If you're looking to spend near to all-clad money on a pan that takes a ton of effort to get ready to use, is finicky in its care (no soap), looks like hell, and requires using large amounts of fat to achieve nonstickiness, this is the pan for you.
I had a hard time seasoning it but it is such a good pan. Now it is nonstick. Cleans very easily.

I didn't buy this product from Amazon, but from another seller. However, I did feel compelled to review it here. Contrary to the other review, the process for seasoning this pan was quite simple. The key is to follow the directions on the card that is attached to the pan. The pan is coated with beeswax, so it must be removed. Beeswax melts at about 145 degrees so if your tap does not allow the water to get that high, it is best to do what I did: boil some water on the stove, drain it into your stopped kitchen sink, let it soak for about 5 min, pull it out, and wipe it off. Be careful though because the pan will be boiling hot. After that, put peanut oil in the pan, wipe it on the sides a little, heat it to about 400 degrees, let it cool, wipe it out with a paper towel.Repeat the oiling, heating, cooling, and wiping one more time, and then the pan is ready to go.
As I said above, this pan gets hot quickly. It's made of carbon steel like a wok, and is designed to get hot quickly for great sears. This pan has performed beyond my expectations when I have used it, and it keeps getting better non-stick properties as I have used it; just like an iron skillet does. I can understand why some restaurants use these pans. They are really good.

I purchased the 12.5" version of this pan from Amazon and I am completely satisfied. Easy to clean off beeswax (water from kettle and paper towels)and easy to season (as described from Mauviel).Since then the pan is amazingly non-stick and a joy to use. This pan is a great find, a great buy and will last a lifetime!I just got an 8-inch Mauviel M'steel for Christmas and am already on Amazon looking for a couple 11-inchers. I decided to leave a review because of the bad one I saw from 10/2012. I followed the manufacturer's instructions for removing the beeswax (a couple passes under scalding water from my tap, paper towels) and seasoning (heat flavorless oil, cool, wipe x2) and am loving this little fry pan. 5 stars!
