beautiful pot with a polished stainless steel interior and exterior. This was very important to me as I needed a crockpot that did not use typical glazed ceramic for the same reason I avoid non-stick teflon cookware. After noting it's quality, I was surprised by how large the pot is. You could cook 2 whole chickens in this thing. Using it for the first time yesterday, I wanted to burn it in by using the hottest setting. It got very hot very quickly. This could be a plus, but also something to keep an eye on. I was braising a chicken and it was boiling the water within 10 minutes even though the chicken was frozen. The temperature dial has a range from 225 to 425 degrees. I am curious how this will work as a slow cooker and will post an edit later.

Now for the cons : the lid is not heavy enough. As soon as the water began to boil, it started to make the lid bob up and down and splatter everywhere. I did not have it overfilled with water. I put a heavy object on the lid and opened the steam vent in the center of the lid, but it still kept splattering liquid. This happens at it's hottest setting. Apart from this issue, this is a great looking, very functional stainless steel skillet/slow cooker that seems to be constructed well with quality materials (except for the too-thin lid, also stainless steel though it looks as if it could be glass in the picture).

This is a very nice pot. I used it as a hot pot and deep fryer. I think it can be used as a stir fryer too. Heating fast. One of the bottom pad did fall off. I had hard time to screw back on. I have to use my own screw. Over all it is a very nice product.

I have 4 pieces of the xtrema cookware minus this 10" skillet which I am about to purchase. I have to say that I absolutely love love love this cookware.It does takes a tad bit longer to heat up, but once it does it really holds the heat well unlike any other pan I've used.It is more fragile then a regular pan if you drop it, but that has never been an issue for me. I'm just a bit more careful when handling.

It is totally worth it for me even with it being more fragile and taking longer to heat up.It's really not that much longer, and I am a busy person on a tight schedule.And of course I love that there are no nasty chemicals leaching into my food.

The other great thing is the cleaning.You can't scratch it.So you can use metal scrubbers, the rough side of the sponge and whatnot to clean it and it doesn't scratch.

You do need some oil/butter so certain foods (eggs) don't stick.But again, so worth it.And oil/fats are very good for you anyway...unlike the whole low-fat craze would have you to believe.

So all and all for me the Xtrema cookware is fantastic and well worth it.Even with things that people may see as negatives...i love the cookware so much that it really doesn't matter to me and you get used to it.

I'll let you know when I get the 10".

First off I agree with Mercola's return policies, you are better off purchasing from amazon etc. he's just very picky with what he takes back and is often marked up$, I did get a replacement pot because the lid was off/poor fitting as ceramic has natural imperfections and I had to send photos and it was a hassle-they didn't just 'believe me,' etc. But they did send me a whole new pot, not just the lid which was cool. Just an FYI, good or bad for his sake.

I got his set of these pans/pots with the tea kettle and cups/silicon lids a couple of years ago mainly for the heavy metal concerns in food as they all leach except maybe Saladmaster which is about 5 grand, and for the fact these pots act like convection ovens once they reach temperature in the oven, cooking more evenly (I can't speak for gas ovens but I've had fine luck on my electric stove?) and food is more flavorful. I use mine for everything I can and what you would normally (rice is fantastic) and I don't think they stick that bad if at all mostly (if you don't let stuff cook too long and don't watch it?) but I'm not obsessive about working a little harder to clean pots after cooking as I have some tricks with them I've found.

I cook with butter or coconut oil (the two best things:)and for the most part you can get away with over medium eggs without them breaking if you are meticulous but..who cares? most other things won't be like teflon obviously but I did this for health and going more to the old ways of cooking, but I'd rather live without heavy metals causing health concerns (i.e. even heart disease links) rather than food sticking? Take your pick. After I cook meals and dump the food out, I right away put water in the warm pot or pan to cover the bottom, and let it cool down while cooking all the remainder sticking food off.That small step cooks the food right off, then I just put in the sink and scrub off easily as normal, in fact I just use a kitchen scraper normally and have no problems with having to use muscle to get stuff off, hardly ever.

I love mine and think they cook great and the food has more taste. I agree you have to be very careful with banging around like you would using any pottery?(I have a ceramic sink so I have to be extra careful as I did get a chip in a pan and it unfortunately did cause a crack that spread). If you want to be healthy, they weren't a bad buy as they can be heated up to I think extremes without problems which is a plus. I just cook pancakes, when I eat them, rarely in my teflon as a treat, but for nothing else. Hope that helps. If you don't want metal cookware, I think this is a good choice and overall mine have held up very well.

Berndes SignoCast Classic 13-Inch, 6-Quart Saut? PanI have consistently been disappointed by non-stick cookware.I wanted to buy a non-stick pan for day-to-day use that would stand up for years to come.It's been only a few weeks but I have a good feeling about the berndes.

This Saute Pan is large enough to handle the biggest tasks, but adequate for smaller tasks as well (I regularly cook for only two).It distributes heat evenly and it appears to hold heat well.I was expecting the pan to be heavy, but it is very light and the extra handle allows for ease of movement when you have a great deal of food in the pan.

And did I mention non-stick.It's as good or better than any non-stick pan I've ever used.And you get a feeling that it is non stick through and through.Plus the exterior is made of the same non-stick material so clean up is a piece of cake.

It's more expensive than most non stick, teflon coated pans but it's solid.It may be cheaper than Calphalon, but I'm not impressed by Calphalon.It's not so non-stick and not as even a heater as everyone says.Maybe I've seen the wrong Calphalon, but you're probably wasting your money on it.

Give Berndes Signocast a shot.The bigger the better.I only have one, but that's all you really need.This pan shares it's cooking duties with my Sitram Magnum Pro line, a Sitram Cybernox pan and a set of Le Creuset.I don't know if I'd buy an entire set of Berndes (I'm pretty old-school in most of my cookware choices) but give one a try you won't be disappointed.

UPDATE:

After a year and a half it's still going strong.Even the sides (which scrape up against other pots, pans, & utensils) still appear perfect, in terms of the non-stick coating.I will never again buy a non-stick pan that isn't made by Berndes.

I love this pan.It is expensive but the best pan for me.It is quite large and the non-stick surface is so smooth, both inside and out, and no sign of wear after about a year of use so far.Very nicely made.A good investment.

I like to throw a ton of vegetables into one pan and saute them: this pan is the best I've ever used for that purpose.Also, it has a really nice non-stick coating (or is made out of a great non-stick material, I can't tell which).The only drawback of this pan is that it is huge; you probably won't want to make scrambled eggs for one in this pan.

I opted to purchase this set instead of the ($!@) more-expensive cobalt blue pans to replace those in a full set that I totally wore out through the years. I was afraid that the lower price was a clue that the quality would be inferior, but no-o-o-o! T-Fal, I love you. (And I don't care that you don't match the rest of my set.)

Heavy duty, fabulous non-stick, easy to clean... Love them!

Circulon Symmetry Hard Anodized Nonstick 11-Piece Cookware Set ()Before I start complaining, I want to emphasize that these are very very high quality and the best set I've ever owned (I also have the anolon set Anolon Advanced Bronze Collection Hard Anodized Nonstick Cookware Set, 11-Piece and I think they are both of equal quality (made by same company) but I prefer the circulon set). The anolon set is more beautiful/elegant but not dishwasher safe and don't work with all heat sources.

The bottom of these pots and pans is very thick which make these amazing. There are no hot spots. It was amazing to watch water boil in them and have even sized bubbles form everywhere in the bottom. It is very forgiving if you have the burner too hot as food won't burn in specific spots.

These are dishwasher and metal utensil safe. I use them in the dishwasher all the time but I don't want to use metal utensils in them.

When I first got them, I hand washed them and carefully put them in a metal drying rack. This was a bit of a mistake because it faintly scratched the outside. So I don't want to use metal utensils just in case (I got a plastic dish rack shortly after!).

These are extremely nonstick but I'm not a fan of the circular grooves in them. It makes stirring sauce in them strange as the spoon runs over the grooves. And I think the the nonstick quality is good enough not to need these grooves.

The sides aren't very thick but the bottom (base) is what matters for heat distribution and they (bases) are the best I have ever used. They work with all sources of heat (induction etc).

Another thing I'm not a fan of is the end of the handles. They have a depression on the bottom side so one can hang them. When I put them in the dishwasher (upside down) they get full of water. I'm not sure why they didn't just punch the hole completely though like they did with the anolon sets.

So while both anolon and circulon sets are the best I have ever used I would actually pick these circulons because they work with any heat source and are dishwasher safe.

This is good value for money cookware. It is ideal for induction cooktops, where choice at any reasonable price is limited.

It is important to note that this is NOT like 'normal' non-stick. When frying, you need to cook with a small amount of olive oil do that and the pans work great and will easily wipe clean. If you use butter or try to cook high-fat burgers, the non-stick coating will be compromised. I keep one pan for those tasks: it comes clean with a non-stick scourer, but it can take some work.

The main difference between Symmetry and Infinite Circulon is the handles: the coatings are identical. Symmetry handles have a plastic insert whereas the Infinite range were all metal. Main problem is that these new handles are shorter which makes them harder to balance with the larger, heavier pans. They are also not as well shaped. I never found that the all-metal handles got hot, so I don't understand why they needed to be changed. My advice would therefore be don't buy these. Get Circulon Infinite while you still can it's also clearance priced, so you will get significant savings as well as more comfortable pans.

This is the best cookware set I've ever owned. I actually have this set in a 13 piece that was offered through Costco for a short period of time. My old, much more expensive, Calphalon basically was wrecked after 5 years. The true test of cookware is how it holds up in the homes of lazy, sloppy people. Not that I consider myself lazy and sloppy, but today I was boiling dark purple wooden popsicle sticks for a craft project for my kids. Forgot about the sticks and the water boiled away, leaving the wooden sticks to burn on the bottom of the pan. Once the burning campfire smell drew me back to the kitchen, I lifted the sticks out and let the pan soak for a couple of minutes, brushed it out with the dish brush and there was not even a mark or finish problem at all. I was absolutely amazed I mean, it was burning WOOD on the bottom of a pan on high heat! This is the second time I've had the empty pan sitting on a hot burner and the pan was fine. I recall that this"feature" was on another review I read before I purchased the set... that alone sold me.

I cook constantly, and my food is perfect everytime. Cooks very evenly... cleanup is fast and you can even just pop them in the dishwasher. The handles are wonderful and stay cool. AND, you can use metal utensils on these things! Need I say more?

I have an older induction rangetop so I did a fair amount of research for a set that was both "stick-free" and induction safe.I have had Circulon pans in the past and have liked their cookware.When I purchased the 11 piece set I was extremely please with the packing (very secure and each piece isolated so not denting or scratching).Oh, I also purchased the 8 inch skillet the month before so that I could actually work/cook with the pans before buying the whole set just to see if I liked it and that it would work on my induction top.I was very please with the performance, liked the weight, very nice handles and heated evenly with no problems on my rangetop.I was so excited when my set arrived that I put it to work right away.Image my total surprise when the 1-1/2 qt and 2 qt saucepans did not work on my induction top!If you want to test this cookware out like I did, I would suggest you buy a small saucepan first.I have written to Meyers Corp about the problem but have not received an answer yet.Amazon was great about the whole thing because I wrote to them about the small pan difficulty altho I loved all of the rest of the set.They gave me a 40% discount and I still use the pans with an induction disk.Thanks Amazon!

American Kitchen Tri-Ply 8-Inch Fry pan with Nonstick InteriorWe have been minimalists when it comes to kitchen supplies so we had two fry pans in our cupboard.One was a Calaphon and the other was Regal Ware.We got both of them about the same time and the Regal Ware was in near perfect condition still, no chipping or flaking.The Calaphon was in bad shape and the coating had flaked off of half the pan and I knew it was time to get rid of it so I came on Amazon to look up pans. I wanted something by Regal Ware since the brand had proven to hold up to regular use in my house.I found this set of pans (I bought the 8", 10" and 12" and American Kitchen is by Regal Ware) and was really hesitant to spend that kind of money on them but I am so glad I did.These are really solid pans, made in the U.S.A. and covered by a 25-year warranty (that is easy to register for). We coat with oil every 2-3 weeks and absolutely nothing has stuck in these pans. It also says not to use non-stick sprays with them and I balked at that at first thinking everything was going to stick if I didn't use that, but nothing sticks.Eggs come out perfect.These are so nice to cook in.They also look great and are easy to clean up.

**Update August 2012**

It has been almost a year since I bought these pans and the 8" and 10" are holding up pretty well, but the 12" is not. The coating is flaking in spots and things are sticking to it, even after being freshly coated.I just called to ask about warranty coverage and found out that you not only have to pay to ship it to them, but also include a check for $11 to get it shipped back to you. So I'd be looking at about $25 to get one pan inspected for warranty and replaced. On top of that, I was not impressed by the customer service agent and her unfriendly tone. If I was looking to buy pans again, I would be hesitant to buy this set because I'd expect for the cost of them that they'd hold up longer than a year, that their warranty replacement wouldn't be as costly and that their customer service would be at a higher level.

I love this pan.It's a great size just over ten and a half inches across at the top with a very nicely designed slant / curve to the sides that makes flipping things a breeze.Flipping is also helped by the excellently sized and shaped handle good and long at over eight and a half inches and nice and broad so it is easy to hold on to, without being so big or clunky that smaller hands should have a problem.It's also a hefty pan, more so than it may look.Each time I pick it up I am surprised pleasantly by the weight.That weight comes largely from a thick bottom that distributes heat very evenly.The sides are also pretty thick, giving the whole pan including where the handle connects a rock solid feel.According to the company website the pan is made from stainless steel covering an aluminum core that covers the bottom and also runs up the sides.

I think almost any non-stick you can buy these days is going to do a good job at first.This one certainly does.In fact, it's wonderfully slippery.The real question here is about durability, and I can't comment to that for a few more years.The cookware does come with a 25 year warranty.You can see the warranty and register your cookware on their website () if you want.The warranty covers the usual 'defects in materials and craftsmanship' but doesn't specifically mention the non-stick coating, however.

Durability is especially important to me because one of the reasons I like to buy American has to do with the environmental impact of consumer goods.First, I want my stuff to be manufactured with some regard to environmental regulations, and thus I prefer to support American and European manufacturing.But moreover regarding durability, it seems clear that the MOST environmentally sound thing is to not have to buy more products at all.That is, regardless of how 'green' a manufacturing process is, it has more impact than doing nothing and the less something has to be replaced the greener it becomes.The pan that lasts the longest will certainly have a big advantage in the most 'eco friendly' competition.(Cast iron seems clearly to be the winner in any durability competition, but for some cooking applications I prefer this kind of non-stick.)So, kudos to this pan for being made in Wisconsin and appearing so far to be durable.

I'm looking forward to getting the 8" version of this pan at some point, and certainly would recommend this line of pans to family, friends, and... you.

Then there it was after quite the hunt, in an obscure little spot on the part of the label that wraps the side of the pan: Made in PRC (People's Republic of China!). Not only made in China, but Beka is being underhanded by calling it PRC.

With all the heavy metal contamination in kid's toys and dog treats, I'm not willing to gamble that a Chinese manufacturer is keeping these items 'safe,' nor to trust them to cook for my family in them.

A. It's heavy cast iron, which means it retains heat exceptionally well.Because of the high thermal mass, you'll have to be patient as the wok takes a few minutes to heat up while on the stove.After it heats up, you'll be rewarded with long-lasting high temperature heat (if desired... it's really for you to control... steady medium or low is very attainable, too) perfect for doing restaurant-style stir-frying at home.That is, you can toss food in the pan without worrying that the pan will cool off and boil/steam your food with the escaping moisture.Searing on the home stove is well within this wok's capabilities.All of this just requires patience.

B. It's a wok, which means that the heat is concentrated at the bottom and tapers off going up the sides.You control how you cook your food by where you situate it relative to the bottom/center.The non-slippery surface of the wok makes this possible, since you can slide food up the sides to reduce the amount of heat it gets exposed to, and the food will stay, rather than fall back down to the bottom, like a teflon-based non-stick surface.

C. It's pre-seasoned, so it's fairly non-stick.I have yet to experience having anything completely stick to it while cooking, whether it's coated meat, stir-fry, vegetables, or egg scrambles.

Because it's heavy cast-iron, you get all these benefits that you don't find with the typical woks you see in the marketplace.Compared to traditional woks, this is not one that you'll be handling while you're cooking.Once it heats up, it gets hot... real hot... including the handles.You'll be scooping food out of it rather than pouring food from the wok to a plate, and you'll be leaving it on the stove over dinner until the thing cools down enough to handle.BE CAREFUL!(wouldn't want anyone to experience any nasty surprises)

Also, since it's cast iron, this piece of cookware requires a bit more TLC than your ordinary anodized aluminum/teflon-coated cookware.You won't be washing this with soap, rather Lodge recommends hot water and a stiff brush, and you'll need to keep it dry and seasoned (rubbed with oil) when you're storing it.It's a bit of extra work, but to me, it's completely worth it as even quality teflon-coated pans will wear out far sooner than well cared for cast iron cookware.

At the end of the day, I still use my anodized aluminum/teflon-coated cookware when what I'm cooking calls for it.I reach for my cast iron pieces to do the job they're best suited for... anytime I need steady heat, high temperature cooking, and/or searing capability.It's just a matter of using the right tool for the right job.

Honestly, I'm so glad Lodge makes affordable cast iron cookware.I've been wanting to pick-up some cast-iron pieces for a while.Until I found Lodge via Amazon.com, I have always turned away disappointed when I see how much Le Creuset costs at retail stores.Thanks, Lodge & Amazon.com!



Unless you have a professional quality cooktop (Garland, Wolf, etc.), the typical American stove does not produce enough BTUs to properly heat the traditional rolled steel wok. No matter how long you heat it, it will cool too quickly and the food will boil instead of sear.

However, a pre-heated (I give it at least 10 or 15 minutes) cast iron wok holds on to enough heat to enable you to properly stir-fry.And cleaning is not that bad.After removing the food throw in a cup or two of very hot water and scrub with a stiff, non-nylon (it melts) kitchen brush (a grill brush is ideal). Pour out the dirty water (ok, this is a trick because of the weight), put it back on the heat to boil off any excess moisture, and wipe it with an oiled paper towel and let cool.

By the way, if you like to deep fry, a cast iron wok runs circles around most any fry rig and requires less oil.In fact, deep frying is a great way to season or re-season the wok.

If you want a wok with less maintenance, anodized aluminum (Calphalon, Circulon, Analon, et al) is really your only other choice.It does not sear quite as well because it does not have the same heat retention, but it does a good job because it is so thermally conductive liquid evaporates before it can pool. It works especially well with vegetables and white meats.A little hot water, dishwashing liquid, and a scrubby sponge is all you need.

So I've had a dozen or so WOKs but none that hold the heat so well and cook so evenly.I use it mainly on the gas burner with the high heats, where all the others just don't do well at all, and am thoroughly impressed by it.

The flat bottom does justice when on a traditional electric range and is just as effective in cooking.

I wouldn't buy any other WOK after getting this one, unless of course I need a second duplicate one.

I recently bought this wok after having taken a Thai Culinary Class in Thailand.I needed a wok to produce authentic Thai food.I was a little hesitant to buy this wok since there was no mention in the description or in the reviews about the bottom of the wok.Most woks that have a rounded bottom come with a ring so that it will sit on your cooktop.Thai kitchens assume that everyone has a round bottom wok and the cooktops are fitted to accomodate that.Not so here in the US (unless you buy the wok ring attachment for your Viking stovetop).The wok itself is round on the inside but flat on the bottom, so no issue there.It works nicely on the cooktop.I use this wok for everything.It stays out all the time, whether I'm sauteeing vegetables or creating a stir fry.Its very heavy, and therefore heats up nicely and retains the heat, perfect for whatever you're cooking.It cleans up easily with just hot water and a scrub brush. I would definitely recommend that you buy the wok spatula to go with it, there is a very nice one on Amazon thats stainless steel with a wooden handle.The spatula is curved so that it conforms exactly to the inside curve of the wok.You just can't beat cast iron for cooking!!!I've had many woks, electric ones as well. None can compare to this one!

Bought this wok to replace several generations of non-stick woks whose non-stick coatings have been consistently degrading over time. Knowing the health risks of the non-sticks, I looked around and found this seasoned cast iron wok. First impression is that this is a generational wok, that with its solid construction, this is a wok that you could pass down to your children and grandchildren as long as the instructions regarding cleaning and maintaining the seasoning are followed. The only negative is that this is a fairly heavy wok so I end up washing this wok every time as my wife insists that it is too heavy for her to handle. As per a previous review this wok will sit on your standard sink so it is easy to spray with water and scrub clean. However, it is still fairly heavy and if your cooking needs are limited, I would suggest you downgrade to a smaller diameter cast iron wok. Going one size down will also help you be able to use all of your burners on a standard 4 burner stove as with a wok this wide it will take out of action another one of your burners.
