We bought this to replace a two decade old 12" copper bottom Revere skillet that had served us well..First impressions were that the steel was significantly thinner, not as flat, and more flexible.The first cooking experiences with thin fish fillets were that it was difficult to get the fish cooking correctly without burning the oil away from the fish.That makes it difficult to make a decent pan sauce.We'll give it a little while longer, but I forsee this going to Goodwill in a short time.
