Calphalon Tri-Ply Collector's Edition 12-Inch Everyday Pan with LidI wanted a stainless steel pan to replace the various brands of coated non-stick skillets I own that seem to scratch and lose their non-stick properties over time despite meticulous care.The Calphalon 12-inch everday pan meets that need and more.

Admittedly, before purchase I was skeptical about the non-stick claims made about this pan.If one follows the manufacturer recommendations to preheat the pan before adding food to it, I find that most foods do not stick.Some foods (mainly meats) stick a little, but they clean off readily with soapy water and a soft-scrub sponge.A new-like shine can be maintained with Barkeeper's Friend.

If you simply want a skillet, there are many other pans that would work quite well, but what sets this pan apart from those skillets is the high-dome glass lid and short side handles that make it a great brazier.You can prepare tender, thick pork chops that will cut with a fork by putting them in this pan with about 1/2" of water in the bottom, covering with the lid, and baking them in the oven at 325 degrees for a couple of hours. And the pan will come clean easily.The glass domed lid retains moisture in the pan very well, which keeps foods moist and tender during the cooking process.

For those who like to fry foods, this pan is a great choice.Unlike coated non-stick pans and skillets, you can cook with as much heat as you want without worrying about damaging the pan.The pan and lid are rated to handle up to 450 degrees.

The size of this pan can be a plus or a minus depending upon the amount of food you want to cook.The 10-inch version of this pan, which sells for about $20 less, would probably be sufficient for one or two people cooking small meals.Even though there are only two in our household I find myself using this 12-inch pan, however, instead of a 10-inch skillet because I can cook without worrying about food spilling over and/or make enough for leftovers.It is also a handy size for cooking small roasts with the lid on or off.

The pan has nicely tapered edges that make for dripless pouring of liquids from the pan.I use oven mitts to hold the glass lid slightly ajar against the pan to strain liquids.The weight of the lid makes this a little awkward, but it is made easier with the two side handles.A lightweight aluminum splatter cover might work better for this, but I tend to minimize the number of items that I care to wash after cooking by using the lid instead.

One handy feature of this pan which is also a negative is the short side handles.They are wonderful for baking things in the oven, and a pan this size would be heavy and awkward to lift with a single long handle (I own a 12-inch non-stick skillet with a handle, and it is very heavy and takes great strength to hold a lid against it to drain off liquids).The downside, though, is the short handles get quite hot with cooking heat above a simmer making usage of potholders or oven mitts a necessity for safe handling.If Calphalon would create handles that could remain cool during cooking, this pan would be perfect.

If you enjoy cooking, want a versatile pan that can be used equally well on the range or in the oven, want relatively non-stick cooking without the hassles of coated non-stick cookware, and want it to last forever, you will be very happy with the Calphalon 12-inch everday pan.I know I am.

I purchased a custom collection of Calphalon tri ply pieces in the past six months, starting with smaller pans and working my way up. I am so IN LOVE with them.This everyday pan is a workhorse and you simply cannot beat the ease of cleaning.Once you get used to it, cleaning the stainless (versus nonstick) is just as easy and better because it is dishwasher safe.Stainless versus nonstick is now my preference virtually all of the time.For skillet chicken, this is the absolute best you can do for a perfectly browned end result.I have one piece of All-Clad and I can tell you honestly that I PREFER the Calphalon tri ply to it though ALL Clad is definitely exceptional.You will not regret this purchase.

I mean really burned after two hours of neglect... when I returned, the house was full of smoke and the food was burned beyond recognition. After it cooled, I washed the pan in warm water and soap; there wasn't a mark on it. Nothing stuck or blemished the ceramic coating. I truly thought the pan would have to go in the trash along with dinner. Thank God it wasn't Teflon, I would have had to report it to the EPA... great product at a great price.

This was a great purchase. It works great on electric or gas.Clean up is a simple wipe.I would buy this pan again.

UPDATE: Good pan so far, have owned now for just over a year and I cook a lot, i use several times per week.Has not lost any of it's no stick powers yet.

Bought because it doesn't release harmful chemicals.It's certainly non stick, I rarely have to brush it clean, just shoot water on it, clean.

If you don't scrub them with greenies (which is tantamount to 120 grit sandpaper, my paint and body guy uses greenies to prep car bodies) these kinds of pans will stay non stick a lot longer.When you clean them, ONLY use a plastic brush (if u need to use anything at all).DONT use the scrubbie.Don't wipe it with paper towels either (they will micro scratch pans, oh yes they will) unless u do it gently.

NOW WHAT I LIKE MOST ABOUT THIS PRODUCT IS THAT IT DOES NOT LIE ABOUT WHERE IT IS MADE.There is a certain other pan that says it is "From Germany" and it's not, it's Chinese (I finally found a review that says it it is actually made in China, the coating if from Germany what they hey???) and I simply cannot stand products that lie.

This pan is made in Korea and I've actually had pretty good success with Korean products, they seem to be well made, not just this pan.

I ordered 2 of these about 3 months apart.The first one has on the handle Joy Cook and the 2nd one doesn't.The Joycook pan is now 6 months old still in excellent shape love it has held up to being used about everyday.The 2nd one is now about 3 months old and the outside coating is startig to peel away from around the outside of the pan and the edges.Very dissappointed.It is why I am giving it 4 starts 3 for the non joycook one and 5 for the JOy cook one

This is a good pan for the price. Distributes heat evenly but the non-stick surface does not quite perform as well as I had hoped. Worked as advertised until I started seasoning steaks and chops in the pan. This resulted in stuck on spice residue in the pan. Removal with a paper towel and hot water micro scratched the pan surface diminishing its non stick capability. I suspect it would continue to perform at its original capacity if spices not applied until items removed from pan. I will probably buy another one and test this theory.

I'd hoped it would last a very long time, given the new-formula, supposedly sturdy, nonstick finish, as well as its strong stainless steel clad construction. But the nonstick surface has been progressively peeling off around the rivets for the past couple of years, not anywhere we use utensils.It's just plain surface failure, and we don't want it in our food.The degradation of the nonstick surface is all the more disappointing because this pan seems otherwise to have everything else going for it.



The majority of my pots and pans are from the same Cuisinart line and while I wouldn't put them up against fancier (and more expensive) pans like All-Clad, I've certainly been more than satisfied with the Cuisinart's performance.

I've owned the stainless set for well over a year and they've held up quite well.No warping, no serious scratches, no complaints.I bought this non-stick a few weeks ago because I've been so happy with the performance of the stainless pans of the same line.

Let's face it, you're going to have to replace your non-stick pan every year or two no matter what.So why pay a hundred dollars or more for one??

This skillet is in the price range of the "dime a dozen" skillets you'd find at your local kitchen supply store.However, it looks much nicer, heats evenly and does a great job overall.

No matter what the box says, that $100+ non-stick pan you're considering isn't going to last any longer than this one and you really have to ask yourself if that $100+ pan is truly worth the price difference.

Do yourself a favour and give this skillet a shot.You won't be disappointed.

I have used this pan now for almost a year and it has been nothing short of fantastic.I purchased this pan because I needed something a little bit smaller than my 12" non-stick pan and I found that an 8" pan was too small,this one fit the bill perfectly.I have actually tried to get cheese and egg to stick to this pan just because I could hardly believe how well it has performed and I have to say that the pan wins every time.Cleaning it is a breeze and the non-stick surface still looks nearly new with only a couple small surface scratches that you can see in just the right light, but are not deep enough to feel with your fingernail (yes, I have used metal utensils in it).I purchased this pan locally as a factory second (it had a small dent in the rim), but consider it to be one of my best kitchen buys to date.

All-Clad Stainless 9-Inch French SkilletMy All Clad LTD 13" French skillet pan will now get more use now that I converted from an electric range to a (natural) gas range.I tried using the 13" French skillet on my 8" electric element and was disappointed with the uneven heating: the outer portion of the bottom did not get hot enough to cook the food (in my case, omelets).That was not a problem with my All Clad 12" fry pans (Copper Core and LTD).Now that I have a natural gas range, the French skillet's entire bottom heats evenly and my omelets turn out great.The handle length works for this largest of All Clad's French skillets.I decided to buy this pan over the All Clad 14" fry pan while both pan bottoms are the same diameter, the French skillet's pan top has a smaller diameter than the 14" fry pan due to the steeper slope.If I need to cover the French skillet when cooking, I can use the lid from my All Clad 6 quart sauté pan (which fits)!There is no All Clad lid I know that I can cover the 14" fry pan, not even if you buy it separately.And the 13" French skillet feels lighter than the 14" fry pan (LTD or stainless).If All Clad made the French skillet in Copper Core, I may get it depending on the weight.Copper is heavy.

PROS:

Weights less than the All Clad 14" stainless or LTD fry pan but with the same bottom cooking area.

Can be covered if you have the lid for the stainless or LTD 6 quart sauté pans

CONS:Does not heat evenly when used on an electric (coil) range.

One last note.If you have a gas range (mine is a Wolf) I really noticed just how quickly the Copper Core pans heats up when compared with the stainless and LTD lines.When I was using an electric range, I appreciated how quickly the Copper Cores heat up.My suggestion is to hold each pan and determine whether you can comfortably handle the weight of each pan and whether the pan's handles are comfortable to you.I like the longer length handles on the All Clad Copper Core pans.All Clad uses a different length and style handle for their LTD and stainless series than the Copper Core series.That standard length handle does not work for the larger sauté (6 Qt), sauce (4 quart), and fry (14") pans: it's just too short.It's all right for their other pans.

I've been using this pan a lot since I bought it a few months back. I bought this pan as an alternative to my old All-clad 12-inch pan which is justtoo wide for my small stove top.Dimensionally, this 11-inch pan is just right.

While I thought the older 12-inch pan was an overall excellent product, this new pan falls a little short of 5 stars. Here's why: the thickness of the pan is thinner than the older pan (though some people will find this a plus if they thought the older pan was too heavy.) The thinness however may have contributed to All-Clad's decision to use a non-flared edge which makes the pan more difficult to clean.Theedge is just too sharp.And for a saute pan with short side walls, you will need to clean the edge often. Also, since the edge is not flared out, pouring is more messy.

On the good side, the handle angle is more acute than older pan. This makes sauteing a little easier than the almost horizontal handle of the older pan.I also like the steeper walls which gives the bottom a large surface area.It also heats up evenly. And best of all it's cheaper than older pan!

Overall, I like this pan but they could made it better. However, knowing All-Clad, if they did, they would have priced it comparable to the older pans. Clearly and unfortunately, marketing entered in the design decisions.

The All-Clad stainless line is made of fairly thin stock, and the performance is acceptable, but not outstanding.My desire for All-Clad started when I used the old Master Chef products, but those were manufactured of thicker material, and they conducted better than the current stainless series of products.

January 2010 update -check out the "d5" line of All-Clad stainless offered by Williams-Sonoma.Much heavier, and they have also added a pouring lip to the pots -the 90-degree lip on the regular stainless pots does not pour cleanly, and makes a mess down the side of the pot.Ridiculous for a product in this market segment.I bumped into an All-Clad rep at Williams-Sonoma, and he told me that the changes were made as a result of comments from consumers.

My All-Clad stainless pots and pans are serviceable, and I use them daily, but if you want a luxurious heft, and very even heating, you may want to consider spending a bit more.

Lastly -specifically regarding the French skillet -heads-up -this style of pan doesn't have a rounded transition from the bottom to the sides.Instead, there is a corner at the junction of the bottom and sides.Additionally, the sides are a bit steep.I'm baffled why anyone would want a small fry pan that doesn't have rounded sides, as the corner and steep sides prevent the easy and rapid tossing of the contents, so I offer this review to warn others who also might not know of this distinction, particularly in light of the fact that Amazon's description specifically addresses use of this pan to toss ingredients.If you want to be able to easily flick-toss the contents of your pan, to turn and stir them, then look at the All-Clad fry pans, with a more rounded edge transition, not French skillets.

Another reviewer of this excellent skillet suggested the use of a non-stick pan for those 'sticky' foods.Can't fault that because who wants to do battle in the sink afterwards?However, I found a different approach can work wonders with this pan.For instance those love-to-stick morning eggs.My solution: Heat pan on low for a few minutes with a little olive oil or whatever you use.Turn off heat, toss in eggs, cover pan and sip on that coffee you just brewed.

Oops, what cover you say?Hmm....that's a problem since it is not offered with this skillet.Thus the four-star rating.So improvise or find something you can purchase (and let me know what you find!).

Well, back to the eggs.They're done in a few minutes (how many minutes? Who knows get a see through cover if you must).And guess what?Since this pan heats so evenly and you've compassionately chosen free-range eggs, they slide out of the pan as if they couldn't wait for breakfast yours.

One other note.The handle, cool to the touch and rakish in appearance is what you would have to characterize as non-ergonomic. But that's the French for you beauty and form overshadow a minor annoyance.

Some other reviews have stated a dissatisfaction with this skillet due to it's "convex" bottom. Actually all of the All Clad pans have a Concave bottom. They are determined concave by looking at the pans upside down. The reason for the uneven surface is that when the aluminum core heats up to a certain level it actually warps straight. If the allowance of this concave was not there, the pan would wobble around on your stovetop as then it would be truly convex. Most high quality pans have this feature, and it is built in by design. Also, some people dislike the sticking quality that some food presents on this brand of cookware, but this is also a desired effect. I'm not a chef, but have learned that this caliber of cookware takes a certain level of cooking skill and experience to utilize it properly. Sometimes things can be interpreted as negative if you are using the wrong tools for your skillset. There is a reason that all of the worlds top chefs use this brand exclusively, and it is not endorsements. Lots of great brands out there, and All Clad never dissapoints.

Calphalon Simply Calphalon Hard-Anodized Nonstick 8-Piece Cookware SetSeems to scratch a bit easily, even when using non-metal utensils. None of the scratches appear to be actual damage to the pots or pans there's no peeling or ruined coating as would happen with a cheaper pan. I've had these for a few months and they're holding up great, just marked slightly. Other than that, they're great.

I love the size chooses of this set.All the others have more and larger pieces than I wanted.Quality is great and easy clean up.I am really happy with them. Purchasing on Amazon was easy and I'm totally satisfied.

My husband received a Visa gift card for Christmas last year and decided to splurge on cookware.Otherwise, we might never have known how wonderful "real" cookware could be!

The set we bought consisted of a 10" skillet along with an omelet pan.Because we simmer many of our dishes, we added a large skillet complete with a glass lid.Not only are these lids substantial and high quality, they are glass so we can watch our food as it cooks without having to remove the lid and lose the heat.

Of course the saucepans with lids are amazing....So nice to have pans WITH LIDS!Stock pot and lid cooks chicken and dumplings like a dream.

Do know that Calphalon cookware comes in a variety of qualities and prices.Williams-Sonoma is a good place to compare these products.Once I felt of each line, I understood the difference.Nice thing is, regardless of the price, they all have a really high quality finish that you will be proud to own!

MY FAVORITE PROS:

These skillets go from stovetop to oven when you need to finish a dish off in the oven.

The insides, as long as you don't use metal utensils, last for years.

It is also great to be able to add pieces as you can afford them.No one will be the wiser.

CONS:

The handles are a bit heavy so the skillets (not the pans) sometimes tilt when they are empty.

Overall, these are attractive, high quality cookware pieces that are well worth the money.In addition, many times there are promotional pieces that run about $30 / skillet so you can try before you buy an entire set.

Cuisinart GG45-25 GreenGourmet Hard-Anodized Nonstick 10-Inch by 18-Inch Double-Burner GriddleThis griddle is exactly what I was looking for it heats evenly, it's lightweight, it fits exactly over two burners, and it's got a cutout on one corner to pour out the grease. The ceramic cooking surface is very non-stick and stays that way over time. Do not use non-stick sprays (not that you need them), as they will leave a residue over time that's impossible to clean up. Using only a small amount of butter or oil, all of my Green Gourmet pans are as clean and non-stick as they were when I bought them. Cuisinart says they're dishwasher safe, but I've never seen the need to do so; they've never needed more than a few wipes with a soapy sponge to get completely clean.

Excellent quality griddle and one of few that works well with ceramic stove top...recommend to other ceramic stove top users...these are hard to come by.

No fan of teflon, we got a small saute pan of this brand and loved it. The grill is a bit of an investment, so we wanted to try out the coating first which is amazing. Cuisinart has managed to make a non-stick (truly, it's NO stick) coating that holds up to utensils, higher heat, and the stickiest of foods without missing a beat. Love the coating!! The grill fits across two burners, and because of the base materials, maintains an even heat without significant a gap between them. We've cooked eggs without butter, grilled sandwiches, made pancakes, and even melted grated cheese, and everything slips easily away. The raised edge is nice too, in case you did want to add oil/butter/grease, and the corner spout makes it easy to get rid of.

I had such high hopes for this product after reading the largely positive reviews.I would give it one star, but I'm going to give it two *just* in case I was committing some sort of user error.

I bought the griddle to use with pancakes and little else.I'm on a fat-restricted diet.Having read online that cooking sprays gunked up cooking surfaces due to the lecithin they contain, I used only oil.My technique was to use about 1/4 teaspoon on a hot griddle, then spread it around using a silicone spatula.This worked for about two weeks.During that time I used the griddle on nothing more than medium heat, washed it with a sponge and water (sometimes soapy, sometimes not).Despite this, a residue began to build up.As it did, the non-stick properties deteriorated.The last time I used it the sticking was awful.My attempts to flip a pancake failed completely, with the pancake accordioning as I pushed the spatula against its unyielding underside.

That's not all.The last time this thing failed, I was careful to pour the pancake batter on the two circular surfaces of the griddle that had seen the least buildup.No dice.Accordioned pancakes.

By way of comparison, I have a Calphalon skillet.It stuck some when I used no oil whatsoever; however when I used the technique described above, it performed flawlessly.It's a few months older than the griddle and has to date seen more use than the griddle.But, as I said, it performs flawlessly with just a touch of oil.

And finally, if memory serves, the instructions on the griddle's packing box indicated that one should season it by the common technique of oiling then baking it.I have little experience with these things, but is it really true that you're supposed to seaason non-stick cookware?

In sum, this would have received one star, except I'm doubling the score to two to allow for the possibility that I'm doing something wrong.But inasmuch as I have Calphalon whose performance is vastly superior using the same care and maintenance techniques---well you be the judge.

But the egg has to be very fresh (or the white nearest the shell tends to run off and make ragged bits) and you have to have the courage to dump the egg right into the water and BELIEVE it will set up. Then you scoop it out with a slotted spoon. Here comes the downside; you have to DRAIN the egg or it gets your plate (and toast) all watery.

With this pan, you can poach the eggs in nonstick round compartments and then lift off the rack, dump out the water and continue on with sausage or potatoes or hash. Hash topped with poached eggs is great (and you can make hash from leftover roasts or corned beef from New England Boiled Dinner or Corned-Beef-n-Cabbage.) Recipes will follow at the end. Only one problem; keeping the eggs warm. I'd actually suggest cooking your sausage or hash first, keeping it warm in the microwave or covered in a dish in the oven, then swishing out the pan and continuing to poach the eggs. The eggs cool so fast, it makes sense to do them last.

I like the color. I like the nonstick surface. I like the round shape of the poacher. This is a terrific pan concept and versatile, as you can make anything really, in here. And I love orange accents in the kitchen--very bright and cheerful if your kitchen is beige, white, yellow, for example.

Recipes:

1. Turkey Sausage rolls or patties:Take ground dark turkey meat or a mix of white/dark fresh ground turkey (I do mine in a food processor, the commercial ground turkey seems to have additives.) Add in some breakfast sausage spice mix (make your own or buy a mix, I use Penzeys.) Make into patties, or roll into case-less rolls. Cook as you would any sausage. Lower fat, all the flavor. If you saute up a sausage cake with a depression in the middle, you can put the poached egg right inside it.

It takes a bit of experimenting with little balls of cooked-up sausage mix to find your flavoring balance (too much, it will be salty or too spicy.) Once you figure out your custom blend, you can make larger cakes of ground turkey sausage. This is very filling and the fat will be a lot lower than using pork sausage blend which is often high in fat content. The fat is not missed when you make fresh turkey sausage patties, and if you grind your own, you won't have the fat and skin, which is sometimes added to commercial ground poultry and adds to the fat content. White turkey ground is drier, but it is a lot lower still in fat and the spices add tons of flavor. The egg yolk from the poached egg will make it very moist.

2. Leftover Roast Hash--chop up leftover roast beef or corn beef in a food processor or mince on a board until coarsely chopped. Chop up about twice the amount of boiled, peeled potatoes and a diced yellow onion. Saute the onion in a small amount of olive oil until clear, add in the potato and meat and turn until well blended. Some people add seasoning like sage and black pepper, and you can add some gravy or water or broth to make it looser. You can also use leftover turkey to make turkey hash--but I find the turkey needs extra seasoning, such as hot pepper, green peppers, jalapenos, some kind of red chili powder, or even curry. Serve with poached egg on top. This makes a great brunch dish or "breakfast-for-dinner."



A big waste of money. The pan is not the quality I expected and the poachers do not poach evenly. I wish I had sent it back. Don't want to give away and loose a friend for thoughtlessness.

I purchased this splatter screen, as a Christmas gift, for my Husband.

He used it to brown some chicken in a pan with a little bit of oil and the oil just splattered through the screen and splattered on my stovetop! This pan has muffin cups that are 2-1/2-inch-wide by 1-1/2-inch-deep. My regular cheap metal muffin pan cups are the same depth; at the bottom they are 2-inches wide while at the top they are 2-3/4-inches wide. It's actually an appearance issue, not a size issue.

As for quality, it's from Lodge and it's cast iron. It's superior.

I ordered several pieces of cast iron cookware, so far this is the only piece i have received in the mail tho. I messed up 2 batches of cornbread muffins in 2 days with this muffin pan, then i finally got it right! Now i have the best muffins ever! So at first i tried baking the muffins with the factory seasoning, i put the muffin pan in the oven, turned it on to 400, let it warm up for 15 minutes, pulled it out of the oven, added a few squirts of olive oil(I have olive oil in a regular squirt bottle), and poured in the room temp. batter (I read pouring in cold batter may increase sticking). and the muffins stuck! Then i thought i noticed a little rust, so i scrubbed the whole pan with an SOS pad until the pan was its original dark gray color. Then I seasoned it, I coated the pan with vegetable oil and put it in the oven at 350 degrees for 1 hour, then let it cool then I tried baking muffins again and they still stuck! Then i finally found a great seasoning method: wipe the entire pan with a very very thin layer of vegetable oil, then heat in oven at 500 degrees for 2 hours, let cool and repeat this process 3-4 times(I did it 3 times). So i went to make my third batch of muffins, put the pan in the oven, turned on heat to 400, waited 25 minutes, pulled the pan out, squirted a decent amount of olive oil in the pan, the oil pooled in the bottom of each little section slightly, then i poured in the batter, and it made a splattering sound, 25 minutes later i pulled the pan out, turned it upside down and the muffins dropped right out!!! I was so proud!!! Oh and by the way, this thing makes muffins that are plenty big if u fill up each muffin section about 3/4 to all the way full of batter. On the other hand it will make mini muffins if u fill it up half way full of batter. With my cornbread recipe at least.

I bought one of these to try out (I've been cooking more with cast iron cookware Lodge Logic.)After making a half-recipe of blueberry muffins, I went ahead and ordered a second one so I'd be able to make a dozen at a time.You need to heat the pan along with the oven, but it makes a muffin with a better-textured outer surface than the regular muffin pans I had been using.The size of the muffins is a bit smaller than in my other (non-stick) pans, but I put the whole recipe for a dozen in two pans, which makes for a taller top on the muffin.My wife loves 'em (so do I.)The muffins also come out easily I wasn't sure if it would be a challenge removing them from the pan, but it is very easy to remove them.

Overall, a great product.If you like baking muffins, try this pan it beats the heck out of regular muffin pans.

()I've always liked egg dishes, so I was pleased to be able to order this interesting stove top concept. I find it to be a bit difficult to use, easy to clean, but with some quality issues.

Design:

A frittata is classically made by beginning the cooking on the stove, then transferring the pan to the oven to cook completely. This set uses a bottom and top pan (essentially two pans) which interlock at one end. The idea is to start the cooking, attach the second pan via a special locking handle on the side opposite the holding handle, and flip, causing the frittata to cook without the oven. The pans have a sturdy handle that does a good job of keeping cool, and a non-stick coating that is rated for metal utensils (one does not have to use plastic). It did not seem to have any trouble with nonstick and metal utensils. This is not really surprising, since the top pan has to touch the bottom pan; so having a "platic required" coating would not have worked.

Recipe:

It took a lot of tries to get a decent frittata out (they tended to be underdone due to not enough care with step 7 below). There is only a tiny print recipe included, so I'll repeat what worked for me here.

1. Assemble the vegetables and anything else you want to sauté. I also like to use a little cheese.

2. Beat 5 eggs or so together.

3. Heat both pans on medium heat, using two burners on the stove.

4. Place butter or other oil/grease in the deeper pan. This will be used for cooking the vegetables.

5. Place a small amount of butter or oil in the second pan.

6. Cook the vegetables until they are tender. You can season them at this point, or later.

7. Once the vegetables are cooked, pour in about 3/4 of the eggs.

8. As the eggs get more cooked, uses a spatula to raise the edges of the eggs to allow uncooked eggs to go underneath. This step is critical, or the dish won't get cooked through. It usually takes about 4 minutes for this step.

9. Once the eggs are pretty well cooked (just a little runny on top), add the cheese. Then pour the remainder of the eggs over the cheese and blend it together (so the cheese doesn't burn when flipped).

10. Remove the shallower pan from its burner, fit it into the interlocking end of the bottom pan, and carefully but rapidly flip it over. Shake the pan a bit after flipping to ensure everything settles. It will get a bit of egg out of the sides of the pan, but not much. I found it less messy to simply hold both handles together, rather than trying to flip with a hand on either side of the combined pans.

11. Continue cooking for about 5 minutes. At this point everything should be ready to go!

Construction:

While the pans seem sturdy, one of the two sets I received had a loose handle on the side that interlocks the two pans together. It is supposed to be permanently fixed, so I can't just screw it in. Hopefully it will work, but having one out of two with a problem like this causes me to reduce the score to 4 stars.

Cleaning:

Very simple. The nonstick really works.

Summary:

A bit messy, but it works once you get the hang of it. Hopefully my second set was a rare problem in construction. Recommended.

()This is marketed as a Frittata Set, so I'll address that first.A regular frittata starts in a skillet and finishes in the oven.It's sort of a thick, puffy baked omelet.This set allows you to make a frittata completely on the stovetop: you cook the eggs and filling in the larger skillet, then lock the other (preheated) skillet on top and flip the whole thing, to allow the frittata to finish cooking stovetop.I don't really see the point in this.For one thing, how often do people make frittatas?As a Mom, I regularly cook weekend breakfast for a passel of teenaged boys, and I make a frittata maybe once a year.Secondly, I'm not sure that flipping it stovetop is any easier than baking it in the oven.So this pitch is gimmicky to me.(Somewhat of note:Some reviewers state that they used the flipping interlocking pans to make omelets.I guess it's splitting hairs, but from my perspective, omelets by definition are folded over their ingredients, frittatas are open faced -and so if you're flipping your mixture of eggs and filling it's more a frittata.Potato-Potahto.)

But as skillets, this set is very nice.It's 2 nonstick Circulon skillets (one slightly larger).I had Circulon when it first came out, about 20 years ago, and it has evolved this surface is much better.(The grooves are much smaller.)These pans are a handy size for smaller kitchen needs (you could do an omelet in one).I use them for things like sauteeing tomatoes for bruschetta, cooking up shrimp for pasta and shrimpthey're great for those 'smaller burner' jobs that you need to do while using the big burners for the main course. They're also good for grilled cheese, fried eggs, etc.They have an even heat conductivity and they're easy to clean.I like the helper handles and I love that they are safe for metal utensils.They're very handy pans.

PROS:

()Flipping is the hardest part of these pans but follow the included instructions and with practice they work great.Heat the smaller pan but cook in the larger pan.When it is time to flip make sure the smaller pan fits tightly in the groove of the larger pan.Then flip over the sink, not the stove!Beautiful!

The pans themselves are fantastic non-stick pans.They clean up with nothing more than a paper towel.Even if I'm not cooking anything that needs to be flipped I have two perfect frying pans.They are well made and although it is early to judge, they look like they will give years of service.The instructions say they are oven safe to 400 degrees but I'm a little nervous about risking them.Anyway, definitely worth the money.

()First, I don't consider myself a cook. I sometimes do cheese omelets, with some milk and mozzarella shredded cheese. These skillets helped me made the best and tastiest omelets so far, and I'm glad I can provide a non-cereal nutritious breakfast for the kids. The skillets seem to be of good quality, although the bottom of one of them got scratched after a few uses. The handles are very comfortable. The set is very flexible to various cooking needs.

Two notes of caution: Do not turn the 2 skillets over unless you are sure the content is solid or it might leak especially if you hold the two handles too tight. This all takes some training: although the 2 skillets fit one into the other, the enclosure is not hermetical. Second, as the enclosed documentation mentions, do not try to wash these in the dishwasher, as they might get discolored.

I had never had aebleskivers before, I had only heard of them.I became curious enough to want to make them.I have used a traditional batter recipe and commercial pancake batter with this pan and both worked well.I have made chocolate chip aebleskivers with this pan.I have a nice gas range to use it on and it works perfectly.if I had an electric or flat top, or cheap gas range it might not have worked out so well, but this is not the fault of the pan or those that designed and/or made it.I was able to season it without any problems either.

I purchased this pan locally, but I never used it. It appears to be good quality, but it will not sit on my gas range. The outer ring circumference is too large to sit on my circular burner grate, so you have to try to balance it on the bottom of the cups. I balanced it on the unlit burner, then later I closed the oven door and the pan almost fell to the floor because the slight vibration jostled it off it's precarious perch. Not a good idea if it is covered with hot oil or butter!

I have returned it and will purchase the Lodge pan because it has a ring connecting the bottom of the outer cups, which should work just fine with my stove.

I have collected all of Le Creuset's fruit and vegetable shaped cast iron enameled casseroles. In my 40+ years of cooking these casseroles are at the top of my list for beauty and functionality. They are beautiful to display on a table or on a kitchen counter and very practical in cooking delightful casseroles, soups, stews and other wonderful dishes. The color that they can add to a kitchen brightens every vist there. The exterior and interior enamel coating is very durable and easy to clean. I have cooked a multitude of dishes in these casseroles and have found them to be excellent in heat conduction and preventing "hot spots". The wider and lower shaped casseroles are a little better in spreading the heat.

The warranty against defects of 101 years will certainly last beyond my expected needs but it is nice to know that I have the protection since these are not inexpensive purchases.

The comments of guests served from these casseroles is always positive and never fails to bring a smile to my face.

There is a drawback to these whimsical cookers and that is the rim of both the top and bottom of the casseroles. There is no enamel on these rims and they can rust if not dried immediately after hand washing. They are dishwasher safe but I do recommend that you hand wash and dry immediately. I also recommend that you let them sit out for an hour or so to air dry before storing them.

When wet this casserole can be very slippery and the handles on the bottom and top help in preventing dropping them. Be really careful!

Finally, closely inspect your casserole when it arrives. My first garlic casserole had a two inch crack in the enamel. I did not have to contact Le Crueset since Amazon.com immediately sent a replacement to me and had the defective item picked up at my home at no charge. I commend them for standing behind the products they sell.

I have had this pot since about 2001.I bought it for the macaroni and cheese review.I don't remember how much I paid for it, but it has been worth it surprisingly.I admit I only used it to make mac and cheese the first few years.Then I found out it makes brussel sprouts, spaghetti sauce, and now RICE, perfectly.I actually reach for this pot on somewhat of a weekly basis now and it still looks brand new.The handles are very ergonmically useful.It holds an air-tight seal while cooking, so rice cooks up perfectly without spilling over on the stove.Stores food well in any temperature.

This is a hand me down pot for the future generations.Friends always compliment me on the cuteness of this pot as it sits on the stove during cookings.I am glad I bought it.It cooks 3 cups of rice and surprisingly mac and cheese is not so bad in such a deep small pot.It fills nearly to the brim without boiling over, since it is air tight.

If you do not treat this pot delicately and just use it for anything including side vegetables, you will find that it is very useful.There is hardly a scratch on mine and I consider it everyday ware now.Hope this helps!

Vollrath Z4008 Wear-Ever CeramiGuard II Interior Fry Pan with Cool Handle, 8-InchThis pan is awesome.Tough non-stick does not scratch easy and works great.Very little will stick to the great coating and the rubber handle always stays cool.The heavy duty rivets are sure to never break.I bought this one to replace my old one, which got pretty much daily use for over five years, until it eventually started to loose teflon in the food.

The only downside I have is the handle is pretty heavy, which causes it to lean back on my gas stove.This is likely just a design conflict between the pan and my stove, but if I put it on there just right, it holds it's balance just fine.

The pan is a nice weight and you don't have to use spray for cooking if you don't want. My only concern was that both pans shipped but there was nothingin the box about how to care for the pan, if it could be put into the oven ( I believe it said when I bought it that it could be put in an oven to 350 degrees ), if it was dishwasher safe, and what kind oftemperature with a gas range is best suited for it. What IS CeramiGuard, anyway?
